I've been wanting to try this place everytime I'm at Lowe Mill. I never really had the opportunity to see him before this. I came here after work, and was able to order. By that time, his Coconut Curry item had run out. One of his customers was singing his praises and recommended the Southern Plate as it was very similar. I ended up ordering that, and the Mango Madness. I'm impressed that he manages it all by himself and it makes sense why he takes up to 2 orders at a time. Everything is made fresh. I waited approximately 20 minutes for my items. I didn't really enjoy the food due to lack of seasoning/flavor, but am willing to give him another try. read more

Who says you can't get full off veggies? Well I'm here to say that you can. I had a weekend visit with a friend in Huntsville. My friend recommended we check out a vegetarian/vegan food truck. Even though I'm normally a meat eater, I was open to the idea because I also love veggies. When we got there, a small line of people were in front of the food truck. To note we waited for a long time because Chef Will was going one at a time taking orders and then making the food to order. I felt for him having to do both tasks, so I didn't mind the wait. When we got to our turn to order, my friend ordered the portobello steak wrap, and I got the portobello steak sandwich. I must say the food was very impressive. My sandwich was full of ripe avocado, mounds of spinach and sautéed portobello mushrooms. On the side was round tortilla chips with sour cream and some type of hot sauce. It was so good. I didn't know this place was vegan when I first walked up to the window. I didn't know what to order and chef will offer to make me something new that I've never tried before. I decided to take him up on it and about 15 minutes later he called me back to the window and I tried my first Portobello quesadilla and let me tell you it was life-changing. I'm not vegan, but everything chef Will makes is vegan and it's absolutely amazing. I've taken several vegan friends to visit Chef Will and I love to see their reaction each time. We just moved to the area and I've been dying to check out Chef Will. The reviews that say to not come hangry are accurate. There was a wait and the weather was cold... but the portions are big, Chef Will makes it up fresh, he understands how vegan food should be... so flavorful and good! The benefit of waiting to order and then to pick up was that I got to meet some good people and the sunset was beautiful. When we got our food, my entire family was silent- that's how you know the food is really good. We got the black bean nachos, black bean tacos, southern plate, and a portobello wrap. Go. Eating here makes you want to savor every mouthful and to think about the taste you are experiencing. The Sea Moss Infused Smoothies and the exotic Vegan dishes produced by Chef Will. You are in for a treat and your tastebuds will thank you! It had been a long time coming, but finally the time arrived for me to enjoy a Chef Will Meal which included his famous Portobello Mushrooms. My plate consisted of Portobellos tasting as if they had been cooked long and slow with a slight smoky taste as if they had been roasted. The juice is savory and slightly sweet from the thinly sliced Carmelized Red Onions blended nicely with the thinly sliced Green Peppers. The 'Shroom along with the Fried Sweet Plantain, Half an Avocado added a variety of textures and flavors, creating a real festival of delights for your palate. The meal comes with a sauce that is Sweet, Savory, Slightly Lemony with just a tad of Fire adding an overall excitement to the dish. My sauce was concentrated on the Yellow Long Grain Rice which balanced out the flavors superbly. The Fried Plantain added another kind of sweetness along with it's crispy texture. The various flavors throughout the meal are a perfect blend and no flavor overpowers another. The Berry Sea Moss, also served on-site, was enjoyed about an hour after the meal, when it was slowly sipped & savored, sip by sip. It is the most wonderful flavor with it's deep Red color and Berry-ness, it is Lemony and Includes the Pink Sea Moss. Yes, this meal was outstanding! It is a good idea to not be in a hurry as Chef Will deals with each person one by one. It's not what you'd call fast food. Chef Will is a prototypical hole in the wall parked around Lowe Mill who serves up pretty incredible vegan and vegetarian dishes. I came here from word of mouth, since he's pretty difficult to find and have come across otherwise. His food is freshly made to order and will really makes any carnivore consider changing, although there are a few nuances to his truck. Number one would be finding the place. I don't think he's particular mobile, so where we found him was at Lowe Mill right underneath the water tower. We spent a little while walking around until we came across him. Second is that he's not staffed heavily. And by that I mean it's only Chef Will. It wasn't super busy when we were there, but it still took about 20 min for the food (worth it in my mind). Lastly, bring some cash. The prices were listed, but it was basically $10/entree. We went with the portabella steak and cheese and spring rolls. Each plate is like $10. I've paid MORE at other vegan spots and have gotten wayyy LESS food! Before I went vegan I ate here, and didn't care that I didn't have any meat--that's how good it is. The taste is so flavorful and he is always so helpful and patient when you ask about menu items and suggestions. I will say if you're in a rush, this isn't the place for you to eat because it's almost always a line and with it being just him, it takes awhile. So if I were to knock off a star that would be why. But the good comfort food and good service makes up for the time you wait. As we were paying, I forgot to ask for some cornbread to go with my greens and he stopped what he was doing to make me some from scratch so I could have it before I left, even with a long line waiting behind us. I've dropped in on the truck 4 times in when in town since 2018 and all my friends give Will rave reviews. But, last time I dropped in was yesterday around noon on 2021/07/18 and the sign said open so I was excited and also very hungry but, was told a cooking class was going on till 3pm. 7 days prior I stopped by and the truck and area around were desolate. The truck was closed. Also, 2 times in October 2018 when I was here last the same deal, the truck was closed. I was in Huntsville for a wedding with a few friends, one of them vegan. We did some searching for vegan friendly places, and came across Chef Will's. We had a hard time finding him because he's in a food truck, but in a permanent location. So happy we found him. Seriously one of the BEST vegan meals I've ever had. If I could give him more than 5 stars I would. FOOD: I had the blackened tofu over rice (listed as $7 online) but he was out of rice so he gave me a quinoa mix. I also asked if it was curryish, and I don't think it normally is but he made it that way for me. HOLY MOLY IT WAS SO GOOD. I was so happy and my three friends who had a taste were all jealous of my order, although they enjoyed their meals as well (I had bites and agreed). SERVICE: It's just Chef Will (and it looked like his daughter was with him in the truck), but he's extremely friendly. Not great about estimating waiting time, but we didn't mind. After hearing so many good things about Chef Will and his vegetarian and vegan food, I had to try it. My girlfriend ordered the Portabella Philly Cheesesteak, and when Chef Will asked me what I wanted I told him I would share with her. He replied, "I'll make it big, then." We went upstairs for about 15 minutes, looking at all the creative things made by the local artists, and when we got back down to The Palate, Chef Will presented us with the biggest "wrap" I had ever seen. Although it was the best vegan food I had ever eaten, we could only eat a quarter of it. It was huge and cost ten bucks. The pita bread was perfectly toasted and its fillings were delicious. He even put seasoned tortilla chips underneath to catch the overflow of ingredients, creating the best nachos in the world (probably). Chef Will buys his ingredients fresh and local every morning, and you can really taste the difference when your food is prepared by someone who truly cares about food and the people who eat it. read more

We have tried to visit on two separate Saturdays and both times arrived to the truck being closed (and we don't live close). Incredible! I got black bean tacos and blackened portabella with quinoa. Nearly everything is made to order. The tacos were delicious and fatty and proteiny and the tortilla was crunchy and hot. Chef Will is always an experience. He changes his menu a little bit overtime so you never quite know what you're going to get. I love that everything is vegetarian and vegan. I have eaten one of almost everything on the menu at this point in every single thing I want to get again. You have to wait for it but chef Will is absolutely worth the wait. Very poor customer service. Although the food is great they need to work on there customer service. The hours are stated 12-6pm . Me and my sister arrived at 2:30 today and he had the sign closed on . So my sister walked up and asked when will he be open and he stated "doesn't it say close?" In a very rude manner. After my sister walked away he turned the sign on for "open" . Then two ladies walked up to get there food they ordered . Literally seconds after he said a rude comment.
