My group of 9 friends flocked to Mahalo Aleworks after 3 days backpacking on Haleakalā, and were pleased to meet Upcountry Sausage, a cart stationed at the brewery serving up delicious sausage Sammies, burgers, and bar bites. We ordered the smash burger and Italian sausage, both which were chocked full of veggies and sauces, of which accompanied the meat well. The smash burger was a little dry, but of good size and came with a delicious bacon jam. The sausage was topped with a stone ground mustard, which added both flavor and texture to the meal. Our food came out about 10 minutes after ordering, which is average I believe for food carts/trucks when made to order. Considering the brewery was quite busy for a Monday afternoon, we were pleased with the service and the attentiveness of the staff while we were there! The brewery itself, I'll review separately, but the sausage cart seemed to fit perfectly there and provide a casual, laid back feel, classic of Makawao. read more

Our first beer stop was Mahalo Aleworks in a newly developed shopping area in Kula and a quick drive from Makawao. Their on-site food was Upcountry Sausage, which was hard to miss since the smoker was fuming. My other half ordered a sausage ($14) served cut in half with mustard, onions, and a side of pickles. She loved the food! I ate part of it and enjoyed the complex hearty flavors - the pickles were a highlight for me. Upcountry Sausage was the perfect stop for some local beer and a great lunch before heading to the airport. This is the cutest little pop up restaurant / food truck located at Mahalo Aleworks! The service is outstanding - friendly, welcoming and above and beyond to provide a wonderful experience! Order at the food stand and the food will be brought to you wherever you choose to sit within the brewery. The menu is fairly limited but you will surely find something to suit your cravings - Burgers, Italian Sausage/Brats and Tacos! The Sausage come with a wide variety of toppings: Sauerkraut, Provolone, Grilled Peppers & Onions, Pineapple, Teriyaki and several kinds of Mustard {which just happens to be my favorite condiment}. The Hubs opted for the Smashburger - a Beef Burger topped with Lettuce, Tomato, Red Onion, Pickles, American Cheese, Siracha Mayo & a Bacon Jam.. and served with a side of chips. I chose the Chicken Tacos {which I still think about to this day} - a Corn Tortilla filled with Grilled Chicken, Cheese, Black Beans, Corn Slaw, Salsa Verde & Sour Cream {no Sour Cream for me and a Side of Jalapeños} - These were beyond amazing! ATMOSPHERE: They're a takeaway food cart located within Mahalo Aleworks' first level outdoor lanai. RESERVATIONS: Not available. PARKING: Plenty of free parking in the lot and on-street. MENU: A sole smash burger, taco and three styles of hot dogs. FOOD: The Italian Stallion - $14.00 The well-seasoned, oversized sausage was split down the middle with a nice char, topped with grilled onions & green peppers, drizzled with a delish stone-ground mustard and dill pickle slices to the side. The bun was soft but with a nice chew to it. I didn't feel like trekking to the bathroom to wash my hands so I ate it with the provided fork & knife. SERVICE: Very friendly. I was given a pager but they ended up delivering it to my table upstairs. Total order time was under 10 minutes. TIP: The smash burger comes with potato chips. This is a great little food shack next to Mahalo Aleworks. I wanted something to go with the beers that I was tasting at the brewery and this place was perfect. First, the service was so nice. She even brought my dogs to me in the brewery. As for the dog, it was terrific. The Ragin' Cajun was an awesome collection of flavors on a soft bun. Spicy and savory. After my daughter stole a bite. I really liked my Italian stallion sausage the other day. My friend got the chicken tacos and they looked really good too. We ate it all. I like the location and the atmosphere in this little brewpub. They cook the sausages to order at their little stand outdoors. It's a nice set up where a few businesses get together to share space. This little sausage trailer can be found on the lower level patio of Mahalo Aleworks, a new brewery located in Upcountry Maui. They serve freshly grilled, made to order sausages and burgers and work in tandem with the brewery to provide patrons a handful of food options that pair well with their beers. We went for Ze German, a simple bratwurst kraut dog drizzled in spicy brown mustard and the Italian Stallion, their 'wildest dog' (it's made of pork) topped with veggies and crispy provolone drizzled with a stoneground mustard. The final products which were conveniently delivered directly to our seats earned Upcountry Sausage Co an A in terms of presentation with toppings and sauces piled nicely on the sausages. In terms of flavor, I thought the Italian Stallion was pretty good, but I preferred Ze German. Just something about them brats and I liked the flavor combo more. You can custom order any sausage and add toppings or sauces to fit your palate. Best to ask the chef what's available as I didn't see many options on the menu. They also have a "beyond sausage" available. Overall, it's a great addition to the brewery and they're open 7 days a week. The first time we tried to come, they weren't quite ready at their opening hour, so just be aware, there may be a wait. read more

I discovered Upcountry Sausage while exploring the new area of Kula Manu around the Longs Drug store in Pukalani. The food trucks are right outside Longs, but across the street are The hidden gems of Marlow, Upcountry Sausage and a brewery I have yet to try. The three places are nestled together, I was drawn to having a tasty lunch. I tried the Italian Stallion sausage sandwich with grilled onions, peppers and provolone and stone ground mustard. The service was very good and they had it ready for me after making a quick stop at Longs. It was delicious. There are several other intriguing offerings I will have to return to try including Ze German and the Ragin' Cajun, and try out the connected Brewery. They just need to be discovered. read more

Got the smash burger tonight and it was much improved!! Last time the burger was rly dry but tonight it was not! Nice and juicy and the sauce was very tasty. The service at USC is very friendly, and they will bring the food directly to your table so you don't have to stand and wait (which leaves more time to sip your beer while still cold). Besides sausage, they have smash burgers, a kid's menu, and sometimes menu specials. But ya gotta go with sausage when you're having a beer, right? Their sausage dishes can either be made into a bowl with rice (this is a great option if you don't want to get too messy) or in a toasted bun. They offer up three options: Cajun, Italian, and German. Great smash burgers upcountry! Charred beautifully on the grill, and plated with all the traditional accoutrement (cheese, lettuce, onion, pickles, etc..) Served with potato chips. Burger sauce with some kind of chipotle flavor, which was really lovely and balanced. I usually omit anything chipotle because I find it to often be either too over powering or too mayonnaise-y but I am glad I got it today! Perfect burger. And authentic, friendly service. Also tried the chicken tacos, a special, and the German brat, add bacon. All good food, but the burgers are the stand out. We got our food to-go and ate in the parking lot. We have loved this burger stand for years, but the service and quality has gone way down hill over the last few months. $15 is a lot for a burger, but it was one of the best ones on Maui. The last five or six times they have messed up my order. Adding cheese when I specifically asked for now cheese. Adding mayo, when I specifically asked for no mayo. But this last time was the worst yet. Waited 30 minutes for my burger. Lost my ticket. Got my order wrong and no longer delivers to the table... even with a 15% tip? When I asked several times about my order, they just looked confused and unapologetic. My burger was I e cold tonight after waiting forever.
