It's so rare to find a place that does a proper 3-day slow-fermented pizza dough, so my mouth (and tummy) was so happy to find this place. My son, granddaughter, and I were craving great pizza and decided to try this somewhat new pizzeria -- and we're so glad we did! The Caesar salad is non-traditional in the best way. The variety and freshness of the greens really stood out. As a vegetarian, I initially hesitated when I saw what looked like bacon bits, but the owner kindly assured me they were seasoned breadcrumbs -- such a creative and delicious touch. I ordered the potato pizza, and my granddaughter chose the pepperoni. She devoured nearly the entire pizza in record time, so I think it's safe to say she gives it five stars! My potato pizza was the bomb -- bursting with flavor. The pickled peppers added the perfect tangy kick. Both pizzas had that wonderful thin, crispy crust that I absolutely love. The service was friendly and attentive. While the pizzas are on the smaller side and perhaps a bit higher in price, the fresh, quality ingredients make it worthwhile. I also appreciated seeing a Palestinian soda in the refrigerator case, with 50% of the proceeds going toward a Palestine support fund -- a thoughtful and meaningful touch. I saw Slow Co. highlighted on a social media article a few weeks back. And since I pass thru cotati quite a bit, I knew I'd be trying it soon. Yesterday was the day.. had to get my windshield replaced in Rohnert Park and stopped by Slow Co. on my way out of town.. Really well put together space, very nice decor.. simple but nice. So clean and smelling delicious of food they were preparing..Bathroom was absolutely spotless too. You can tell they care. Met the owner, and chatted up the Sonoma County Pizza scene while going over their menu.. Personal size pizzas, just the right amount. But if you want leftovers, but two pies. We got three pies, the fungi, the sausage and the pepperoni which I had them drizzle hot honey on. Oh my goodness the flavors are amazing. All three pies were excellent and perfectly cooked. Nice undercarriage, the crust is some of the best I've had on a Neapolitan style pizza. Lots of parking, and located in a quiet and safe neighborhood. I can't wait to come back in the spring and sit on the patio and have a couple brews and pies. Great local beer selection with beer on tap and in can. Wines available too. Give it a try if you are a pizza connoisseur like myself. I would love to see another salad option and a few more pie options too. Somewhat limited but tasty menu options. But the menu is great the way it is.. I'm just trying to think of something they could do different. And that's about it, because we loved it! read more

New favorite local pizza spot! Stopped in on a Sunday evening and there were a few people eating in the restaurant/in line when we got there. Easy to get to and easy parking. We ordered a couple pizzas and a rip and dip to share and sat inside. The dinning area was cute with different snail decor and plants. The rip and dip came out pretty quickly and was fantastic. The dough was soft and fluffy. Our pizzas came out pretty quickly after and both were amazing. Thin and flavorful crust, paired well with the left over dip we had. Had been wanting to try Slow Co for a while and finally got my chance. Pizzas are personal size (6 slices) and is great for sharing or devouring yourself. Overall flavor was great and loved the unique topping choices. If you get a pizza with the red sauce, it was quite watery and if you get GF crust, it is necessary to get it cooked extra well/crispy or else it's floppy. Though I must say; GET THE SIDE OF RANCH! Mmmm. Pizza. My husband and I stopped in on a random Tuesday around 6pm and the place was empty. That initially made us a little nervous, but based on the reviews, it turns out we just came at a quiet time. All the tables had fresh flowers, which added a gorgeous touch to the already bright and quaint restaurant, and the sparkling Christmas tree gave off sweet holiday vibes. Service was friendly and inviting. Pricing, along with our level of hunger, had us stick to just one pizza. It definitely falls within the "personal" size category, but everyone's appetite is different. I left feeling satisfied sharing the pie, but if I'd been hungrier, we might've had to battle for the last slice. :) For me, the dough is key and theirs is excellent. You can taste the quality ingredients; it had a great chew, perfect char, just the right thickness (for me), and an overall really good flavor. There was just the right amount of sauce, and the toppings--simple pepperoni--were flavorful, not greasy, and tasted high-quality. I paid $2 for a very small side of arugula (maybe 6-8 leaves), but it was the perfect addition to my pizza. (side note: I do NOT understand $3 pricing for a side of ranch, no matter the clever naming. I make my own at home, I'm not a restaurateur, I get that people can go wild with how many they request, and I have no problem paying extra for a house-made condiment... but $3 still feels high.) Our total was $27.50 (before tip) for a personal pepperoni pizza, one draft beer, and a small side of arugula. Really nice staff here. Easy parking. No wait on a Friday around 6:00 p.m.. Outdoor area where you can dine with your dog. A few simple games provided (connect four, that game where you swing a string with a keychain ring at the end and try to get it to land on a hook). We ordered 2 pizzas and a salad. Total was $61.44 including tax/tip. They said there was a 15-minute wait, but it was just a few minutes for the salad and maybe 5-10 for the pizza. Another Friday....another pizza to try! Came here a couple weeks ago to try out Slow Co. Pizza that everyone has been raving about. I think an important thing to remember when dining out at a restaurant, especially if has been featured in a news article is that service is going to be slower. Aware of that we were greeted with smiling faces when we entered, but also told that because they were so busy, they gave us plenty of time and definitely delivered it in the amount of time. With that expectation, my husband and I enjoyed our beverages and saw other parties play with the board games they offer at the restaurant. Ordered the Pretty Fly for a Fungi and Pep in Your Step pizza, Brussel sprouts and some of their special beverages from their cold case. The thing that stood out to me about the pizza is that it was crispy until the center. Slow Co Pizza is a must try artisan pizza spot located in downtown Cotati! I stopped by on a Friday evening and they were packed! Even though they were busy, service was quick and the staff were super friendly. I ordered the Pretty Fly for a Fungi pizza, which came with a  white sauce, seasonal pesto, estero gold cheese, mushrooms, shaved estero gold reserve cheese, and arugula. The arugula on top made it feel like I was enjoying pizza and salad all at once.  You can taste the quality ingredients including their pizza dough, which they make from a sourdough starter that is fermented for 48 to 72 hours. This is a lot longer than most pizza places. The pizzas are cooked in a specially-made Pavesi dome oven, which cooks the pies quickly and it helps create a crunchy crust too.  All the pizzas are personal and are 10 inches. If you're dining with others, you can easily add a salad to make it a meal. The menu has a good variety for everyone including the traditional pizzas (pepperoni and cheese) and seasonal pizzas that highlight local ingredients. You can also add toppings to any pizza. They also have natural wines, draft beers, and beverages available.  They have a small amount of seating inside and a lot of seating outdoors in their patio, which will be perfect for summer time. read more

In an area where people have been complaining that there are too many pizza places, we have here yet another one. However, this one is different. My wife and I heard about this new place in Sonoma Magazine. Consequently so did a lot of other people. When we arrived they were utterly slammed. They weren't expecting the article to be published for another week and they had to scramble. It's located adjacent to the town square, or more accurately, hexagon. Which also happens to be a mobile internet dead zone. This place deals in individual personal sized pizzas, I do have to admit a lot of it is just too fancy for my taste, but they did make a nice pepperoni for troglodytes like myself named the Finnster. My wife had The Hogwarts Express, a fancy thing with red sauce, sausage, fennel, shallots, and mozzarella. I tried a piece, the fennel really worked better than I thought it would. The owner clearly gives many fucks because they just had such lovely, fresh, Springtime herbs and vegetables like asparagus and snow peas and dill in there with a chill dressing that just allowed the salad to dig. Just had an excellent experience at this restaurant! Had to charge my Tesla and me and my 1yr old and 7 yr old walked over. Ordered a delishes gourmet pizza and had a soft serve ice cream while we waited. My girls were getting a little Antsy so we went to the park outside and the sweet server brought our pizza out to us! Two years ago we gave up on local pizza and started making it ourselves with "00" flour and our Ooni oven. On occasion my husband would still get a pie from a couple places if he was near them, but all told pizza bloats my stomach and makes it ache unless is really high quality and low yeast. Then we tried Slow Co!!??!!?? High quality local ingredients, sourdough crust, roasted veg seasonal small plates that make any vegetable irresistible, and insanely fresh salads... and suddenly we have a go-to pizza spot again! It also helps that they have amazing vanilla ice cream with toppings if you want to end with a treat. Our favorite is the Hogwarts Express with primary toppings being crumbled sausage and fresh fennel. Veg we've had everything since the Brussels sprouts they had on opening day to roasted cauliflower, broccolini, turnips (!! Unbelievable), potatoes, carrots and most recently kale. Downtown Cotati on the square they have plenty of parking and a welcoming, bright inside space but I can't wait for warmer weather to enjoy the expansive outdoor setting as well. Pizza crust is like bitting into fresh sourdough bread, light with sauce and toppings. Makes a perfect light healthy pizza. Definitely has lots of flavor, but fresh ingredient type flavors. We read a very complimentary article about Slow Co. Pizza in Sonoma Magazine and decided to visit for dinner on Friday evening. As expected, a bunch of other pizza craving folks were there for dinner too and the line was almost to the door. We ordered at the counter and was given a number to place on our table - water, utensils and napkins were self serve. (Also, be kind and bus your own table when you leave) Despite being incredibly busy and short handed that evening, the team was warm and gracious. The pizza crust was wonderful - blistered, crisp with chew, and nice leoparding (iykyk). The cesar salad here was different from and soo much better than the usual version. Wow wow wow!! Visited Slow Co over the weekend. Enjoyed their huge back patio. Lots of space for the kiddo! Had the seasonal Life on the Veg pizza (summer squash, spring onions, house ranch, mozz, maybe pesto?), Margherita pizza and cheese pizza. Also tried their one of their apps that changes weekly- snap peas with dukkah seasoning, aioli, little chili paste/sriracha on top. Blew me away. Everything was spot on and arrived quickly! This place is nothing short of Amazing!!! First the service and hospitality is top notch. Danny was incredible to work with to put together a larger party of 9 for my adult sons birthday. So friendly and welcoming. Now let's talk about the food. We started with the Caesar Salad and farmers cheese. Wow! The dressing on the Caesar was so good but the farmers cheese blew us away. It is incredibly delicious. A must have for our family going forward. Then came the pizzas. For our table we ordered the R-Rated, pretty fly for the fungi plus sausage, Hogwarts express, pep in your step, and the spicy Rojo. All of them were fantastic. The crispy dough and toppings are just so perfectly portioned and expertly wood fired. Most ate a full pizza and we took very few slices home. Danny graciously allowed me to bring in a home made pineapple upside down cake (my sons favorite) which we added the yummy soft serve they offer on the side. It was a perfect compliment. I ended up ordering one more hogwarts plus pepperoni to take home too! We celebrated indoors due to the weather but will definaly return and enjoy the lovely patio soon.
