We checked out the Friday What the Truck event a couple weeks ago because I wanted to try that Roti's porchetta sandwich. Unfortunately, I didn't study their schedule carefully and they weren't there. They are there the third Fridays of the month apparently. Though disappointed, we found a very nice surprise. We tried Bada's BBQ and I need to stress that the brisket was very very good! Tender and tasty. I've had lots of bbq in Texas when my sister lived in Dallas and this was up there! Fresh and flavorful with the smoke not being too overwhelming. Good sides with homemade pickled onions. Guys working the stand had lots of aloha as well. I would for sure go again. The portion size was generous too compared to other bbq spots. Note to event coordinators though, it'd be beneficial to the patrons for perhaps some tables with umbrellas. The concrete makes it stifling and people are sitting on curbs as we did yikes.

What can I say. I'm always down for good BBQ. I'm so glad I had a chance to try them. I got the beef brisket plate. Came with rice, beans, some pickeled onion and roll. The brisket was soft and smoky and hits the spot and it paired well with the beans. There was a lot of brisket and I had leftovers for dinner.

Bada's, not to be confused with Badass... Bada's is like saying Braddahs, without the R! Hope that helps. So you don't go somewhere totally different looking for brisket and chili! When it comes to BBQ I can be pretty picky, but let me clarify that my standards for BBQ cannot and shouldn't be compared to a southern BBQ connoisseur. This is BBQ with a local touch. I was introduced to this beautifully 12-hour cooked/ chaperoned piece of brisket meat when our boss treated us all to a meal. I was impressed immediately! The brisket was juicy and super tender. The taste has the right amount of flavor and to be honest you don't need to have the BBQ sauce. BBQ sauce does give it a different flavor though. Regardless, its good either way. My personal fave, besides the brisket is hands down their brisket chili!! Scoop Mac salad with the chili and rice and you've got a winner in a bite! This portion is good enough for two meals for me. It's pretty filling, especially with the rice it comes with. I wanna take a nap afterwards. Their ribs are fall off the bone, good and tasty! A lot of my coworkers will choose the ribs as a favorite. The curry is a local Japanese tasting style. Something to note, it's not gonna be soupy, more like saucy as far as texture goes. This one is pretty tasty too. After the chili, this is my favorite. I'm not a chicken thighs fan, but everyone I know who've gotten the chicken plate, we're super happy. They liked the seasoning and I have to admit it smells really good. Pulled pork sandwich or brisket sandwich are also a hit! They've got a good menu going, but to see what's available during their pop ups, check out their Instagram page: @badas_bbq From Thursdays - Saturdays they're popped up in front of Bougainville Flooring Super Store near NEX & Salt Lake Target. They open up at 10am and there till about 2pm or until they're sold out. I've been seeing them do catering jobs and they can get pretty busy. If they're not at the pop up, they'll post on IG. Give these two local braddahs a visit. They'll appreciate the local support and you'll enjoy the food they serving. Happy Eating!

3.5 Stars - Not bad. Badas bbq is located in the parking lot of flooring store near Salt Lake Target and open from Thursday to Saturday only. It was very easy to find and there was a lot of parking available. Their IG stories and photos of their food looked really good so I wanted to try for myself. This particular week had brisket stew for $20. I asked for no rice and it came with a side of mac salad. There was other items on the menu that day too including ribs and brisket too. Cash or Credit card was accepted and the food came out pretty quick. The brisket was definitely soft in the stew, but the stew had a tang/acidic taste to it which was probably from the ketchup which made it harder to eat for me. Otherwise it would have been pretty awesome! The portion was also enough to share for 2 people.

Bada's is a pop up in the parking lot of the flooring store. Got there about 11 and had no line. Been seeing their food all over IG and finally had the chance to check it out. Of course here for BBQ so got the combo plate for $25. Good amount of food stuffed into the plate: rice, Mac salad, pickles, pickled onion, beans, king sweet roll, 2 ribs and 3 slices brisket. First tried a pickle slice, it's a sweet relish type and I dont care for relish in general so not a fan. Would have preferred a dill pickle. Onions also on sweet side, kinda wanted more tart to offset the bbq sauce. Mac salad with as good, not spectacular but a good side. Went for the beans next, surprise they were pretty good. Not the overly sweet or honey type. In my opinion nice balance wouldn't have minded to see some bacon or sausage in there. Brisket- upon visual it wasn't overflowing with juice but there was a nice bark on it. Bark was not overpowering. Meat itself had a little dry texture maybe they had to rush and didn't wrap long enough??? But none the less nice flavors with nothing overwhelming like too much smokeyness or too much salt. One of my pieces was a thicker cut and that was perfect: moist, flavorful and the flavor was distributed throughout. All the brisket had no toughness to it and my pieces were trimmed perfect Ribs- they were great! Not over cooked (I don't like fall apart doneness) again nice flavor and smokeyness. Only problem was only had 2 pieces lol The Bbq sauce is a sweeter sauce and I like the more tangy and spicy flavored sauces. No biggie mix some sriracha in there and all good Overall they are some of the best bbq I have had on island. Only went once so not sure of consistency but based on this visit I will be back.

We tried Bada's BBQ for the first time last week, it blew our minds and taste buds that we went twice in a week. I heard they use lychee wood to smoke their meat. The honey bourbon barbecue sauce is killer too. They also make their own pickles and pickled onions that go perfectly with their whole menu. They are there at the Bougainville flooring super store parking lot on Thursday - Saturday 's 10:30am till they sell out.

Hands down best brisket and St. Louis style ribs on the island. I've bought plates and catering from Bada's BBQ many times. They serve Texas BBQ with a local twist. Mac salad is unreal (I always get extra). Right now they are conveniently located outside of Bougainville Flooring Super Store from Thursday to Saturday. Seems like they sell out around 1-2pm usually so I would order ahead of time. They don't have a web site yet but you can follow their specials and catering menu posted on Instagram @badas_bbq

The salmon belly is cut into bite-sized pieces so I didn't have to worry about using a knife to cut it. I usually try salmon belly where it is usually seasoned lightly to bring out the natural flavor of the salmon, but Guava Smoked's salmon belly is just grilled in a way that makes the salmon sweet/crispy and still get traces of the salmon taste as well. It's definitely not your traditional Japanese-style way of cooking salmon belly but really just their own. I'd go back and get this again. Another thing too. I'd get this with beer. This would hit very hard with alcohol but because I don't drink I need a kombucha. The grilled salmon belly would go perfect with it. Cheers! I definitely think they improved their recipe from the first time I tried it. The food is good, I love AYCE BBQ and all of the meat they provide is EXCELLENT, especially the pork/samgyupsal. The only thing they can beat at is the beef tongue, while it is still very good, Gyu Kaku has better beef tongue but it's just expensive so not worth it at all. Their banchan is great, I am a fan of the Kim Chi they serve here, it has a nice funk to it and a subtle sourness that cuts through the well marbled meat you'll be eating. The Kim Chi soup is also great as well, just as a warning, if you rarely eat kimchi you WILL have increased bowel movements which is not food poisoning but it's the probiotic gut health nature of Kim Chi that flushes you out. So eat it in moderation. My favorite picks are the Pork Jowl/Brisket/Bulgogi/Beef Belly, you literally cannot miss with whatever you pick, it's all very tasty and easy to eat. The service is awesome and feels homy, all the auntys walk around and do their own thing and sometimes check up on you/restock your banchan/soup if you want them to. They have a button you can press to ring them up but you rarely need to do it. If you're not used to how asian auntys talk or behave please don't take it negatively, they express themselves in a brusque manner but they really mean the best. Overall, great meat, great service, great parking space and convenient. The last time I found an awesome tasty spot and wanted to gatekeep it was Seasons Taiwanese Eatery.
