Went to dinner for our anniversary, requested $25 hold for a not busy Friday evening. Nothing was said or given for letting you know if was our anniversary. Pizza was the best thing -chicken artichoke pesto, then 2 chicken Alfredo's, one steak w/side of veggies, and chicken pasta w/spinach n peas. Each pasta dish was $24 then adding protein starts at $6, all sides were extra, pasta served w/hard bread. I wasn't too impressed. We ordered 2 alcoholic drinks and 2 sodas. This spot has so much potential. It's a huge and adorable patio setting with beautiful attention to detail. The food was good, but nothing to write home about. A pretty baseline level of yummy if you will, something that feels like it will always be consistent but never amazing. We were in Tucson visiting family, my son had to find a place that is celiac friendly. This place popped up and let me say it's in a beautiful plaza, bet welcoming right when you walk in, lovely areas to dine in or outside! We chose outside because the weather was so beautiful! The waitress was very friendly and helpful, she was very kind about the food needing to be non cross contaminated, and completely celiac friendly she went in the back before we even ordered to let them know. we ordered some cheesy garlic bread, gluten-free, of course and a gluten-free pepperoni pizza with basil, everything was absolutely delicious from the pizza to the bread. The bread was cooked so perfectly so nice and soft on the top yet underneath was nice and toasted flavor was perfect and the pizza was wonderful to be honest with you. Visited this week and was very disappointed. My friend and I have frequently gone to Proof for lunch. We both require gluten free options and have enjoyed the bruschetta and pizza in the past. This week the bruschetta seemed old and under toasted and the pizza was greasy. Our salads were great. Thhe service was fair at best. read more

First time here and we were not disappointed. They have an amazing patio which would be great to enjoy live music if you planned right. Our server was friendly, knowledgeable and helpful. The meatball appetizer was delicious, would have loved a slice or two of bread with it. Pizza was good but the crust was a bit soggy. Salad was delicious and loaded with all sorts of things. This was beyond disappointing. Our group came by for lunch and the mimosa passport, saw it wasn't busy, and sat down. We immediately ordered mimosas and our food, and after 30 minutes our food was brought out but our mimosas were nowhere to be seen. They were delivered minutes later and we immediately asked for a second round since we didn't want to wait another 30 minutes for them. The bolognese was cold with overcooked noodles, the "Weekend Bowl" was also cold and missing most of the ingredients. Only potatoes and eggs with cheese, and no onions, no peppers, no mushrooms. The second round of mimosas finally came out almost 40 MINUTES LATER. That's when we decided to close out and go somewhere else. Decent pizzeria that feels like it's trying to be Neapolitan style, but can't quite get there. Still not bad. What I like: Good variety of pies to choose from. Good cheese, and the pomodoro sauce is outstanding. I'm not a dessert person, but Proof's pastries and cakes are the best part of the meal. Lemon bars are great and the flourless chocolate cake is out of this world! So kudos for that! Ugh... I hate writing about bad experiences I had but I just have to let whoever owns proof how terrible your business has become. My family and I use to be frequent flyers. We knew a server named Chris by name and he knew ours. I would rave about the bolognese and the fresh noodles. The drinks were always delicious and well crafted. However we noticed that the food started to get worse in terms of quality and service was slowly getting worse. Chris moved on and he took the food and great service with him. We stopped coming because the service in such a small place was so poor and again the food was loosing its quality. Yesterday we had a party of 11 and were sat right in the front. No biggie. We asked for waters that literally never came until the end of the meal after we had to ask the host for them. We had a reservation for 2:45pm not even peak time. Our server simply just disappeared after it took 20 min to get our drinks. Mind you there was 3 people sat the bar and no one else in the dinning room. My son's cheese pizza was cold and so was my margarita pizza. The cheese congealed very quickly. My sister pasta was over cooked and mushy and had no flavor. Chicken pacatta is supposed to have some lemon citrus and it has none. Ordered dessert I remember the tiramisu being great. It wasn't. It was dry??? How is it dry?! Idk. I don't want to know. Yes I ate the whole damn thing because I was still hungry. I'm so disappointed with this place. We won't be back that's for sure. read more

First time ordering today. I've been intrigued, but the pizza didn't say a size on it. It is definitely a small pizza. This was an expensive order for three small pizzas, one brownie and one lemon bar. Very, very expensive. One accidental taste of the lemon bar, while cutting it and I felt very fine about the price. I had hope for the pizza. I was not disappointed in that hope. This is real pizza. There is a reason it is expensive compared to many other pizzas. The quality of the ingredients, the .. whatever their chef does that is different from what other chefs do ... oh my word! I told my son, "This is Bill level pizza." Bill was a man from Greece that made pizza so good that, back when long distance calls were excruciatingly painful to pay for, a food critic from Chicago was spending so much time on the phone in our teeny town in Alaska, trying to argue his editor into letting him give a review of the restaurant. We are waiting for Bill to be resurrected and we used to sing the chorus of the song about the pizza man (1970s) about him and call him, "The Pizza Man." He had some touch that made it so that he could use the same exact ingredients as his brother, who he owned the restaurant with, and make something that was just floating far, far above what his brother could create. I came here on a Sunday afternoon around 2pm and it looked like the plaza was super festive for 'earlier' brunch goers. The DJ was still around and intermittently spinning music, but also had a break for a late lunch. The weather was perfect for outside dining, but Proof's patio is situated behind the DJ's booth. If you want to people watch, be sure to sit in the back, right corner of the patio. I have been on a pizza kick for a couple of weeks now and am slowly making my way through all the local spots in search of the best pizza. Proof's pizza could possibly be in the top 5-10. I ordered the Proof (pomodoro, pepperoni, finocchiona, sausage, prosciutto, mozzarella, provolone, thyme) and really enjoyed it. The crust is crunchy on the outside and soft on the inside. The cheese pull is decent, as is the amount of sauce on the pizza itself. The sprinkling of the herbs on top was also a nice touch, and enhanced the pomodoro. I found the sauce to be perfect, it wasn't acidic or salty and the amount of toppings was just enough to where I didn't feel I was cheated. ;P I didn't leave myself any room for dessert, but my experience was positive and I'd come back to try more. read more

Between the 3 main restaurants in that square you can have "Free Flowing Mimosas" for $30 at the original place you ordered them and 1 cent each at the other two. It really is an awesome deal, highly recommended bouncing around with some of your friends or family. I just wish we started at Proof. Out of the 3 spots, Proof had the best indoor/outdoor bar area. It was not crowded at all, our service was great thanks to Brandon! We had a great conversation with him (ask for the blueberry mimosas when you are there) and he makes killer espresso martinis. We went to all 3 spots and came right back to Proof. Enjoy that area now before it gets too hot, plus they have a "closed" patio so it will not be bad when the summer does come. read more

My friends and I came here last night, and were able to be seated right away. We were told to pick any table we wanted and our server was with us quickly. Walking in, the patio was very cute with all the lights on, and the inside of the restaurant had a small and cozy feel. We order the Greek 2.0 pizza and the Insalata California salad (both without the olives) to share. The salad was delicious and refreshing! The pizza was unfortunately a little floppy, making it too hard to eat with our hands, so we ate with a fork and knife. Despite this, the pizza still tasted great.
