My husband and I stopped by the Cork on our 31st anniversary for dinner. We didn't have a reservation and were seating immediately in a comfortable booth. Fabulous cocktails ensued, and the next level service began. Our server, Daniel really read our vibe, and explained dishes and made suggestions for us. Overall, the food was killer (I had the halibut with filled and deep fried squash blossoms with a perfect jalepeno sauce - so savory) and my husband had the chicken enchiladas). Dessert was offered gratis because of our anniversary, and Daniel snapped a photo of the two of us with a REAL camera. Beautiful food creatively prepared paired with cocktails that checked every box. All of the other employees were also tuned in to maintaining the comfortable setting while providing upscale attention and food. If you live nearby, treat yourself often. Okay, I really need to update my review of The Cork. It's like any good marriage: sometimes it is rather disappointing but mostly it's pretty good to totally awesome! It's so great in so many ways so often that when I am disappointed I feel like I've been ripped off but that's so unfair! The Cork is a tried and true wonderful restaurant which I will continue to count on and enjoy...and when something is off I will work with the staff to see what we can do to make things better. We have been here a bunch of times, and it never disappoints. However it just even went up a Kotch in my book this week when I tried the Prime Rib Sandwich for the first time, at my husband's advice - courtesy of his business partner. Oh my god! Melt in your mouth amazingness!!! And I LOVE prime rib! Probably one of the best sandwiches I've ever had, and I LOVE sandwiches. Definitely the best prime rib sandwich! Visited this Boulder staple with a larger party and had the best service from Barry and team. The grilled artichoke is so well executed --simple and perfect. The happy hour specials are honored at the table and they are really good prices on basic drinks, wine and beer. They also have a bunch of apps and mains on special too. Meh. I've been to the Cork three times in the last few months. We're usually there at the end of happy hour. The drinks are good, but each food I've tried has been underwhelming. I've had burgers, nachos and last night tried the grilled fish bowl. Boring fish, over spiced veg and really small. The burger was pretty good, but I've had better for less money. Nachos, nothing special. Our service last night was very friendly, but also very slow. I'll go back if that's where my friends want to meet, but it wouldn't be my choice. read more

We went on a double-date to dinner at Boulder Cork. We made a reservation in advance (recommended). Our waiter was very friendly and we were seated at the time of our reservation. We ordered the Boulder Cork salad to share as a starter and I had the Sake Salmon for dinner. I chose the Boulder Cork salad because it seemed to be the healthiest salad on the menu. Overall, I liked the salad, but would've preferred it without the macadamia nuts. The sake salmon was cooked well and had great flavor but it was too saucy for me and I didn't care for the veggies, they seemed to be frozen or canned and not fresh. My husband ordered the filet and the couple we were with ordered a surf and turf meal and a sake salmon. They all enjoyed their food a lot. Also to note, we didn't realize the restaurant closed at 8PM and our dinner reservation was at 7:15. We stayed at the restaurant until 10 and none of the staff came over to try and kick us out. So I have lived in Boulder for 3 1/2 years and I go to Boulder Cork at least once every two weeks or so. I usually go with my wife and family. Tonight they are out of town so I went by myself. I have absolutely no problem spending money on a good meal, but I do not like to feel nickel and dimed I was very surprised to see that they are now charging $2.50 for bread This is not about the money in any way, as it is just $2.50 At the same time, this is a very nice restaurant, and many people that go there are regulars. Attentive service , good energy although a bit loud , we had reservations and sat in dining room with the early bird discounted menu at 5:00 pm on a Friday . I have been coming to the Cork several times a year for many years & disappointed by this meal . Fish and chips - crunchy breading on the fish but fish was mushy inside no definition , not flaky. Tasted like the fish inside had gone through the blender . I substituted a regular salad for cole slaw , greens were limp and doused in too much dressing . Nothing special about the fries . This lackluster entree from the " happy hour" menu was just under $ 30. Last time I ate at the Cork in Sept of 2025 , they served a bread basket of tasty little muffins & butter before the meal if requested . The bread that was offered for this meal was small chunks of dense bread - some with a piece of olive . Butter with the bread did not taste fresh . In the future if I was bringing out of town guests I would forget the early bird business & hope regular entrees after 6:00 pm were prepared with more finesse & quality . read more

Truly a special place. We went with friends for the first time. Had pre Happy Hour prime rib. Very nice dinner with a reasonable price. The drinks we all ordered were delicious. Because of that experience, my wife and I went back for our anniversary celebration. We ate off the regular menu. I ordered the sake salmon and she ordered a special of steelhead. Both were amazing. We dined at Cork for a business dinner this week. This is a really good steakhouse in Boulder. This was a large group so we had a private room in the back. Service was outstanding! While there were great sounding fish specials (which some of us ordered), my philosophy is if your in Colorado, in a steakhouse, you order steak! My filet was excellent! Sides of creamed spinach and mashed potatoes were on point as well. A slice of carrot cake with a cappuccino finished the meal off nicely. I chose The Cork to celebrate my son's 30th birthday. From the beginning our server seemed distracted. We waited a long time for water and bread. We placed our order, a charcuterie board to start and our entrees. I think our waiter forgot to enter the charcuterie order because after about 20 minutes I asked about it and he rushed off and came back with it. The board was just ok. Waited forever for water refills. Finally our food arrived. My flatiron steak was just ok, nothing to rave about. The sake salmon was tasty but the veggies were way overcooked and didn't seem fresh. Trout was good, not outstanding. I had stated on the reservation form that it was my son's birthday. And I mentioned it to the server as we were seated. Dinner with colleagues at The Cork. Restaurant is good sized and easily accommodated our party of 10 on a Thursday. Prices are high. Not sure how it compares with other fine dining in the area but this place was expensive. Staff was delightful and very knowledgeable. Extensive wine and cocktail menu. Lobster ravioli was a big hit. I loved the almond crusted bri and the meat and cheese board was tasty. For entree's most of us had the 8oz filet. It was cooked perfectly and had a variety of sauce options. A few had the bone in cowboy which was massive and flavorful. Sides are large enough to share. The cork potatoes were just little fried potatoes but tasty. Smoked mashed potatoes were delicious as was the broccolini. Leave room for dessert. The mud pie is a meal in itself and big enough for 2-4 to share. This was a very nice pleasant evening. read more

We got put into a small back room with three other groups of people. Much older than us . I don't go out to eat with my husband to sit in an enclosed room. I can eat privately with him at home and not spend the money. We go out to be with people and not to be in a small room. I didn't say anything- I should have. Also the waiter was always in a rush and wanted to answer his questions to us himself. Basically, he didn't listen to us. I was sorely disappointed in our visit. The food was also meh. My friend and I went for Happy Hour, and I left stuffed and with leftovers. I ordered the coin style margarita and it's delicious! Perfectly balanced and just like I like them sweet and tart! My friend had a dirty Marti in and I was torn for a minute about which to order as it was equally delicious. For food, we ordered the house made chips with blue cheese and this alone could have been a meal in which I still couldn't have eaten it all. Definitely a sharing dish! Sooooo tasty. The arugula on top makes the dish fee not so heavy and balances the fat from the chips and cheese. Delicious! We both ordered a green Chili burger and while the green chilies are mild they add a fresh, green taste that turns a burger into a gourmet meal. I would definitely get this again and even my husband who got the leftovers said it was the best burger he's had in a while. The wait staff is friendly and helpful. Very disappointing. Exceedingly disappointing. Cork describes itself as being "a fine dining tradition," but our entire experience, from drinks to food to service, was beyond lackluster. We walked away having received the clear impression that Cork is just going through the motions, providing only the bare mediocre minimum. Several people recommended to us Cork's happy hour, so we visited to assess the place before returning for a real dinner. (Given our first experience, we won't be returning.) The drinks. Let's start with the drinks. Poorly made and watered down. Maceo ordered a Buffalo Stampede ($13), which the menu described as containing Buffalo Trace bourbon, whisky barrel-aged bitters, Vermont maple syrup, with an Amarena cherry. Sounded excellent, but the drink he received was nearly all ice, giving him about four mouthfuls of watery liquid. One of the worst cocktails he has had in quite a while. My martini, mediocre, had shards of ice in it. The food. Nothing fine dining about it. Pure mediocrity, made by people who have no feel or care for cooking. The menu described my Grilled Fish Bowl as "fresh fish over green rice and veggies with a coconut curry sauce." Should have been delicious, however... The tiny piece of fish was way overcooked- dry and unpleasant. The rice was white, not green. The veggies were nearly non-existent. And the coconut curry sauce was simply coconut milk with a little of the curry paste that can be found at Asian grocery stores for 79 cents per can. And there was very little rice and even less curry sauce. I can make a similar but infinitely better version of this dish at home in 30 minutes. Maceo ordered the nachos with smoked chicken and jalapenos. How is it possible to mess up nachos? Somehow, Cork did. The dish was dry, flavorless, with scant toppings. Desperately needed moisture and acid. The scant bit of cheese was dried to oblivion by a salamander. The black beans were straight out a can. The flavorless pico de gallo, which, though bland, could have added moisture, consisted of about one tablespoonful. The chicken was diced into little, dry cubes. And, oddly, the few toppings that did exist were added mostly to one half of the chips, and not the other. One of the worst plates of nachos we've ever had. Service was disappointing. Our server was clearly bored, disconnected, and perfunctory. We rarely saw him. We had high hopes for Cork, but the place couldn't seem to do anything right, even at a minimally successful level. read more

We had the shrimp cocktail, the shrimps were overcooked and the shells seemed to have been removed by someone who had never peeled a shrimp before. My husband and I were looking for a new place to try for date night. It turns out that our "new" experience has been in business since 1969. We really enjoyed a lovely dinner at Boulder Cork. The service was fantastic. I honestly can't say enough about every employee that we encountered and how amazing they were. The food was just as good. My husband had prime rib and I had a flatiron steak. We started with crab cakes which the husband said were delicious. The steaks were cooked perfectly to our requests and the sides were so good too. To accompany the flatiron steak was a bright herbaceous chimichurri sauce, asparagus, and roasted potatoes. Everything was just wonderful, including the atmosphere of the restaurant.
