The noodles are chewy and cooked to the perfect firmness and it absorbs the sauce very well. Each bite is very satisfying.. I could seriously eat 2 bowls of this in a sitting because it is THAT good!! If you can handle spice, you can request for a higher spice level (I remember they used to have spice level 1-5 on the menu, but didn't see it the last time I went). This restaurant's one of our favorites in the area. The handmade noodles were out of this world! And most of the dishes we've tried are delicious. Unfortunately, they recently changed their noodle recipe and their noodles are thinner now. Meaning, it gets soggy extremely quickly and lost its chew. At first I thought it was overcooked because that's exactly how the texture felt, but turns out they changed their recipe. Please change it back, because their nine way noodles were my favorite dish but I don't think I'll get them again if they're now a soggier, soft and clumpy version. Their cold meats like gizzards and hearts used to include cilantro which really helped with the gamey/richness that comes from those cuts, but they don't do that anymore either, so we've had to request cilantro on the side. Come here for the noodles. Dumplings were alright, but skippable. I'd go elsewhere for them but stay for the noodles. I have a love-hate relationship with Nine Way because the noodles are great but they're also pretty hot. Pig Ear Dressed with Chili Oil - pig ear is a common appetizer that's doesn't have a strong taste in my opinion. To me, it's more of a texture thing akin to cartilage. The pig ear here wasn't too flavorful, which is fine, but I've had more flavorful ones cooked or marinated with salty, savory, and sweet tastes. So it depends on preferences, but a nice appetizer. Handmade Chinese Scallion Pancake - thin, crispy, and light. A classic green onion pancake but fried a little longer to be crispy and crunchy. Decent appetizer, nothing crazy. Okay pricing. Handmade Sichuanese Style Dumplings - dough was a bit thick and inside contents felt a bit lacking in comparison but overall the dumplings were alright. Would order one item from the dumpling section if you want to share with a group, but prioritize noodles. Nine Way Noodles - I want to say these are like dan dan noodles, a classic sichaun/szechuan dish of noodles with spicy, yet creamy sauce. Seems to have minced pork on top. There are some peanuts as noted in the menu. I do wish there were vegetables but it was a very solid dan dan replacement. Braised Beef Noodle Soup - like traditional beef noodle soup, this hit the spot for a hearty meal. I would argue it's spicier than the Nine Way even though it's meant to be less spicy. Broth was rich and spicy. Minced Beef with Green Pepper Noodle - this is one of the spiciest items on the menu and comes with small little jalapenos (green pepper) which enhance that spiciness. Other than that, they're very similar to the Nine Way Noodles except with beef over pork and no peanuts. Sweet Water Noodle - while the menu only denotes this item as 2 stars spicy, I think it was the spiciest noodle option. There's a spicy garlic garnished on top which was spicier than any of the sauces. No meat here but the noodles are different than the other options. I have been wanting to try Nine Way in Redmond, WA for the LONGESTTTTT time, and now I finally got the chance. The space of this place is not that large, but it's cozy. The hype here, though, was REAL: legit and authentic Sichuanese cuisine. We got both dry noodles and wet ones (with broth) - both dishes were packed of flavor. Spiciness level not too bad. The cucumber salad was refreshing and crunchy, though I wish the amount of garlic and vinegar flavor were much higher (you can never have too much garlic!). The dumplings in ma la soup was a nice mix of 2 Chinese staple items, with a decent spicy kick. They have other dishes as well, especially the side ones, that I will try next time I'm there. The server was really friendly, and seems that she recognized my friend from last time (since he's a regular (ish)). Price wise, it was not bad! $48 for two. We came in for a late lunch and it was a bit busy. We had to wait maybe 10-15 minutes for a table for the two of us since the restaurant itself is not that big. So, I do not recommend coming in large groups unless you do not mind being relatively close to other groups. Keep in mind that the restaurant closes at 3PM but reopens at 5PM. I've only tried it once and never again. The other dry noodles however were all very good. Our go to order here though are the Wontons for our kids (they love it!) and the Mao Cai for the adults. Ma La, Extremely Spicy, and Extra numbing please. I'm salivating just writing about it now. You can choose the ingredients to add and it's always been very fresh in my experience. Even on weekdays, this place tends to have a wait for dinner. Sweet Water Noodle (4/5): I actually haven't seen this at any menu before, so we decided to order it, but the noodles are super thick and chewy with a classic spicy peanut sauce. Unique and delicious! Maocai (4.5/5): You can mix and match what you want in this, but it's essentially a huge bowl of veggies, meat, and noodles. Think hot pot except everything is already cooked for you. You can choose the soup base, but I would highly, highly recommend the classic, numbing one. There is so much numbing peppercorn that my mouth literally felt like it was vibrating, but in the best way possible. Chinese Scallion Pancake (3.75/5): Not bad, but I also wouldn't say it stands out. They come with a bit of chili sauce for flavor, the pancakes themselves are a little bland. We've been to this place a number of times, but I've kept from writing a review until I was more sure of what I wanted to say. The flavors were not what I had expected, but after numerous visits, the consistency, value, and taste have finally persuaded me. I am more used to the flavors of Cantonese or Fukien food. The first time I tried Nine Way's version of the braised belly pork with preserved vegetables was a jarring experience. But after a couple more times, I'm appreciating their version. The pork belly is just as tender as the Cantonese version, but it is made with a different preserved vegetable. Yacai has a slightly sour and brighter taste, compared to the earthy and warm mui choy. Still, after the initial surprise, it is something I would order again. The hand-made scallion pancake was delicious plain or with the included spicy bean sauce. At times crispy and soft, I was reminded more of Malaysian Roti Canai and have ordered this each time we've been here. The braised beef noodle is the complete opposite to that of Mike's Noodle House. It is bright, a little sour, and spicy with numbing Szechuan peppercorns. Listed in the menu as a one-star level of spice, I could do with a little more spice. The dish that was exactly as expected was the Noodle Soup with Preserved Mustard and Shredded Pork. Delicious, salty and sour with very generous amount of thinly sliced pork tenderloin strips. Ordering online was easy with a QR code, and service was quick. They served warm water (it was cold outside) as we would have wanted being Chinese. May we they would serve iced water to local Americans, but the few times I've been there, patronage was almost entirely Chinese. Definitely coming back for this. A little much chili oil on top though. The wontons were solid, better than average but nothing extraordinary. Wow I'm not exaggerating when I say this is the best takeout I've had AND my top 3 favorite Chinese restaurants in Seattle! We ordered 2 dishes from Nine Way via an Asian grocery app - Spicy Beef Noodle (dry) 生椒牛肉面 ($11 after discount) and Mala Maocai 麻辣冒菜 ($19). The Maocai came with rice and they gave us two cups of black tea as a gift for $30+ order. Packaging: From their packaging I could already tell the food wouldn't disappoint. Maocai was pre-made and pre-mixed so it arrived in an airtight container - not a single drop of broth was spilled, though the outside of the container was a bit oily :) For the beef noodles all the ingredients (noodles, beef, topping, and sauce) were packed separately. The noodles came raw because otherwise they would turn sticky. Nine Way clearly has thought everything through, including such details, to guarantee the quality of their takeout food! On the noodle box they attached a detailed instruction list on how to assemble everything together (see the photo). Very impressed. Even the tea cups were sealed perfectly. Food: Everything was in big portion, even the complimentary black tea :) I'd say both the Maocai and the noodles are more than enough for one person, if you are not starving. Maocai literally contains everything I could think of - spam, beef slice, beef meatballs, cabbage, potato slice, wood ear (fungus), fish tofu, seafood cake, tofu, fried tofu, and even instant ramen! The mala broth made everything beyond delicious! Authentic numb spiciness if you are into that. The beef noodle wasn't as flavorful as the Maocai but still delicious. Nine Way is a great restaurant for mala spicy food. The appetizers and noodles generally range from decent to good, but the standout dish that I keep on coming back for is the Mao Cai. If you aren't familiar with Mao Cai, it's like a personal hot pot that comes pre-cooked. They have a online QR code ordering system where you can select your soup base and check the ingredients that you want to put in it. The soup is packed with flavor; it has the signature numbing mala taste that is associated with Sichaun food. Out of all the restaurants in Seattle that serve Mao Cai, Malatang, or a similar individual hot pot concept, I think that Nine Way has one of the tastiest soup bases. Everything cooked in the soup absorbs the delicious flavors of the soup. The Mao Cai has a pretty good serving size to price ratio. It can feed 1-2 people depending on how many ingredients you add (with two protein options selected, I think that it is enough for 2 people). I didn't really like the green onion pancake as much; I found it to be a little overfried and lacked the many flaky layers that should be characteristic of this dish. One of the most sought-after dishes here among my friends is the Mao Cai Malatang, and so we ordered one of that along with the pig ear, nine way noodle, and handmade wonton in chili oil to share. For the malatang, the lowest possible spice level is spicy, which can sound scary but it is a bearable level of spicy - but do be warned that if you cannot handle spice that well, unfortunately, this dish is not for you. Fortunately, most of the other dishes has a less spicy option, but the regular spicy option has an adequate, not excessive, amount of heat. The malatang requires at least 6 items for the order, which can get a bit pricey as each item ranges from $1.99 to $4.99. We opted for premium beef slice, lamb shoulder slice, cuttlefish ball, fish tofu, quail egg, and kelp knot. It comes with rice if you wish to get one, and I would recommend doing so to cut down the spiciness. The malatang here is very salty, so definitely not the type where you can just drink the broth like a soup. I'd say this is more authentic in that sense, though I prefer YGF Malatang's flavoring a bit more. The beef and lamb here are on the drier side so the cuts are not that high quality despite the item labeled as "premium." The cuttlefish ball is interesting as it is black so we thought we got the wrong order as mushrooms but the color comes from squid ink. The other ingredients are decent though were served overcooked. The pig ear is a great appetizer with a decent amount of spiciness. It gave a nice crunch - like undercooked tendons. The Nine Way noodle is a pork noodle - make sure to mix it well before eating it. The noodle is cooked al dente, a bit on the softer side, but regardless it was very flavorful. The handmade wonton in chili oil is scrumptious, with the chili oil fairly addicting as it reminds me of the specific chili oil that I always crave for in Sichuan cuisine. Service is excellent. We couldn't handle spice that well so the server gave us extra water cups and refilled our cups constantly so to make it through the meal.
