I went to the Variable Cafe purely off of a Yelp rating without understanding it's a vegetarian restaurant. As a meat and potatoes guy, I've never really liked vegetarian food. Until I came here. I tried the new Tikki Masala offering and it was ABSOLUTELY DELISHOUS. The sauce was packed with flavor, The veggies where cooked perfectly, it was served piping hot and fresh. I was excited to discover it, but when I ordered one of my favorite things (Buffalo Cauliflower), I decided to ask a question and I'm glad I did! I asked what kind of oil they use in the fryer. It was a really bad one--GMO all the way. Our bodies. don't know how to deal with genetically modified organisms. There are countless European countries who oppose GMO's and do not use them at all. I wish I lived in Europe for this reason. We've got to speak up and set higher standards for ourselves and our loved ones. Restaurant owners say the healthy oils are not in their price point. I say my health is more important than the price point of oil. There are many items on the menu that are super healthy. Even though a place is healthy, don't assume that everything they use is healthy. Ask questions so the truth is revealed. I had My Son's PhO and my hubby had Ban Mih sandwich. We both loved our meal. My pho soup broth was SO GOOD!!! We also had a carrot cake! WOW!!!! One of the best carrot cake I've ever had. This place is awesome for vegans! They're menu is so well-versed - from tikka masala to pho to pasta?! The presentation of every dish is super cute and attentive to detail (shaping the rice in a heart shape). A must order appetizer is the cauliflower! Wow! That was delicious. I've only tried their iced matcha latte here and it's one of the best I've had. I get it with almond milk and they use organic agave for their sweetener. This place is never fully packed so no need to make a reservation. There is a parking lot but it's usually all taken. There are many side streets behind the restaurant that you can park at. Overall, I would say parking is easy and doesn't take much effort, even when you have to park on the street. read more

The "chicken" is most likely tofu based after tasting the texture. It squishes similar to chicken so for meat eaters, this may be the better first time try. The ingredients included a bed of salad with a good mix of veggies providing a proper nutritious value overall. I am looking forward to trying many of their other dishes. Staff was very friendly when I asked for some recommendations. Parking is ample but limited based on how busy the plaza is where the shared lot is located. But for everyday vegan food, top of the line. * * * Love of the life had a vegan pho. Vegan pho in normal pho places means "Water for the poor vegetarian who doesn't enjoy real meat and real flavor". This was a vegan stock that was complex, interesting and full of flavor. Love of the life also reports there were a ton of different ingredients in the soup. Variety is the spice of life. Carnivores get this if you order the stock with tendon AND tripe, AND AND AND working in about eight different parts of the cow. Vegetarians don't get that quite so much on their pho. She was happy. * * * I had a watery vegan Texas chili. Frankly, that suited me just fine. Carnivore Texas chili is about packing your bowl with as much meat as possible. Good vegan chili is more like a soup. This was an enormous bowl of comfort food. I was comforted. * * * The stars of the show though were the desserts. Vegan desserts all too often are grim little monsters. These were two irresistible plates. I had one of the best carrot cakes I have had in my life. The carrot cake had two secret features. One ... they work cinnamon into the batter. Cinnamon and carrot cake are the perfect couple. The rom com has a happy ending. The other carrot cake trick was a very tart frosting. A tart frosting cuts the heaviness of the cake and keeps everything lively. Yeah, I suppose it is not always a good idea to have the partners of a happy marriage be joined on the honeymoon by a tart. My family and I were looking for an organic healthy restaurant nearby and were happy to have found this place. For food, we ordered the Drunk Cauliflower, the Green Goddess, and the Damn Good Chili. The Drunk Cauliflower was perfectly crispy, and the dipping sauce was exceptional. Its flavors did not disappoint! I was delighted when I saw that the Green Goddess salad was organic. Unlike many kale salads I have tried, their kale was not bitter, and instead flavorful and soft. The honey crisp apple dijon dressing did not drown the salad, but provided amazing flavor while still making room for the flavors of ingredients such as chickpeas and edamame in the salad. The Damn Good Chili certainly lives up to its name! For drinks, we ordered the organic matcha iced green tea and fresh squeezed lemonade. Both were delicious and refreshing.
