They were already distributing their coffee to over 12 states before opening this storefront. They give other third wave coffee roasters a run for their money. I'm a sucker for great local coffee shops. I met a friend here every week for 6+ weeks and I have to say that every single experience was great. I'm really impressed with the staff here and just how friendly and prompt they are! Coffee is awesome. Love the pour overs. Cappuccinos are good, but not the best I've ever had. They just started making affogatos, and I'm dying to get back and try one. My overall feeling is that this place gets it- they understand people want a great cup of coffee, friendly service, and a cool atmosphere. That's definitely what they deliver. read more

I work in Highland Village, and Trio Craft is on the way to work, so I decided to try out this coffee shop as I was running early and needed a place to kill some time. The decor and atmosphere of the cafe is so great - I'm a sucker for white walls and wood. This cafe has plenty of both. There are plenty of small tables for 1-2 people to sit at, and a few larger tables. Good place to study or meet with friends. When I visited, it was relatively quiet and not very busy. The baristas were polite and got my drink out pretty quickly. I got a hot americano; you can't really go wrong with it. This is where I ran into my main problem: the quality of the to-go cup. 5 minutes into my drink, I felt a burn on my thigh. I looked down and saw I had spilled my hot coffee. I looked at the cup and tilted it again. The coffee was leaking from between the lid and the cup edge. I immediately asked the barista for a new cup and lid, thinking that the ones I had gotten were faulty. Wrong! Attached is the picture of my second cup, 1 hour after I poured the coffee into it. The atmosphere is good, the coffee tasted great, but the low quality of something so simple but important as a to-go cup really disappointed me. It's a safety hazard, it makes things messy, and it makes me unhappy. read more

I recently visited this coffee shop and instantly liked it. It is such a nice, open and bright coffee shop. They have some added greenery that contrasts well with the cozy, dark wood furniture the rest of the shop has. The baristas were very nice and friendly. I instantly felt welcomed. They had nice coffee shop music playing, loud enough to hear but not loud enough to distract you. I really appreciated the level of music. I had a caramel cappucino that was perfectly flavored and sweetened. I also tried the pumpkin bread. The barista heated it up for me and oh my gosh, it was the most delicious pumpkin bread I'd ever had. Plus, it was gluten free! That isn't too important to me but it may be to others and it's inclusive. They had plenty of seating despite the size of the coffee shop and there was additional seating available outside. Being new to the area, I wanted to find a good local coffee roaster and coffee shop. Novel fits the bill. I've ordered five different drinks there, and all were good--starting with their house blend. I've also enjoyed beans roasted there and purchased for home use. The setting is bright and inviting, and the servers work hard to get your order right. Great atmosphere with lots of natural lighting, wooden paneling, and succulents to lend it an earthy vibe. I'm glad they rehabilitated the former Starbucks. Most of the baristas are chill/skater type guys who play Lo-fi music (there's also a turntable with an assortment of indie records in the corner) and are friends of some of my friends from Flower Mound High School. The espresso based drinks are delicious, and it's always nice to see my neighborhood folk, but I'm docking a star because the iced coffee is, frankly, disappointing. It's a flash brew - which is just drip coffee that's put in the refridgerator and poured over ice - and they charge $3.25 for it. Obviously it's the shop's choice whether or not to offer cold brew, but cold brew is pretty much a standard for iced coffee in the market nowadays. You can get cold brew at Starbucks or at any other coffee shop in the area. I'm shocked that they don't have it. Ultimately, I would still come just for the space to hang out, and the options of other drinks, but think that it would be wise to add a cold brew to the menu. read more

The barista was so helpful and explained their decaf process and how they don't use chemicals. She made me a decaf latte that was delicious and even offered my little boy a kid drink that he loved! Lovely spot in Flower Mound! It's a bit out of the way for me but worth it. I love the big windows for natural lighting and the high tables. Staff was very friendly and helped us order - the bourbon maple latte is a must-try! It has an evident bourbon taste to it without being too sweet and they make it in-house. The barista recommended it iced and it did not disappoint. Their cortado is pretty good. It's served in a shorter, fatter glass than most places which is really cute. We also tried their lavender scone and it was amazing. He heated it up for us and it was warm, buttery and absolutely delicious. Strong lavender taste so if you're into that, definitely try it. They also have a rosemary raspberry scone which I need to try next time. Such a great spot for coffee so if you're looking to get away from the city or live in Flower Mound I recommend coming here! read more

I have received a 10oz package of the Black Swan Espresso whole beans fresh ground as a Christmas gift. After opening i was a bit surprised of the minimal aroma coming out of back. I have looked inside and discovered a light medium roasted beans which was a bit shocking. I have Capresso grinder and a Capresso espresso machine. The ground coffee had a color of a Brazilian breakfast coffee and aroma of 2 week old Folgers. The brew had a minimal level of crema and tasted not bad, rather absolutely terrible. I am a 70+ years old man from Europe and been drinking coffee there for 20 years and in the US for last 40. So I am not some millenial that was born into a coffee wave in the 80's. Bottom line: This coffee is an overpriced "Texas wannabe" that tastes worse than 4 month old stale Maxwell House. Buy yourself a Pete's coffee instead and get twice as much of a real McCoy for the money!! read more

What an amazing coffee shop! The owners are absolutely amazing and always make you feel like you are family. They have the best latte (vanilla for me and bourbon maple for my daughter). Their current seasonal drinks are espectacular but my all time favorite and go to when it is being offered is the evergreen. They have tasty pastries and yummy breakfast tacos. Pre-covid they had THE BEST sandwiches! I loved their Cuban and their adult grilled cheese sandwich. I can't wait for the pandemic to be over so they start serving those again. I should mention the place itself is absolutely gorgeous. I love the look and the furniture. There is outside sitting as well. They offer alternative milks including oat milk which is my favorite. We enjoyed lunch here today. Their sandwiches are a bit on the pricey side but they were very delicious. We had the Grownup Grilled Cheese (my personal favorite) and the Pesto Turkey. It was a late, Saturday lunch so they were out of the Cubano which is to be expected but also a great sign. I had the amazing Good Morning Vietnam and my husband had their iced coffee. Mine was super sweet, just like I like it; and his was less sweet, just how he likes it. One question I would have for those who have any complaints would be, "What did the barista say when you addressed your issue with him/her?" I have noticed that people are quick to complain online but rarely bring their complaints to the barista/server/manager. read more

This is definitely the best coffee I've ever had. My sister is what some would call a coffee snob, and she loved the pour over here. I usually get an unsweetened cappuccino or the mocha, which coincidentally is pretty sweet, but very smooth. They use dark chocolate and its divine. They also have seasonal lattes that are great. All of their baked goods are incredible, too. The scones are not as dry and crumbly as other places, more of a biscuit texture inside. Some might say this isn't a true traditional scone? But it's definitely the best I've had. I love the maple bacon cheese, personally. Pinch of Salt provides gluten free baked goods, which are always delicious. I'm partial to her pumpkin bread. This is by far my favorite part of my Saturday routine. The people are always incredibly nice and helpful, too. Nothing better than starting the weekend with the best cappuccino around. read more

You know what kind of coffee is good quality? The kind you can have with some milk and not need to add any syrup or anything to it. This place has it all. I stumbled upon it after having lunch in the area, and once I walked in it just reminded me of an Austin type coffee shop. I ordered an iced toddy with soy milk! I had a sip before even adding my stevia in it, and it was perfect! I do wish they had truvia or stevia instead of splenda, so hopefully the manager reads this and provides that in the near future. Otherwise, great spot, plenty of tables and chairs to work on if you need to, and also a few chairs and tables outside. read more

Right about the time I complained the most about not being able to find local restaurants, coffee shops, etc. that are as cool as the ones I find when I'm traveling...I listen to a friend and we meet at Trio for lunch and a work meeting. It exceeded expectations and can hold it's own against any cool coffee place in any city/country I've been to. Well, except maybe Amsterdam but that's a problem with Texas law...not Trio. This weekend has been a quest to find the best coffee near my house. Came in and immediately asked the guy working if they had simple syrup. He responded that he didn't know what that was. I then began explaining it and he said he thought they had that. We decided to order to iced coffees since we drove all the way here. Upon getting the coffees we went to add our cream to my dismay there was none available. Assuming that they must've run out I ames the gentleman if I could get cream. He then tells me that they only offer whole milk. I asked if they had anything other than whole milk, to which he said no. Now I just had a run in yesterday at another shop so I am thinking this can't be happening twice in a row! I mean I'm asking for two very simple and basic coffee items, cream & sugar! Ultimately we were given a refund. From the one tiny taste I had of the coffee it wasn't made well and had a sour flavor. At least the other shop I had an issue with did have good tasting coffee! read more

This is my new favorite place to start out the weekends with. It is a one of a kind coffee experience. I have tried both the coffee and the food here. Both are top notch. It is rare that you see a place on Yelp with company provided photos that actually match what you will get in the store. This place is the exception. The photos you see on here are exactly what you will get in the store. Even the stuff you see in the display counter when you walk in is an accurate representation of what you will get when you order (again, also rare). This tells me a few things about the management and owners of the establishment right off the bat....Attention to detail. If you've ever owned a luxury car ... you know what I mean. No corners are cut to provide the customer with a truly great experience each time you come in. This place is consistent with their products and when you run a food and beverage establishment that is very hard to do. I've spent 3 Saturdays up here doing work and each time has been exactly the same as it was before (despite interacting with different staff members). That is hard to do and means that the management / owners are truly passionate about what they provide to the surrounding community. Keep it up! Wish there were more coffee shops in the area that provided this level of service to their clientele. I'm sure you will see me in here next weekend, and the one after that.... read more
