Great Italian food and positive dining experience from start to finish. The pasta was perfectly cooked, the flavors were rich and authentic, and every dish felt thoughtfully prepared. The service was attentive without being overbearing, and the atmosphere was elegant yet comfortable. Easily one of the best Italian restaurants I've visited in Las Vegas, and I'll definitely be back.
We had a great experience at Carbone in Las Vegas. I had previously visited their Dallas location and tried the Spicy Vodka Rigatoni for the first time, so I was excited to have it again, and it did not disappoint. The only downside was that it took a while to be seated, and there was a bit of a wait before our server greeted us and brought water. Aside from that, the experience was excellent. The food was outstanding, the atmosphere was lively, and the overall dining experience felt special. If you're visiting Las Vegas, I definitely recommend checking out Carbone. Just be sure to make a reservation well in advance, as it's a very popular spot.
It feels like this place is so overhyped. I won't go so far as to say that it's bad. I mean the food was OK, especially if you factor in the price. Now I'm not one to shy away from a decently expensive meal at a place of this price range, but with a place of this price range I expect a certain level of quality. This place fell short. The Veal Parmesan was OK. Flavorful enough, tender enough, but lacking severely in crisp. The complementary breads were fine; I enjoyed the variety. The Caesar salad was INTENSE, like almost TOO intense. I will say that the spicy rigatoni was pretty good although I wish it was a tad more spicy. But an expensive pasta with no protein does have you questioning the worth. I can't complain about the service, I don't recall there being any issues. The vibe to me is like kind of classy old school Italian. Although it's kind of loud in some rooms, the back room where we were at wasn't so loud and crowded.
The ambience was old-school fancy, but never came off as stuffy. Service was attentive, done with a sincere passion to bring every diner a great experience. - The salads are huge, delish, and would easily feed 2-3. - I tried one of their signature items, spicy rigatoni with vodka sauce. I thoroughly enjoyed this dish, which was perfectly al dente and layered with rich, vibrant flavors. - Shared the Torta di Nocciole with my wife and we both loved it. This dessert is emblematic of the Carbone experience: big, bold, maybe a little excessive, and an absolute must-try on your next Vegas trip.
Carbone is an absolute must. From the moment you walk in, it delivers that classic Italian feel elevated, nostalgic, and full of energy. Service is impressive Dougie is a delight. The salmon is easily in my top three best preparations I've ever had perfectly cooked and incredibly flavorful. The bread service and salami service are both fantastic and set the tone right from the start. Desserts are iconic and live up to the hype, and the cocktails and wine list are just as impressive everything feels thoughtfully curated and spot on. It's a smaller interior, so definitely book well in advance it fills up fast for a reason. Overall, a flawless experience and one I'll be thinking about for a long time.
I really enjoyed the food here - maybe I had high expectations but I've heard a lot of good things and don't often eat good italian food. For starters, the welcome bread, cheese and salami are incredible...especially the focaccia with tomato sauce. It was hard to resist not eating it all up! We also got the caesar salad which was served tableside. It was a fun experience to see them mixing it - the salad itself was pretty regular... tasty, but not phenomenal. For the main, the vodka sauce rigatoni was a must and we got the veal parmesan as recommended by our server. Pasta was amazing. I don't know about any one else but I thought it may have been the best vodka sauce pasta I've had. Just the right amount of spice. I really enjoyed it. The veal was also great - although a little pricey so I don't know if I'd order again. But the portion sizes were huge and it could feed 2, maybe even 3 people. I'd definitely come back to dinner again.
This is one of those restaurants I've had bookmarked for quite awhile but never made time for it or had other plans. But this time I made it a priority just to check it off my list. Going to make it short.. would I come back, probably not. It's checked off my list and its not one of those places I must come here every time I'm in Vegas. Pricey? Yes, but when its good I don't paying.. only thing i did mind was the $10 meatball! Was a bit dry and was better not ordering it. But pasta was very good!
We had the best time here! Came to celebrate a bachelorette and we're not disappointed! There were 7 of us and we left full. The food was DELICIOUS! The calamari was the star of the show for me, whatever they put in that dipping sauce was so delicious. The restaurant itself is dark and romantic vibes, but VERY jam packed. Service was outstanding, super friendly staff! I would definitely come back for date night with my husband, but not sure about a big group due to how little space there is to move around.
Another early dinner celebration at Carbone. The service was excellent and friendly throughout. We told them we had a show to catch, and they timed all the dishes (including dessert) perfectly. I appreciated them taking the initiative to divide the pasta in advance and adding a birthday candle to the dessert. I also loved the decor and ambiance. Surprisingly, I found the spicy vodka pasta ($38) just alright--good, but not mind-blowingly so. However, I really liked their meatballs ($28), the welcome bread, and the lemon cheesecake ($18). The linguine ($46) was very well made; I just wish it included more clams. Will recommend for special occasions, and I'm curious to try out their mains (steaks and veal parmesan) next time.
I've never had a worse customer service experience than I did at Carbone. We were incredibly excited for dinner here, but left feeling nothing but frustrated and disappointed. After our tableside Caesar salad, we waited over an hour for our spicy rigatoni and chicken to arrive. During that entire time, not a single employee checked on us. We were seated in the corner by the kitchen, and multiple staff members walked by and could clearly see that we had been sitting there waiting. To make matters worse, the employee refilling our waters took away our salad plates and utensils without asking if we were finished, even though we were simply taking a break from eating. He also never brought us new plates, so we sat there for over an hour with nothing in front of us. Meanwhile, the table next to us was seated about 15 minutes after we arrived and received their fresh plates and pasta before we did. At that point, we finally flagged down a server and asked to speak to a manager. Ironically, that server was probably the only person who was kind and helpful all evening. When the manager came over, we explained that we had been waiting over an hour for our food. Instead of apologizing or even listening to the rest of what we had to say, he abruptly walked away mid-conversation and went into the kitchen. About 10 minutes later, he returned with two separate plates of spicy rigatoni that honestly looked like they each had only a spoonful of pasta on them. What shocked us most wasn't even the wait--it was the complete lack of acknowledgment or apology. At a restaurant of this caliber, you expect hospitality and professionalism. Respectfully, I've received better service at Olive Garden. We have both worked in customer service for over eight years, so we understand that mistakes happen. Orders can be delayed, and restaurants can get busy. What matters is communication and how guests are treated, and that was entirely missing here. The experience ended on the same note. The same employee who removed our plates dropped off the almond cake while literally walking by our table. He didn't stop, explain what it was, or say a single word. It felt like a drive-by dessert drop-off. I rarely leave one-star reviews because I understand how difficult service jobs can be. But this experience was genuinely unacceptable. We traveled here looking forward to finally experiencing Carbone and instead left feeling ignored, dismissed, and extremely disappointed. Asking for a manager changed nothing, and the fact that an apology never came was honestly the most unbelievable part of the entire night.
Glitzy and ritzy, this place is as large as the Pentagon. Multiple dining rooms spread are out like suburbs. I arrived slightly earlier than my reservation and lined up to check in. The Hostees were just out of High School. A swarm of automaton hot bots glued to computer monitor. "Please step to the side for seatment." "Can we have a drink in the bar?" "No. Go through the Casino to Bardot on the right, but if you leave, you'll have to get in the check in line again and then wait for seatment". "Fine, I'll wait for seatment". Eventually I was ushered to a table which was next to the Busser Station even though there were many empty tables. "Can I be seated at the corner table over there?" I said to the Hostee who rescued me from seatment. "You'll have to return to the Welcome Desk and ask a Senior Hostess for re-seatment. "Oh for Chissakes, this can't be that hard. I was on the launch pad ready for ignition when another Hostee said she could take me to the requested corner table. By the time I was ungreeted and then seated I was not in the mood for food. The Hip Hop Loop did little to calm my angst but that morphed into Doo Wap, Funk, and Junk, blowing through the speaker system. Soon the sound flunky was busted and the speakers adjusted. Decent music flowed bode well. The Table Captain was smart, professional and pleasant. Within seconds my irritation dissipated as a Runner brought a lovely basket of warm House Baked Bread. Focaccia, Garlic Bread, and Rustic Sesame Loaf took me off the edge of the ledge. Pickled Cauliflower and a pyramid of Salumi flutes joined the basket and were great bar nibbles. The Bar: Hey, it's Vegas, Baby. The town that never runs out or can't get it. Excess is the favorite flavor. You want it, you'll have it just as you like. My Mai Tai was delivered quickly. Several Rums, Almond Syrup (Orgeat) and Lime served tall in a glass that resembled the rear view of Kim Kardashian. The Mai Tai was delicious and dead perfect, although two might have caused the perfect death. The Vibe: Hey, it's Vegas Baby. Everything is over the top. Who's in the house? Hey, it's Vegas, Baby. In short order you'll see everything whether you want to or not. The Staff: On the muscle and the hustle. Ask and yee shall receive. The Food: The actual menu was as large as a Queen Size Flat Sheet and unwieldy considering the little Bar Table better suited for an Ice Cream Shop. The menu itself was short and to the point with several choices under each heading, ie; Primi, Contorni, Carne, Pesce, etc. Most of the items needed explanation, ie; Calamari Marco, Chicken Massimo. Like what's a Marco and a Massimo? Apparently relatives of the owner. That explains it, no? In all fairness all questions were answered in detail with a smile. Calamari Marco winked at me and turned out to be a huge tangle of crispy hot from the fryer Squid Rings, Arms and Legs served with a boat of Butter, Cream, and Calabrian Chile Sauce. If you're on a Statin, just ask for two Lemon Wedges. The Calamari was as good as any professional kitchen can make it and easily enough for three peeps. One Ring and I was an addict. The Caesar Salad was mixed expertly table side, and without splashing dressing on my new shirt. This salad is what Caesar Cardini envisioned it could and should be. It's what a Caesar Salad wants to be when it grows up. Baby Romaine leaves, large Croutons of Rustic Loaf super crunchy from some quality fryer time. The Dressing was Garlicy, Creamy and loaded with White Anchovies. It just doesn't get any better. Should I have quit now? You decide. The Spaghetti Puttanesca (Whore's Spaghetti) had the required ingredients, Kalamata Olives, Capers, Garlic, but not a crushed Red Pepper in sight. The dish was invented by "working girls" who wanted a spicy kick to make them sweatier than their employment normally caused. A puff of sea breeze cooled them before they had to return to a Mister and a Mattress. The Spaghetti was cooked just right but do ask for some Parm and a little cuppa Crushed Pepper. The Pork Chop came buried under a heap of Peppers and Onions which were Vinegary and crunchy as they were cooked just right. Scrape those off to the side and enjoy them before we get to the Pork. An order of Vinegared Artichoke Hearts had pucker power and was a lovely addition. Alas, the Pork was dry, chewy and still connected to sinewy mystery chew. My Pork dream was dashed on the rocks of MEHdiocrity. Perhaps some careful trimming in prep and a dry or wet Brine would have helped. Otherwise the Pork was a pass. Overall the food was good. The place was slammed by 6:30 so what do they care if the Pork fought the fork to a decision? Was the food as good as the flagship Carbone in New York? Nobone. Carbone phone home.
We had a 9:30 PM reservation for a group of 9 and the place was absolutely packed even that late. If you are having trouble finding it, the restaurant is located on the second floor of the Aria. There is an escalator that takes you right up there. Can we talk about how large the menu is? The actual menus are physically huge. They are so large that there is basically no space on the table to even keep them while you are looking. We were seated in the front room and our server was excellent. We picked a few favorites and they recommended some stellar additions to the meal. While the food is served family style, I felt the portions were on the smaller side for a large group. However, the quality was top notch and everything we ate was delicious. They also have a full bar with great cocktails. The highlight of the night was when Kevin Hart walked out from the back right as we were finishing. Security did not allow photos, but it definitely added to the Vegas experience.

First service in atmosphere were amazing. My favorite thing on the menu was the prosciutto with the mozzarella. I could've ate a plate of this on its own. The bread was fantastic and my favorite pasta was the spicy rigatoni. I ordered a steak. It was market price. it was a little on the fatty side, but not their fault to me. I enjoyed all of the desserts. We ordered the cheesecake the chocolate cherry cake and the lemon cheesecake and my favorite was the chocolate cherry cheesecake would've been second carrot Cake only because it had a ginger flavor not my favorite. The vibe is great. The wine list is quite extensive and the Service staff is on point as they work well together to get everything taken care of for you. So family style so you can order a little and share and then order more if you want cost was a little on the pricier side so again it's about the experience. read more
I was excited when more reso openings became available after being waitlisted. Came here for dinner at 5 pm with a line to get in for check in. Beautiful bar area. Seated in back dining with the high booths in the middle, tables (for celebrities as told by the server), and private booths along the perimeter tucked away surrounding the restaurant. We had a Captain and his assistant serve us for the evening. They were both attentive and offered good recommendations. For Starters..We were given a cube of parmesean to nibble on with our water of choice. Sparkling. Then followed an array of fresh baked breads from foccacia, sesame top sliced, and toasty garlic bread. Salami. Pickled cauliflower. Menu wasn't extensive, so it was easy to decide. Lobster Ravioli (DD'S fav)- It looked like squid ink color. Pasta skin wasn't my favorite. Preferred it more supple and tender. This was almost...Hard. The lobster were chunks inside and gave the pasta a dim sum texture #IYKYK. Sauce wasn't too heavy, small chunks of lobster meat on top. 3/5 Table side tossed Caesar Salad. When I say the croutons were like cracks, I mean it. It must have been soaked in lots of butter then baked with their crust bread. The crunch and taste of this chunks of croutons were so addicting that I could eat them all night. It was nicely paired with the perfectly seasoned Caesar dressing topped with fresh parm. Lettuce was chilled and crunchy. I didn't want any more red meat nor did I like lamb or veal. For protein the captain recommended the Dover sole. This was supposed their signature item (an add on during the reservation process). TBH, it was not my favorite. The fish wasn't flavorful as I had hoped. Needed more season. Fish was big over cooked making it more steaky and chewier. Underwhelmed. 3/5 Desserts! Tiramisu with Nutella. I Preferred it traditional with light and airy lady fingers. This was too dense and it was missing the rich mascapone and espresso. 3/5 Cheesecake. YES!!! Order the lemoncello cheesecake. Tasty just enough. Creamy just enough. Flavorful, tasty, and kept eating more bites though I was full. Service was good overall. Ambiance was intimate. Food wasn't as consistent as other Carbones like in HK. I was thrilled to finally dine at Carbone! Reservations can be tough to get, but trying a day in advance or arriving right when they open might give you a better shot. I managed to grab a seat at the bar, and the service was outstanding. They started me off with freshly baked bread, soppressata, cauliflower in a tangy vinegar sauce, and cheese--dipping the bread in that sauce was especially tasty. For my meal, I had the Caesar salad and the spicy rigatoni. The salad was made tableside and had a good kick from the dressing. The pasta was just as impressive, with a spicy, flavorful sauce and perfectly hand made pasta. I also had an Old Fashioned, which was really well done. It's definitely on the pricier side, but the overall experience made it worth it. read more

Finally got to try this location after always never being able to find a reservation/time slot whenever I'm in town. We booked our reservation about ~1.5 months out in advance and was even able to be accommodated for adding a plus one the day before. Once we checked in, everything went smoothly and we were brought into their back room and surprised with complimentary prosciutto, various of carbs and even Parmesan! Our server was very knowledgeable of the menu and provided with great advice on selections from the menu. We got the clams, ribs, spicy vodka rigatoni, others to share with the table and it was plenty. We got their tiramisu and rainbow cake for dessert which was a hit! I'd definitely come back for the spicy vodka rigatoni and rainbow cake! read more
Been wanting to try the infamous Carbone since my last visit to Vegas, and it did not disappoint. I'm not sure how difficult it is to snag a reservation, but I booked ours 2-3 weeks in advance. We had a late time slot so it wasn't difficult. The service was great, but started off slow in the beginning. Our waters were always full and the waitstaff answered all our questions. The restaurant itself is huge, and we were tucked away in a darkly lit room of red. It was a little rowdy bc of the other tables, but I guess that's just Vegas. For the food itself, the espresso martini was one of the best I've ever had, and the famous rigatoni pasta was out of this world. The other food we got, the linguini, octopus, and salad were good, but I've definitely had better at other places. Overall, I can't say all the food is worth the price point, but we had a really great experience and I'll be thinking about the rigatoni in my dreams. read more

Walked-in for a late dinner. It was just for one so I was lucky enough to get a spot at the bar. There were no reservations left even for a single person! Book up to a week early if you are coming. They welcome you with bread, pickled cauliflower, and some cold meats (salami? Forgive me) I got a cosmo martini - fantastic. The Caesar salad was fairly large. Good for 1-2 people. The veal parm was huge! It was juicy with great breading, not drowned in sauce and perfect amount of cheese. It was my first time having veal so I can't compare. I had an espresso martini to close it off which had a foamy top - a must for an espresso martini. Service was great. The bartenders were attentive and welcoming. Made a solo dinner experience much better. read more

Ugh! So sadly disappointed in our visit to Carbone tonight. Having fond memories of visiting Carbone with family long ago, I was excited to bring my husband along to this location for my birthday. As guests of the hotel, we asked the Aria concierge for a last minute reservation and they were gracious to accommodate us at 5pm. Our favorite items of the night happened to be complimentary bites at the start of our meal. The service was... strange to say the least. It started strong - seated promptly at five; the restaurant itself if gorgeous! But our waiter came off condescending; my husband asked if the amount we ordered was appropriate and he scoffed, "well you've been to Carbone!?" And proceeded to describe the weights of each dish we ordered where a simple yes would have sufficed. He rolled his eyes after we ordered everything, with an audible "hm!" As if what we ordered wasn't what he would have chosen? Not sure. We felt like nuisances throughout the whole experience. Never asked or acknowledged if we were celebrating anything, even though we had noted that I was celebrating my birthday when we made the reservation. We sat there for 20 minutes waiting for him to acknowledge us after we finished dessert; while he checked on his other tables multiple times. Just a less than favorable experience, sadly! Caesar salad prepared tableside - 3.5/5; I'm not a fan of high hints of mustard. The anchovies were a special touch. Loved the large croutons Spicy rigatoni - 3/5; rather spicy, rigatoni al dente but nothing spectacular or different than something you can make at home Lobster - 3/5; $135 market price. Did I fantasize that this came with spaghetti somewhere? Lobster itself was great, but way too much sauce coating the flavor of lobster itself. Excellent food and the service was spot on!!! We loved Eddie! The bread, cauliflower, cheese, and salami they serve is delicious. Just don't fill up on it!! The dishes are all huge and shareable. The cocktails were also great. The ambiance is nice with music that's not too loud but still creates a vibe. Would highly recommend!! read more

My husband and I got married in Las Vegas 36 years ago. We have been back many times for many different occasions. I don't always feel the need to visit Las Vegas since I have never been into gambling, so that's why it's an occasion for my reason to go. When my husband asked me to join him for a bowling tournament, I thought "why not?" It had been a few years since my last visit. To my joyful surprise, my husband made us reservations at Carbone. I asked my daughter who is a chef if she had ever been here and she said "No, but I know it originated in New York and is supposed to be AMAZING!" She was not wrong! The staff, starting with the hostess, was lovely! We couldn't have asked for better service. Go on an empty stomach because you will want to try everything. We started with Calamari Marco and artichoke hearts. We had the Cesar Alla ZZ Insalate. I will dream about this salad. The anchovies were fresh and delicious. Dressing was on point and wait until you eat a crouton! We shared the Whole Branzino. Always a favorite and Carbone did not disappoint. My husband ordered Shrimp Su'modo. Tender and full of flavor. We finished it off with the Grand Sorbetti Misti. Wow! Gorgeous and delicious!! Our reservation was for a table outside and what a wonderful experience. You have front row views of the famous Bellagio water show and the music was an array to enjoy. Very romantic and memorable. If you have the opportunity to dine at Carbone, you will not be disappointed. Thank you Carbone staff!! Enjoy my photos. read more

Great food and service. Snuck in with a friend at 5pm and got a seat at the bar with no reservations. Bar staff was awesome. Get a nice bottle of wine, the Caesar salad, spicy Rigs and your favorite meat course. I wanted the veal but my friend doesn't like it. Chicken parm was also on point and I was not disappointed. If you want awesome Italian in Vegas this is a must.....especially the spicy rigs. Like all great Italian dishes it is simple but done exactly right. read more

What a disappointment. We have been to this location two times and this time ruined it for us. I made a reservation two months in advance for an anniversary celebration. Just for when we showed up them to tell us that they were running 20 to 30 minutes behind. Once we sat down, 30 minutes after our reservation time it took our waiter a solid 10 minutes to show up and ask us what type of water we wanted. The table next to us sat down at 6:45 and had not receive their mains yet-which was over 1.5 hours after they ordered. So we left. It seems as if they were more concerned about seating the larger parties. They also sat us in this back room that felt like you were not even part of the normal restaurant. It's unfortunate because this was one of our favorite Vegas spots but we will be scratching it off our list. Also when I spoke to the manager, he didn't care one bit that we were frustrated and leaving our table. Do better Carbone. read more

We chose Carbone for our 20th Anniversary meal on our last night and it was a letdown unfortunately. I asked our waiter numerous times what dishes were "light" and he thought I meant "not very much food." I explained to him I meant without heavy oils, butters, sauces, (prepared in a light fashion). He recommended the angel hair pasta, but it came soaked in olive oil... There was probably half an inch of olive oil in the bottom of the bowl and it was definitely inedible. Luckily, I did not make it far through it anyway, because there was a hair found in it (which they took back, and off the bill). The highlight was the Snapper. This was light and prepared well- definitely worth the price. I can't say that it was a memorable anniversary meal; at least not for the most positive reasons lol. Keep in mind you will spend a fair amount of money here, so be sure you are committed to this choice. read more

Carbone Las Vegas is, without question, one of my absolute favorite places on this planet. I don't even know how to fully explain it -- this restaurant feels like my second child. I'm that attached. It's the kind of place that creates a core memory every single time you walk through the door, and somehow, visit after visit, it never loses its magic. I've been to other Carbone locations, and while they're all beautiful in their own ways, there is something unmistakably different, almost sacred, about the Las Vegas one. It stands out. It hits deeper. It has that perfect mix of old-school glamour and modern luxury, all wrapped into an experience that feels effortlessly theatrical without ever feeling forced. The consistency is unreal. Every detail is reliable, familiar, and elevated, and yet the energy somehow still feels new each time. The staff deserves their own standing ovation. Every interaction I've had has been warm, professional, and genuinely thoughtful. They're attentive without hovering, confident without ever being pretentious, and they make you feel like you're part of the Carbone family the moment you sit down. You can truly tell they love what they do -- and it shows in the way they treat you. Yes, it's a nicer restaurant, and yes, that comes with a certain level of price and polish, but honestly, it's worth every bit of it. This isn't just a dinner; it's an experience. It's the kind of night you look forward to for weeks and the kind of night you talk about long after it's over. The food is beyond phenomenal. Everything is bold, rich, intentional, and so consistently delicious that you almost forget you're eating at a place you could technically call a chain now. But that's the thing -- Carbone Las Vegas doesn't feel like a chain. It feels iconic. It feels timeless. It feels like its own universe. There's a reason I plan to come back when I'm 80 years old while I'm only 24 now. That's how special this place is. It's the spot I'll return to decade after decade, the one I'll recommend to everyone I know, and the restaurant that will forever hold a piece of my heart. read more

I gave this place one star because the experience was extremely disappointing. I waited over an hour for my pork chop, only for it to come out very dry. When I mentioned it, they simply took it back and asked if I wanted something else--there was no apology or attempt to make things right, which really surprised me, especially from the manager. I also ordered the calamari and the spicy vodka rigatoni, and both were mediocre at best. The food came out lukewarm instead of hot, which made the overall meal even more underwhelming. Unfortunately, between the long wait, poor food quality, and lack of concern from management, I don't see myself coming back. read more

So, my honest opinion. If you're in town, or local and need a great fancy night out. I 10/10 recommend this place for a great date night. We were finally able to land reservations, which I think are required, but nonetheless a good idea. The restaurant gives a swanky New York restaurant vibe with an amazing giant chandelier in the center of the dining room. The front desk staff are a bit cold and I wouldn't say rude, but certainly not welcoming. Once we were seated the service was absolutely impeccable. You'll have a main server and a secondary that runs drinks and clears the table. They start you off with some some absolutely delectable hunks of Parmesan reg guano cheese to get your palate dancing. We both ordered a dirty martini that was delicious. Bread service with pickled cauliflower and spicy suppressata is served. It's family style and they encourage you to order an appetizer, pasta and main which we happily obliged. We are both big eaters and the portions were perfect amount. We deciding on the calamari Marco, the vodka rigatoni ( which came highly recommended) and the veal Parmesan. We were in food heaven, they tikes the courses our perfectly and did not feel rushed in the least. Calamari Marco: the breading in the squid was crunchy light and refreshing. We did the sauce in the side which is a redux of white wine, Calabrian peppers and cheese. Best way in my opinion. Vodka rigatoni: just wow, packed full of flavors and just the right amount of kick for the spice lovers. Pasta was served perfectly aldente. Veal Parmesan: would order this again and again, they have veal Marsala ( personal favorite) but player 2 isn't as accustomed to it so went it a lighter introduction. Still absolutely delicious. We didn't have room for dessert but saw quite a few absolutely tongue tantalizing slices of tiramisu walking past our table. All in all, a great night out, delicious dinner and about 200$ each, which for fine dining on the strip is more than you can ask for most places. I would definitely visit again. read more
Had to try in Vegas since it's very hard to get the reservation in NY. Was very excited to try all the various options, the service was great and the interior may actually be better than the one in NY since it's newer and more updated. Highly recommend the veal chop and caprese salad. read more

When in Vegas, Carbone is a must! Def recommend getting a reservation months in advance as they fill up quickly . Sometimes you can get lucky and get a seat a the bar. The ambiance is very romantic and loud the restaurant is always busy. Once seated, you are offered with a delicious piece of Parmesan , bread basket, picked cauliflower. I opt out from the salami as I do not eat pork. All are delicious. I always order the spicy rigatoni. This is soooo good! I get this everytime. I have tried their lobster ravioli which is good as well. But nothing beats the spicy rigatoni ! read more

Always so hard to get reservations, book in advance or come on a weekday. I've dined here several times and always enjoyed it. Some of my favorite items are the Cesar salad, made table side. One of my favorite items here, it's simple but made perfectly. My husband really likes the meatballs, it's not listed on the menu but you can order it. The spicy rigatoni and lobster ravioli are probably the best pasta options. We've tried the ribeye Diana and pork chop and peppers, both were very good and cooked to our liking. We also tried the corn with shaved truffle side dish this time and it was amazing, I love corn and anything truffle so it was the perfect combo. Our party is always too full to try their dessert, but it does look amazing as well. We'll have to save room next time. read more

I've been waiting to try this restaurant out and was fairly disappointed with the food. Pretty much everything we had was average. The spicy rigatoni vodka was a popular choice but tasted like something you can get at Olive Garden. The only thing that I really enjoyed was the carpaccio. Service was okay. The waiter maybe checked in on us once. The bussers were very attentive, which made up for the waiter's lack of service. For a high end restaurant it certainly didn't feel or taste like it. read more

Carbone has been on my bucket list, and so glad that I got to finally try it! It was amazing and surpassed my expectations with flying colors. It was elevated Italian cuisine and packed with unexpected flavors. I wish we could have ordered more dishes. I missed out on the table side Caesar salad and the veal parmigiana! The food was definitely filling. We had the spicy rigatoni, baked clams, lobster ravioli. I also wish we could have had dessert. They had an amazing assortment on their dessert cart. The star of the show was the complimentary bread/appetizers- the most amazing focaccia, salami and pickled cauliflower! Another stand out dish was the octopus. So delectable and I savored every bite. The mood was a vibe too. Loved the ambiance and decor. Service was great as well. This is a restaurant that I'll be returning to the next time I'm in town! read more

Honestly, a little over hyped but great for a big group! The spicy rigatoni is good but if you want to try something else the tortellini al ragu was amazing! Definitely my favorite pasta dish on the menu. The service was really exceptional and they provide a cart to table dessert service. read more
Bit overpriced but ultimately really good. Id generally stick with the pastas as they were all good. The other dishes can be a lil hit or miss. The free bread is so good. It's basically like pizza without cheese I think on focaccia maybe. Food: Spicy rigatoni vodka- So good. All the reviews are true. I thought this would be so mid/basic but it's simple and yet unique at the same time. Orecchiette Vito- Really unique broccoli sauce. Def worth a try Tortellini al ragu- Delicious Assorted baked clams- thought these would be better. They look good but the toppings were just ok. Beets Siciliana- great refreshing antipasto to start Chicken Scarpariello- Skip this. Chicken was dry. I generally hate ordering chicken at restaurant cause it's so hit or miss. Flavors were solid. Overall at the price point is hard to make a case to come back again unless to try the other pastas or if they come up with new or seasonal ones. But would def recommend to try. read more

I don't rate these fancy restaurants too high because usually they dim the lights and sell you some mediocre dishes. Carbone was different in this case, actually quality food. Let's start with the Caesar salad, the cheese added a nice touch and the croutons tasted really nice, fresh and homemade. The bread they give you had a the right touch of sauce along with spice. I had some of that cauliflower and honestly it mostly tasted like olive oil, wasn't a big fan. Then came the salami, fresh salami, delicious, tasted the smokiness in every bite. For my main dish I had the spicy rigatoni, very simple but very effective, spices tasted in every bite, overall very solid for a simple pasta. Very busy on a Thursday night, but not crazily loud that I can't make conversation. Loved the ambiance and the various dining room with different decors. The Mai Tai and espresso martini were delicious. Server introduced the vanilla espresso drink and it will now be my go-to drink. NY Steak, Caesar salad, and spicy rigatoni all hit the spot. Definitely worth a try if you're willing to spend the money! The service is a little slow, but nonetheless everyone is very friendly and helpful. We started with the caesar salad which was a little overly salty but our drinks were really good. Best espresso martini I have ever had, no joke, I'm still thinking about it. We also got a side of the seasonal corn with black truffle which was our favorite dish, 10/10! The spicy vodka rigatoni was so good but it is a pretty small portion and it's cooked al dente so it's a little chewy, we loved it but keep that in mind if you like you're pasta well done and less chewy! I heard many things about this restaurant particularly the one in NYC. We were able to get last minute reservations on a Friday night. Even though it was after 9pm, the restaurant was quite crowded. The only negative was that we ordered the vodka rigatoni to share. The waiter split the dish for us which we thought was nice, but when I got the check, it turns out that they charged us for two orders which was costly and without our permission. That was a bit disappointing. I was going to bring it up to the server but it was already late and did not want to bother. read more

Does the chicken parm need to be ordered in advance?
Not that I'm aware of from our dining experience in LV
I see all of the other Carbone locations have a pre-set menu for Thanksgiving Day on their website, will Carbone Las Vegas be doing the same or will it just be the regular menu?

They have don't a chicken pasta, but they have chicken dishes and you can get pasta. No creamy pastas on the menu, but the spicy rigatoni has cream in it.
Is there bread service?
Yes! Really good variety and good quality, don't get too full on it!
If they don't have space for reservations can they take you as a walk in if someone cancels?
They do take reservations but probably needs to be well in advance. I tipped hostess $100 & got in immediately. Guess that's old school. Worth it though. We had spectacular evening.
