We were in the mood to try a new place for dinner. I've seen the high ratings given to this restaurant so we decided to check it out. Upon first entering there is a sign requesting to wait to be seated. No where really for you to sit and wait. Not sure if they have a waiting line process? I observed a few people standing near the entrance waiting for an open table when we were almost done with our visit. *It would probably be a good idea to start a waiting list when busy for those who are waiting for a table-maybe get their phone number and tell them you can send them a text when their table is ready...that way they don't have to sit right in the front waiting to be seated when there's really nowhere to sit while they wait... We were greeted and seated right away. We sat at one of the booth tables but agreed that next time we visit we would like to sit at the noodle bar. Pretty cool to watch them make the noodles. It's a very small place and probably gets crazy wait times during a busy night. We started off with their salty and spicy squid appetizer. We really enjoyed the immense amount of garlic that the squid was smothered in... Ugh so good. Our waitress said the pork is awesome too. Maybe we can try it on our next visit. Then we ordered the tomato beef brisket soup. They put a generous amount of cilantro in this delicious flavorful soup. We also ordered the Shredded chicken with garlic sauce stir fried noodles. We took the extra fried garlic that was left over from the squid and added it to both the soup and stir fry and then added a little hot oil and red pepper. Heavenly!! We will be back. read more

Great service; amazing food! Fast too! It's always hot and fresh. They are always busy, but seem to never have a long wait. They let you customize your soup, too! I went with a group of coworkers for lunch on a Thursday. We made reservations --they can't guarantee a table--but ours was open (yay!). Go early-or go later in the afternoon- but before dinner. The place is small and packed! Food was yummy! We had the cucumber salad (it's got a kick!) and I had the vegetable stir-fry (I asked for no mushrooms!). Noodles were fresh-they make them right in the kitchen-and it's fun to watch-veggies were also fresh and plentiful. Service was okay; not exactly super friendly but okay. We ordered Pork Wontons in chili oil. It was delicious, just right with spiciness and seasonings. Dumplings were soft and pillowy and full of flavor. My husband ordered Mongolian Beef and I ordered the Cucumber Cold Noodles. The Mongolian beef left my husband and I amazed at how delicious, tender and well seasoned it was. The hand pulled noodles make the taste difference 100%. The cold noodle salad was light, savory and just right. I really enjoyed the food here! I had the spicy noodle soup, and while I thought the broth was just a tad bit bland, I liked it overall. You can also ask for extra noodles on the side to out into the soup. For appetizer, we got the spicy wontons, and they weren't half bad. You can also see them hand making the noodles as well. The staff is always super friendly and helpful when ordering. They will go out of their way and make suggestions and recommendations, when it comes to deciding on what to order. The portions are pretty large, but doable if you're determined. The place seems small, but I think it adds to the aesthetic, making it feel like you're doing at a hole in the wall noodle house in Asia. You can watch the cooks make all the food, which adds to the feel. I took off a star because we've been going there for almost two years and the menu has not changed. I highly enjoyed the food here. They had an appetizer of chicken or shrimp that had a wonderful, unique spice to it. I craved that strong taste for days! The noodles are definitely different than other noodles you have had. They are uniform (if you didn't expect that from handmade) and expertly cooked to stay that special texture when inside hot soup. My broth was delicious, it had a bit of oil sheen on the top, but I'm sensitive to fats, so if there was a lot in there it would have affected me, it didn't. It was delicious and I barely finished the big bowl. My main reason for docking a star was staff. Two of the wait staff were excellent, but I got the new girl who was frankly, inept. She was painfully, obviously new to being a waitress in general. Instead of having her shadow an experienced staff member, I got her. Water came out with the appetizer, silverware had to be asked for, I took a menu from the pile next to me as I was seated and not given a menu, I was told they don't serve any tea, she told me the appetizer came with a sauce it did not, and she tried my patience. I also overheard her asking other staff members what the dishes were when they came out the window. She didn't even recognize the items off their small menu. Luckily by the time I was finishing the crowd had dissipated and another staff member made getting the check easy. There's not a lot of non beef or non pork dishes here, I don't recall if there was a vegetarian option, but there was just the single chicken noodle dish, I think. When I left, I noticed there was quite a bit of trash blow up in the bushes by the restaurant's side window on the Dollar Tree side. Be careful if you GPS here. Noodle man really had me rethinking a few things. Like maybe I shouldn't have given 5 stars to half the places I did in the past because this is was place is way beyond some of the places I've filed out great reviews to. We got some apps that were a precursor of things to come. The wontons in chili oil were bite sized and heavenly. The spice pork chop was excellent and the cucumber salad was divine. We got the beef/tomato soup and the seafood soup. Both were very different from each other and amazing. Food wise, this place was on point. It was packed and we did have a wait but what tier it together was the staff. Servers were super friendly and knowledgeable. The prices were actually lower than I expected. Everything that I've tried has been delectable but let's talk about how I've had 3 instances where I provided my military ID for a discount but never get the discount bc the waitress "forgot" to add it. It's different waitresses each time too. Today I was in my actual uniform and when I noticed they didn't take it off again. I question the waitress, she states that I have to say I want the discount, being in uniform doesn't suffice basically. But even when I state it and show my ID, they still forget. They didn't even try to fix the mistake after I would mention it to them. Accountability. A word we take serious in the military. I have to admit, I was skeptical of the reviews and of Chinese food offerings in the Virginia Beach area, since we were in town from southern CA where there are endless chinese/asian food offerings. Noodle Man did not disappoint and provided us an authentic, comforting, and delicious meal after a long hard day. The homemade noodles have an excellent texture and are not thick as many handpulled noodles sometimes are. There is a large variety of flavors and we were very satisfied with everything we got. Cucumber cold noodles are light and refreshing, a little acidity, salty, a touch of sweet and spice. Tomato egg - a savory and sweet gravy that is very addicting and comforting. Hong kong cafe style dish. Beef noodle soup - clear but flavorful broth, tender beef, solid dish. Cucumber salad and spicy pork wonton appetizers were also very good. My wife has been really wanting to eat here with all the good reviews. We finally stopped and ordered to go. Maybe my expectations were high because of all the stellar reviews. For me the Mongolian beef noodles had so much oil. It left a film in my mouth. The flavor was good but couldn't get past all the oil. Had the spicy salty squid. Tasted like lawrys season salt on it with jalapeños on on top and mixed in. The big tentacles were nice and tender but the smaller ones and little squids were a little chewy. Last we had the vegetable pancakes. Those were a no for me. I saw what looked like rice noddle in it and I dont need more filler. I just wanted straight vegetables. We didn't drive far to eat either. I've been eyeing this restaurant for awhile before finally being able to come try it out! I love the ambience and open view that lets us see the "noodle man" making fresh noodles! Salted and Spicy Squid - I enjoyed this appetizer a lot especially because it was flavorful without being too salty. Different from calamari of other restaraunts that are seasoned only with salt. This one had more depth and an extra kick of spice. Pork Wonton in Chilli Oil - I was really excited for this dish but it ended up being average. Not bad but not outstanding. It tasted like regular boiled wonton with diluted chilli oil. The fresh black pepper on top did give it more flavor and texture. Lan Zhou Noodles - light broth that has a very similar base to pho but without the taste of the pho spice/herbs. The noodles were soft and chewy. It was a little dense but not to the point of being too doughy. I thought the two paired well together. Chicken noodles - My friend got this dish but I was able to try some of it. I think the fresh noodles they make here are all the same kind since the appearance and texture of it was the same as the Lan Zhou Noodles. I was pleasantly surprised at this dish. Very flavorful (also without slathering too much salt which is always a bonus). I originally expected it to taste like other variations of regular chicken noodles or lo mien with lots of soy sauce. Needless to say it was so much better! Overall I recommend this place. It was great and I definitely plan to come again! read more

Being half Asian, you would think that I have had noodles before in my life (well excluding the pack of Ramen noodles you can buy at the store), but that's not the case. This restaurant was pretty awesome in my opinion, it was small (occupancy around 30-40), the booths were fairly comfy, the chopsticks were fashionable, and they even had a bar where you could see the noodles being made! I ordered the B1. Lan Zhou Beef Noodle Soup. It was a pretty big bowl too. I was at first skeptical because it's my first time ever eating noodles like this; however, I was not disappointed one bit. The beef was tender, the broth was delicious, and the noodles were perfect. Who would have figured that I actually liked radishes in the broth. The bowl definitely filled me up, the only recommendation would be to put a little less cilantro. It could sometimes over power the noodles, but everything overall was pleasant. I ordered the Salty & Spicy Squid, Shrimp, Pork dumplings and the Beef Soup. The Squid was meh, and left a horrible after taste, I could not eat all of the dumplings... they just weren't good, and the Soup was ok. The soup was the best part of my meal, and I believe that it would have been over the top with a homemade broth. The noodles in the soup were perfectly cooked. The customer service that I received was phenomenal, and the reason for the two stars.However, the place was entirely too small for the amount of business that they receive. I work not too far away from this spot and was pretty excited they were opening! I went over today, being their 2nd day open and placed a to-go order. Most of the booths were filled with people, so that was a good sign. I love Dan-Dan style noodles, so decided to give the Hot & Spicy Noodles a shot. I also got an order of the Pork and leek dumplings. The kitchen area has big windows so you can see them making the food. I sat and watched the guy roll out a slab of dough and pull and stretch it out, overlapping the dough to create the noodles. It was pretty cool to watch! Check out my video! I received my order within 15 minutes or so and headed back to work to eat it. The pork and leek dumplings were plump and juicy. Paired perfectly with the slightly sweet sauce that was given with them. The Hot & Spicy noodles were indeed hot & spicy! It's not an unbearable spicy, but definitely has that numbing factor. A small location but very quaint. You have the option of sitting in a booth or at the bar. The bar is not your traditional bar. You sit down and you have a front row seat of the kitchen where you can see them throwing the dough for their handmade noodles. This was my first time here so I wasn't sure what I wanted. They have a wide variety between Stir-Fried noodles, Ramen or fried rice. The staff was very helpful with what to choose for your first time. As an appetizer we got Chicken and Shrimp Spring Rolls...so good. 10/10 recommend. They have a hint of cilantro that ties the flavors together. Pictured is the non-spicy (yes you can choose spicy or not!) Kung Pao Chicken with Stir Fried Noodle. Very delicious. Along with Mongolian Beef Stir Fried Noodle. My wife and I were visiting family this weekend in Virginia Beach and decided to have dinner here on a Sunday night with my parents. We have heard and seen the reviews on this place and decided we must try it since we are rarely in town to try any new restaurants that have popped up since we moved away. Upon arrival we walked in and there was a line of customers awkwardly standing in the middle of the restaurant. No host table or anyone taking down names. It was around 5 minutes before anyone came over to us and directed take out orders to the corner near the bathrooms and the rest of us got our names taken down to wait in line. It took about 10 minutes for us to get a table, not bad so we were expecting quick service and some amazing noodles! We sit down, get drink orders in, and have a look at the menu. The waitress recommended some dishes and appetizers and we place in orders for the fried squid and the fried wings. We also put in orders for the Lan Zhou Beef Noodle Soup, Tomato Beef Brisket Noodle Soup, the Mangolian Beef Stir Fried Noodle, and the Shredded Chicken with Garlic Sauce Stir-Fried Noodle. We chat for a bit, get our drinks, watch the worker making noodles through the glass and enjoy seeing the kitchen at work. And then 30 minutes goes by and we have yet to see a single plate of food touch our table. A waitress comes by with two plates of crab wontons which we wave off since that's not what we ordered. She confirms with the kitchen and confirms with us that our orders are coming up. Another 20 minutes goes by, and still nothing. It would've been nice had someone come by to update us with what's going on with our food, instead of walking by each time and just making sure our drinks were filled. After waiting almost an hour, the Mongolian Beef stir fry comes out. We ask about our appetizers and the waitress goes to check and comes back saying the fryer has been backed up and there's a few more orders ahead of ours? I appreciate the honesty, but when a wrong order almost comes to our table and then being told ours is coming up, but then wait an hour and to start receiving main dishes before appetizers, it's frustrating. We canceled the appetizers and just wanted our main dishes, we were starving at this point. Another 10 minutes before our noodle soups come out, another 10 after that for the last stir fry dish. After all the waiting, it was hard to try to enjoy the food. The taste was alright, the hype around the restaurant left me wanting more. The noodles were a bit disappointing, I was expecting noodles with a soft and chewy feel since they were handmade there, but what we got was mushy and felt overdone. Portion size felt right for the price though, so that was pretty on point. Overall, the food is okay and I would be willing to try some other dishes out. Maybe it was an off night and things were really backed up, causing the food quality to drop. Hopefully they work out the kinks with having people stand in line in the center of the restaurant and can work out a better system for the wait queue. We did notice a 10% discount on our tab, nobody told us what it was for, we assume for the long wait time and not receiving our appetizers in a timely manner. I left the restaurant disappointed, but maybe next time we're in town we can try it again. read more

Upon moving to VA Beach, we COULD NOT find a decent authentic Chinese Food restaurant in the area and kept passing up Noodle Man because the name just sounded to cute and gimmicky. Well, we walked in, one day, and discovered why the name makes sense. They actually roll, pull, and create their noodles from scratch! You won't BELIEVE the difference! Just Order ANYTHING with noodles and you will be very happy with your decision. We usually order noodle dishes because they're SO special, but other items on the menu are also legit. The SOUPS are pretty next-level (btw). Yeah. This is THE SPOT if you feel like Chinese Food. There simply is no comparison to Noodle Man in VA Beach. I dare say this is the only authentic Chinese Food restaurant in the area. I LOVE NOODLE MAN!!!! Unfortunately, I forgot to take photos. I ordered the Jalapeno Chicken with Stir-Fried Noodles. My boyfriend ordered the Kung Pao Chicken with Stir-Fried Noodles. Both were a little spicy but really delicious. One thing I like about visiting the Noodle Man is how customers can watch the chefs hand-make the Noodles in the back. There is something satisfying knowing we are eating fresh handmade noodles and nothing from a pack. The Mongolian Beef Stir-Fried Noodle is another great dish as well.
