On our drive home from Miami to Jacksonville, we traded Interstate 95 for the slower, more scenic A1A. It made for beautiful views, but after crawling through one coastal town after another, lunch became a priority. A quick search landed us at Stage Kitchen & Bar on PGA Boulevard, a restaurant I later learned had earned a place in the 2025 Michelin Guide. After one meal, it was easy to understand why. We began with two appetizers that could not have been more different, duck confit egg rolls and a grilled cheese. Calling the grilled cheese "just a grilled cheese" would be unfair. Brie melted between perfectly griddled bread kissed with white truffle oil already sounds luxurious. Pair it with a bright mango jam and suddenly a childhood comfort food becomes something unexpectedly elegant. Richness met sweetness in all the right proportions. The duck confit egg rolls were equally memorable. The duck was deeply seasoned with Middle Eastern spices, giving each bite layers of warm, savory flavor. The accompanying peanut chutney added sweetness, nuttiness, and just enough contrast to keep the dish from becoming too heavy. These egg rolls packed far more personality than their modest appearance suggested. For lunch, my wife ordered the grilled black grouper sandwich. The fish, sourced fresh from local suppliers, was flaky, moist, and clean tasting. Lettuce, tomato, onion, and a malt vinegar aioli gave the sandwich brightness without overwhelming the fish. It was simple, balanced, and exactly what a fresh fish sandwich should be. I chose Stage's signature burger, two Certified Angus Beef patties topped with aged white cheddar, caramelized onions, sunflower sprouts, and their house "fancy sauce." This is the kind of burger that reminds you why burgers became America's favorite sandwich in the first place. Cooked to a juicy medium, every bite was rich without becoming heavy. The caramelized onions added sweetness, the white cheddar delivered sharpness, and the sunflower sprouts provided freshness and texture. The fancy sauce contributed just enough heat to keep everything interesting without stealing the spotlight. Dessert continued the restaurant's habit of taking familiar flavors and giving them thoughtful refinement. My sticky rice ice cream, finished with mango sauce and toasted coconut, captured everything I love about mango sticky rice while transforming it into something lighter and more playful. It was creative without feeling gimmicky. My wife ordered three macarons from local pastry maker Macaroner, S'mores, Passion Fruit, and Lime Coconut. Each shell was delicately crisp before giving way to a soft, airy center, exactly as a proper macaron should. Stage Kitchen & Bar takes familiar dishes and quietly elevates them through technique, quality ingredients, and restraint. Nothing feels overcomplicated or designed simply to impress. Every plate feels carefully considered. Sometimes trusting Google is a gamble. This time, it paid off. Great restaurants don't always announce themselves. Our waitress was personable and checked and occasionally during the meal, but not as much as I would expect in a restaurant like this with the prices they charge. Both my niece and I started with the Caesar salad and I had finished mine first. The dirty plate was just sitting there while my niece was finishing hers because she eats slower. When I'm paying the kind of prices they charge here, I expect the plate to be taken away when I'm done, which I obviously was because I even moved the plate to the side of the table and then I finally asked another waiter to please ask my waitress to take it away. When I said something to this waiter, he said it is their policy that everybody finishes eating and then they clear the plates. I'm wondering what high class restaurant really teaches their staff to wait until everybody is done so that you're looking at dirty dishes if you've finished first. I also want to mention here that from the time we ordered our meal to the time we got our Caesar salad was almost 30 minutes. There were only a few parties in the restaurant, so it was not because the chef was overworked. We felt like we were completely ignored by the staff. Whereas our waitress, again, was friendly enough, I don't feel we got excellent service from her. On the other hand, there was a couple dining next to us - an elderly couple from Palm Beach - who every single waiter in the place was basically fawnng over. When I saw how we were being ignored, but then noticed other tables had waiters chatting with them and providing what I consider excellent service in a restaurant like this, it really put a damper on the evening. The only reason I'm writing this is that I'm hoping that the manager reads it and understands that when you are running a restaurant in Palm Beach off-season and you have obviously two residents who have come in for dinner, you treat them well. You don't act as though they're transient and no matter what kind of service you give them they won't come back so what does it matter Now to the food. The Caesar salad was a little unusual in that it had a poached egg on top but interesting. And filling. I almost wished I hadn't had the salad because then it was very hard for me to eat my actual meal. I had the risotto which was very very good, but I had to take half of it home. My niece had the King salmon which she raved about. One thing they are serious about here is knowing everybody's allergies. My niece is very allergic to nuts and our waitress made sure that she had all of them listed on her sheet. This is one of the few restaurants anywhere in Florida where everything is wild or grass raised grass finished meat. The salmon is wild salmon and not the usual farme salmon that you get in every other restaurant. That in itself is very impressive. The Bronzino is also wild bass from the Canary Islands. The meat is all pasture, raised grass fed and finished. The sauces are prepared fresh for each dish. So this review should actually be 3 1/2 stars but it was definitely not four stars. I would like to come back just for the food but not really wanting to be ignored by servers again. We will see.

But for $90, with two inedible dishes, it wasn't a great experience.

Overall, this isn't a place I'd recommend, and I hope management takes a hard look at the service and food quality. It wasn't the start I wanted for my birthday celebration.
