Sometimes you don't realize that the beef bone broth is what unites them all, and that it's actually quite difficult to make. Theirs is so flavorful and rich yet so clean that I keep coming back for more. Come for the food. They get you in and out quickly, in half an hour if you concentrate on eating. In three different visits over a span of a couple of years, I've had the vegetable noodle soup, the chicken pho, and beef pho. All somehow taste the same...like nothing. While the overall meal was good, I have to give our dining experience only 2 stars. We ordered pork/shrimp spring roll which was good it was served with peanut sauce (bummer).... I just prefer the very traditional nuoc cham which is typically served with spring rolls. Also ordered the combination beef pho, just ok. Ingredients were definitely fresh and satisfying but what is the hero of pho, the broth, was a big disappointment. I found it flavorless with none of the key flavors of lemongrass, star anise, cinnamon and black cardamom, just to mention a few. The best broths should be able to stand alone and take you on a journey of flavors. Their broth was basically watered down beef broth with none of the complexities of a well made pho broth. It was hectic when I came here around late dinner on a Friday night, and people were constantly shuffling in and out. Pho is solid and the slabs of beef are of very good quality, but the portion isn't as big as I'm used to and the broth could use some more cooking time. It's hard to pinpoint what's missing from a broth, but you just *know* it when you taste it. From what I remember, though the broth wasn't exactly watery, it could have used some extra earthy, umami flavor. The 2 dishes that I and my sister ordered tasted like old or left over food from the day before. The grilled meat was tough, and I felt like the meat was left from the day before, put into the microwave and served. The soup-based dish (Hu Tieu) was disgusting. Food here was bangin. I order Chicken Chow Fun at ivy noodle in new haven typically... this place puts it to shame. I will ask ivy noodle to add vegetables and they look at me and get mad. They say " you have two choices. Either the corn and the mushrooms or the greens. This place did it right. They had tons of vegetables and they had TONS of fresh chicken. Hearty and healthy chicken. It was piping hot and fresh. The noodles were awesome. The only thing I would want to add would be more noodles and a little less veggies. Just a ratio thing. But the food was awesome. I witnessed the most disgusting and inhumane thing at this restaurant today. It was 6 of us ordering different pho. We all ordered beef noodle soup but it differed by type of meat in the soup. The waiter brought 3 soups together and looked confused which one is which. This lady who looked like an owner came to our table and picked up my friends used chopstick and started mixing the soup to see what kind of meat it was. We were all too shocked to stop her at that moment and she just left the table nonchalantly after distributing the soup like it was nothing. Upon our visit, we noticed some red flags that ensure we won't be returning: 1) We watched one of the servers restock the clean utensils at her station -- she dropped a fork ON THE FLOOR, and then proceeded to pick it up and stick it in with the rest of the clean forks. No hesitation. She didn't even attempt to see if anyone around her was watching... 2) The other servers, unbeknown to this fact, grabbed utensils freely from the same stack to serve to customers. 3) Everyone in our party ordered beef pho, and the broth came out slightly warm -- not nearly hot enough to cook the beef, which was served rare and remained rare and difficult to chew through the course of eating our food. Looking around, it appeared that everyone else in the restaurant who had ordered pho also had the same issue. It is not surprising that the average Yelp rating for this business is a little lower than the competition in the area. Visited for the first time this evening after finding that our usual spot was not open, and immediately noticed how crowded the restaurant was. Despite this, Pho Pasteur's system is a well-oiled machine and service is very quick & efficient -- there was a steady influx of customers in and out. I've been hesitant to go anywhere for indoor dining - BUT I was in Chinatown and it was lunchtime and I used to go to Pho Pasteur all the time pre-pandemic - their service is quick, you can be in/out in half an hour honestly. SO went in and ordered my usual, pho bo vien (pho with meatballs - simple and tasty) and it was BETTER than I remember. Generous portion size of everything- the meatballs, the noodle, the onions, the soup - OH THE SOUP. My family has always judged Pho based on the taste of the soup and the soup here always delivers, it's full of flavor and steaming hot. Everything just goes beautifully together. It's described as a spicy beef lemongrass noodle soup with eye round and flank, and it was delicious! The broth is DELICIOUS. Super deep flavor but not salty, I personally prefer it over pho. It wasn't super spicy honestly, but it had a little heat. I didn't love how at the end, the broth became a bit gritty from bits of lemongrass, but that's a minor detail. Stick to their claim-to-fame Pho because those other 2 dishes I just had were mediocre at best. The Bun Bo Hue tasted flat with lack of spice. The pork chops were overcooked and rubbery. Everything was very underwhelming. When we were ready to pay, the waitress took forever to take our credit card. We tried to flag her down but she literally made eye contact and walked by us several times. Listen up lady, say something so I don't accidentally think I turned invisible! And then she rushed us when she brought the receipt to sign. The ink just left the pen when she snatched away the signed receipt from under me. I felt like I was signing a crime confession or something. It was a weird. Overall, decent portion size for the price but the customer service was so rude and abrasive. My table never received water, they've forgotten things that my table asked for, such as side orders of things and our smoothie drinks. It took 45 minutes for our drinks to come. I've from NYC and I've been to some really great pho places, even ones in LA. Pho Pasteur's pho was mediocre. It had good flavor but I've definitely had better. I ordered the tendon beef noodle soup for my mom and it have even less tendon than the combo pho I ordered. The bean sprouts/mint plate did not come with any limes which is strange. A waitress immediately came to get our order when we just sat down so I told her we needed a few minutes. Trying to get a waiter's attention after was terrible. Even when we try to get the bill, it took forever. We decided to walk up to the register to pay, the cashier literally walked away seeing us there. A great place for a big group of people to enjoy a bowl of pho or a rice dish. Came here earlish on a Saturday night with a big group of people to celebrate a birthday. The service was pretty quick to get all of our orders. I would usually order beef noodle soup, but decided to go for something different so I got #58 a vermicelli dish with beef and shrimp.
