Our 1st time at the Mint and we were blown away. We were at the Mint on Friday 8/7/2020 the staff and owners have taken every precaution for COVID 19. Observations: -The inside looks like a place you would expect to find Johnny Cash having beer and cigarettes with Waylon Jennings. -our server was Makayla, who was very chatty and excited about presence in the restaurant...don't get it twisted, there were plenty of other people there too...but she sure seemed happy about us! (Must have been my wife, she's got people skills). Makayla may have been on meth at one point in her life because she is skinny with tons of ink, but I think she's clean now. My good friend raved about this place on his last stay out in Silverthorne. Based on his suggestion, my two cohorts of mayhem and I descended upon this little gem of a steakhouse. It's no frills at all. Simple concept; you walk up to the glass display case, choose your meat and cook it yourself on the grill. Sides are ordered there as well. Sitting in the middle of the restaurant, the long lava rock grill cranks out over 1100 degrees of heat. Once done, a salad bar is at your disposal and complimentary to your meal. I had ordered the Ribeye at $2 per lb (you choose the thickness, they'll cut it, weigh it, and hand it over to you raw). Once I proceeded to the grill, I had a merriment of seasonings and spices. I eventually chose to baste my steak with their teriyaki mixture. The other two picked the 8oz bacon wrapped filet mignon for $26. Tricky thing about this is... yes, you cook it the way you want it. However, if inexperienced, it's easy to get it wrong and/or overcooked. While I had fun brushing my steak back and forth in teriyaki marinade, my ribeye came out medium and not medium rare. Same thing occurred to the others. At that point, I wished a professional had cooked it. We also ordered mashed potatoes and steamed broccoli. Nothing special, very straight forward sides. After all is said and done, my steak tasted great. I was happy with my meal and the price. What's not to like? Where else can you get USDA Prime steaks that cheap? What happened to this place from when I Iast came in the 90's? It's a cool concept of cooking your own steak on the grill after a long day on the slopes. However I'm not a steak connoisseur by any means and I can't cook a good medium rare steak if my life depended on it. I ended cooking my steak medium well; which was fine but I'd rather have someone cook it for me. The Mint is what it is, essentially a theme restaurant. The theme is grill whatever the hell you want, but yeah, you're the one doing the grilling. The real question is does this appeal to you? For me, the answer is a clear yes. I love grilling my steak on the giant grill. I love getting it exactly the way I want, I love seasoning, I love marinating, I love rotating. I just think it's an awesome idea. I like making my own Texas toast. I like getting an extra pan to make grilled vegetables. Pro-tip, with a little ingenuity a baked potato can become potato skins. I think the quality of the ingredients is high, and everything comes out tasty. I don't consider this work or being forced to do my own cooking, It's essentially a steak fantasy camp. The service was friendly, if a bit frazzled. The restaurant is called historic, so the fact that it feels dated isn't a surprise. It could probably be freshened up a bit without losing the historic character. I guess it's the difference between something feeling antique and just seeming old. So, if you were ever interested in grilling, the Mint is a fun way to experience it without having to buy a grill. Step 1 - you choose your choice of meat which ranges from new york strip, rib eye(my personal choice of meat), chicken, to fillet Mignon. Depending on the cut and size you order will determine the price. The higher cuts of meat being more expensive while the lower cuts of meat being cheaper. The prices are between the meat you buy at the local store and your steakhouse restaurants. Step 2 - Grill your meat. This is where all the magic happens. The restaurant has a very large rectangular shape open grill that is shared by all the customers. There are your normal seasonings like salt and pepper, but also butter and teriyaki flavor to season your meat. I personally prefer dry rubs when it comes to grilling steak. The most important part of grilling is the temperature. The grill has different temperature points so you have to be mindful of whether there is too much or too little heat because you wouldn't want to burn your steak. Step 3: This the easiest of them all. You get to enjoy eating your steak. Sides do not come with your steak, they come with a charge. So let's see what we got for $82 in food: A butcher with an attitude; Sides that were made last year; A NY strip who does even comes close to Costco and at the bottom of the range of all the steaks I had the past 30 years; And now to cook this steak, you get a grill who is maybe heated to 350. Was recommended to come here by a friend and didn't even know it was a "grill your own" steak experience, but we were pleasantly pleased with how tender each cut of steak we ordered was. Our server Amanda made the experience 100x better, she was extremely fun and friendly and recommended we start with the stuffed mushrooms, which were exactly the way she described them: creamy and full of flavor. We never had empty glasses, and even tried the dessert she recommended, the mint potato- which we did not know what to expect, but it was incredible. How to do The Mint: 1. It's not fine dining. It's a hot grill and good steaks that you cook yourself. If you can't deal with that, then don't go. Period. 2. Skip the sides EXCEPT the "grilled veggies." You will be cooking those yourself. You will be given a metal salad plate that you can put on the grill. Do that right after you get your (raw) meat (prior to cooking it.) Leave your raw steak at the table. Load up the grill plate with a bunch of peppers and onion and plenty of margarine. Let it start cooking down and go make your salad. Take the salad to the table and start enjoying it. 3. Check your veggies and add mushroom and/or spinach on top as desired. Take the steak with you. Lard up both sides of a piece of Texas Toast and grill well on both sides. Start the steak cooking. Go back and eat half your salad and toast. 4. Flip the steak. Go finish your salad. 5. Make another piece of toast if desired while your steak finishes. Remember to let it "rest" for 2-3 minutes after you take it off the grill. Eat that baby with your grilled veggies. Or better, order a big one and eat only half. Get a to-go box for dinner tomorrow night. 6. Tip well. It's expensive to live and work in Summit. read more

Truly a pleasure and treasure! To review the Mint is challenging only in where to begin and end in describing our experience! We were staying in Keystone but wanted less "tourist" and more "local" flavor, not to mention things at the resort were simply too "wait listed". I called Mint. A pleasant young lady answered and said they had tables open and would be glad to seat us when we got there. Everything about the restaurant exuded personality and local character. Our server, Amanda--I had read reviews and heard good things about-- left nothing to be desired. She was welcoming, chipper, helpful, accommodating, and everything I had expected, given her reviews. The food was exceptional. The open, self-grill experience was an added touch of uniquenes for our family of six. One of our children was celebrating a birthday and was honored to have not only the staff but also several of the "regulars" sing happy birthday To her. Amanda checked on us regularly, offered suggestions and gave us a fascinating history of the building and establishment. This proved to be an unexpected highlight of our visit to the area. The Mint in Silverthorne doesn't look like your normal expensive steakhouse. It has a large dive bar feel, but given it is a locals spot - that makes sense. The Mint in Steamboat Springs has a nicer feel, but that location has the disadvantage of not being off I-70 on the way back to Denver. At the Mint, you get free salad bar access, reasonably priced apps and sides, but you must cook your own entree. This means steak. The raw steaks are priced a little lower than what you would pay for the same quality cooked at nicer steakhouses, but the prices on the fish and chicken are just ridiculous. A double breast of raw chicken goes for $11. Plus chicken is less forgiving of mistakes than steak. Seriously, just buy the steak. I ordered a nice size ribeye at $2 per ounce and was very happy. Normally they trim the fat, but they left it on for added flavor - and the fire the rendered fat produced was awesome. I took a ton of pictures. It was glorious. But in all honesty, if you follow the times recommended (give or take a minute), you will have a nice meal. read more

My girlfriend and I were traveling to Vail for our anniversary and got caught in unexpected traffic for about an hour causing us to miss our reservations in Vail. We then decided to look up a good steakhouse in Silverthorne as we would be passing by there anyways. The Historic Mint came up on our search and we decided to give it a try as they label themselves one of the oldest buildings in Colorado! As we walked in, we were greeted with smiles and immediate service despite the staff being busy. They made sure we knew it was a "cook it yourself" steakhouse before we sat down and we were thrilled to have such a new and exciting experience! Katie was our server and she was very helpful and accommodating to make our experience there even better! She was very personable and always made sure we were being well taken care of and had what we needed. We not only had Katie taking care of us but her coworkers were also very attentive. We could tell that the employees there take care of each other, creating a wonderful environment to be a part of. We truly felt like a part of a family the second we walked into this restaurant up until we left. The "cook it yourself" was such a different experience that we would have never thought to be a part of but we are so happy we did it! The rumor was that The Historic Mint has great food, but I will never know because I was denied access by the staff who argued that they are a private business and refused service. Other than the federal violation, and the whole discrimination of disabled persons thing...they could have, at very least, behaved civilly. To my veteran brothers and sisters, we all know the influence of the "Wall of Shame."
