Recently visited during a last minute trip to Vegas. We stayed in the Aria hotel and discovered that Carbone was located on the 2nd floor. Reservations highly recommended. From start to finish I was impressed by the ambiance, world class service and amazing food. The dishes were made with delectable and fresh ingredients and you could taste the quality every step of the way. The meal started with some 20 month aged cheese, an assorted bread basket, pickled cauliflower and salami. Just these small introductory bites put me in an absolute trance because of the spectacular flavor. Also enjoyed some excellent pastas and a carrot cake from their dessert cart. The spicy rigatoni is good I will admit but I have tried countless of other amazing Italian restaurants and Carbone is not one of them. The staff are kind and knowledgeable but very dim in there. Carbone Vegas is one of the trendiest restaurants in Vegas right now. I'll preface this by saying that trendy is hit or miss for me, but I've had the Carbone jarred spicy vodka sauce and it's great, so I knew at least I would enjoy that dish! I made the reservation online with ease on Seven Rooms. Prime dinner hours get booked up, so I recommend planning ahead and making reservations early. It's located above the casino in the Aria hotel alongside a few other restaurants, and isn't hard to find. We arrived 15 minutes early and were told we'd be seated closer to our reservation time, but they ended up seating us within a couple of minutes. The space is big and tables are nicely spaced with dim lighting and a moderate noise level. We were a party of 2 and they seated us in a semi-circle booth in a section of mostly booth seating. The dress code is business casual. As soon as we sat down, a server came around with a big block of parmesan cheese and dropped freshly cut chunks onto our plates. It had a unique nutty flavor, so we asked our server to tell us more about the cheese. He told us that it was parmigiano reggiano from...Wisconsin. Now I know Carbone is an Italian American restaurant, but I have to admit I thought that was pretty funny. It's not what I expected from a prestigious restaurant. I don't think we're technically allowed to call it parmigiano reggiano unless it's from a specific area of Italy. It was decent though! Next came a bread basket with tomato focaccia, garlic bread and sesame bread, a small plate of salame and small bowl of pickled cauliflower. The server came back and gave us more parmesan as well. We ordered a lot of food because we planned on trying as much as we could and taking leftovers for the next day. We had seen people post about a meatball appetizer that is not on the written menu. We asked about this, and our server said, "they're good, but you know, they're meatballs." So we didn't end up getting those this time, but wanted to point out that you can ask about it if you're interested! We ordered the following: Carpaccio Piemontese - thinly sliced beef pressed against the plate. We had to scrape it off the plate and it fell apart when we served ourselves. Good flavor, but I don't know if I would feel compelled to order this again. Prosciutto and Melon - a pretty large plate with three types of prosciutto and slices of melon on top. You can order with melon or mozzarella. It's a nice classic, but not a must if you're here for a special meal. Caesar alla ZZ - I always enjoy a tableside Caesar salad! It comes with pieces of anchovies, and has a particularly prominent anchovy flavor if that's your thing. The garlic croutons are great. Spicy Rigatoni Vodka - this is one of the dishes Carbone is known for. It met my expectations! It has a kick but it isn't too spicy. The pasta is cooked al dente. The sauce is delicious. The sauce to pasta ratio is generous but not overpowering. I do think this is expensive for what it is, but it is one of the best vodka sauces I've had. Lobster Ravioli - the ravioli are generously stuffed with big chunks of lobster, with additional pieces of lobster and shrimp on the dish. I think this is great if you really enjoy the flavor of the lobster itself. The dish is built around that and is really pretty simple, which I appreciated. Lemon Cheesecake - this was honestly the highlight of the meal for me. The cheesecake is creamy with a lovely but not overpowering lemon flavor. Chocolate Cake - rich and decadent, but otherwise a pretty standard chocolate cake. There was a slight pause between appetizers and pastas, but overall the pacing was smooth, and we never felt rushed during our 2-hour meal. They brought a display dessert cart to showcase the options, and offered us a plum and peach from a bowl of fruit they get from local farmers. At the very end, they also gave us a complimentary small piece of Italian almond cake. Service was great. They were attentive but not overbearing. They answered our questions and joked around with us a little bit. Portions are definitely are big enough to share, especially if you want to try different dishes. Our bill came out to $340 for two (including 1 glass of wine), including tax and a 20% tip. Overall, I think Carbone is more about the scene than anything else. The food is good, but it didn't blow my mind. And it's expensive, so it's not worth the price for the food alone. Having been to the New York, Miami and Dallas locations, I was very excited to try the Carbone in Las Vegas. My favorite dish of the night was actually the eggplant and zucchini scapece. It's perfectly spicy and surprisingly delicious and I love it so so much. We also had the spicy rigatoni vodka, tortellini al ragu (which I liked more than the rigatoni) and the Orecchiette Vito which none of us liked. It was a little gummy and too bitter over all. We rounded the meal out with the veal parmesan and had the chocolate raspberry cake for dessert. The cake was good but I think the hazelnut version is superior. Service was good and the back dining room where we were seated felt much cozier than the enormous main dining room. That being said, the ambiance overall of Carbone Vegas is a little off. For starters, the entrance is on the 2nd floor in a weird conference area that is just completely stark and empty in the evenings. The restaurant is enormous and I will admit to getting lost on the way back to the table from the restroom. Speaking of restrooms, these ones felt very much like being in an upscale airport restroom. I'm glad we got to try this location and I do think the juice is still worth the squeeze but it wasn't quite the same as the original so go in with managed expectations. read more

We had a lovely experience here, and felt lucky to get a reservation. I was unable to book a reservation in advance of our trip, but upon arrival to Vegas we walked in and asked if they had reservations for the remainder of the week. They had a few options and we were able to book for the next night. The hostess seemed to indicate that they do not accept day of walk ins. We were seated in a quaint booth at the back that was perfect for two people. The staff were immediately helpful in providing food and drink menus, assistance with the menu, and proving some complimentary snacks (pickled cauliflower, Parmesan cheese, salami, and a bread basket). I loved the garlic bread while my husband loved the bread that had marinara sauce on it. We ordered the ahi tuna appetizer to start. It was delicious- The tuna was very fresh and not at all chewy. It's an off menu item. We also had a house salad which was very good as well. We split the Veal Parmesan and the Spicy vodka pasta (per our waiter, those dishes are the two reasons he has a job- haha!). The menu is intended to be more family style and the pasta portions are not large. It's intended for two people to be able to comfortably split a meat and a pasta dish. I thought both dishes were delicious. I favored the vodka pasta, it was perfectly creamy and has a nice flavor to it without being spicy. The veal was tasty too and the meat was tender. The dessert cart is a fun treat and I love being able to visualize the dessert I'm ordering. We opted for the Lemon Ricotta cheesecake and it was the perfect flavor after an Italian meal. Complimentary cookies were provided as well. You would think after enjoying so many complimentary small plates and splitting the meal that the price would be easier on the wallet. I was worried Carbone would be overrated but it was not. It was amazing. Our server was the best and very knowledgeable about the menu, and provided very good recommendations! The spread of the night: Ok the complimentary bread no joke might've been my favorite part of the meal. The tomato focaccia was sooo fluffy and flavorful. Loved the salami too. Baked clams - I really wasn't expecting it to be such a fun dish but they had 3 different kinds to taste: uni (AMAZING), bread crumbs, and bacon. All delicious. Spicy rigatoni - the star of the show and I can see why this is their most popular dish. It could have been spicier but it was the perfect amount of creaminess and the pasta held the sauce so nicely! Lobster ravioli - not my favorite plate of the night but still good. These kind of reminded me of dumplings, and they gave a generous amount of lobster with them too. NY strip - perfectly cooked to medium rare which IMO is the best temp for steak. It was a huge portion and the side sauce was delicious too. The outside had a beautiful sear and the meat was tender inside. Love love. Lemon cheesecake - they brought this out for my birthday and I can't stop thinking about it. It was perfectly tart and creamy and not too sweet. The crust was also super tasty. I miss this already. Overall, I'd definitely come back here. It's pricey but so is everything else on the strip. There is something special about the energy at Carbone when it's packed and lively, and we felt so lucky to snag two seats at the back bar without a reservation. I personally love sitting at the bar; it's the best seat in the house to watch the organized chaos of a world-class restaurant in action. The food was, as always, phenomenal and unique: Orecchiette Vito: This was a standout. The sauce is a broccolini-based pesto with sausage. You get that signature, slight bitterness from the broccolini that cuts through the richness--so unique, delicious, and incredibly filling. Gorgonzola Aceto Salad: I could genuinely eat this every single day. It was so fresh and light, balancing the salty punch of the gorgonzola with the perfect sweetness of the balsamic vinegar. The bartender suggested an off menu order of meatballs and it was genius. The meatballs were perfect. Dessert: We finished with the Tiramisu and the Lemon Cheesecake. The Tiramisu is interesting--it's made with what felt like small cakes rather than traditional ladyfingers, making it a bit heavier and more decadent than most. The Lemon Cheesecake was the perfect counter-point: simple, bright, and delicious. Service was excellent as usual. I've never had a bad experience here. A $200 meal for two (including tip and tax) only covered three items: a pasta, meat dish, and one cocktail. The free items: three types of bread, salami, cauliflower, Parmesan, and Italian rainbow cookies are a very nice addition. Definitely factored into the overall price. Service: although friendly, it was on the pushy side. Upselling the meal and quickly clearing our plates even when we were not finished with the bread and Parmesan. $100+ I wanted to share feedback regarding our recent visit to Carbone. We came all the way from D.C to recreate our best meal yet. We dined there last year and had such an incredible experience that we were truly excited to return and recreate that evening. Unfortunately, this visit was very disappointing. I do want to begin by recognizing German, our table assistant, who was absolutely wonderful. He was attentive, kind, and made sure we always had water, brought ice promptly, and happily accommodated requests like additional cheese. His service did not go unnoticed, and we truly appreciated him. However, once our captain, Christian, became involved, the experience began to decline. There was a noticeable lack of urgency, minimal eye contact, and an absence of warmth that you would expect at a restaurant of this caliber. We ordered the same items we had during our previous visit: the Caesar alla ZZ, rigatoni alla vodka, lobster ravioli, branzino, and the hazelnut chocolate cake (recommended again by German), along with three drinks. When we ordered the Caesar salad, Christian informed us it could not be prepared tableside as before, but instead would be made in front of a mirror. This was disappointing, especially since bringing out a cart for tableside preparation had been part of our previous experience. However, when it came time for dessert, bringing out the dessert cart was not an issue, which made the earlier limitation more confusing. While we understood and moved forward, the salad took approximately 25 minutes to arrive, and when it did, it did not resemble the dish we remembered. It had an overwhelming horseradish flavor rather than garlic. As someone who enjoys garlic and often asks for extra, this was clearly not garlic. When I politely asked Christian if the recipe had changed, his response was, "The kitchen makes it, I don't," delivered in a dismissive and rude manner that made me feel uncomfortable for even asking. Due to the overpowering flavor, I let German know I would not be eating the salad. He handled the situation graciously and removed it from our bill, which we appreciated, although that was not our intention. Additionally, our pasta dishes took about 35 minutes to arrive, despite ordering everything together and not having appetizers. The rigatoni was also slightly overcooked, which added to our disappointment. On a positive note, the dessert itself was excellent and lived up to our expectations. Overall, the food quality did not meet the standard we experienced during our previous visit, and the service--particularly from our captain--fell short of expectations. Combined with the long wait times, the evening did not reflect the level of excellence we had come to expect from Carbone. Honestly, we didn't get to try the food. We waited an hour before opening to try and get seated at the bar and we were able to snag a spot! However, as soon as my pregnant wife and I sat down, we were immediately carded for ID. My wife didn't think she would need her ID, being pregnant and all. She had been dying to try the pasta all month before our trip. It might be because we're asian and most likely discriminated against, but we were the only ones at the entire bar to be carded. We tried to plead our case, saying we won't be drinking. The bald bartender did not care nor did he even want to hear it. He told me to leave quite loudly and humiliated us openly. Felt lucky to finally get the chance to try Carbone! We've been wanting to visit in Miami or NYC, but the Las Vegas location absolutely delivered. The popular dishes truly lived up to the hype, and I have no doubt the rest of the menu is just as impressive. The complimentary bread was a standout, especially the garlic bread, easily the best I've ever had! I'd go back just for that great. They say Carbone serves one of the best Caesar salads, and I have to agree, it definitely earned a spot on my top list. The spicy rigatoni vodka was incredible. I've had good vodka pasta before, but this one was on different in a good way. Creamy, with just the right amount of spice. The veal Parmesan did not disappoint. I'd never had veal before, and this felt like the perfect place to try it! We also ordered an Aperol Spritz, which was perfectly balanced coming from someone who thinks Aperol Spritz are okay. I came into Carbone with main character energy and a reservation secured two weeks in advance--because if there's one thing I don't play about, it's high-end Italian food. I was ready for a cinematic dining experience... velvet booths, impeccable service, and pasta that makes you question your life choices. Instead? I got... a soft opening of disappointment. We arrived 10 minutes early for our 7PM reservation (because punctuality is sexy), only to be seated 15 minutes late. Okay, fine--build the suspense. But then... plot twist. We were escorted to what I can only describe as the "forgotten corner"--right by the kitchen, tucked away like we accidentally crashed a private party. It felt less "exclusive dining experience" and more "last-minute folding chair at Thanksgiving." Then came the real magic trick--our server disappearing act. 20 minutes. Twenty. Whole. Minutes. Before anyone came to take our order. At that point, I had already memorized the menu, considered a career change, and nearly cooked the Spicy Rigatoni myself. Speaking of food--let's be fair: Spicy Rigatoni Vodka (x2): Good, but not "call-your-ex-and-tell-them-you've-moved-on" good. Caesar Salad (x2): Solid. Reliable. The MVP of the night. Potatoes Louie: Cute, crispy, did their job. Drinks: Forgettable. Like... I'm trying to remember them as I write this and it's giving 404 error. The bread basket though? Oh she showed up. No vibe, no warmth, no "you're special for being here." And at this price point? I expect to feel like I'm staying in a Aria Sky Suite Penthouse, not like I'm on standby seating. Carbone at the Aria was truly a five-star experience. The waiter we had was very friendly and he made the experience very memorable. The restaurant is darkly lit with candles, and it was a little bit loud inside for my liking but still very manageable. The food was incredible. We started off by getting complimentary Parmesan cheese that was one of the best cheeses I've ever had. The flavor was very robust and umami. The complimentary bread was absolutely spectacular. It came with 3 different types of bread: focaccia pizza style bread, garlic bread, and a sliced bread. The salami and pickled cauliflower were delicious and everything worked so well together. We ordered the Caesar salad and calamari as appetizers. The Caesar salad was made by our waiter at table side. The croutons were very garlicky and obviously freshly made, and the dressing on the salad was perfectly balanced. The calamari was perfectly crispy, and the sauce it came with was also amazing. The spicy vodka pasta was absolutely wonderful, it definitely lived up to the hype. It was a perfect balance of spice and creaminess and the pasta was cooked al dente. After the meal, we got complimentary dessert that looked like the Italian flag. It had a nice subtle vanilla and almond flavor to it. I would 100% go back to Carbone when I have the chance. The price was actually not as bad as I expected because the complimentary appetizers filled me up so we didn't order as much. It ended up being one of the cheaper meals we ate at in Vegas along the Strip and it was one of the best. Service was good. Reservations are harder to get. Need to make one or they won't let you walk in (I think out of arrogance as there were empty spots). Ordered the spicy rigatoni vodka, the meat ball, and carpaccio. Spicy rigatoni I think is overrated. Good, but probably not as good as its raved about. Meatball is good, but again not as good as it is raved about. I would add it to the pasta dishes to complement. Carpaccio was excellent. I've been to NYC location as well and I always leave wondering why carbone gets the hype it gets. He honestly was exaggerating the portions, saying that one caesar salad was only good for one person -- sir, what are you talking about? The salads are meant for sharing amongst the table along with all of the other dishes. He highlyyy suggested that we get at least 3 portions, and I said 2 would be plenty so that's what we went with. We went on to order the pastas and other mains, and he exclaimed that 3 pastas would not be nearlyyy enough to fill us up (on top of our appetizers, 2 salads, and 2 sides) and that we'd actually be hungry! He strongly suggested that we order a protein, so I agreed reluctantly and ordered the smallest protein - a chicken dish. I can get past a suggestion, but this tone was extremely condescending. We're eating, and of course even before the chicken arrives at the table, everyone is getting full. tldr; our waiter pressured us to over-order for reasons unknown to me. Maybe he wanted a bigger tip, thought we were being cheap, or was genuinely worried that we'd still be hungry? Either way, it felt greedy and condescending. We ordered the spicy vodka pasta, veal marsala, carpacchio piemontese and I got a paper plane cocktail. My favorite was the spicy vodka and carpacchio. Both were very flavorful and carpacchio was made so differently than I've had in the past. The spicy vodka was so yummy. However, the veal marsala was a disappointment. It just tastes like a chicken parmesan but the protein wasn't even cooked well. I don't think it was that good at all so I was surprised it was a popular item that most people ordered. From the atmosphere to the attention to detail in every dish, plus a very attentive waiter, we could not have asked for a better experience. My husband had a martini and I enjoyed a glass of white. We started with the house stuzzichini, which included large chunks of Parmesan, dry salami, and assorted breads. The semolina bread was easily a standout and so delicious. For our starter, we had the beef carpaccio drizzled with truffle oil and it was incredible. I highly recommend trying it. For our mains, we ordered their most popular pasta, the spicy rigatoni vodka. It is easy to see why it is so well known. The flavors were perfectly balanced with a nice kick of spice. We also ordered the orecchiette Vito, which reminded us of a pasta dish we had in Milan. The finely chopped broccoli rabe pesto mixed with sausage was perfection. We ended the night with a chocolate and hazelnut layer cake topped with vanilla ice cream and gold flakes. We paired it with an espresso, which was much needed to keep up with the Vegas nightlife. I would recommend this restaurant as a one time experience to really enjoy everything it offers. Phenomenal spot! I'm sure many people know this, but if you are planning to come here, book a reservation well in advance. We came on a Saturday night during our Vegas trip and this place lived up to its expectations. Service was wonderful, very professional and high-end. This restaurant is also HUGE - it feels like a maze when you are walking through....there are so many different rooms with similar but unique vibes. It was very cool. The Caesar salad was made tableside, and it was easily the best salad I've ever had! Highly recommend trying this if you go! Calamari was also wonderful, and of course, the Spicy Rigatoni. I was excited when more reso openings became available after being waitlisted. Came here for dinner at 5 pm with a line to get in for check in. Beautiful bar area. Seated in back dining with the high booths in the middle, tables (for celebrities as told by the server), and private booths along the perimeter tucked away surrounding the restaurant. We had a Captain and his assistant serve us for the evening. They were both attentive and offered good recommendations. For Starters..We were given a cube of parmesean to nibble on with our water of choice. Sparkling. Then followed an array of fresh baked breads from foccacia, sesame top sliced, and toasty garlic bread. Salami. Pickled cauliflower. Menu wasn't extensive, so it was easy to decide. Lobster Ravioli (DD'S fav)- It looked like squid ink color. Pasta skin wasn't my favorite. Preferred it more supple and tender. This was almost...Hard. The lobster were chunks inside and gave the pasta a dim sum texture #IYKYK. Sauce wasn't too heavy, small chunks of lobster meat on top. 3/5 Table side tossed Caesar Salad. When I say the croutons were like cracks, I mean it. It must have been soaked in lots of butter then baked with their crust bread. The crunch and taste of this chunks of croutons were so addicting that I could eat them all night. It was nicely paired with the perfectly seasoned Caesar dressing topped with fresh parm. Lettuce was chilled and crunchy. I didn't want any more red meat nor did I like lamb or veal. For protein the captain recommended the Dover sole. This was supposed their signature item (an add on during the reservation process). TBH, it was not my favorite. The fish wasn't flavorful as I had hoped. Needed more season. Fish was big over cooked making it more steaky and chewier. Underwhelmed. 3/5 Desserts! Tiramisu with Nutella. I Preferred it traditional with light and airy lady fingers. This was too dense and it was missing the rich mascapone and espresso. 3/5 Cheesecake. YES!!! Order the lemoncello cheesecake. Tasty just enough. Creamy just enough. Flavorful, tasty, and kept eating more bites though I was full. Service was good overall. Ambiance was intimate. Food wasn't as consistent as other Carbones like in HK. I was thrilled to finally dine at Carbone! Reservations can be tough to get, but trying a day in advance or arriving right when they open might give you a better shot. I managed to grab a seat at the bar, and the service was outstanding. They started me off with freshly baked bread, soppressata, cauliflower in a tangy vinegar sauce, and cheese--dipping the bread in that sauce was especially tasty. For my meal, I had the Caesar salad and the spicy rigatoni. The salad was made tableside and had a good kick from the dressing. The pasta was just as impressive, with a spicy, flavorful sauce and perfectly hand made pasta. I also had an Old Fashioned, which was really well done. It's definitely on the pricier side, but the overall experience made it worth it. read more

Finally got to try this location after always never being able to find a reservation/time slot whenever I'm in town. We booked our reservation about ~1.5 months out in advance and was even able to be accommodated for adding a plus one the day before. Once we checked in, everything went smoothly and we were brought into their back room and surprised with complimentary prosciutto, various of carbs and even Parmesan! Our server was very knowledgeable of the menu and provided with great advice on selections from the menu. We got the clams, ribs, spicy vodka rigatoni, others to share with the table and it was plenty. We got their tiramisu and rainbow cake for dessert which was a hit! Been wanting to try the infamous Carbone since my last visit to Vegas, and it did not disappoint. I'm not sure how difficult it is to snag a reservation, but I booked ours 2-3 weeks in advance. We had a late time slot so it wasn't difficult. The service was great, but started off slow in the beginning. Our waters were always full and the waitstaff answered all our questions. The restaurant itself is huge, and we were tucked away in a darkly lit room of red. It was a little rowdy bc of the other tables, but I guess that's just Vegas. For the food itself, the espresso martini was one of the best I've ever had, and the famous rigatoni pasta was out of this world. The other food we got, the linguini, octopus, and salad were good, but I've definitely had better at other places. Overall, I can't say all the food is worth the price point, but we had a really great experience and I'll be thinking about the rigatoni in my dreams. read more

Walked-in for a late dinner. It was just for one so I was lucky enough to get a spot at the bar. There were no reservations left even for a single person! Book up to a week early if you are coming. They welcome you with bread, pickled cauliflower, and some cold meats (salami? Forgive me) I got a cosmo martini - fantastic. The Caesar salad was fairly large. Good for 1-2 people. The veal parm was huge! It was juicy with great breading, not drowned in sauce and perfect amount of cheese. It was my first time having veal so I can't compare. I had an espresso martini to close it off which had a foamy top - a must for an espresso martini. Service was great. The bartenders were attentive and welcoming. Went to the Aria to have a highly anticipated dinner at Carbone. Frankly the hype is not warranted. I can't believe how bad my experience was. First our waiter had no personality . Not a warm inviting experience with him at all. Next the food was terrible. How do you screw up a Caesar salad? Lacked flavor and salt! Next lobster ravioli. Terrible. The sauce was awful and lobster chewy and tastless. Last was the 91 dollar veal Parmesan that was tough and flavorless. The only highlight of the meal was Keith who brought us drinks and our apps.
