    This is third Pings Bistro we have been to. Pings Bistro Warm Springs is located in an off the beaten path shopping center a 1/2 mile from the 168 Market. The menu is smaller than the other Fremont store and serves Szechuan and Yunnan specialties. [[HIGHLIGHT]]The interior decor is simplistic and has a separate private room that hold two large table.[[ENDHIGHLIGHT]] We ordered the following dishes: Organic cauliflower with pork cracklings $24 4.5 stars Yunnan rice noodles $20 large portions full flavored " best Yunnan rice noodles " 5 stars Stir- fried Minced pork & Chili Peppers and Yunnan pickles 5 stars $16 Yunnan style spicy sour Papaya snake head fish fillet soup $43 wow ! 5 stars Sautéed Chayote Leaves with dried Chili Peppers $23 4 stars Osmanthus Honey Milk Jelly with Fermented Rice $8 dessert 5 stars A $15 service fee is added to all checks. We also had the Cold Skin Noodles (Liangpi), a bowl of wide, chewy noodles mixed with a savory sauce and topped with tofu puffs, shredded cucumber , bean sprouts, and a creamy sesame sauce. Hailing from Xi'an, the Braised Pork Pita Burger was fatty pieces of pork braised in a savory sauce, served in a dry round of "pita," but even better was the Spicy Cumin Lamb Pita Burger, which contained a tantalizingly spicy, flavorful filling of tender spiced lamb. The Signature Beef Bone Noodle Soup came with noodles in a simple broth, topped with three bone-in beef ribs. The meat on the ribs was rather tough and sinewy, and the soup on the bland side, but the presentation of the dish was definitely impressive. Finally, the House Special Braised Dry Noodle was a bowl of noodles topped with a savory sauce with lots of different dried ingredients including tofu, s mushrooms, shiitake mushrooms, and red bell peppers. For each noodle dish, you could select from a variety of noodles, but my favorite by far was the 2cm "General Wide" noodles, which had an amazing chewy texture. There were no patrons when we arrived at 2pm and the waitress directed us to a table for six. The waitress said we scan the QR on the napkin box for the menu. The menu consisted of noodle soups, dry and fried noodles, appetizers and grill items. You place your order through the QR. We all went will noodle soup items. You can choose small round, regular round, medium round, small flat, large flat, belt flat and knife cut noodles. There's a kitchen window where you can see the chef making the hand pulled noodles. Each of us placed our own orders so when the orders are brought out, they use the last four digits of the cell phone number to identify the person whose dish it was. I had the braised beef noodle soup and opted for the large flat noodles. The dish has one pepper on the menu but the broth only had a very small amount of heat. The large flat noodles were a little too thick to my preference and might opt for round noodles next time. The beef was tender and the broth was tasty. I don't know what is snakehead fish but it tasted like flounder but firmer. There were pieces of both regular tofu and fried tofu, as well as a couple of quail eggs. The decoration was simple with cute fish lights dangling from the ceiling and display if the noodles from different grains. The service was decent and they kept on checking if we needed more water and additional utensils. We will most likely come back to sample other noodles.
