    I've been coming here for years, and for Bay Area Xi'an food, this place remains one of the few with consistent fundamentals. No fusion, no shortcuts--just straight, street-level northwestern flavors done properly. Biang Biang Noodles with Hot Oil Hand-pulled, wide, slightly uneven - the texture you want. The hot oil hits first, then chili, vinegar, scallion, and a clean layer of fresh minced garlic that anchors the entire bowl. That garlic is the line between "spicy noodles" and actual Shaanxi-style structure. You get wheat aroma, chili fat, vinegar lift, and garlic brightness in distinct layers. Cold Skin Noodles Among walk-in options in the Bay Area, this is one of the most reliable. Correct chew on the noodles, bouncy gluten pieces, and a balanced mix of vinegar, chili, and sesame. I'll be honest: the best liang pi I've had locally still comes from small home-kitchen group buys--rare, and as close to mainland street flavor as you'll find. But for a restaurant you can visit any day, this version gets the essentials right. Lamb Offal Soup This is the dish I schedule my visit around. I usually come early to avoid waiting. The broth arrives properly oily and dense - exactly what lamb offal soup needs to be when done seriously. Heart, liver, tripe, stomach, intestine, and a few unidentifiable cuts all show up. If even one component is missing, the flavor loses depth; if the simmer time is short, the broth tastes thin. Here, the fat is deep but clean, the aroma is full, and there is none of the "freezer-burn" taste that shows up when offal is mishandled. The kitchen clearly understands how to treat lamb parts. Bai Ji Mo Flatbread Freshly griddled, firm exterior with a soft interior. Eat it plain, dip it in the soup, or tear it into small pieces and let it soak to build your own improvised lamb bread soup. My preference: tear small pieces, take it slow, and let the broth thicken around it. This broth deserves attention. This is true northwestern street flavor adapted to the Bay Area without losing its structure. Many places copy the menu; very few deliver this level of texture control and offal handling.     Solid Xi An flavors and respectable portion sizes. Xian Kitchen has been around for a long time and has always faced large crowds and high demand. This means there's usually a waiting period and a full restaurant with workers scrambling to get the food out. Can definitely feel hectic at times. This time, I came on a weekday during lunch service, so I was luckily able to snatch a table. We ordered the cold noodle with sesame (liang pi), pita bread soaked in beef soup (pao mo), twice cooked pork (hui guo rou), and the lamb spine chops (jiao ma yang xie zi). Food came out relatively quickly. The liang pi was chewy and the perfect amount of spice. It's an addicting dish to eat. I do wish there were more cucumber and kao fu (wheat gluten) in the dish to offset the spice and make the dish less one dimensional. The broth in the pita bread soaked in beef soup was rich, and the chewy pita makes it very filling. To be honest, there wasn't that much beef in the soup, making the dish feel more carb-heavy. The hui guo rou was cooked great. It was soft but also crispy, and there was a good mix of fatty and lean meat. There's a generous amount of doubanjiang, making it umami. It's usually a Sichuan dish but was still cooked well in a Xi An restaurant! The yang xie zi were very tender, making the meat easy to get off the bone. Not exactly too spicy, but did taste the cumin. A unique cut of meat that I'd recommend trying. I don't think I'd go out of my way to brave the weekend line, but worth eating here if there's no wait!

    I came here for Sunday lunch. There was no waiting line, and we were served immediately. We ordered a Chinese burger (Roujiamo), stir-fried shredded potatoes, and lamb noodles. All the dishes were flavorful, but a little greasy. I liked the texture of the noodles, which were chewy. Although I have never tried authentic Xi'an food before, I enjoyed the dishes at this restaurant and will come back to try some other items.

    Came here and was told that we need to share a table and got seated right away. Two other parties sat down. We ordered first and the appetizers came out shortly. But the main dishes never came out. Found that there is no distinction between parties when sharing a table in their ordering system and since we all ordered the same popular dishes the others were served first for some reason. I understand that sometimes miscommunications can happen, but when I politely asked where was my order I was told that it was already served and the server accused us of eating with out paying. Only after I showed her the table and she rechecked again she noticed the error, but offered no apologies and no remedies. The liangpi was soso, and so was the appetizers. Over all a very bad experience.

    Not exactly sure why people give Xian kitchen a 3 but our experience has been awesome. We ordered braised chicken with potato and pepper (huge portion, great taste, just right amount of cooking time), cool noodle with sesame, dry cured beef, lamb burger. The service is fast considering it was a Saturday lunch time. The ambience is average but typically with a strip mall restaurant. They do not have many seats therefore if you need to sit down with a large party there may be some wait. There is plenty of parking spots in the mall.

    Lamb Stewed Noodle

    Overall the food is delicious. The Lamb Stewed Noodle is the best. The big plate chicken noodle is huge! It can be shared with 2-3 people. The seats are limited. It seems they don't have enough people to take care of the seats arrangement during the dinner time. They should come out a way to let the customers sign up or join the waiting list. Otherwise, some people just walk in and cut the line.

    Food: 1. Pita Bread soaked in Beef/Lamb 2. Garlic sauce with noodle Pita bread soaked in beef/lamb The "beef/lamb" means you get to choose between beef OR lamb. We chose beef. Relative to the amount of pita, I didn't think there was a lot of beef. For the cost, it was an okay amount of beef. It did seem like SO much pita bread cubes. The pita didn't seem fresh and it was chewy. Once it cools down there was diminishing returns on a bowlful of soggy pita cubes. Tip: piping hot soup goes well on a cold/rainy day Garlic sauce with noodle It doesn't photograph as well, though we appreciated that the noodle/soup came separate from the sauce. That way the spice level can be regulated. Tip: dip in one noodle at a time and then rinse of excess in the soup. Helps keep each bite from being too spicy and then helps add flavor to the soup.

    Went around lunch area and there's a decent amount of people in the restaurant. I think the food taste pretty authentic, spicy, but in general very oily. The cold noodle taste very good, and it's very nutty which I like. But I did not enjoy the 肉夹馍. Th lamb smell is very strong and I'm just not a fan of dry 饼. Overall I'd come back for their noodles once in a while.

    Always a very safe favorite spot to go to when hankering for satisfying clear lamb broth noodles or spiced up cumin lamb dry noodles. The lamb noodles come with a hot broth that's very addictive, and slippery broad noodles. Add a dash of chilli! And haven't found a place that makes better liang pi (cold and gelatinous rice noodle appetizer dish) and serves such a hefty portion. You can order the version without peanut sauce. The servers are fast and courteous. It's a small place, the doors have this funny mirror tint on it so sometimes it even looks closed but then you open it and see it can be pretty full of people slurping away on their noms. I wouldn't say it's the most well maintained and decorated place, quite the opposite, but it's very good food and crazy authentically good.

    Xian Noodles is a very cozy spot in Milpitas; inside a plaza where there are many other restaurants, 99 ranch, and boba spots! This location is self served by scanning their QR code, and you order from the mobile app. The mobile app comes with lot of flexible adjustment to your food like... less/more oily, less/more spicy, and etc. The food came out pretty quick, and quite big portions too! The only downside side is that, a lot of the dishes were too oily and missing some taste, but they have sauces on the table for you to add on if needed.

    The onion fried mutton is super tasty, highly recommended, the other two dishes- braised eggplant, potato and pepper; and Braised beef brisket with dried beancurd was not what I expected. The delivery is fast during weekdays' dinner time, the other time I went there over weekend, it's super crowded, so you know when to go now.
