I finally found one in LA, and Bếp Mẹ Nấm not only checks all the boxes--it exceeds my expectations in both quality and value. The $18 Bún Bò Huế Đặc Biệt is packed with just about everything you could ask for: a beef rib, tender beef shank, rare beef slices, pork foot, pork blood, and both pork and beef meatballs. It's one of those rare bowls that actually feels like you're getting more than what you paid for. Nowadays, that is rare. Equally important, they nail all the little details. The proper assortment of fresh herbs and vegetables accompanies the soup, and it's served in a stone bowl that keeps the broth steaming hot from the first bite to the last. I typically prefer my Bún Bò Huế with a stronger lemongrass profile, and while the broth itself wasn't quite as lemongrass-forward as I normally like, they offer a house chili mixture loaded with lemongrass. It added exactly the flavor and kick I was looking for and made an already great bowl even better. Service was efficient from start to finish. For my personal taste, the broth was a bit salty and the noodles were slightly too soft. Since I was in a rush during lunch, I also forgot to take photos. The service was very nice and the food didn't take too long to come out. The restaurant is not too big, but it is clean, and parking is spacious and easy to find near the shop. If you're not too picky or particular about bun bo, this can still be a good option. Love this place so much!! I come here pretty regularly and get the BBH. Out of all the places in OC, I would say this place has one of the most flavorful broths. I love their portion size and that everything stays hot the whole time due to the stone pots. Our bowl also comes with a rib bone so there's a lot of meat already including their meat balls, crab ball, tendon, beef slices, pig blood, and pig feet. Their service and ambience is always good. The speciality is Bún in the hot stone bowls or you can request in a regular bowl. We tried the house special Bún mam and the hot stone Bún Bò Huê'. Compares to other places the Bún mam is a bout 8/10. Generous portion of meat and fixings. The broth is not there yet. The Bún Bò Huê' is so so. Again, there is not enough to burst flavor for this soup noodles bowl. The condiments to go with these bowl Noodles is fantastic. I've been eating bún bò Huế for over 10 years, and this is the first time I've ever had an experience like this. It was my first time visiting this location, and unfortunately, I found what appeared to be several hair-like strands in my food. When I brought it to the staff's attention, I was told it was "just fat," but it didn't look like fat to me. Instead of taking my concern seriously, I felt like it was dismissed. Whether it was hair or not, I didn't feel comfortable continuing to eat my meal. I was really disappointed because I had been looking forward to trying this location. I think there isn't enough topping in bun mam. But the broth is tasty, fermented, and clear. It came with a tamarin dipping sauce so that was unique. Finally got to try this new restaurant and it was amazing. Kind of a hidden gem tucked in the Stater Bros shopping center. Service was quick and friendly on a Friday night. It got pretty busy at around 7-8pm. We ordered #1 and #2 bun Bo hue. One came with the short rib bone and the other was a regular option. Broth was flavorful and perfectly seasoned. They specialize in bun Bo hue (lemongrass spicy beef noodle soup one regular and one special) and bun mam (fermented seafood noodle soup). Ordered the basic bun Bo hue because I honestly didn't want to pay the extra $3 for a beef rib. So the concept is that everything is served in the traditional Korean stone bowls that are piping hot. LOVE THIS! However, flavor is lacking. They basically bring all the toppings (meat, noodles, and vegetables ) separately and you add it in as you go or add it in all at once. Up to you. I like my noodles Al dente and my meat rare so I added the rare slices (4 pcs) as I ate. Meat was good and vegetable quality was good. Accruements to go was the basic date and fresh chili and nước mam, I had to ask for mam roux which is not a big deal. My issue comes to the broth. There was no flavor and was so bland. I didn't taste any lemongrass or any notes of mam. The only part I enjoyed was that it was piping hot. Now once adding everything in with the vegetables too, the broth was more diluted and tasted now just like hot slightly savory water. The restroom was not clean, there was no toilet seat cover, and the trash can had no lid--you could see everything inside, which was quite unpleasant. Personally, I believe that if a restaurant keeps its restroom clean, it reflects on how clean the kitchen is too. Also, I wish the staff would dress more professionally--wearing long pants and closed-toe shoes would look more hygienic and appropriate. As it is now, it doesn't give a very clean or professional impression. For hygiene overall, I'd rate it around 3/10. Another downside: the food is served hot in a stone bowl, but there's no air conditioning, and the door is left open, so flies can come in. That's not ideal when you're trying to enjoy a hot meal. Pretty solid bun bo hue but I will admit I'm not a huge fanatic compared to some people. But I did like their soup. Someone else at the table who got the dac biet didn't like the meat selection they got. I do like the clay pot as it definitely kept the soup warm longer.
