    I went to Sushi by Scratch for my birthday, and it was a fun, casual omakase with a speakeasy vibe. You get a secret text with the location, start with drinks and small bites, then move into an intimate 10-seat room for a 17-course omakase. The chefs were skilled, the fish was fresh with clean cuts, and they paired drinks well with each course. The vibe is relaxed--no dress code, not your traditional omakase feel--which I liked, but it could use music or something extra to match the modern, hidden vibe. There were a few slow moments, but overall, it was a good time. Well-timed, attentive service throughout. I'd recommend it if you want a laid-back omakase experience without the fuss.

    Hands down best omakase that I've ever been to!!! The staff are so nice and provide a friendly atmosphere. Omakase is genuinely about the experience and quality of fish. Sushi by scratch had both. Every course was melt in your mouth and had me craving for more. I love the twists and different flavors they add to make each nigiri unique. This experience had me thinking about it for days. This is truly my favorite omakase in dfw!!

    If you like modern style sushi, Sushi by Scratch is where you need to go. Sushi by Scratch is catered to more casual fans of sushi and their preparation techniques showcase this. What I mean is they go heavy on the sauce and toppings on top of each piece of nigiri. Whether it is melted bone marrow, truffle sauce, lime, etc... each piece gets something drizzled on top. While the sauces taste good, it kinda takes away from the flavors of the fish. Modern style isn't bad, all the pieces taste good. However, the fish doesn't seem to be the main "star" in the flavor profile. I say again, it's good. Sushi by Scratch does give a small "speakeasy" vibe since they send you a text telling you where to go in the The Adolphus Hotel.

    If there was an option to put 10 stars I would! Absolutely SPECTACULAR! The experience worth every penny! Delicious 17 course omakase! I highly recommend ordering special cocktail which is essential secret cocktail prepared by bartender based on your preferences. That was the best cocktail I've ever had!!! In general I can't express how amazing this place is! We paid 1017$ for four with drinks, tax, and gratuity! We each had 2 cocktails. Just to give you an estimate.

    My first Omakase experience and I highly recommend! Got there on time for the a pre-dinner cocktail and canapés. So worth it! So if you book, be there 30 minutes prior to your reservation time! Now, I had no expectations since it was my first time. Loved the vibe with the group and the staff. And the food was amazing. I did the drinks pairing. They do have one with whiskey and you can ask and they offer you a wine pairing as well, since it is not on the menu.

    An incredible concept and experience! Dining can be solo or a group. Easier reservations to achieve in smaller numbers. I didn't think that I liked nigiri/ Omakase, but I was proven wrong. I've been to Japan and this was a whole new level of dining. Each of the 16 options that the chefs prepare table side have a myriad of flavors. The ambiance was quiet / dark / intimate. The chef/ servers were fun , friendly , and educational. The service was top notch and well worth the mandatory 20% added to your bill. The food stole the show as you leaned in to the chef's narration while you watched them create edible art. The overall bill is $165/pp, sans any add ons. $125 for the premium sake pairing. Truffles / Caviar add ons $75 each. A special moment that must be experienced if you're a foodie ! Enjoy and hope you'll LIKE my review ;)

    There are so many omakase restaurants in Dallas area now but I decided to take my mom here for her birthday and we absolutely loved everything about it!! Such an intimate space and when you first check-in, you are directed to a waiting room area where they serve a small cocktail and an amuse-bouche. Then the host takes you back to the sushi bar, its only seating of 10 people. There are 3 chefs and one server for drinks. Each bite and each sushi piece was so delicious and flavorful!!! My mom doesn't go to omakase often but she loved the experience and loved the food as well! At the end, because it was her birthday, the chefs and the whole group sang her happy birthday and they took a Polaroid picture for us to take home! What a nice little treat. Definitely recommend going here for any special occasion! You will not regret it!

    This was by far the best omakase experience I've ever had. Everything was just perfect and you can tell the host and the chefs truly love their craft. It was intimate, fun, a learning experience, and overall extremely delicious. What more could you ask for?

    My reviews typically highlight photos to really get an idea of the ambiance, cuisine, and drinks. However, Sushi by Scratch is so unique and the lighting is not designed for photos - it's designed for people to forget about everything else except the curated experience at an elevated level even from the start as you find the secret door in a regular hotel hallway.... And that's exactly what your time will look like. Yes, I love high-end sushi as you know from my other reviews and I absolutely give Sushi by Scratch my enthusiastic endorsement - great food, fun experience and unique. It's a small number of people seated with you and everything is tailored to a nice, intimate experience with your staff while enjoying very high quality sushi. So many courses, so much attention to detail in careful presentation with lots of flavor compliments to enhance each bite! As for the cost? If you just get the dining experience and water, you'll still have a good time but I say splurge a bit - get some cocktails or a pairing flight, pop for the extra courses at the end - have some fun! It's sushi done splendidly! Tell the GM, Beau Taylor, that Tait says hello :)

    I won't go into too much detail on this review because the whole point of this restaurant is discretion. The experience here is very personal and not intimidating for those who are not sushi or culinary afficionados. All you need to know is you need to bring your full wallet. You will get what you pay for... and you will pay! Well worth it! We had the complete experience (if they offered it - we accepted it) and I suggest you do the same, if you can. Culinary Excellence!

    Everything about this experience was amazing! My husband and I did this for a date night. I am not a huge fan of raw sushi - but this has definitely made me change my mind. Every piece was amazing - and got to try several things I have never had before. The atmosphere is beautiful and felt very intimate. Definitely worth it.

He checked in with us throughout the meal to make sure everything tasted good, offered to cut our hand rolls in half so we could share, and even gave us a salmon belly on the house. Black Cod Nigiri ($6): Best bite of the night and it was on the seasonal menu. It was cooked and I'm not sure what they did to it, but it was absolutely phenomenal. Salmon Truffle Ponzu ($18): My second favorite dish of the night. The salmon was super fresh and the truffle ponzu elevated the whole thing. Scallop Foie Gras ($24): Beautiful presentation and good but surprisingly not as flavorful as the salmon truffle ponzu. I was expecting more umami from the foie gras. Salmon Belly Toro Nigiri ($16): Salmon belly with fatty toro topped with ikura. Delicious and melts in your mouth. Toro Wagyu Uni Nigiri ($22): Fatty tuna, A5 wagyu beef, and uni nigiri. My husband thought it was fun to eat, but said he would not order it again. Nodoguro Nigiri ($13): I looked this up, and it's apparently a rare high end deep sea fish from Japan known as the toro of white fish. Based purely on taste though, I thought it was okay and did not compare to the salmon belly. Kanpachi Cherry Blossom ($6.50): A pretty rosy pink color with a subtle cherry blossom flavor. Okay in terms of taste compared to the other fishes we had. Ami Ebi Nigiri ($10): The sweet shrimp was a bit too raw for me. Crab Uni Butter Nigiri ($12): I did not really taste the difference between the uni infused butter and regular butter so I am not sure it is worth the price, though it was still good. Snow Crab Handroll ($7): So much better than imitation crab. Recommend out of all the handrolls we tried. Eel Handroll ($7.50): Not my favorite but my husband said it was one of the best eel he has ever had. Lobster Handroll ($12): Good but nothing special. Volcano Roll ($28): This took the longest to make and was the last item we received even though we saw them start preparing it at the beginning of the meal. The presentation was beautiful and Jayden even sprayed gold on it for our photo and video. It comes with snow crab, avocado, lobster, and bay scallop topped with eel sauce and was really yummy with lots of seafood. The only downside was that the roll underneath broke apart easily which made it hard to eat. Fresh Wasabi Root ($10): We watched them grind the wasabi fresh which was cool to see. It doesn't have a kick to it though so I wouldn't order it again since I like a tiny bit of spiciness. Matcha Mojito ($15): Not for me. It had a bit too much club soda. Yuzu Saketini ($15): I liked this one more than the matcha mojito. The yuzu flavor was prominent and it kind of reminded me of a Lemon Drop.

Grapes were too big though but everything else A+ The matcha tonic - I can't find it online but it was an incredible balance of fizzy, sweetness and matcha. The room is intentionally intimate and very dark, with an industrial ceiling where pipes climb 20+ feet above, signaling you're in for something far from a traditional sushi bar. My only gripe came at the front of the house: the initial greeting and the rule explanation were a little too demanding and elementary for someone who is tired and paying a significant amount of money for a sushi dinner. Put the rules in an email, text and on the website i'm not in 4th grade. The hostess was pleasant, but she seemed a bit robotic in doling out the rules of the evening. The line-up system, where you wait your turn and have your name called, feels odd and reminds me of the times I visited my friend in prison and the guards lined us up against the wall by our names before they took us to the room with inmates. Uncomfortable but I do follow most rules and there was a reason for the lineup that becomes clear as you settle in. Next she takes you down a dimly lit, narrow wooden staircase and you land in a basement sanctuary of omakase heaven. Our hostess knocked and the door opened to a room that felt specially curated for this meal. Each guest found their name written in gold on a sign on the sushi bar where you are suppose to sit. The chair was a very comfortable leather chair. Each gold written name plate, marking the guest order she placed us in upstairs. My seat was at the center of the sushi bar, perfectly positioned to capture video and photos of both chefs in action. From the start, we were told we'd be eating with our hands, a nod to traditional Japanese dining. The chefs staged 17 courses with the precision of neurosurgeons, walking us through every nuance from the provenance of the seafood to the section of the fish we were eating to the age of the barrel aged soy sauce. Not a detail was missed, and timing felt both deliberate and urgent in all the right moments. The father, Jose, was laid-back and effortlessly in control, while Leo, Jose's son, emerged as a true partner in the kitchen, their dynamic reminiscent of watching a masterful, living artwork take shape. The two moved back and forth with a rhythm that felt like a collaboration at the highest level, each dish placed neatly on a flat stone in front of each of us. They would then announce with pride what we were about to inhale and wait in anticipation of our response. It was clear they take tremendous pride in their craft, presenting edible masterpieces that felt almost ceremonial. Too keep everyone happy with the time in between dishes there was an endless supply of a pickled salad that I could not stop eating. As for a favorite course, it's hard to pick one. Each bite built on the last, and the whole sequence felt cohesive, an immersive set from tartare hand roll, to Shima Aji, Madai, Uni my favorite, Hotate, Masu, Hirami, Hamachi, Bincho, Kinmedai, and something I have never heard of Zuwaigani, followed by the best Waygu I have ever had in my life and ending with a passion fruit sorbet with activated charcoal crumbles and toasted crispy coconut, I don't like coconut and I ate every bite. The pairing of technique, seasonal seafood, and f#%king great seasonings left a lasting impression or as my wife says, "my husband has food memories." If you're considering a visit, go with an open mind, a willingness to lean into the pace, and a camera ready (flash off it's one of the rules) for the moments when the chefs' artistry shines. The father-and-son team of Jose Manuel Tapia and Leo deliver something rare: not just sushi, but a storytelling meal where every plate is a page in an ongoing, delicious epic food story. At the end they will make you additional food for an additional price but it's worth it. They then walked us over to a very nice bar with a great vibe and old school Dazz Band playing like I was in a time machine and it was 1982. Great place, great food, great vibe. Making an order mistake is one thing, but making the customer pay twice to correct your own error is completely unacceptable. Save your money and go somewhere that actually respects its customers and stands behind its service.

I was seated at the sushi bar & greeted by my server. Her name was Sayaka. She has such a warm smile & energy about her. She explained the menu since it was my first time. Then I proceeded to order, I ordered a handful of nigiri's. My sushi chef was Joseph! He was so friendly, knowledgeable and made other great suggestions aside from what I ordered. Thank you chef Joseph for using his expertise to absolutely WOW ME @ the quality of the fish. The simplicity of what quality of fish & experience will make you feel. From beginning to end, my dining experience was exceptional. I am quite particular when it comes to sushi, but this exceeded my expectations. I'll be back again to visit Namo!
