Yesterday was my first time in Novel Coffee (since it was both previously located down the street AND named Trio!), awaiting the arrival of a package at the UPS Store (which NEVER arrived!). Not awful, but def not great. We ordered an oatmilk latte, a maple bourbon latte with oatmilk and a hot chocolate. Watery texture as opposed to the thicker creamier texture I'm used to with oatmilk lattes. The espresso was almost a sour/burnt flavor. Atmosphere is peaceful, nice and clean. Seating is comfy. A quick summary of my review: LIKES: Music Ambiance Seating Drink selection (they have food as well, I just didn't try any) Lighting DISLIKES: Hours I needed a place to study/get out of the house so I could actually do some of the 100 hours of work I need to do over break....decided to come to Trio since they had pretty high reviews and the location is prime from my cookie cutter suburban house in a middle class suburban white neighborhood. Which is basically all the houses surrounding Trio. Nonetheless, this place exceeded my expectations--the ambiance was light and it wasn't busy or loud at all at 3 pm on a Thursday. There's ample seating, and various ones at that: there's some high tables with bar chairs, some booth seating, some loveseats, and also some regular tables. I began my journey by ordering a hot chocolate; and legit, this is one of the best hot chocolates I've had in a while. It was thick but not too thick, hot but not too hot, and the perfect hint at something besides just chocolate--caramel? cinnamon? I NEED TO KNOW. I then took a seat at one of the high tables they have. The high chairs are cushioned and are comfy--but not for long. I really wish these chairs have backs to them so I can lean against something besides all the other people I have in my life, but alas, I soon realized the error and moved to one of the corner tables. The lighting is bright and the music is at a good volume and not too weird or distracting. The only thing is I wish they would close later! Highly recommend the horchata. The coffee shop itself has lovely decor (I especially love the wall mural) and is a place that I could see myself returning to to study or meet up with someone. This is their new location on 2499 & 3040, next to the Texas Health Emergency. It's a convenient location and they definitely get a lot of business. I've been there three times in the last couple of weeks and they are always at least half full. The first several visits were mostly individuals on laptops and several pairs of students working on projects, it was peaceful. Today, there were more pairs and small groups and it was really loud in there, didn't realize how bad the acoustics were! I really like the décor, it's very relaxing when your ears aren't ringing. :) It's very bright white with a lot of wood and splashes of color on throw pillows and rugs. I love when places offer a variety of seating for personal comfort. The tables have wooden chairs, but there are benches, leather chairs and the high top tables have thick upholstered stools. The menu is a lot smaller than similar places, both food and drinks are very limited. They do latte art here, have tea and horchata and several smoothies. They serve lunch from 11-3pm with a selection of four sandwiches and their pastry display usually features three cakes and a pastry of some sort. My first visit was in a rush around 1:30pm. There were two girls working who greeted me quickly. When I inquired about their lunch menu, one swept her arm towards the clipboard holding the lunch menu, proclaiming they "have ALL these sandwiches... except the Turkey Pesto." I tried not to smirk as I saw 'all these' was four sandwiches and they were out of one. I went with the Grown Up Grilled Cheese which the menu stated had bacon, Havarti cheese, Granny Smith apples, tossed arugula and rosemary aioli. I was asked if I wanted a salad or chips. Since their chips were regular Sun Chips, while their salad featured a house made vinaigrette, I went with the salad. Despite the $5 price tag, I also wanted a smoothie. They offer one size, 16 oz and I was told I could choose from strawberry or mango. Oh, the choices! :) I was told it would be about 5 minutes, but the smoothie was ready in 2. It was extremely thin, but very tasty. I appreciated that it wasn't too sugary and actually couldn't stop drinking it. The food was out after 8 minutes and it looked good. The salad is a simple spring mix, but the dressing was very good and applied with restraint. I wish I had more time to enjoy it! The grilled cheese was a little greasy and very, very drippy. However, I loved the bacon and the apples and I really saw a lot of potential there. At this point I was intrigued. I came by a few days later, there were three gentlemen working and I waited while all three were talking to one customer. I asked if there was a way to make the sandwich less greasy and was dismayed that not only were they unfamiliar with that being possible (they had never even tried the sandwich) but also that the sandwiches are premade. After all this, they were out of almost all of the sandwiches and pastries. I decided to have lunch elsewhere. I stopped back in today, and ordered the same thing as my first visit. This time I was told I could have strawberry, mango or both for my smoothie from one of the gentleman from my second visit. I went with both and had it a few minutes later. The girl who made my last smoothie was the one to make this one, but this time it was very thick. It was still tasty, but this one had more sugar added. I was bummed at the inconsistency, but I can see how that would happen. The sandwich was three times as greasy and didn't have much arugula. The salad was over dressed and not as enjoyable. It also took over 15 minutes and I was confused why that would happen if the sandwiches are premade. Overall, not worth the $14.50. I wouldn't avoid eating here, but I would probably only stop by occasionally for a smoothie. On the rare occasion I want coffee in the afternoon, I'm not going to overpay for a really light coffee, but I might get a tea here. I just don't have the same interest that I had during my first visit. Most days it seems like a good spot to stop in and study or get some work done. However, today I could see people visiting who strained to hear each other and several went to the tables outside. The crowds easily overwhelm the friendly, though inattentive, staff. The food often runs out half way through the offered time of 11-3pm and the prices are a bit high. Consistency is really important to me, and they need to work on that, but you may roll with the punches more easily than I do. I still think it's fairly pleasant with potential, but it may be a while before I stop back in. read more

Craft coffee. Yes, I've bought into this trend. When learning that delicious craft coffee existed in the burbs, I was immediately intrigued. This coffee shop is super cute, has great space for lounging, meeting friends, or getting work done. The coffee is great, albeit on the lighter side. Former me would've loved it, new me, who's into bolder and richer coffee, does not. A great addition to the burbs, but still a stretch from the amazing offerings in Dallas. I definitely wouldn't make a special trip out of Dallas proper to solely visit this coffee shop. For comparison, this may be your place if you're into Mudsmith and the Crooked Tree. Pretty good local coffee place! We did a curbside order and one of the baristas came out to hand us our order in a reasonable amount of time. She was super sweet and friendly. My husband got a mocha frappe and he liked it. I got a Southern Comfort which tasted like a liquid apple pie mixed with a little coffee, definitely a cool experience! Saturday is time to myself. I like to go to the local coffee shop for a latte or two and unwind. This is the perfect place! The atmosphere is not loud with music and other noise. I came in not knowing what to expect and I came out super impressed. Their lattes are crafted to perfection and the yogurt parfait had plenty of my favorite toppings. It was Greek yogurt with honey at the bottom, fresh fruits on top, and granola. It was one of the best yogurt parfaits I've ever had. Flower Mound was in desperate need of a real coffee shop, and boy do they have one now: - Staff is well trained, friendly and knowledgable. - They buy from quality roasters both local and national (Oak Cliff & Verve). They offer Chemex pour-overs, cold brew, and the usual espresso options. - Prices are excellent. I almost feel bad not paying more after going to so many other over-priced shops. -Lunch time (11:00am - 2:30pm~) you can get a paninis while supplies last. - Hand made tables and counter tops, lots of bar space, tons of natural light and well chosen decor all add up to some great atmosphere. I liked my visit to The Trio Craft Coffee place...it's a cool little coffee bar located in Flower Mound. Love having my latte served in a huge cup. It was tasty but could have been warmer. My first sip was cool to my lips. Later I heard some one order extra hot so I assume she was a regular. They serve panini's with a salad which are surprisingly good. Their main focus is coffee and tea but come in for lunch. You will be happy! They cater to the connected digital customer so you can sit anywhere and get plugged in. I'd say it's the best Coffee in all of the area (Flower Mound, Lewisville, grapevine) Novels coffee is very consistent, they hold to a true light/med roast standard. It is evident that the baristas are well trained and really care about every cup, and there is thought put into the sourcing and recommended brew method for each of the beans they offer. If you're in the mood for coffee, you can choose between drip, chemex and french press. They have a traditional menu that includes classic espresso drinks, cold brew iced coffee, several tea options, smoothies, hot chocolate, horchata, and a small food selection. I had a Madcap bean from Colombia brewed in a chemex, and they did an excellent job of bringing out the citrus notes in the coffee. Trio is one of my favorite coffee houses in the area. The baristas know what they're doing. Anything from a mocha latte to a Chemex pour is mouthwateringly delicious. If you truly like the taste of coffee, try a Chemex. If you like something sweeter, the mocha is the best I've ever had. The staff is always super friendly and willing to explain any questions I've ever had. They are coffee-educator aficionados... And they probably have the best customer service around. Hands-down they are the friendliest staff and if a retail employer reads this, I'm sure they're going to want to go in there and steal somebody. Because they're that awesome.
