At first, I wondered if this was simply the restaurant's style of preparation, but after researching further, I learned that improperly cleaned tripe can be both unpleasant and potentially unsafe to consume because tripe comes from the stomach lining of the animal. Uncleaned tripe may still contain food residue, digestive material, parasites, worms, bacteria, and strong bile or waste odors. This can potentially lead to issues such as foul smell, unpleasant taste, food poisoning, bacterial contamination including E. coli or Salmonella, and symptoms such as stomach cramps, vomiting, or diarrhea.
