I was in Vegas alone for the week (don't ask why ) and wanted to treat myself to a nice dinner on my last night. Carbone did not disappoint. It was pretty busy when I showed up--every seat at the bar had a reservation plaque--but the bartender still managed to squeeze me in right in the middle. From there, the night was perfect. The bartending staff was phenomenal: attentive, friendly, and actually seemed to care that I was enjoying everything. Such a refreshing change from the usual Vegas "just get drinks out fast" attitude. They immediately brought out complimentary focaccia and other assorted breads, fresh parmesan carved straight from the wheel, and some kind of vinegar cauliflower--all delicious and a great way to start. I ordered the table-side Caesar and the veal parm. The Caesar was prepared right in front of me at the bar, complete with fresh anchovies (offered on the side or mixed in). So fresh, tangy, and perfectly balanced--but I barely finished half to save room for the star of the show: the veal parm. Hands down, one of the best parms I've ever had. Huge portion, on-the-bone, perfectly breaded and fried. Honestly, between the salad and the veal, it's enough food for two people. I couldn't even come close to finishing it, but every bite I did have was incredible. This place absolutely lived up to the hype. I'll definitely be back every time I'm in Vegas. Blown away. I am so glad I came here. We got the "staples" as it being our first time here. The service is excellent. Seriously. It's a whole team here working with each other. BRAVO. Caesar- made tableside, enough to share. If you like garlic and anchovies, it's a MUST. Spicy rigatoni and no not overly spicy at all, which is great for me. Perfectly Al dente. Off menu veal meatball? Wow I'm not sure why it's off menu but that was the protein for our rigatoni. I got a dirty martini and it was delightful. We had a fabulous dinner here! From the moment we receded, the service was impeccable. I suggest making a reservation in advance to avoid a wait. They are bread basket and appetizers are my personal highlight, such a beautiful and generous selection to start off your meal. I was treated to a special Bday dinner, but expect to pay ~$100+pp, depending entree selections, apps, drinks, etc. On food, a big shout-out for their fresh made Rigatoni in a delicious Spicy red vodka cream sauce (yum!) that is one of their signature pasta entrees - a MUST HAVE worth sharing at the table between salad and main course or on your own - don't miss it! Plus their Caesar salad is tossed table-side, truly one of THE BEST salads I've ever eaten! House starters included 2-year aged chunk Parmigiana, dry Salami, and fresh Foccacia bread. We then indulged with apps of Large Chilled Shrimp and Carpaccio Piemontese (so thin and outstanding!). And then came the "Deion" tossed Caesar that was shared for the table - amazing salad! Very busy on a Thursday night, but not crazily loud that I can't make conversation. Loved the ambiance and the various dining room with different decors. The Mai Tai and espresso martini were delicious. Server introduced the vanilla espresso drink and it will now be my go-to drink. NY Steak, Caesar salad, and spicy rigatoni all hit the spot. I have been here 2 times and both times we got the same server. His name is Solomon and he is extremely rude. He was not welcoming, did not smile, and looked irritated every time we asked a question. To top off the horrible service, we paid our $450 bill with 2 credit cards and ask him to split it down the middle. We tipped 20% and didn't complain about anything. When we returned home, we realized he charged one of the cards twice. It was just an overall bad experience with Solomon, and we did not expect this from a well established restaurant. The food is great and very consistent, ambiance is lovely, but try to avoid this server if you ever come to Carbone. Solomon should be fired honestly. Came for a 10pm reservation. By that point, the restaurant wasn't very crowded, maybe half full. Would have expected much better service and attention from a place of this caliber. Instead, beginning of the meal and end of the meal was a lot of waiting around. We were also seated in the circular bench seats with high backs, so we can't even into the restaurant to be able to flag down waiters. read more

We had an amazing time at Carbone in Las Vegas. We started off with the bread service with salami and pickled cauliflower. Next we had the Caesar salad, which was prepared table side. I definitely found my new favorite Caesar salad. The fresh garlic had a nice bite to it. The croutons were huge, but not hard at all. The outside was very crispy, and had a nice tender chew on the inside. Very interesting for just a crouton. We also had to get the spicy rigatoni that everyone loves. The cook on the pasta was very nice, and the spice lived up to it's name. Not overwhelming, but spicy enough. The cheese in the sauce also gave a nice thickness. Our last dish was the veal parm. It was cooked very nicely and the lemon and arugula brightened up the all meat dish. We didn't have any room for desert at this point, but they did have a nice Italian rainbow cookie for us at the end. These were really tasty. We were visiting Vegas for a conference, and my director recommended this place as a must-try. We took an Uber from the Wynn/Encore to the Aria. Be sure to make reservations in advance -- and note that the entire party must be present to be seated. The restaurant was packed around dinner time. It has a great ambiance -- lively, bustling, and vibrant. However, if you're looking to have a relaxed conversation, be prepared: it gets loud, and you might lose your voice by the end of the night trying to talk over the noise. That said, the food and service were exceptional. We ordered a Caesar salad to share, and the waiter prepared it table side on a salad cart. That alone was impressive -- how does someone mix that fast? We also shared a family-sized spicy vodka rigatoni, and the staff plated individual portions for everyone at the table. We kept hearing that this pasta is a must! One thing to note: the entrées are enormous, which helps justify the pricing. Each entrée is clearly meant to be shared. We definitely over ordered! Our table had: Cherry Peppered Ribs - my favorite! Lamb Chops Veal Marsala Chicken Massimo Veal Parmesan - runner up! Ribeye Diana Everything tasted spectacular. Made our reservation the month before for 8PM on a Saturday, and we waited about 10 minutes after we checked in for our table to be ready. The atmosphere inside is super lively, without being an unreasonable noise level. Service is very friendly and attentive, and our waiter walked us through the menu extensively, had recommendations based on our preferences, and also dropped by multiple times throughout the night to check in on us. Octopus Pizzaiolo: great mix of tender octopus pieces, potatoes, and peppers. It had a really great charred flavor and was crispy on the outer layer. One of my favorite dishes of the night. Rigatoni: as excellent as everyone says. Al dente, the perfect spicie level in the pasta sauce. A must order here! Snapper: would definitely skip next time--high price point but wasn't a particularly standout dish imo, also quite a small portion size. Potatoes Louie: on the greasy side, but still tasty and quite filling. Drinks were great, as were the focaccia/pickled cauliflower/spicy salami. I was surprised that they didn't do anything for my friend's birthday. I was extremely disappointed with my experience at Carbone Las Vegas, especially given its reputation and price point. We had a table of six for a birthday celebration, and while our server was excellent, the rest of the experience was unacceptable. The busboy was a constant disruption all night. He would not leave our table alone and repeatedly interrupted us while we were eating and talking. He picked up full glasses of drinks, attempted to throw out a 3/4 full bottle of wine, and made unnecessary comments to the table throughout the evening. It was impossible to relax or enjoy the celebration. Food-wise, most dishes were very good, except for a steak we spent $150 on. It was ordered medium and came out bleeding raw. When sent back, it returned completely black and overcooked. This item should have been taken off the bill, yet it was not. The most disgusting part of the night came with dessert. The same busboy brought it over, poured it all over the table, then picked it up and handed it to us with his bare hands. Completely unsanitary and shocking for an establishment of this caliber. We informed multiple managers on the floor as the issues were happening, and they offered no solution or meaningful response. Overall, this was a horrid experience and a huge letdown for a birthday celebration. It did not live up to the Carbone name, experience, or level of class they present. This is a hard one. Ammending what I thought was a great experience now feels like a fluke. I'm also basing it on not just food but price, and service. Especially the hosts. I'm MGM player and have a host and can get a reservation anytime. But second time I ate there I had a bar reservation they gave away and I had to wait almost an hr for a seat. I was seated in a small two top round booth in the back quieter room with the curtains. This was AMAZING for me as I'm over 60 and hip and knees sometimes are not my friends. Sometimes flair up I have to use a cane. I'm not a huge fan of getting up and down from barstools. Next reservation I requested a table like I had before and was denied it. Saying single guests must sit at the bar. This is not ok especially when it's an older patron alone or a request. It's not like I requested a banquet table in the private room. So I sat at the bar. It wasn't as good as the first bar experience. I could tell they were annoyed that I ordered the Caesar salad. I ordered lobster ravioli that were not great and for the price my toes should have melted and I should have made noises. But it wasn't much better than Olive Garden. The appetizers are still stellar but they didn't bring me cheese at the bar which was a bummer. Actually brought me NO appetizers I had to ask for the pepperoni veggies and bread. I didn't want to request the cheese. They should be more attentive when a single person spends over 200$. I had a couple of ok drinks and a dessert (carrot cake which is extremely large and sweet. Shareable). They should offer alternative seating for solo diners than only the loud bar scene. Some places I feel welcome. Management comes to bring me a complimentary cocktail, like bavettes or like Mayfair's supper clubs, an amuse bouche from the chef and a rose on my birthday. I could go on. There are places that make you feel special and places that make you feel like they think they are doing you a favor. Carbone is clearly sure they are doing the diner a favor by allowing their presence in the restaurant and being allowed to give them your money. Food. First trip there I did sit at the bar. Carpaccio, Caesar salad 2 drinks. Dessert. bar staff attentive. Second trip a round booth in back with curtains, amazing. The Bar area loud and crowded and not easy to maneuver. Third and last visit was when I was denied a table seat even a month in advance. That trip I had an arthritis flair up and used a cane at airport and some days (I was there 10 days) needed it. I did NOT want to have to haul it so I walked nomad to Aria gingerly. Slowly. It was extremely difficult at the bar. Your legs dangle. Putting tension on my knee. When I'm using a cane a lot my lower back will hurt because I really am using a lot of pressure to take off my bad knee that my back eats. Anyway I was forced to sit at the bar. When I went to the restroom sure enough my knee buckled getting off the stool and I ended up crying due to pain in the bathroom and no longer in the mood for my salad. I took a dessert to go. I had 1 alcoholic drink. This was my last visit. I needed to uber back because of the buckled knee. And being dropped off at Nomad private entrance. I'm a paying customer. You're not doing me some crazy favor by taking my 200$. There are 200 MGM run restaurants to pick from and NONE require a bar reservation unless you agree or ask for. If I had injured myself I would have been very angry as the person I spoke with weeks earlier was told I had significant knee and hip issues (I was getting injections in my knee weekly and draining fluid). I finally just let my host reserve my bar seat. You can't reserve a table for 1 if you try. It will always say unavailable. I'm a widow. I come 2-3 times a year MGM gets 5 out of 10 days every trip. I expect better. I have NO real complaints on wait staff. First bartenders were SO good it made the bar an enjoyable experience. Second waiters were busy but attentive. The third visit the bar staff wasn't as friendly but they were busy and still efficient. The host desk is RUDE. Very. They are very snooty. They are all super young and apparently don't understand arthritis. As long as this review is, if you make a reservation, ask for the back quiet room NOT the room up front or in loud section because it's ear piercingly loud. First trip was enjoyable but knowing there is NO care about disability or discomfort is a no go from here on. Last two visits I have tried Scarpetta at Cosmo good but $$$ and I had a window seat alone. Sinatra at encore was good and again I had a two top to myself. No demand I sit at the bar. read more

Pretty surprised at these positive reviews. Perhaps some need to justify how much they spent here. Way overpriced and one of the lowest value (quality/cost) restaurants I've ever been to in my life. Service was cursory and just polite enough not to be rude, but not friendly or helpful. My family and I were treated as if we were not important. Restaurant setting and decorations were, admittedly, very beautiful. Food was average overall--some dishes (rigatoni with vodka sauce and eggplant appetizer) were very good. Some food (snapper) was merely average. Some (pasta with mushrooms) was terrible. I've had better Italian meals at our local places in Tampa (by no means a foodie city compared to other places I've lived, like Chicago and DC) that are one-fifth the cost. I'd never come to Carbone again, nor recommend it to anyone. If someone else were paying for my Italian meal, I'd suggest Maggiano's or Olive Garden instead--they'd thank me for saving them hundreds of dollars. read more

One of the top three restaurants we've ever had! Ambiance was great, service was excellent, and the food was amazing! The complimentary focaccia bread was delicious, same with the complimentary cheese. We can see why the spicy rigatoni keeps the lights on - so flavorful with a little bit of a kick. Although we were expecting the pasta to be the star of the show, my personal favorite was the ribeye - charred black on the outside but cooked perfectly to a medium rare. It was the best steak I've ever had! Our "captain" had the wherewithal to ask us if we wanted the sauce on the side which we think is better as it really lets you taste the steak itself. 100% recommend to anyone looking for a nice dining experience and awesome food. We got a same day reservation at Carbone for an early-bird special dinner. As part of signing up, we didn't see any call outs about a minimum order per person, but when we checked in, we were told there was a minimum of $200 per person. We were willing to walk away, but then the manager said they would not expect that since it wasn't called out at getting a reservation. Things got further awkward when our server brought up the $200 pp minimum again, and we told him we already spoke to a manager, but that we were willing to leave if this was an inconsistent message. We felt we were treated differently / not given the same level of courtesy despite being honest that we weren't willing to spend that much per person. I wasn't pleased with this restaurant especially representing itself as an Italian establishment. First let me say that I experienced that this restaurant doesn't believe in equal rights. They are gender bias. They have different dress codes for men and women. I was very disappointed in that the dress code is basically dress in anything (witness several people in ripped clothing and tattered shoes) and be seated. If you are a man wearing sandals shoes (with open toes and strap back) you are not let in but women are. I was dressed up in a dress shirt, sports coat, slacks and my dress sandals ( which I have been dressed similar all over the world when going out) and was rejected my reservation. This is Las Vegas and they think they are better than restaurants Milan, Rome, Tokyo, Singapore, etc. I returned with different shoes and to my disappointment the food and service was not great. Our boss took us here for dinner over Labor Day weekend and we all enjoyed the food tremendously! I heard getting a reservation here is hard and you need to book ahead of time. Luckily our boss made reservation and our party of 8 were seated at a spacious booth when we checked in. All the staff here were very polite and our server was wonderful! Needless to say, we enjoyed every dish so very much! We ordered so many things! Mixed baked clams - we got two plates of this and we enjoyed it so much that we also got another plate with just the uni clams! So delish! Grilled octopus - this was my favorite, next to the pork chop! The octopus here was so fresh and cooked to perfection that it was so tender and it melted in your mouth even though the outside were crunchily grilled, full of flavors! Beets salad - I love beets salad and this was so refreshing! We also got the other salad with vinaigrette and I think we got 2 orders of that so the salad plate was huge! This place is so terrible, it is loud, really noisy, and the staff that I've encountered were borderline incompetent. For some background, I did a single-person walk-in, no appointment, and they don't take appointments for 1 anyway. Was told by the hostess to check in at the bar. Bar tenders were super busy, and they didn't care. Apparently, there was a line, but an unorganized one at best, no formal queuing. It is the bartender's job to organize the guests waiting and assign them seats. Well, as I was waiting for a seat to open up, a couple just walked in and took the 1 open seat; they didn't have to wait, and the bartender did nothing. Great food in a buzzing vibrant space but a horrible dining experience. We came here for a business dinner after a tradeshow. Got seated on time and our server came and took our drinks order. It's not a big restaurant but it made for a really vibrant and loud environment. It did get too loud at one point and was hard to talk across the table but I dig it! Once we got our drinks, our appetizers came and we really enjoyed the meatballs and the Sizzling Pancetta. Both very hearty dishes and it just hits. Caesar alla ZZ was our choice for the salad and can't go wrong with a good Caesar, especially when it comes with these fat fat croutons! After the appetizers came, that's when things just... didn't happen. While waiting for our food, we started to notice that the tables seated before us haven't been receiving their pastas or entrees. After a bit of waiting, people were getting restless. Our server only mentioned that they were still working on it and by this point when it got close to the 1hr mark, finally the manager was walking around and started apologizing. Eventually the food started to come out around us and finally got to us at around the 1.5hr mark but by this point the mood has soured. In fact, one of our clients had to leave for his flight and didn't even get to eat any of the dishes that came out. Even though the pastas and steak were good, all of us just wanted to eat as fast as possible cause we were so hungry and just wanted to leave. In the end all the food were comped so only drinks were on the bill. Thinking back on it it would've been much better experience if we had a bit more transparency about what was going on, and it really did ruin what was suppose to be a great dinner celebrating with our clients. read more

The restaurant had a very nice vibe to it. It was definitely fancy and nice to be in, but the food left something to be desired. The fried calamari was pretty good 6.5/10, but I would've preferred more breading. My girlfriend and I both ordered the Ribeye Diana which was about $99 each. I thought that with the price and how fancy the restaurant was they would know how to cook a steak. We ordered medium and over half our steaks were well done. It was literally grey throughout. I would have sent it back, but because it is fine dining, everything took forever to come out. We were running late for an event we had planned afterwards so I had to rush eating an expensive, improperly cooked steak. The best things I had were my mojito and the free bread. Super disappointing experience honestly. read more

Special shoutout to our server Chip. He was so knowledgeable and made a great connection with my friend who shared wine knowledge with us and guided us through our dining experience. The amount of included things like the bread basket, cheese, giardiniera, and salami (I think) were a pleasant surprise. I made this reservation months in advance and I'm glad I did because it was one of the best meals we had in Las Vegas. The prices are a little shocking but honestly how often do you really spend $250 on dinner. A worthwhile splurge. We got the Caesar salad to split and Chip made it tableside which was a fun experience. The croutons were out of this world. Also shared the calamari which had a nice sauce and they were so light and fluffy. I got the spicy vodka which was delicious and took home the hazelnut cake which was divine. For 2 people and a bottle of wine, 2 pasta dishes, an app and salads the price was $250. Definitely worth it if you are looking for a nice upscale old school Italian place to eat. read more
