I loved the proportion of salmon and ikura and other various toppings compared to the rice, and the seasoning was perfect. My friend tried one of their staple ramen dishes, and he commented on the clarity of the broth along with a good portion size. Tsujita is best known for its Hakata-style tonkotsu ramen: a creamy pork broth served with chashu and thin noodles. The broth is milky, clean, and well-balanced, with a pleasant pork flavor. That said, I found the broth a bit lighter than I prefer. It lacks the deeper pork richness and viscosity that make the very best tonkotsu broths so satisfying. The biggest letdown for me was the chashu. It wasn't quite as tender as I expected and tasted somewhat bland, making it less memorable than the broth itself. The noodles are served on the firmer side, which is true to the Hakata style. That's more of a personal preference than a criticism - I generally prefer noodles with a slightly softer, more tender bite. Next time, I'll probably ask for a softer noodle texture. The owners also operate several other ramen restaurants in West Los Angeles, including Tsujita Annex and Killer Noodle. Of the three, this location is probably my least favorite, but that's more a reflection of how much I enjoy its sister restaurants than a knock on Tsujita itself.
