    Had a a veggie burger and my son had a grilled chicken burger. We both loved them. Wife had a checked Ceasar salad and she raved about it.

    Food was really-really good and the Staff was most excellent. I'm not going to lie, I totally underestimated this place.

    Even though there ain't much restos around, it is such a good thing to stay with a hotel with a great bistro. All my cravings satisfied!

What really sets them apart is their personality and work ethic. They create an atmosphere that keeps people coming back. You already charge a lot for food and drinks (increases over the years are noticeable with management changes) but when you always have a rather large bill usually $700-sometimes over $1000 depending on the kind of evening we're having it is going to be very noticeable. A change like that needs to be more obvious, minus a little print at the bottom of the menu. No one even noticed (since we really didn't need the menu to order) nor did our server. It truly makes me want to give you a three star but I can't discredit the hard working staff and people in the kitchen, as it is clearly the change of new management and the "rebuild" from the beginning of the year. It speaks volumes to a group that has been dedicated to the Americano since March of 2020 and now makes us wonder if it's time to move onto a different restaurant.

I replied, my friends are already here under the reservation so can I just go find them? She replied yes. I don't understand the interaction when my friends clearly checked in already using my name for the reservation. It was a discussion that wasn't necessary and did not give our first visit to the Roaring Fork a good impression. Once we found our friends after searching through the entire restaurant, we found them and sat down. We were immediately approached my our server who was very attentative and gave great service. We were told about a 3-course menu with multiple selections and I decided to get the New York Strip. I enjoyed my cesar salad and then the New York Strip was delivered. It was prepared according to my request, medium, and I checked by cutting right down the middle. I noticed it was a little tough to cut even with the steak knife I provided but the inside looked as expected so I continued on. What I was surprised to find was the amount of gristle on the New York Strip. There is nothing like having to pull food out of your mouth (several times) at a public place because you can't possible chew or consume it. For $80 (salad, New York Strip, sides and desert) I expected better. Unfortunately, my experience leads me to leave a 3 star review.

The food and beverage program shines in a lot of ways. Cocktails are inventive and ai tried their riff on an Old Fashioned they call Fancy Cowboy Attire. It includes a peanut mole and cinnamon ... I was hesitant at first, but my knowledgeable server Izzy assured me it was really good. She was spot on. I loved it. There are some nice maki sushi appetizer offerings as well as some other shareable that evoke American and French influences. I ordered the oysters from the west coast US. Really fresh and served traditionally. Don't think you can go wrong with anything on the menu. For entree, went with the New Orleans/French. Inspired Salmon. Perfectly cooked and served with roasted potato, artichokes, arugula, and I think a béchamel sauce. Light and flavorful. Paired well with a nice 9 oz pour of French Sancerre. For dessert tried the schoolmate sticky toffee. Melts in your mouth. Dessert menu is fantastic. Had a hard time picking just one. Throughout the meal, staff was attentive and knowledgeable and my server Izzy was not afraid or hesitant to offer recommendations. I was super impressed.
