This review is based on my Uber Eats order. I saw good reviews about this restaurant, but I have never had a chance to visit in person. I saw that it can be ordered via Uber Eats, so I gave it a try. I ordered beef noodle soup with braised beef broth, sliced pork and cucumber with garlic sauce, and pig ear dressed with chili oil. All of them were delicious! They were not expensive, either. They all looked spicy, but in fact they were not spicy. I guess I probably could request a higher level of spice. But still, they're very tasty. Very good value and good volume. We were in the neighborhood running errands and needed a place to eat. My husband found this place on Yelp so we decided to try. And man- one of the best discoveries from Yelp. The noodles are DELICIOUS and so tasty and flavorful. Simple looking interior but it's clean and has some cute decorations. The service was fast and friendly and above all I think the food was pretty tasty for good value. Reminds me of a noodle chain called MIAN. We ordered takeout from Nine Way, which turned out to be a win, since we were debating getting takeout from another nearby Chinese spot while in the area. What a relief! We ordered the handmade wontons in clear broth, the handmade wontons in chili oil and the spicy and sour vermicelli noodles. We ordered over the phone and were told it would be ready in 15-20 minutes, which was accurate. Located in the Bel-Red area, it's in a small business strip by the infamous Chinese buffet and Bai Tong. Everything was awesome! The wontons are handmade, so they are not to be missed. You can really tell they were freshly made and had a lot of love that went into them. Plus, they were succulent with the pork filling. The wontons in the clear broth was a perfect rainy day soup. But I loved the wontons in the chili oil. If you love spicy foods, then this will make you wet. HEY! Because you'll be drinking so much milk and water, you sick mind, you! Seriously, the heat factor is real. I love spice and tend to order items on the spicier side, but this one had me downing a jug of coconut milk. WORTH IT. The spicy and sour vermicelli noodles were something I've never had before, and they were also very good. It had that tanginess from the sour component, yet had the right amount of spice to balance it out. It was a big bowl of it, too, so easy to share. Nine Way is a great restaurant for mala spicy food. The appetizers and noodles generally range from decent to good, but the standout dish that I keep on coming back for is the Mao Cai. If you aren't familiar with Mao Cai, it's like a personal hot pot that comes pre-cooked. They have a online QR code ordering system where you can select your soup base and check the ingredients that you want to put in it. The soup is packed with flavor; it has the signature numbing mala taste that is associated with Sichaun food. Out of all the restaurants in Seattle that serve Mao Cai, Malatang, or a similar individual hot pot concept, I think that Nine Way has one of the tastiest soup bases. Everything cooked in the soup absorbs the delicious flavors of the soup. The Mao Cai has a pretty good serving size to price ratio. It can feed 1-2 people depending on how many ingredients you add (with two protein options selected, I think that it is enough for 2 people). I didn't really like the green onion pancake as much; I found it to be a little overfried and lacked the many flaky layers that should be characteristic of this dish. But overall, I really enjoyed the food here and I will keep on coming back. read more

They hand you paper menus to mark what you'd like to order and you can adjust the spiciness accordingly. My waiter was great too, he made sure to fill our waters multiple times and was courteous. 5/5, Nine way Noodle: I love noodles with peanuts so I had to get this. The flavors are complex, albeit a little light, so next time I'd get more spice. The noodles are perfectly cooked for dry noodles, perfectly chewy and has a nice bounce. I'd definitely get this again! 4/5, Scallion pancake: these were slightly overfried for my liking, more crispy than chewy. The bean curd chili sauce on the side was nice but didnt absorb too well into the pancakes. There were plenty of slices so I definitely satisfied my cong you bing craving. 4.5/5, Maocai: I'd definitely recommend the maocai if you come here! There's so many customization options that you'll probably never get the same thing twice! The soup was a little salty for my liking, but it had great flavors. It came with a bowl of rice and any customizations you choose (minimum 6) you get a generous amount of (i.e. the pumpkin slices were huge and plentiful). You can adjust spice level and mala numbing spice which was pretty neat. In total, for two noodles, an appetizer, and a hotpot, we spent 55$. One of the most sought-after dishes here among my friends is the Mao Cai Malatang, and so we ordered one of that along with the pig ear, nine way noodle, and handmade wonton in chili oil to share. For the malatang, the lowest possible spice level is spicy, which can sound scary but it is a bearable level of spicy - but do be warned that if you cannot handle spice that well, unfortunately, this dish is not for you. Fortunately, most of the other dishes has a less spicy option, but the regular spicy option has an adequate, not excessive, amount of heat. The malatang requires at least 6 items for the order, which can get a bit pricey as each item ranges from $1.99 to $4.99. We opted for premium beef slice, lamb shoulder slice, cuttlefish ball, fish tofu, quail egg, and kelp knot. It comes with rice if you wish to get one, and I would recommend doing so to cut down the spiciness. The malatang here is very salty, so definitely not the type where you can just drink the broth like a soup. I'd say this is more authentic in that sense, though I prefer YGF Malatang's flavoring a bit more. The beef and lamb here are on the drier side so the cuts are not that high quality despite the item labeled as "premium." The cuttlefish ball is interesting as it is black so we thought we got the wrong order as mushrooms but the color comes from squid ink. The other ingredients are decent though were served overcooked. The pig ear is a great appetizer with a decent amount of spiciness. It gave a nice crunch - like undercooked tendons. The Nine Way noodle is a pork noodle - make sure to mix it well before eating it. The noodle is cooked al dente, a bit on the softer side, but regardless it was very flavorful. The handmade wonton in chili oil is scrumptious, with the chili oil fairly addicting as it reminds me of the specific chili oil that I always crave for in Sichuan cuisine. Service is excellent. We couldn't handle spice that well so the server gave us extra water cups and refilled our cups constantly so to make it through the meal. Tl;dr this is the place for spice lovers esp those that like the numb This place is legit. The spice here is the kind that numbs your mouth and kicks you in the stomach which is quite a combo. Fortunately there's something here for everyone no matter your spice tolerance but if you know spice ain't your thing I'd give you a word of caution. That being said if you like spice, especially the numb your mouth kind it's hard to find a better place than this. The dishes are super flavorful and the spice compliments the food rather than overwhelms it. Just make sure to mix up your dishes well before eating cause the spice usually is sitting on the bottom. Nine Way is spicy! Wonderful dish selection and easily splittable between 2-4 people. Came here with a group of three and we had a great time! MAO CAI MALATANG is a must-have, extraordinary hotpot experience -- it's like a hotpot in that you choose sides, but everything is pre-added and ready to eat! Although the lowest level on the digital menu is spicy, reviews do suggest they have spiceless beef broth options as well --- that said, when they mean spicy, they mean spicy (none of the "americanizing spicy means mild" fluff!) For the "choose at least six sides", we got premium beef slice, lamb shoulder slice, cuttlefish ball, fish tofu, quail egg, and kelp knot. Comments on some of them: The cuttlefish ball we got were black ones that look like chunks of mushroom or taro -- black cuttlefish was new to me, and they were quite firm to bite. The kelp knot was quite firm and I quite enjoyed it. The beef slice and lamb shoulder were a good portion, but I didn't find it very spectacular. I tend to like drinking soup broths, but the broth was too spicy and oily for me to drink -- much heavier in flavor than broths at hotpot places -- dilute your own broth! The minced beef with green pepper noodles definitely had a kick to it and was delicious. It was a somewhat mala-esque tingly kind of spicy, although I'm not sure that there's even mala in it. Comes with chili oil on the side, and we put all of it in. The nine way noodle was definitely less spicy, but packed with more flavor. It comes with the chili oil on the side as well, so you can control your spice level. I put all of it in and it was so good. The sweet water noodle was a wildcard choice for me, and I ended up loving it! It's an odd but perfect combo of a slightly spicy, slightly sweet, peanut-y flavor. The picked cumbers (cumber salad) are very bland, and the Sliced Pork With Garlic Sauce is just fatty sliced pork with lots of spicy sauce (all I tasted was the sauce). I was pleasantly surprised by the noodles and loved the chewy texture to it. The dumplings were good as well and the sauce was not overpowering which was great. I recommend trying at least the Sweet Water noodle as a sharing dish. It's very unique - thick and chewy, very mildly sweet yet savory. The Nine Way is a broth-less savory, spicy, peanuty sauce. Those in my group who ate it thought it was very good. Both my husband and I had the beef noodle soup, except I changed mine to tofu. We both liked ours too. We also tried the cucumber side dish and the scallion pancake side dish. The cucumber is perfectly garlicky. The pancake is almost a cracker texture. A bit too stiff for my taste. They also have a hot pot option that is cooked in the kitchen and delivered to you cooked. My friend ordered a mid-level spicy hot pot with ma-la. It was very greasy. She said it was crazy strong spicy and she couldn't feel her tongue. Overall, the food is tasty; I recommend sticking with the noodle dishes. I probably wouldn't eat here much though. This restaurant has nearly no healthy options. Every dish has a coat of grease and oil, some from chili oil sauce; you can't see the oil well cuz all the dishes are black. ABSOLUTELY LOVED IT. They were open for dine-in when I went recently. Amazing spot for some authentic Sichuan noodles. Apologies if I didn't spell some of these dishes correctly. I got the Chengdu Zajiang Noodle. I'm usually not a huge fan of this dish, but a little voice inside me was telling me to try it here. And I need to give that little voice in my head a raise because it was pretty good. I've usually seen this dish with cucumbers in it but this one did not. Which was a huge plus for me as cucumbers are usually too overwhelming in taste for me. It was saucy and not too soupy like I've seen in others I've had. Only comment was that I will the noodles were a little more al dente, but otherwise, it's a nice, hearty noodle dish that won't disappoint. They'll also give you extra chili oil if you ask for it. This dish already came with some chili oil in it, but I just wanted it a little spicier. But the spice level is still good even without the extra oil. Mao Cai was definitely the highlight of our meal. It will definitely meet your numb-y sichuan flavor craving you've been needing to meet. The beef had a nice chewy texture and was soaked with the spicy broth. It seemed like every ingredient absorbed that spicy broth goodness. Fish was coated in flour which wasn't great. The other ingredients were fine, and in general this was super oily and had a savory taste that makes me think there was MSG. Good flavor but not a lot of food; I took the leftovers home to make more meals out of it. Service was alright, our waters got repeatedly filled. Prices were high for the not-so-great amount of food, as these three dishes came out to be about $50 post-tax.
