I sincerely don't understand some of the poor reviews. My husband and I went last night for a drink and appetizer. We sat at the bar, where the bartender was warm and friendly. I tend to ask a lot of questions about the menu and he answered them all patiently and honestly. I got a specialty drink and my husband beer. The drink was delicious!! We ended up splitting a meal of chicken fried venison that came with a spinach stuffed enchilada and a side salad. It was all wonderful!! Delicious, well cooked and beautifully presented. We finished with a dessert that although seemed a weird little concoction, was amazing - red velvet cake ball with cheese cake and cookie crumble. We were a bit skeptical, but tried it on the recommendation of the bartender and couldn't have been happier!! It was luxury in every bite. Food came out over cooked. Waited a lot time to bring out new food. Did give us two desserts but two in the group couldn't eat them. Two of us had to eat by ourselves since food came out over cooked. The new items we ordered one came out over cooked and one undercooked for the second time. Was over two hrs the time we left. Everything took forever. They didn't take anything off of our meal. Staying at the Hilton just across the street, we specifically wanted to eat at a restaurant in walkable distance. Both nights we were in Waco, we ate here. Because we knew what food to expect - we ate here both nights and enjoyed it. The reason I give it four out of five stars though is because it was a bit on the pricey-side. The first night, we ate a DiamondBack roll, crab cake slider (one for each of us!) and fried asparagus. We both agreed that although the DiamondBack roll was good, it was too expensive and very big. On the second night, we each got a crab cake slider again because it was very delicious (and at not such a bad price!) to not have again! We each got a salad and shared a dessert (a molten chocolate cake with dolce de leche gelato). One interesting note - when asking for the dessert menu, your waiter/waitress will literally come out with a table of the desserts to show you of what they look like and describe the tastes. read more

I had the 16 oz prime rib it was flavorless and the horseradish sause was mostly sour cream also very bland and flavorless. You would think a 53$ prime rib would be the best you ever had not the worst! I went to this place to celebrate my friend's birthday, with a reservation for the semi-private room. The semi-private room is very well distanced and private, but the food was very sub-par compared to labeled prices. The 8oz filet was underwhelming, although it was cooked medium, the meat itself was very dry. I would deem it the same quality as Outback Steakhouse or even Texas Road House. The carbonara was worst dish we got, I believe it was sitting out for a long time as the spaghetti noodles were overcooked and had soaked up all of the sauce. We had to order another dish, the sesame seared tuna, but it was overly salted and did not fit with the 40 dollar label. (With no compensation of the time and unfit dish) The steak sushi was surprisingly tough to chew as it was also cooked medium. If I had choose the best dish it was the miso salmon, but again, the price of ~$40 was not worth the dish. Honestly, all of the dishes were not very warm (almost chilled) which is weird for dishes that are meant to be hot. To top it off, the food came out an hour after we ordered, if that tells you anything. If you are paying this much for a meal, you would expect a better quality of protein, but you will find better luck at another restaurant. The two stars are for the appetizers (lobster s'cargot & calamari) and the environment of the place, both dishes tasted very good and raised our expectations for the main entrees, but we were faced with disappointing and sad looking plates. I am not sure if this what the Waco standard is judging from the other reviews, but I would not recommend this place unless you are only looking for the atmosphere of a fancy restaurant. read more

I honestly do not understand the hype of this place beside the fact that it's one of few higher end restaurants in Waco. Granted I ordered seafood and not a steak, but with prices comparable to seafood/steakhouses in larger cities, I expected the quality to be a bit closer. I decided to order the Colossal Crab Stuffed Shrimp instead of the fish special mainly because of the price difference. The shrimp option was in the mid $30 range while the fish option special was in the $70 range. The waiter had no intention of mentioning this price difference at all, and I find it difficult to believe that a piece of fish could justify an almost $30 difference. The Double Black Diamond Roll was disappointing as well. The roll pieces themselves were very large, but the citrus vinaigrette and bearnaise sauce on top overpowered any flavor of the salmon or crabstick. I believe this item was around $12, which puts it in the same price range as speciality rolls from RA Sushi. For a place that doesn't specialize in sushi, I would steer away from ordering it here. Finally, I had one of their special desserts, which was a brownie enveloped in a spherical chocolate shell. Warm melted chocolate is then poured over the shell to reveal the brownie. This was something I had only seen in videos, so I ordered it without hesitation. Well, for a $14 dessert, I expected more than a burnt from-the-box brownie. read more

We are from out of town (Portland OR) and were looking for a good steak house. Our server was knowledgeable and did a good job, the atmosphere is nice however my seat in our booth was uncomfortable- it seemed to have some big uneven areas. We started with the hatch Chili meatballs which were delicious- add some rice and a vegetable and that would've been a great dinner. All of us had steaks varying from prime rib to the fillet. They were cooked perfectly and were tender with a very good flavor. Now let's discuss the sides; we thought the mashed potatoes were okay and asparagus with hollandaise sauce was a bit over cooked the sauce was cold and almost solid consistency. The creamed corn was meh. The truffle fries were good. Dessert we tried a molten chocolate cake (I'd give it 2.5 stars)and the butterscotch brûlée(2 stars) . read more

Check the menu before you go as the prices are very high compared to other $$$ Steak houses (Ruth's Chris, III Forks, etc). On our particular visit, the side dish came out 3/4 of the way through our main dish. The manager as customary did his rounds and asked us how we were enjoying the meal to which I replied, "it's ok." This should've been a no-brain indicator that there were issues and instead he simply replied "ok" and moved onto the next table; clear failure of leadership on his part and indicative of why his staff was as mediocre as himself. This is a wonderful steakhouse; very intimate even with a crowd. The cocktails were on point (martinis) and the Tempranillo was superb. We had prime rib and the blue cheese crusted filet-great. Excellent food. To start, my dirty martini was very smoothly done. The apps were very good, the meatballs with chiles were juicy and the calamari was cut into well portioned bands to split for the whole table. My girlfriend and I made reservations at DiamondBacks during New Years Eve and it was everything we expected it to be! I ordered 8oz filet with lobster Mac & Cheese and my girlfriend ordered seared Atlantic salmon with lobster mash potatoes. The food was delicious and super flavorful! Our waiter was amazing and super helpful and tentative. For desert we had vanilla gelato on chocolate molten cake and that too was super tasty! The atmosphere was great! Wonderful dining experience! I'm a bit remiss in writing this review, we dined on Tuesday evening and wanted to share our experience. We were greeted at the door as if we were good friends and felt so welcome as a result! Once we were seated, the experience of feeling welcomed continued as we chatted with our waiter who was so helpful with his suggestions for the best experience. Our steaks were cooked to perfection, the sautéed spinach with roasted garlic was divine, and I absolutely recommend the au gratin potatoes. I listened to other waitstaff as they offered suggestions when asked and was impressed with their knowledge of the menu, the cook of the meat (steaks in every case), and even the beverages. First rate dining experience and I'm looking forward to our next time in Waco. We will definitely be returning. Worth every penny! read more

The manager, Jeff, needs people skills. We came in and didn't have reservations. The hostess said there was 4 spots we could sit at in the bar. We sat down in the empty high top and Jeff come over and was very rude that we couldn't sit there and the hostess had to seat us. He proceeded to say that where we were was for VIP. (No sign stating that). We move up to the bar and the bartender was very nice. We had one drink and left. We have been there many times and never had anyone be that rude. This used to be our favorite place. As the years have passed it gets less and less our go to. Finding a great nice restaurant in waco isn't easy. We haven't been impressed with the steaks, they're decent. The bacon wrapped shrimp is great, the sea bass had no flavor. Our last experience I got their tuna roll which was great, the tuna tower which I really didn't like the presentation. It was difficult to eat with an inch layer of each ingredient. It was easier to mix up and eat. I think the worst was being sick all day the next day. I'm not sure if the tuna was fresh or what but I didn't handle it well. My drinks were great, service was great. We'll try it again I'm sure because we love the atmosphere and location. read more
