I ordered their lamb malatang mild spicy. It was still pretty spicy to me but my tolerance is pretty bad. Anyway, it had a good amount of toppings. I wish they gave a bit more noodles though. Excellent Noodles that are made from scratch! I loved watching the chef bang the noodle dough and separate them into individual strands of noodles. The noodles were thick and chewy! The complementary noodles were my favorite. It was a cold noodle made with garlic, chili oil, and vinegar. Very refreshing and flavorful!! I ordered the curry noodles and my dad ordered the cumin lamb noodles. Both were good but the cumin lamb was best. The cold noodles were so good that I ordered it to go. I ate it for lunch the next day! They keep the noodles and sauces separated until ready to eat that way the noodles don't swell and absorb the sauce over time. My sister found out about Wild Ginger through social media. We were in the area so decided to swing by pretty close to when they opened at 11. I'm not sure if they offer on the house noodles to everyone, but they were gracious enough to give us some. It definitely started our meal off right! The flavors were off the hook! As our appetizer to share, we got Ds1 (pork dumplings in soup). The pork dumplings were so flavorful and juicy. The soup had an interesting sour taste, but we thoroughly enjoyed it! For my main, I order H2 (pork zha jiang). It was literally so delicious and filling. The hand pulled biang biang noodles were out of this world! Got the spicy tingling beef noodle soup and split it. Perfect portion to share if you aren't too hungry. The malatang here is truly something special and is absolutely amazing. It was hefty, and full of hidden surprises. The bowl of fresh hand cut noodles came with what seemed like an endless amount of toppings ranging from beef, tofu, rice cakes, to even seaweed. Im sure I didn't even cover all of the things that were in it because it came with so much. Also, this was my first time trying malatang and for those who haven't tried it either I highly recommend it. It was a little more vinegary than I'd like but still good. The owners were nice enough to give us free cucumber salad. This one was on the sweeter side. The beef noodle soup was ok. The broth was pretty light and could have used more depth/spices. Same with the lamb in sauce. The sauce wasn't very thick and was also lacking in some more depth/spices. Wild Ginger is a small restaurant I would advise to come early if you want seats. The staff is really sweet and gave great recommendations for our first time. We got the Pork Zha Jiang noodles, Pork dumplings, and Spicy cucumber salad. The noodles were very fresh, but would've loved to get more sauce on them. I should've asked for more sauce so that was on me. My favorite dish out of all of them would have to be the pork dumplings they were absolutely perfect! Casual family-run joint with great food! You can hear the fresh handmade Biang Biang noodles banging on the table and expect your food to come out soon after. Came on Saturday around 6pm, and since there isn't a large seating area inside, we took the last table. Even though it's small, their menu and customer service made up for a great dinner experience for us. My husband absolutely loves beef noodle soup from places such as One Piece Lamien and Highland Noodles. He wanted to try the one here as well but was worried it would be too spicy. Fortunately, the server let us know we could have it made non-spicy! It was a relief and I was happy with that option as some places have the dish at an unadjustable spice level. I got the dry ja jiang noodle. We considered getting lamb dumplings as well but we'll get that next time. The food came out within 5 minutes. Before it came out, since we were sitting right next to the kitchen, we saw the chef handling the noodles, pulling and slapping it against the table, and that was pretty cool. The jajiang noodles are pretty good. I asked for it to be mild and it was mild enough that my husband enjoyed it as well. As for the beef noodle soup, the broth is not super flavorful but not bad. Our only complaint with it is that it only had about 3 pieces of meat inside. Coming from the South Bay, we were not disappointed with the food and experience here at Wild Ginger. I ordered the zha jiang noodles (no/mild spicy - only 1 spice level, can't customize) as I wanted a dry noodle. Their hand-pulled noodles were freaking amazing, so Q and just the perfect amount of chewiness. I love good fat noodle pieces. Pretty standard dumpling dish - Cold Noodles: this was more of an appetizer in my opinion because it's on the smaller side and came with tofu and sliced cucumbers and cilantro. I really enjoyed this dish and would be great on a hot day - Lamb Cumin Sauce noodles: a little soupy but mostly saucey. What knocks them down to two stars is that although their price of $17 to $20 is not cheap, they put in miniscule protein. A small piece of meat is chopped into bits and tossed through the noodles. When I can hear the sound of the noodles being slapped against the tabletop, "biang biang", I have a feeling it's gonna be a good meal. Traditional to Xi'an, China, biang biang noodles are thick and long, pulled and stretched by hand. I truly did not expect to find a place in the Bay with this on its menu, let alone paying homage to the noodles' origins. I fully intended to order one bowl of noodles to share but of course, we ended up with: Spicy Cumin Lamb in Sauce (biang biang noodles) Pork Dumplings in Sauce Stewed Pork Slider (rou jia mo) I'm not normally a thick noodle girl, but these were delicious. Great chew and a bowl full of flavor. Dumplings were great; LOVE the sauce. The slider was juicy, as it should be. (It's weird to call it a slider lol the literal translation of "rou jia mo" is "meat within bread"). Service was quick and there are a decent number of tables inside with a few outside. I've heard high recommendations from friends to try this spot & I was not disappointed! My friends and I arrived right before the dinner rush, which we were then quickly seated in the cozy space and served water and menus. Everything on the menu looks good but the noodles are a must try. After we ordered, they were even kind enough to offer some spicy cucumbers on the house! I ordered the spicy hot oil seared (H3) and it was delicious! The hand pulled noodles are fresh, chewy, and bouncy whilst the hot chili oil with the greens balanced everything out & provided a slightly numbing spice that was addicting. We also shared the pork dumplings in sauce and the sauce was so good I could've drank it! The portions sizes are fairly generous & filling, so I will be able to enjoy my leftovers for lunch the next day as well! The meal was a great, comforting dinner for a chilly 60° evening. Menu includes dumplings, noodles, ramen, malatang, sliders, street foods and salads. Many of the dishes were listed as spicy. Our waitress answered our questions about the dishes we selected and its spicy level. But we all wanted to try the Biang Biang hand-ripped noodles. Pork Zha Jiang Biang Biang Noodles - the wide ribbons of thick chewy noodles were topped with a savory minced pork sauce, sliced cucumbers, bean sprouts, sesame and mild spice. First time trying these noodles. Compared to other noodles, probably not my favorite. Tasty savory pork sauce, but I probably prefer the sweetness of Korean jjajang sauce. Stewed Pork in Sauce Biang Biang Noodles - stewed pork with cabbage, mixed with cabbage, Sichuan pepper, soy sauce and black vinegar. Tried this and it was good with a vinegary taste. Spicy Cumin Lamb in Sauce Noodles - sautéed lamb and cabbage with cumin tossed with the noodles. Friend said she wished the sauce had stronger flavor. Happy to finally try the hand-ripped noodles here. Friend said the Biang Biang noodles were comparable to the shops in Queens. We were very quickly seated. Almost immediately we were given water and constant refills. The restaurant gives legitimate Korean vibes, with the cooks right behind the wall cooking the noodles. The hand pulled noodles had a nice texture where they had some chew, but easy to break apart. Also, my noodles were the perfect amount of spiciness (they can adjust as you wish) and was quite flavorful. The dumplings were also a fan favorite in our group as it wasn't too spicy and the dumpling skin wasn't too thick. I really wanted soupy thick homemade noodles and really didn't feel like driving down to Fremont to my favorite place, so I figured I'd finally give Wild Ginger a try. I ordered the lamb burger / bun and the beef soup malatang. The soup looked more oily than it did spicy to me, and the taste was much the same. The noodles were thick and the beef was good, but oddly, I liked the chunks of potatoes more. Overall, I just wish the soup had more spice and less oil. The big let down though, was the lamb burger. First, I should have read the previous reviews more carefully, as I expected a bun of some sort, not a tasteless English muffin. Second, I had onions, and by the time I plucked all of them out, there was barely any lamb. My other issue was while sitting inside, not only did I get to hear constant exceptionally loud chopping from the kitchen, but then one of the girls working there went to catch a spider or a bug that was on the window, and then proceeded to walk back towards the cash register / kitchen with it (right next to where I was sitting) and proceeded to stand there as if she couldn't think of what to do with the bug (hint: take it outside!) read more
