On this visit, I had the carne asada, shrimp and chorizo, and fish tacos, and every one of them was delicious. The carne asada was flavorful and tender, the shrimp and chorizo taco had a great combination of smoky and savory flavors, and the fish taco was fresh and perfectly prepared. While the regular prices can feel a bit high, the quality is excellent, and the Taco Tuesday special makes them an incredible value. Don't sleep on the peanut butter salsa especially if you add the chili oil. Super good. Not a big inside spot though, only five chairs at the counter seating by the front window. Okayyyy first of all... this was my FIRST time here and I already know I'm going to become a regular. The cashier was ridiculously nice and patient while I stood there pretending I knew what I wanted when in reality I wanted the entire menu. They had this chalkboard up with their featured/new items, and if you order one of them you get a FREE agua fresca. Naturally I expected one of those tiny "sample-sized" cups because nothing in life is truly free... WRONG. They handed me a giant agua fresca like they were trying to hydrate my entire bloodline. Love that for me. Now let's discuss the torta cubana because she deserves her own paragraph. This thing was MASSIVE. Absolutely humongous. When they brought it out I genuinely paused for a second because why was it built like a carry-on suitcase? This wasn't a sandwich, this was a commitment. A lifestyle. A full upper body workout. And let me tell you... the food was IMMACULATE. Every bite slapped. The bread was soft, everything inside was flavorful, messy in the best way possible, and perfectly over-the-top. Half of it honestly would've filled me up, but did I stop? Absolutely not. I powered through because I refused to let this masterpiece sit in my fridge overnight getting all sad and soggy. Decided to try this spot since I saw that it recently opened. The chilaquiles on the menu caught me eye, so we decided to order that. The chips are covered in red sauce, sour cream, and cotija cheese, then topped with two fried eggs. The sauce was not bad. It also comes with rice and beans. The portion of the chilaquiles itself seemed a little small to me. We also got a Bacon and Egg Breakfast Burrito. It comes with beans, potato, and cheese. Not a bad lunch, just not a must-repeat for me. Pulled up for lunch and this spot is definitely more grab-and-go than "let's have a cute little sit-down moment." It's tiny inside with only a couple stools, no outdoor seating, but there's parking right out front, so points for making the lunch run easy. Ordering was smooth. I sat inside while they made my food and then took it to go. I got the loaded taquitos with shrimp and carne asada. The shrimp and carne asada were good, just not "I need to come back next week" good. And the taquitos are potato taquitos, but the filling was basically just... potato. No real seasoning, no extra flavor, just soft potato, so the inside was a little mushy and one-note even with the toppings trying their best. Overall, everything was fine and the experience was easy. They catered a small birthday party for me and the FOOD was AMAZING! Very large portions and price was beyond reasonable! The carnitas tacos were the best I've ever had! Food: I tried the Potato Taquitos w/ Carne and Shrimp on recommendation - I would certainly recommend this dish to anyone wanting to see what this place is about as it's both tasty and filling - I couldn't it it all. Service: Worker in the front and cook in the back, the person up front was friendly and attentive, and the person in the back was working to make the show go and keep the pace. The waitress was so kind and answered all of our questions. The real hit was the quesabirra tacos. My partner already wants to come back for them. I cant believe we got complimentary chips, drinks, and lollipops?! That was such a nice treat and definitely a way to kick off a grand opening. My two recommendations would be to add seating somewhere somehow. I think they might eventually so i think thatll be a nice touch. i also personally dont like the taste of the chips. So far service and salsa bar are amazing !!!!! I ordered asada taco, grilled shrimp taco, battered fish taco , and a gubnator taco(pretty sure I spelled it wrong ) all were delicious! The salsas were all delicious too. Oh my gosh I so enjoyed Trejo's. Unfortunately I went there twice and they did not have chips for the meals. The 1st time I understood because they were about to close. The 2nd time it was early in the day. The young lady said they only make the chips that go with the meal when they have time. She said she could make some for me but they would need to charge me. Hhm? So I asked if they no longer give chips with meals. She said no we do but we only make those chips when we have a chance. I thought it was weird that she would charge me for something that comes with the meal. So I ended up getting nachos and asking for all the toppings on the side. I was going to get tacos but that worked out because I got chips for me and hubby and all the sides went on top of the salad I had at home. I notice that the taller young lady that is usually in the front and the female chef aren't there anymore and there is definite shift in the quality of service and food. I went here their second week and the lady in the morning couldn't have been friendlier. Good food. Apparently they are still in their soft opening on their second week. I had their chorizo and fish tacos and their breakfast burrito. Freshly prepared, quality ingredients. It was good, not yet great and wanted to give this place another try to arrive at a more informed opinion. I tried coming back a second time and came at about 8:35 PM (their sign says they close at 9) and was told they were still in soft opening mode and closed. Next week they will actually be open till 9. Disappointing. Was in the area for work and stopped in to give this place a try. I'm assuming this is actor Danny Trejo's spot, but I could be wrong, but I will say that was a factor in me visiting this spot. Tried one birria taco and a watermelon Agua fresca and thought it was good. I've had better, but this was a solid lunch spot. It's small inside so don't plan on having a work get together here, it's more of a to-go spot. My taco came with a bag of chips and the consome. Used the chips to dip into the consome and scoop up any meat bits. Also dipped the taco in the consome and it was good. I will say, the taco is floppy and a little messy, but I think that's their motto or it addresses this on the mural inside the store. Other places I've had birria tacos at, the outside is a little more crispy cheese and sturdier, but this one tasted just as good. For being a to-go birria spot in Cypress, it's solid. This is my second time going to Trejo's, and the second time with horrible customer service! To the young one working the counter, the customer in front of you is the most important person, at that time! We tried to place an order tonight, 3 times the gal walked away to take care of another person, that came in behind us. My hubs was asking questions about a plate and she turned and walked away. Took my order, and again, while my hubs was mid order, turned and walked away. I finally told her to please focus. She talked to the person behind us, again. My husband walked out, with me following. Trejo's needs to hire adults to teach these young ones how to treat customers. The last time, the young man was contaminating every counter with a disgusting towel and kept the same gloves on to grab food! First time here! Lots to choose from. I got fish taco and chicken taco. Both very good! I would've been good with just one taco, very filling. Also got shrimp ceviche and a wet burrito with carnitas. Everything was great! Didn't have room to eat the ceviche but I did taste it and it's very good. I'm saving it for dinner tonight! I also tasted my husbands carnitas burrito and it had really good flavor. It did take a bit after ordering but I don't mind the wait as long as the food good. And it was! Wow, it's a blessing to have a good and clean queso birria taco place walking distance to our home. I tend to avoid the messy dirty restaurants that have gotten me to have food poisoning in the past. I have trust issues with restaurants with super exposed salsa selections with people talking over the salsas and spit coming out of their mouths and landing on the salsas, or people touching the ladles with unwashed hands to get salsa. This place is super clean. I just wish the salsas were set up higher to avoid spit from people talking and land on the salsas. The spicy carrots and jalapeños are in plastic bags already so those are kept clean. They have a really good selection of your classic salsas like salsa verde or rojo, pico de gallo. I love how they also have the options of chili oil and peanut butter salsa for something different and exotic. Being Asian, I really appreciate those as options. As for the food... wow! Good, clean, and quality ingredients. It would be a big plus if they can put the food over parchment paper to avoid hot food directly on plastic container and avoid BPA... I also love how the staff are very nice and welcoming. Not judging and staring while we get our salsas and spicy carrots, which is a big plus because I avoid those places that make you feel uncomfortable. I wish this place will stay open forever. Place was not busy at all, maybe they need more advertising in social media or signs outside on the main streets of Knott and Katella because it's kinda hidden. Ordered dinner for the first time tonight. I had the Carne Asada/Shrimp combo, very disappointed with the meal. Large quantity of very dry and overcooked beef, and the shrimp were also overcooked and rubbery. I assumed the beans would be refried but they weren't and were also very watery. The rice was great and the chips were as well. The service was awesome (the only reason for 3 stars), but based on the fact I threw out well over half my dinner, I doubt I'll be swinging by for take out anytime soon. read more

Just tried this for the first time. We got 4 Pollo Asada, 4 Carnitas taco, and a side of rice & beans. The food was absolutely delicious. The Carnitas and Pollo Asada were seasoned exceptionally well, packed with flavor. We were especially pleased to find the tacos stuffed in fresh homemade Tortillas...yum. The refried beans and Mexican rice were delicious as well. They only mistake I made was that I intended on getting street tacos and they do not offer those, these were full size tacos, so I could have cut my order in have because these are very generous in their size. No problem, we have leftovers for later. As far as the negative review I read on here, really now...how can you give a brand new business to the area a negative review because it inconvenienced you by closing a little early while they are still in the process of staffing themselves. If you want convenience stop at one of the pop up food stands that serve food unregulated by hand you have no idea where they were moments before serving you your food ‍.
