Beautiful restaurant, incredible sashimi and sushi. I travel internationally for work and this is one of the best sushi experiences I've had, and with cuts of fish I'd never heard of. We sat at the sushi counter and were able to watch the artistry of the chefs and chat with them a bit towards end of the evening. Appreciated the wine list with mostly Oregon, lovely vintages. Had a wonderful date night at 5 Fusion & Sushi Bar. Our waitress was extremely friendly and even was able to switch up a dish for us so that we could still get a version of what we were wanting to order. The standout of the night was the hamachi Kama (they ended up using salmon) and the crispy pork belly buns. We were at the sushi bar so we got to witness first hand them putting all the food together. Pretty sure I've reviewed this before as I've been here a dozen times over the years. But I'll say again, it's amazing. But it WAS far more amazing in the past. My current review has lost stars because of whatever is going on with their management and menu revamp. The menu has been completely redesigned and downsized, several of my favorite rolls don't even exist anymore because they didn't want to source the extremely common ingredients. Nonetheless, try everything but bring a fat wallet if you do. It's very pricey but delicious. I find it a bit strange that every single waiter looks like he stepped out of a vampiric bdsm romance novel, it seems to be a requirement to have at least one full sleeve tattoo and they recently eliminated all of their Japanese sushi chefs in place of random locals - the food has suffered because of it. They also haven't fixed their beautiful water ceiling element in several years. Honestly I could fix it in an hour and it was a beautiful addition to the frankly unimpressive interior design. Their lighting is great though on the ground floor. I'll keep coming back. read more

The vibe is hip and chic, and if you don't have a reservation, you'll be escorted upstairs as we were. There is room up there unless it's privately booked so we got lucky! Our two different tuna rolls (akashiro and spicy tuna) were very salty. I've never had a salty sushi roll so that was a first. Thinking someone had a heavy hand during the food prep. It has been our favorite restaurant in Bend with fresh creative sushi plus a wide variety of Japanese inspired dishes from salads to main courses. We went again last night and WOW, they have leveled up! We are all about the food and it was stellar, from a sashimi platter of four tunas, eggplant, shishitos, salad and many rolls - literally not one grain of rice left when we were finished - the high quality and true craftsmanship is worth every penny. Wow wow wow is all that firsts comes to mind about my experience here. We decided last minute that we wanted to have sushi for dinner and stumbled upon 5 fusion and boy am I glad we did, it was probably the best sushi I've had. Every item we got melted in your mouth and was to die for, especially the tuna crispy rice (not pictured). I rarely leave negative reviews, but this experience was disappointing from start to finish. We were told the entire restaurant was reserved and were seated at the bar... yet half the tables were empty the entire time we were there. Not a great first impression. The sushi itself was shockingly underwhelming. The first roll had zero flavor and was half the size of a normal roll. The second was supposed to be an unagi roll, but there was barely any unagi on it at all. The final roll was so bad I couldn't even finish it--I ate one piece and gave up. Service didn't help either. The bartender didn't refill our waters even once until she dropped off the check. Our group of four walked out still hungry and staring at a pretty hefty bill for what we got. I am quite the average Joe person going to dinner with my friends for one of their birthdays. We are 17 and visibly underage but we made a reservation and were fully ready to pay and tip well for our meal. We asked for a modification on our order to tempura one of our rolls (which we have had done multiple times before) and were told the kitchen was unable to do it. We thought this was strange because every time each of us had previously gone we have had this modification done to the rolls. Another strange thing that happened was that our waiter checked up on every table around us multiple times but only came to our table to deliver our food and take our order. The ambiance and service were very good, however we did not like any of the 4 menu items that we tried. - Crispy rice with spicy tuna: we've had this at several other Asian restaurants and have always liked it. The rice seemed very oily and deep fried, and one piece was brownish on the inside (from a sauce that was mixed in?). This was probably the best of the 4 dishes. - Miso eggplant: it was an oily mass of dark brown small pieces of eggplant in a sauce that tasted nothing like miso and overwhelmed the flavor of the eggplant. - Miso cod lettuce wraps: the cod was again overwhelmed by the flavor of whatever sauce was used and didn't taste like miso. The lettuce and crispy onions on top were tasty though. - Diablo roll: again, there was a strong sauce that overwhelmed the dish, and the spicy tuna had a strange texture. Came in on a weeknight and sat at the bar. The bartenders were very friendly and chatty, which was welcomed by me given that I was dining alone. I tried the award winning Botanist - gin, cilantro, serrano, ginger, and it was very tasty, quite the zinger. It does come out bright, almost neon, green, so brace yourself. For dinner I ordered the California Roll Salad and the Diablo roll. I was pleasantly surprised by the salad. It came with a good portion of crab and an entire half of an avocado. The bed of romaine that it was all on was dressed in a creamy black sesame dressing, that at first seemed like too much, but when I took a bite with romaine, avocado, and crab it was a well balanced taste. The Diablo roll was also good, some bites were much spicier than others, but overall there was a good portion of fish in each bite, and not too much rice. My only suggestion would be to modify the ponzu sauce, it somehow was totally absorbed by the rice, making the rice a little mushy. So making the sauce a little thicker maybe to stay on the fish, or mixing it in somehow could prevent the issue. As for the prices, seems on par for Bend dining, but generally seemed a little pricy. I was a fan of this place until my last trip on Friday. Thinking they may have a new chef? The food wasn't stellar like it's been in the past. Miso soup served luke warm, sake also luke warm, albacore truffle sashimi lacked seasoning (I believe ponzu and truffle oil -always loved this dish in the past but this time was dipping in soy sauce), rock shrimp was not crisp and shrimp slightly underdone...also luke warm. Sushi special roll that night had bluefin tuna and was not memorable. Toro nigiri was probably the best thing we had. Other than actual temperatures and taste, the service was weird. No pacing whatsoever, first thing brought was the "tempura shrimp", which I found odd, then everything else was just dumped on us at the same time at the sushi bar where we had no room (despite making a birthday reservation). I'm so bummed that we had a bad experience here and will likely give them another shot, but it's hard to swallow a place being as spendy as it is and leaving unhappy.
