    P.F. Chang's is one of those places I can count on when I'm craving Americanized Chinese food done…read morewell. As a San Francisco Bay Area foodie, I know what it is and what it isn't -- but consistency counts, and this visit to the Crabtree Valley location in Raleigh delivered. I was hankering for their Beef with Broccoli, one of my longtime favorites. There's something about that combination of ginger, garlic and slightly sweet soy sauce that hits the spot. The beef was tender, beautifully caramelized around the edges, and the broccoli was exactly how I like it -- bright, crisp and not remotely overcooked. Add rice and I'm happy. I started with the pan-fried dumplings. My server, Brian, recommended the pork over the shrimp, so pork it was. Great recommendation. They arrived on a sizzling-hot platter, and the spicy sauce poured over them made the whole thing come alive. Delicious. I also had a Mai Tai, which was refreshing and a nice start to the evening. Brian was absolutely delightful -- friendly, attentive, charming and just flirty enough to make dinner a little more fun. Service throughout the restaurant seemed upbeat despite the place being packed. Speaking of packed: make a reservation. This location gets busy. I had a comfortable booth and enjoyed watching the steady stream of people coming and going. It started raining while I was there, but since the restaurant is at Crabtree Valley Mall, there's plenty of parking nearby. I also kept watching another table order what appeared to be ribs presented under a glass cloche filled with smoke. When the lid came off and the smoke rolled across the table, it was pure theater. I have no idea how they tasted, but they certainly knew how to make an entrance! The menu seemed a little more expensive than I remembered from past visits, but my overall meal still felt reasonably priced for the food, atmosphere and service. P.F. Chang's isn't trying to be your neighborhood Chinatown restaurant. It's polished, approachable American-Chinese food, and when that's what I'm craving, it does the job well. This visit certainly did. I originally did not expect to be blown away by the pad thai - boy, was I wrong. This is hands down the best pad thai I have ever had. If you love pad thai, you need to try theirs. I also thoroughly enjoyed the curry. Both dishes were rich and flavorful and came with enough to share between 4 adults. Overall, not having been to Bida Manda in 10+ years, I was impressed and will definitely return.
