As I told the guy in the kitchen, "dude, I'm in my 70s and have just had the absolute BEST mussels on the planet. The sauce was decadent, the mussels were tender and plentiful, and the accompanying salad, rice and macaroni salad just enhanced the flavors! My wife had a BBQ pork poke bowl, but could not finish it. Breakfast tomorrow! The prices were reasonable and the service was excellent. BTW, I also had a spam musubi. Hard to describe, but again, the starter started things. So glad we had the opportunity to visit the establishment! Now, if they only sold beer a day wine!!! A vibrant edition to an honestly pretty dull food scene in Fairbanks! Sukas offers bold and refreshing island flavors that you can't find anywhere else in town!!! Nice selection of fruit smoothies with mango, banana, strawberry, etc. I had the spam katsu bowl and it was delicious! If you haven't had spam before when it's fried right it has a crunchy outside with a sweet glaze and a tender juicy inside that kinda tastes like pork. Suka's absolutely nails the flavor and texture. If you love savory food you will love it! The side salad has crisp veggies and a slightly tangy ginger dressing. Mac salad is delicious with the perfect balance of creaminess and citrus flavor. It really makes you forgot you are in -40 degree weather. Overall service was fantastic. The whole place feels like sitting at the kitchen table waiting for a home cooked meal made with love. A total gem in Fairbanks! We got the garlic mussels and the chicken katsu loco moco, and both were delicious. The gravy on the loco moco was so flavorful and rich and the portions were huge, even for the small/bowl size. I grew up dancing in a halau, have been to Hawai'i over 20 times, and was born and raised in California where there's no shortage of amazing Polynesian and Hawaiian food. Even with all that, Sukas stands out as authentic, generous, and just plain good. You can taste the heart in every dish. If I ever find myself back in Fairbanks, I'd 100% come back here again. Honestly such good food and kind staff. We had to get to go for our flight out of Fairbanks and I'm so happy we got to stop by. 10/10 people and 10/10 food. The food was crispy and hot! You would think when they say huge portions that they are just saying that. Especially if you are coming out of town, but my gosh they are true to their word. A spam Katsu comes with six Pattie's of spam, sticky rice, delicious macaroni , and salad (coleslaw they called it). Me and my husband can eat, but we were overwhelmed. Very unprofessional and if you're cool with rambunctious kids then you'll be fine. I gave them four chances because the food is good butl not a single time did I get what I ordered.
