    First time having mazemen & it definitely will not be my last! This meal was absolutely delicious! My mom and I started with some shishito peppers as an appetizer. These were perfectly flash fried and seasoned generously with salt. Great with a touch of lemon. For my mazemen, I got the Tokyo. The meat sauce was so rich and flavorful, the noodles were perfectly chewy, and the egg tied everything together with a slight creaminess. With a dash of vinegar and chili oil, this was a perfect bowl of dry noodles for me. My mom got the spicy mentaiko which was very reminscent of cream pasta. It was tasty, but I definitely enjoyed the tokyo bowl more. They finish you off with rice at the end to make a sort of risotto with the leftover sauce. The workers were really attentive and informative throughout our meal, explaining to us the proper way to eat the mazemen. The food also came out relatively fast. The place is very casual looking. Prices are a bit in the higher end for the portion, but it is really filling.

    3.5 stars rounded up Staff: only one girl in particular was almost rude in her blunt dismissiveness, the other guy that helped us after the food came was fine. We both ordered the Deluxe Mazemen and shared shishito peppers. The noodles were generally good, leaning on quite salty as it usually is the case with dry ramen. The staff suggest trying with the homemade fish umami sauce but I personally didn't like it. The flavors of the sauce in noodles were heavy and complex but I can't say that it is in a good way.

    I've seen Wadaya on the Yelp feed and I've had it bookmarked for awhile now. I finally got the chance to try them out! They are located in the Paseo Padre Shopping Center (often referred to as the 99 Ranch Plaza). They have plenty of parking here. The ambience is modern, updated, and clean. Simply decorated but with a good IG Photo op. Menu is on the QR code but you have to order with the waitstaff. They do have menus for you if you prefer. The staff were super nice, friendly, and attentive. We arrived close to when their kitchen was about to close, but we were able to order in time. They are known for their Mazemen, meaning "mixed noodles" in Japanese. It is a broth-less ramen style featuring thick, chewy noodles tossed in a concentrated, umami-rich sauce, aromatic oil, and various toppings. So, I ordered the... Deluxe: slice pork chashu, spicy minced pork, poached egg, scallions, chives, minced garlic, fish umami, seaweed flakes, seaweed, soft boiled egg. My wife ordered the... Mentaiko: (non-spicy or spicy) mentai caviar (slightly spicy), masago, poached egg, scallions, jumbo crispy shrimp Tempura, torched cheese, mixed greens, minced garlic, kamaboko fish cake, seaweed flakes. Our server told us to thoroughly mix our ingredients in each of our dishes and on my deluxe if I needed more flavor to add some of the vinegar (included kombu, red pepper). I loved the thick noodles that soaked up the sauce perfectly. We will definitely be back! Support your local business.

    Wadaya is located in the same plaza as 99 Ranch Market, two doors down from Phin Cafe. Parking is plentiful. We came on a Saturday right when they opened at 11am and got seated right away. We ordered.. CHICKEN KARAAGE $10 -wadaya style fried chicken. Homemade red sauce, kale, sesame seeds. We asked for the red sauce on the side since we had our toddler with us. It came out super hot, crispy batter with tender brown meat chicken. I'm glad we got the red sauce on the side since it was made of gochuchang..which I'm not a fan of. When the chicken cooled, it seemed to be kinda dry. They had a 30% off deal for this dish so we only had to pay $7, nice. 3/5* TAKOYAKI L.A. STYLE (4) $8.50 -japanese mayo, takoyaki sauce and bonito flakes. Crispy outside, melty inside. Wish there was more octopus! There was mostly batter. Flavors were good though. 4/5* IKAGESO (4) $8 -fried squid legs, japanese mayo, lemon wedge. Came out super crispy, squid legs were tender. Pretty fresh but simple. 3.5/5* TOKYO MAZEMAN $17 -spicy minced pork, poached egg, scallions, chives, minced garlic, fish umami, seaweed. The noodles were super thickkkk. Flavor wise, I wasn't a fan...it was pretty one note. I tried to add vinegar but it didn't do anything for me. They gave me a small scoop of white rice to mix into the leftover sauce but I didn't end up finishing my noodles.. 2/5* Service was very friendly and attentive. I appreciated how they took the time to explain everything. I just wasn't a fan of the foooood.

    Wish I knew this place existed earlier. Delicious mazemen and service is quick and friendly. Their chicken karaage is solid as well. The mazemen had super tender chashu and all the ingredients together with the sauce was perfect. Noodles were cooked perfectly. They give you a small bite of rice to finish up the sauce at the end. Filling and tasty! There are a good amount of tables inside but it does get busy.

    This place was really good. I think I liked it more than the famous one in San Mateo. I got the deluxe one and it was perfect. From the noodles to the sauce base to the egg. It was all the right balance and not too salty too. They also give you rice at the end to mix the sauce in so you don't waste a drop. The service was also really good. They explained the food to us and how to eat it. They were also attentive but not overbearing filling our food after when we needed without asking. The place is clean overall and there's a good amount of parking. There was plenty of space when we went on a weekday lunch with no wait.

    Wadaya is always solid! We got the Agedashi Tofu to start and I got the Curry Mazemen as my main. If you're unfamiliar, Agedashi Tofu is lightly deep-fried tofu served in a hot, savory broth. It's one of my personal favorite appetizers! The Curry Mazemen was delish! It features spicy minced pork, curry powder, kale, poached egg, scallions, minced garlic, fish umami, and seaweed flakes. Mix all of this goodness together and slurppp! After you've finished your noodles, they give you a small scoop of rice to enjoy with the leftover sauce- kind of like a porridge. So good.

    Came here last night, party of 6, I got the mentaiko (fish-based?) soupless ramen for $24. We also got the takoyaki, LA style (which I think resembles most typical takoyaki). Basically it's sauce ramen, and they give you a little scoop of rice at the end to mix in with the sauce. We also go the edamame to get some veggies in us It's soupless but NOT quite tsukamen-style dipping ramen. The noodles are also kind of like a midway cross between what I think of when I think of ramen vs. udon. Pros: - Really cute vibes inside, very modern! This replaced the old tea six and I really like what they did with the space - All the servers were really nice in explaining the ramen style if you haven't had it before. They were also super attentive when we needed more chili oil, rice, etc. The manager was an older man who was so cute and nice! - Free parking in the Ranch 99 plaza - The edamame and takoyaki were delicious, I think the appetizers actually slapped - The mentaiko was really good for the first few bites, I liked the non-noodle toppings. The portions are HUGE. - The poached egg in the ramen was delicious Cons: - I wished the mentaiko came with more toppings, I think after finishing 25% of my bowl, the whole thing ended up feeling like it was just noodles after (superrrr carb heavy). The flavor was also pretty good for the first few bites, but then just started feeling really rich. Looking back I think I would have stopped eating earlier and taken the rest home. - They don't put prices on their hard copy menus (at least not the one with pictures), but it's not too big of a deal because the prices are on the mobile menu. I do wonder if it's to keep menus all relevant and prevent obsolescence if prices go up Overall, a really positive experience here and I really liked the appetizers. And the egg was prepared really well. I think if I came back I would try their regular traditional soup ramen. A solid first-try at soupless ramen though.

    Found a new ramen place and decided to try them out in fremont. This restaurant has a nice front and decor inside. They even have a wall where you can take pictures of. Service was pretty good and they were pretty attentive. When they gave me the menu they explained to me what they are known for which is the mezamen which is dry ramen. Since I wanted soup I went with their california tonkutsu with black garlic oil. I also ordered their hello kitty fish cake with chili oil and I highly recommend it. The california tonkutsu was actually really good and the broth was very tasty. I recommend trying their vinegar on the pork. The vinegar wasn't overwhelming it had a good kicked to it so atleast try it out. I also had their hokkaido milk mille crepe. Really nice texture and not sweet at all so I try out the dessert. All in all good food and good customer service. I would definitely return to try their dry ramen.

    Dry ramen anyone? Luckily it wasn't too busy when my friend and I arrived here for dinner on a weekend. It was my back up plan. I originally had another place in mind but they were closed. This place was in my bookmarks and wanted to try it out. My friend said she had been here before and love how it's always consistent and good. Menu is straight forward and easy to follow. Thoughts? Generous portions for the price. Very filling and rich in flavor. Prompt and attentive service. Nice chewy noodles. Lots of meat in my bowl. Two types of eggs. They give you a side of rice to soak up all the meaty leftovers. I think I like a similar specialized restaurant in San Mateo more because of the type of noodles but this place is decent. I would come back!

    Finally had a chance to try WADAYA. This restaurant is located inside a busy plaza in Fremont (this used to be where TEA SIX was located). Small space; very clean and limited seating. After much hype, was craving ramen -- something soup based, decided to try WADAYA with my family. There was a line waiting outside. As it's my first time, I was told to check in and add our name to the kiosk by the front door. The staff at the time of check in said it would be roughly 10-15 mins wait time. As 15 minutes had passed, I checked in with the staff and was told that it would be an additional 20-25 minutes wait time. After waiting for 30 minutes; I got a notification that our table was ready. Would have loved for the staff to be more organizes for check in and long wait times. A small selection on their menu but the Ramen was worth the wait. Very fresh and delicious broth. Appetizers were okay; didn't try the desserts. Would recommend the ramen and would return in the future.

    Wadaya has been on my to-try list since it's been listed as 'hot and new', and it's been a while since. I haven't wanted to try this place since the last time I saw it, there was quite a wait, and lines really deter me. Today though, we happen to want to walk around the area and my partner really wanted to eat noodles, so we opted for an early dinner in case it's still a hot spot. Thankfully, we arrived around 5:30 PM (on a Friday), and there were a few tables taken, but we there was still many seats available. The server proactively asked us if we've tried Wadaya before and we said no, so he gave us a brief rundown of recommended mazemen choices and how to eat it. Between the Agedashi Takoyaki and Chicken Karaage, we opted for the Takoyaki since we've never had it in broth before. Seemed a bit more unique! I ended up opting for the Veggie Miso Mazemen and my partner got the Tokyo. The Veggie isn't a recommended or popular one, but I wanted something lighter and that fit the bill. I didn't want the Vegan one since I don't particularly like plant-based meat. Our server also recommended we save room for dessert if we didn't want to get the Chicken Karaage! Kinda a good call on his part, because we did end up getting a Mille Crepe Cake in the end. The Agedashi Takoyaki was delicious! It seems like it's just the broth that makes it an "Agedashi" item. It still had normal takoyaki in it. It's pretty comforting. The takoyaki pieces (4 pieces) soaks up a lot of the broth and the flavor along with it. Although it doesn't have that fried, crispy exterior anymore, the batter was soft and sponge-y like. I enjoyed it. As for my Veggie Miso Mazemen, it has a slight kick to it, but only initially. Once I mixed in some housemade vinegar, the spiciness was hardly noticeable. Of all the ingredients on the dish, the most notable ones is the fried slices of tofu, the lightly fried lotus roots, and of course, the noodles! Both the tofu and lotus root slices were lightly fried so they all had a mild crunch to it. The noodles on the other hand, were perfectly cooked. Very bouncy and chewy, so good! The Veggie Miso is definitely more mild in taste, and less saucey than the other ones, but it was light like I wanted. I think it could use some work though. Not in terms of taste since I think it's great, but I think some other minced veggies would mix better than the kale and corn. Other than that, I liked this Mazemen spot! As for my partner's bowl - he fully enjoyed his. It's very flavorful and saucey, and everything blended well together. Last but not least, we ended up getting a slice of Matcha Mille Crepe! It's not that creamy in-between the crepe layers, but I quite like it that way! A lot of matcha! It's an enjoyable dessert, but I think I'll only indulge in this once. This was a very nice casual meal! All the servers were really attentive, patient, and friendly! I like how proactive and polite they are. They checked in on us multiple times, and refilled our waters every so often. There's a lot of small details in their decorations that puts a nice touch to the place. Would definitely recommend coming here for a belly-filling, comforting meal!

I forgot what my husband got, but it was another spicy ramen. Both tasted good, I'll say that right off the bat. My husband opted for level 2 spicy and he felt like he could push it higher next time. Overall, Hinodeya is a good place for solid ramen. The chicken karaage was okay, although it would've been nice to have a spicy mayo sauce or something to accompany it. The matcha salt was different, but didn't really add much to the dish for us.

This is great to share with your party, and it seems to taste differently from the chashu you get in your ramen. You won't regret trying this! 5/5 - Chicken Karaage (Appetizer) - The chicken in this dish was very juicy, and the portions were huge! The sauce they give also compliments this well. Upon my arrival the kind host greeted me immediately and allowed me to take a seat. I was unsure of what to order and I had asked the host what to get and he positioned for me to try the coconut miso ramen and lemme tell you it was honestly one of the best bowls of ramen I've had. The broth was incredibly rich and velvety, with the coconut adding a subtle natural sweetness that complemented the deep umami of the miso instead of overpowering it. It created a balanced, layered flavor that was both comforting and surprisingly refined. Every spoonful had depth, and the broth was so good that I found myself wanting to finish every last drop. The noodles had an excellent texture, firm with just the right amount of chew--allowing them to hold onto the broth beautifully. The toppings were fresh, thoughtfully prepared, and blended seamlessly with the overall dish, adding texture and flavor without distracting from the star of the bowl. What impressed me most was how harmonious everything tasted. Fusion flavors can sometimes feel forced, but this ramen was exceptionally well executed. The coconut and miso worked together to create something unique while still respecting the traditional character of ramen. If you're looking for a bowl that's comforting, flavorful, and a little different from the usual tonkotsu or shoyu, I can't recommend the Coconut Miso Ramen at Tadamasa highly enough. Not the thickest pieces of squid, but it was fried perfectly and tasted good. The miso ramen's broth had a nice zippy acidity to it which I really enjoyed. My wife got the black garlic ramen and the broth was very flavorful as well. I was surprised by how nicely cooked the noodles were. Perfectly al dente. Don't expect to be blown away with a transcendent experience or super Instagrammable presentation, but the food is simply made well and does the job.

They recently switched the uncomfortable black stools out with new chairs, which is nice. The staff is friendly and they make sure to point out the 15% service charge (also shown on their menu) if you are dining in. This is not a tip, but tipping is optional at the end of your meal. This doesn't seem to deter customers at all because the wait time can be long around dinnertime. I highly recommend making a reservation before your visit!

The noodle was quite chewy. They did offer a thin noodle. Maybe I'll try that next time since it was a bit chewy for me. The broth was good. Pork was a bit too fat for my taste. Portion was small for the price. My son ordered the dipping noodle and he said it was good. I wish they have an option to have non-spicy dipping noodle. Ambiance was good. Table was a bit small for 2.
