The concept is genuinely fun, and it's probably the biggest reason to visit. Every plate costs the same ($3.59), making it easy to try a variety of items without worrying about different prices. The restaurant is clean, the seating is comfortable, and the staff was friendly throughout our visit. Unfortunately, the food didn't live up to the experience. We tried most of the sushi rolls that came by, and the biggest issue was the rice. Since sushi is my favorite food, I pay close attention to the quality of the rice, and this was by far the weakest part of the meal. It was overly soft, sticky, and overcooked, giving many of the rolls an unpleasant texture. The fish itself tasted fresh, which I appreciated, but the rice overpowered the entire experience. We also ordered the takoyaki, and it was disappointing. The outside was thick, while the inside felt undercooked and almost mushy. The amount of octopus was reasonable, but the texture kept us from enjoying it. For dessert, we tried the Nutella fried takoyaki. The ice cream and whipped cream were perfectly fine, but the fried dough itself was thick and dry inside. It wasn't a bad dessert, but it wasn't memorable either. Overall, I think Tsubame is worth visiting once for the experience. Watching the sushi rotate around the restaurant is fun, especially if you've never been to a conveyor belt sushi restaurant before. However, if you're looking for outstanding sushi, there are much better options in Utah. The concept is excellent, the service is good, and the fish seemed fresh, but the quality of the rice and some of the hot dishes kept us from wanting to come back. If you're going for the experience, you'll probably have a good time. If you're going primarily for great sushi, you may leave disappointed.

The main appeal, the rotating sushi belt, was a huge hit! My son was super stoked and absolutely loved the novelty of picking exactly what he wanted right off the conveyor. It certainly makes for a fun, interactive family meal. The Food While the concept is great, the quality was a bit lacking for my wife and me. We found the flavors weren't punchy or vibrant enough to really stand out. Best Roll: The Ponzu Citrus Roll was my favorite, offering a nice, bright flavor. Good Option: The fried options, like the Fried Jalapeño Popper Roll, were generally tasty, but still felt a bit typical or "boring." Skip: My least favorite was the Mango Roll. Bland, no flavor but coconut and rice. Service & Atmosphere On the bright side, the service was excellent. Our server was very nice and was super on top of drink refills, which we really appreciated throughout the meal. The design and overall vibe inside the restaurant were also nice and pleasant. Overall: Come for the fun experience and interactive concept, especially if you have kids (perfect for trying different types of sushi at only $3.59 a plate). If you arrive before 3:00 pm, do yourself a favor and order from the combo lunch menu. For a good price, you get miso soup, white rice, pork gyoza, and tempura vegetables, and then choose two items from a list that includes chicken, rolls, and sashimi. The gyoza and tempura alone are worth calling out, both done well. I went with the spicy tuna roll and steak teriyaki and did not regret either choice. Now for the rolls. The Tsunami Roll is the signature and it earns that title, order it without hesitation. The Spicy Masa and Fire Breathing Dragon round out my personal top three and I have yet to be disappointed by any of them. The two areas where they could level up: the wait for food is longer than the lunch setting calls for, so come with patience and plan accordingly. And for a restaurant with rolls this photogenic, a printed menu with photos would go a long way.

But the spicy tuna,,,,, the tuna was not fresh and it was not spicy tuna I am used to from the bay area. I had one and did not touch the rest of the rolls. You know the fishy taste you get when it is not fresh. Rice in the roll was not properly cooked, was al dente-this is big no. And when I compare it to my trip to Benihana a few months earlier, it was clearly a step below that in just about every way, and I gave Benihana 4-stars. The worst part of the experience was the pressure of my friend grilling me about what I thought the whole time. I'm an honest person, but they were staring through my soul. I ultimately said I'd rate it 4-stars, but as I was writing this review, I just couldn't do it. If I lived in the area, I would view this as a place that I wouldn't really ever need to go back to. Have to say the Miso soup was beyond anything that I've ever had anywhere before. Absolutely amazing. Something about it made it *sweeter* in flavor, and by God, you're just like, "give me more"! Tried the Screaming Roll (hoping it would make me scream from spiciness... sadly, it did not:-(. It was prepared as a Maki roll which made the rice just a bit too overflowing for my liking. There was a sense of spice, but definitely not the whole "shebang" I was looking for.. Spicy Salmon Avocado Roll was the same exact way though it was a hand roll. Definitely not disappointed this go round, but not necessarily ecstatic either.
