Had this place on my list for a while since they're known for birria tacos! Ordered for pick up. Birria tacos for me, birria quesadilla for my sister, fajitas for my parents, and bean dip to share. With the consome, the birria is delicious and juicy. Very meaty and filling. Not overly cheesy either. We got salsa roja and verde on the side. Great to have spicier salsa options! My parents really liked the fajitas too! It comes with the usual rice, beans, and salad. The rice was well seasoned. Usually it feels like an afterthought and is bland at most Mexican restaurants in my opinion. Bean dip was delicious. Topped with queso. Staff was super friendly. I had forgotten to grab my consome, which they pointed out to me when I came back in. Also, they immediately grabbed my bean dip and chips as it wasn't in the take out bag. First off, the decor is absolutely immaculate--I really loved the vibe of the space. It's definitely a spot that looks just as good in person as it does online. That said, accessibility was a bit of a challenge. There are only a couple of accessible parking spots, so I had to park pretty far away. As someone with ambulatory accessibility needs, I was able to walk using my canes, but the curb leading up to the sidewalk was noticeably high compared to what I'm used to. If you rely on smoother entry points or ramps, that's something to keep in mind. We originally came because we saw their soft serve margarita flights on TikTok. They're about $29.99, but when we got there, they only had two flavors available--strawberry and mango--which made the "flight" concept a little confusing. I ended up getting a half margarita on the rocks and half soft serve, which actually worked out well. The soft serve was more like a sorbet or frozen yogurt than what I expected, but it helped keep the drink cold longer. The food was definitely good overall. My friend ordered the birria tacos, but we both agreed the original (Poplar Level) location has better flavor--the stew there was richer, while this one was a bit lighter. However, the salsa verde here was AMAZING. It was extremely spicy in the best way--like they really leaned into the pepper seeds--and I loved that. One downside was the birthday experience. I let the server know we were celebrating, and while they did say "happy birthday," there wasn't anything extra done. I was expecting at least a small gesture like a song or something fun, so that was a little disappointing. Service was slow and off and we understand that, especially since it recently just opened up here in Prospect. . We were impressed with all the variety offered on the menu. We enjoyed the chips and salsa however our meal was really nothing to write home about, it was average. We can say that the restaurant was very clean spotless and meticulously designed with a beautiful atmosphere. Some of the sauces that we had on our dishes just did not please the palate. Portion sizes were good just lacked flavor and Pizzazz in our humble opinion. Hubby is adamant that he does not want to return but I would give it another try. read more

This is one of those times a half star would really come in handy. Veronica's isn't quite a 4 star, but better than three. Let's start with the hits. The restaurant is spotless. Clean tables. Clean menus. We were promptly greeted, brought to our table and served chips & salsa. The chips were fresh and the salsa was well above average. Veronica's has an extensive menu. And I was pleased to see their lunch specials run Monday through Saturday. My wife ordered Vero's Special. Essentially, grilled chicken breast served on rice and smothered with nacho cheese. No veggies of any kind. She couldn't eat it. Too salty. And "rich". From other 4 & 5 star reviews, I suspect if my wife had ordered something else, we'd be posting a 4 star, too. I went with lunch fajitas. The dish was fine, not exceptionally greasy. But the sides were limited to refried beans and rice. No guacamole. No jalapeños. Oh, and no black, borracho, or pinto beans. You can have any kind of beans as long as they're refried. But the real damper for us was the loud music blasting through the ceiling speakers. I love melodic tejano music. But tejano rap? This was my first time at any of Veronica's locations. I love the atmosphere. It's fun and bright! They have a huge menu with a whole page of birria options. We tried the quesa birria tacos and the birria quesadilla. They're basically the same thing in different forms. The birria quesadilla was the better of the two. It has more toppings and stays intact better. Neither were outstanding, but both were decent. Service was a little off. A few order miss ups for us and tables nearby. They also got our checks wrong. They're still super new so that's understandable. I'll come back to try some other items once they've been open for a few months. read more

I have visited the location on poplar level road but the first time at the prospect location. the decor was nice and colorful. I got the mixed combo fajitas. it consisted of steak, chicken, and shrimp. it was delicious. they ordered the burria platter. it comes with marinated burria meat and served in different shapes. I wish the chips were thinner like chuys. their salsa was very good. our waitress Stephanie was excellent!!! I would return. good food. their queso was good as well. read more

This was the first time at the Prospect location and I will be back. I came in at 9 and even with the restaurant closing in an hour, service was fast, accurate and food was fresh. My server Maye C was so attentive to my needs, helpful with menu selection and a very nice welcoming young lady. I had the swirl soft serve Margarita. It was strong and a satisfying amount for the price. I love that it is dairy free! The food came out quick and hot, tasted good, and I was out within an hour. Veronica's new location knocks it out of the park! Plenty of room to handle the busiest times and orders are cranked out to perfection. The birria is always a hit but this location has a few different menu items not available at the other two spots, I'll leave it up to the real Veronica's fans to figure all that out . Everything here is always so full of flavor, you can't go wrong with any dish they offer. Service is always excellent. Ordered a burrito and had a big chewy shell that was way too big for the incredibly dry chicken filling. This is our second time to this location and we will not be back. The chips tasted like they had been cooked in an oil that was past It's usable life. Overall, a very disappointing experience for our group. Horrible. This makes me sad to write because I've always loved Veronica's. But this location here sucks. The service is absolutely trash. We got there at 2 with a party of 6 and we didn't see a server or anyone ask us if we had been helped for 45 minutes. No drinks, no hello nothing. When our server then realized we were right there ( there's only 1 other big party there where she had walked across many times) then she asked if we wanted to order... didn't apologize, didn't offer to bring out drinks we had to ask HER. That's not good service or let alone have any manners. The rest of the time nothing changed, the food took another 30 minutes which is fine. But after that she checked once and then we had to wait even longer for her to bring the check. There's no reason is should take that long when that restaurant was damn near empty. Needless to say I don't recommend this location at all, try Gustavo's down the road. read more
