Awesome gem for pizza in the Guilford area. We heard a lot of good things about this place but didn't get the chance to do a lot of research before showing up. The two big takeaways I wish I knew: (1) there is limited seating available so just be warned (you may end up taking it to go), and (2) it's BYOB which is incredible. That said, it's worth the wait as the pizza is delicious and the people working here are very nice and accommodating. We got a Bufalina and Nutella pizza. Both were great, the Nutella got a lot of attention from people stopping by for take out. It lives up to the hype so if the Nutella sounds good to you...just pounce on it, you won't regret it. Fantastic! Great little space, BYOB, friendly owners, patio, great food. Comparisons to nearby New Haven are inappropriate as this isn't anything near those in style. A closer comparison would be new-to-the-area Tarry Lodge, and this at least holds up to it. Small, thin crust, creative toppings. Bufalina is a great addition to Guilford. Having eaten (and loved) most of the "famous" pizza options in CT, I feel safe in saying that Bufalina's pizza crust is for me just about as good as Pepe's or Sally's or Bar. My wife thinks that Bufalina is even better than those, because the charring is present on the crust but not overwhelming. One thing is certain: whatever pizza sauce Bufalina uses is absolutely the best in CT. The pizzas are fairly small but they end up being 8 pretty decent slices. The toppings are all top-notch and delicious. They frequently have specials as well, which keeps things interesting. I've seen a number of businesses try to use the space in this very small building, and Bufalina easily has done the best job at maximizing the usable space. About 8 people can sit inside in a bar setup and it's often full. A lot of people come in and out for takeout. And they're fast even when busy! I mean super-fast. I have never waited more than probably seven minutes from when I order to when I'm out the door. Fast, fresh, exciting food. Try it. read more

What can I say that hasn't already been said about Bufalina? If you are visiting Guilford and can only eat out once, make sure it's here because you'll have an unforgettable meal. Simply stellar pizza that is made with authentic Italian & locally-farmed ingredients. If you find reviews here complaining about "burnt" pizza well... that is the style of pizza this place serves: wood-fired. If you don't like this style of pizza I wouldn't eat here, because you are paying for some elite (and expensive) ingredients. One downside to Bufalina's fame is the food is so good that people can get a bit haughty about their reservations and the seating. The space to eat is *very* limited, about nine seats. Make sure you're comfortable eating shoulder-to-shoulder with strangers. It's as much a place to socialize and have a more intimate dining experience as it is a place to get excellent pizza. The vibe is that of a small local bar, but replace bartenders with pizza makers. If you're a bigger guy like me, you will be cramped, and it could get awkward. But it will be worth it! I will also say that in the hot and humid summer months, eating here is a bit unbearable due to the heat from the oven. All this means is that you should consider taking out rather than eating in if it's a hot day. read more

This place has terrible customer service. When I called to tell them that the pizza was inedible they questioned my opinion and if we ever had their broccoli rabe because they tasted it and it is fine. The manager couldn't even talk stating they were to busy and they could call the following day which never happened. This is my favorite pizza place near me! We don't get pizza from here too often because of their hours and when they are open. But when they do.. their pizza is so good! You definently have to order at the beginning of the day if you want pizza because they are so limited with the pizzas they make. Otherwise, I love this place! read more

My boyfriend and I found this tiny hole in the wall on our annual drive from Boston to NYC after the holidays last year. We have been dying to come back ever since and when the owner, Matt, was able accommodate our last minute reservation, we were so excited! Relaxing atmosphere, friendly service, and, I'm not kidding, the most delicious pizza! We started with the market salad and then had the Bufalina pizza, as well as the Tre Carni pizza. Both were amazing but if I had to choose one I would go with the Bufalina (definitely their house specialty). I am a teacher and had just returned from an all day trip with my students. I was hoping to get one Bufalina pizza on my way home because I live far away and it would be too late to cook anything. When I called, an hour before they closed, they said they were booked up. This is not the first time when I have been told this. Other times it wasn't as late. This is the best pizza around in my opinion, that of my kids, my parents, and obviously a lot of other people because they're one a few "best of's" in the local magazines and newspapers. If your idea of pizza is a large pepperoni or meatball, that is filling and not not exotic, then you want to hit up a regular pizza joint. What Matt and Melissa are providing at Bufalina is a chance to taste some really thin and perfect crusts with gourmet toppings that will make you rethink what pizza can be like. I aspire to come up with flavor combinations like they do when I make homemade pizza, and I still haven't made one as good as theirs. They have basic tomato and cheese pizzas for the less adventurous, but I highly recommend that you come to partake in the adventure. Check out their weekly specials on their website, and if you plan to eat in, make reservations and be on time. With 10 spots at the bar, and a table off to the side, it is tight. Try to make it on a weeknight, or in the summer, with more room on their back yard patio. I too wish that the place was a bit bigger, and could handle more people eating in, because the pizza is better that way. Being put in a box for a 10 minute ride home takes away some of the crispiness of the crust. Also because of the small size of the space, they have limited room for dough storage and so it's possible for them to run out. I'm sure this puts some stress on the owners to have to turn away customers, but it's not because they are rude, it's because they don't have a lot of options. I gather from reading the negative reviews that people are mostly irked that they decided to show up and could not get squeezed in, or perhaps they don't understand the nature of the type of experience and quality of pizza that they are making at this restaurant. They source top quality ingredients from import companies and combine the amazing flavors. So get reservations, bring a bottle of wine and be adventurous. Pizzas are priced right. The average adult can eat about 1 pie, and if you come with a few people, and share the pies, 1 pie per adult will satisfy you and it never hurts to have a few slices to bring home. read more

The first time I tried Bufalina was on the day they opened in 2011. I remember sitting at the teeny counter thinking how are these two adorable twenty-somethings gonna make it? It didn't seem like a scalable idea due to the wee size of the place and the number of pies they can churn out in an evening. But that was then and this is now, and they are still piling the freshest seasonal toppings on up to 140 pizzas a night. Recently I pulled up a bright red stool to the white marble counter (seating for six!), and tasted my way through their ever-changing menu. I'm a fan of the classics, especially their version of the Margherita, a tomato, cheese and basil pie but with an addition of, well, more cheese! Gooey scamorza! But I branched out. The Primavera boasted the fresh tastes of spring: asparagus, pea leaves and blistered spring onions, embellished with a sprinkle of a light broth that's tossed together from pecorino rinds and herbs. A drizzle gives the pizza more depth of flavor. Genius! Potato, fennel and sausage hit all the right notes of savory to slightly sweet. Don't stop there. Order the Nutella for dessert. Pizza tasted fairly soapy, salad was unimpressive. Table was very small, restaurant very crowded, noisy, and cold. Staff and music were very loud. Saw a kitchen staff member blow his nose with bare hands and then scrape onions into a container with those same hands (no utensil, just bare hands) without washing. Pizza was WAY overpriced for what it was. Overall, not great -- maybe will appeal to people looking for an alternative/funky/hipstery dining experience but definitely not the average Joe. The pizzas are usually excellent, but the past winter, they were not so great. When I first started coming here, the salads were mind-blowing, but the quality of those has gone down as well. I wish i couldn't even give them a star. First of all they told us to come and pick up the pizzas an hour and a half after we ordered it. All was fine, but that's a little long for a couple pizzas. I went to pick it up at the requested time for me to come in and i stood in the hot small place, squished next to three other people waiting for togo's for thirty minutes. I dreamed about their FIG PIZZA all day. When a meal is better than you dream.. You know it great! The salad was wonderful..Fresh and a great start. Love the house dressing. This place looks great, inside and out. You can eat in a small space next to the parking lot surrounded by growing herbs and citrus trees, or in the tiny interior where you can watch them make your food from scratch. The staff was very pleasant and friendly both times we went. The assumption I had was that the food would be as good as the setting and prices implied, but that just didn't turn out to be the case. The portions are quite small and the prices high. I wouldn't have an issue with that if the pizza was exceptional, though. The first time we went we got two different white pizzas, and I don't remember the exact ingredients but one had sausage and the other bacon. One had too many leeks under the cheese which slid around and made eating it unpleasant. Neither had a lot of flavor and both were too salty. The second time we decided to get the basic mozz/basil/tomato to see if that was better. Neither of us cared for it. The cheese and sauce were both bland, the crust on the soft side. Overall I'd say skip this place. You can get better pizza for less money elsewhere. read more

Called in for some take-out since they were booked solid for the night. I was very skeptical as a lot of the time, take-out is lackluster when compared to eating the pizza fresh out of the oven. I walked in and was greeted by a friendly staff who clearly looked like they were enjoying what they were doing (a rarity especially on a busy Friday night). My pizza was ready at the time given to me over the phone and we were off. The pizza was by far the best I've had outside of Italy. The sauce, the cheese, everything-- was DIVINE. We ordered a Bufalina, a Nutella pizza, and salad and it did not disappoint. I hope to be able to get a spot at the counter on my next visit- the restaurant looked cozy, warm, and inviting. Very tiny. BYOB. Phenomenal(!!!) artisanal pizza with fresh, unique ingredients. Owners are friendly and really know hat they are doing. Along with the New Haven giants an Stanziato's in Danbury, this is probably the best pizza in the state. A must try if you find yourself on or near the shoreline. read more

What can I say these are really fantastic. If you're more European in style and topping than American, which is a good thing. The negatives here are the prices fairly expensive and it is often hard to get in order, Sometimes needing to wait an hour or hour and a half which is unacceptable if your hungry. After moving from NYC my husband and I were so excited to find this gem. The pizza is exactly what we love in a pie. The crust, the toppings... perfect! My only issue is how small the place is.
