I visited Sol Cocina today and had a delicious lunch and amazing service. We were warmly welcomed and seated immediately during their lunch hour. Thomas was our server and he helped me decide between two plates. I ordered the goat cheese enchiladas with carnitas and I was not disappointed! Went for happy hour. Good Margs and guac, and enjoyed the animal taco. Skip the quesadillas and the chicken tacos (not worth the price). The building is cool, but all the booths are peeling and gross-felt yucky to charge what they do for dinner, then have a peeling booth cutting into your legs as you sit. Was craving Mexican food and dropped into SOL for late afternoon lunch. Ordered the ribeye quesotorta because the menu description seemed novel and enticing. Was served complimentary house made chips and salsa along with a tasty refried black bean dip. My margarita was built to specification. So far so good... My torta arrived with the slab of steak slicked up with oil. The cut was quality enough, but it had been skillet fried in a pool of what I suspect was Whirl, instead of the garlic butter referenced by the menu. The meat was gray, not browned, and cooked through well done. No Maillard sear reaction for this guy. Only serious greasy business. Greasy can be good. This was the other kind of greasy. Among the included sandwich condiments were pickled jalapeños, no doubt from an industrial sized can. The torta was flavorless overall and I could not finish it. Within an hour I was in the throes of an epic bout of indigestion that lasted through the evening. No bueno. Service was lackluster but I tipped 25% with consideration to hospitality workers. I discovered just before writing this review that I was there during happy hour, after 3:00, and yet the happy hour menu was not brought to my attention. And I was charged full fare for my margarita... The environment is Cali swank but sterile and lacks personality. Other patrons in my vicinity included a pair of crypto bros, a young tourist couple, and a pack of suburban cougars. As I left, the space started filling in with more customers. I am not sure this establishment will last long in Denver, where we enjoy an abundance of better Mexican options. SOL's website describes their restaurant concept as dreamed up by California surfers. I prefer that my Mexican cuisine is created by a passionate Mexican chef. My experience dining at competing Richard Sandoval restaurants is mixed, but every one of them has been a superior experience to SOL for upscale Mexican. read more

I've only been here once, but wow! I am very into this place. My friends and I were brainstorming places to grab dinner in the area before going to the Botanical Gardens, and someone suggested this place. I had never heard of it, but Mexican food sounded good, so the decision was made. Right off the bat, SOL started standing out. Firstly, while perusing the drink menu, I came across a pineapple and vanilla-infused tequila that could be served as a shot or a martini. That caught my eye right away. How refreshingly different from the standard drinks you're likely to find at all Mexican restaurants! Secondly, the waitress brought out chips and two dips for the table: a black bean dip and a smoky salsa. Super good. Already making an impression. I mixed the two and quickly became obsessed to the point that I almost spoiled my appetite for the actual dinner. I ordered the pineapple vanilla-infused tequila as a martini and, as expected, it was superb. The pineapple and vanilla flavors were both noticeable and balanced each other well. I had to get another one because I couldn't get over how smooth and delicate it was. To eat, I ordered the Taco Vampiro (double tortilla stuffed with melted cheese and filled with carne asada) (yum) and then I split the Canarditas Duck taco plate with a friend. The Taco Vampiro was my favorite (I could not get over the cheese), but the duck was great, too! It was served with avocado and a jam that complimented it perfectly. Overall, I was just really impressed with the food here. I had no real expectations going in, so I just kept being pleasantly surprised about everything. Randomly stumbled upon this restaurant during an afternoon of running errands and I'm so glad we did! They were serving brunch and their normal menu when we went. I got the Papas Papi (vegetarian style) and my husband got their torta bufalada. We both loved our respective dishes. Quite flavorful and delish! This was one of the most awful experiences I have ever had at a restaurant. Tried to enjoy Sunday brunch and was extremely let down. The food was dry and overcooked, this was even after I ordered an over easy eggs on top to ensure it wouldn't be dry. The added eggs were not runny, as they should have been. Our food was dropped and not once did the server come back and check on us. I asked a staff member walking by if we could have a side of crema and all I got was an eye roll and said "that would be an up charge". Totally get being charged for everything you order I just wanted to enjoy my food. When that never came after 5 minutes. I walked up to the bar to ask for crema, as we were in the bar area, the manager on duty said he would get that over. Another 5 minutes pass and it was dropped off by a runner and yet nobody came by to check on us. By this time my food is cold and patience was done. I had to get up, yet again to drop off my credit card to the bar top, as I figured out the bar staff was taking care of us. Had it been some small bill/hh it wouldn't matter as much, but when I'm paying 165 I would appreciate at least some semblance of service/hospitality. Right off the bat all I can say is I would recommend this place. I am in town for a work event and popped in here for dinner. I recommend making a reservation because even on a Monday at 7:30 they are extremely busy... We ordered drinks and the Mojito it was delicious, we also got the ceviche soul and the corn as appetizers. Definitely recommend those two things on the menu, I should have skipped my dinner although it was amazing and just eating a second portion of the appetizer selection. For dinner I got the kale salmon salad and I do recommend it for sure still. The ambience is super trendy/chic and on a Monday night seem to be a lot of work dinners but I would definitely come back here or recommend to come back for a date night. Chips and Salsa: This was the biggest negative for us and a major reason why I decided to give Sol a 4 star rating. The red salsa was quite bland and had little to no spice. The chips were a bit too large. However, the black bean dip made up for the red salsa and was delicious. Food: The food was great. For our appetizer, we ordered Mexican street corn which was phenomenal. Hands down the best thing we ordered all night. It was so good we had to order another plate. For our entrees, we ordered carne asada burritos, which can be eaten in regular style with a tortilla, in a bowl, or in a "skinny style" (see pictures). Each of the burritos came with your choice of 2 sides: black beans, quinoa and cranberry salad, cole slaw, or rice. Environment: At least when we went for dinner, Sol had dim lights giving it a very relaxed ambience. The restaurant felt "upscale" with its decor. We were given the option to seat ourselves in the "casual seating area" or to wait for a table to open in what seemed like the area designated for reservations. We opted to seat ourselves since the wait time for the reservations area was 45 min. A waiter immediately gave us our menus once we found a table to sit at. Customer Service: All the staff members were friendly and responded promptly to requests for more salsa/chips and drinks. Staff comes to your table to prepare the Mexican street corn (see pictures for more details). Tl;dr: This is a Mexican restaurant with an "upscale" vibe and congruent prices in the $15-$20 per dish range. The red salsa was not strong, but the food (especially the Mexican street corn) made up for it! If you're looking for a "fancier" Mexican restaurant in Denver, you can't go wrong with Sol. read more

I suppose I should have looked at the most recent reviews before coming here, but I had heard of Sol Mexican Cocina from their location in Scottsdale so the anticipation was REAL! I can honestly say that the best thing we had here was the water. They do not salt anything: their duck (always should be salted), rice, beans, chicken... everything was devoid of any seasoning. The avocado on my plate wasn't ripe yet. The duck is apparently flash fried directly from the freezer so that was literally cold to the bone; this makes you question the food safety for this place to not even temperature check their food before serving it. The best way to sum up this experience is that SOL is trying to market itself upscale, but it simply can't get the basics right. This was a sore disappointment, give the esteem it has been held up to, and it is enough to make you lose your appetite. Do not waste your time or money here. There are other great restaurants in the area that understand how to flavor their food that could be more deserving of your business. read more

I did really like the smoky salsa brought out with the chips but found that the El Volcan lacked flavors beyond spicy-ness and was a rather small portion. Second time back here and it was pretty good I have never had elote and love the stile they had for this place shaving the corn off the cop and mixing it together it was really good I recommend. I ordered the steak tacos for the shrimp was definitely my favorite it was kinda fried I believe but really good also my mom ordered the chili relleno and it was so good it was light and had the right amount of spice and all that overall service was good food was good would come back and probably get the rellenos next time with at least one taco.
