Amazed at this hidden gem. Build your own salad or sandwich. I have pretty specific cheese sandwich specifications, and they went above and beyond. I just had a cheese sandwich with provolone and Swiss hot with lettuce, chipotle, mayo, mayo, and onion, and it was the best sandwich I've ever had. The customer service was impeccable and my sandwich came out within 20 minutes and it was great. I also had the macaroni salad, which needed a little salt, but tasted great. To be fair, this is only my second time here. The first time, the wait was horrendous. This time, it was just as bad. Their storefront wasn't busy. So I'll assume thst they prioritized to go orders first, which as a food general mamager, I agree with. They do however need to hire one more person to solely work on these orders and to provide relief to the other areas when to go orders are minimal. Additionally, the food service safety is a concern. Upon walking in, the large guy with the Steelers shirt, had two pieces of provolone in his bare hands and plabed them on the prep table. He then took an order without washing his hands, which is a food service violation and has great potential for cross contamination. The other two employees, one with a beard. Had no hair restraints or hats. Let alone a beard guard. I especially enjoyed him waving flies away, and shaking an unrestrained pony tail as he was preparing food. While waiting for my order, one of the employees was pulling chicken off the outdoor smoker. The grill was filthy and caked with dried proteins. The service was friendly anf the food was good. The atmosphere is fine, the meats are PHENOMENAL! Everything is priced fairly...my only two complaints are that #1) their Dutch crunch bread is ALWAYS AND I MEAN EVERY TIME dry and tastes old, and when I called, the sweet lady at the register apologized and told me many people complain about that and offered to give me a free sandwhich which I politely declined because my aim is not to take advantage, but to give constructive feedback. My second complaint is that because it's so busy, it's not the cleanest place, and I'm not sure they even sanitize their eating stations. During Covid I feel like they were a little bit lax...my dad got Covid here December 5th and died January 6th. There is always crumbs and smears of sauce on the table....My suggestion is get the tri tip sandwhich on any bread but Dutch crunch and take it to go. read more

Dill's is easily the best deli in Redding and Shasta County. I'm acquainted with Mike, the owner, who is a standup guy and his staff is excellent. They have a large selection of sandwiches and are efficient at getting them to you. They also have a nice selection of salads; I commonly get their Caesars, they have real Caesar dressing (many places do not). Just happened to stumble upon this gem while passing through Redding. I saw the very colorful sign out front and decided to stop. So glad I did. I had what may have been the best Reuben sandwich I've ever eaten. Let's start with the bread. Marbled rye. Thick sliced. Light toast. Just incredible. The Pastrami (Corned Beef?) was warm and juicy. The sauerkraut was delicious with a slight crunch. Not completely soggy. It was heaven! I got it to go as I was trying to get home to Santa Clara. The sandwich was still warm as I ate it on the fly. Now I'm wishing I would have tried some of the BBQ options. The menu looked soooo good. All the staff there were very sweet and welcoming. Of course the fact that I had Rufus the Wonder Dog with me didn't hurt. (5 months old Blue Healer) I feel it necessary to mention the ice cream shop that is attached to the deli. I was out in Redding for work and as always I have to look up a locally owned business for lunch or dinner. I found Dills...I was looking for a place to take my food on the road as time is of the essence. The deli is next to an ice cream shop so that's always a good sign. As soon as you walk in you are greeted by the staff. Very welcoming. They explain to you the order process. You can create your own sandwich or choose from the menu. I opted to create my own sandwich. They have a jalapeño and cheese bread that they make fresh daily. I had to create mine with this bread. My sandwich consisted of pastrami, cheese, bacon, onion, lettuce and pickles. I also asked for it extra toasted. I can't complain one bit of this sandwich and the staff. The sandwich was so crunchy and full of flavor. This sandwich is enormous. I only ate half of it and saved my other half for lunch the next day. I am definitely coming back next time I'm working out in Redding and creating a different sandwich. read more

Not sure why there are some poor reviews. We were in Redding for the INVAL Swim Meet and this place was close to our hotel. Gave it a try and the food was amazing. Half sandwiches were huge and delicious. My husband had the ribs and said they were great and he ate too much. I ordered a turkey sandwich with various things I enjoy and was pleasantly surprised. First things first, the pickled onions are LEGIT. Very crowded, which is good because that means the food is fresh and likely tasty. They have just one vegetarian sandwich - the avocado sandwich (it's not avocado toast but a cold sandwich). Not bad at all in the middle of Redding (a very strange place where almost every woman in town had a tattoo and/or was pregnant). Good macaroni salad. After hiking twelve miles, nothing tastes bad. This isn't a bad review. But I do want to share my experience so others can use it to enjoy their food more than I did. Many people love dills so I finally tried it. Last week I got a create your own sandwich. It was so nice to have a broad variety of toppings allowing me to get a sandwich exactly as I wanted. It arrived and it was a huge sandwich. Nice since it was around $16 for a whole turkey sandwich. My problem was the bread. I got a French roll and at other places they're soft and collapse when eating so one can take a bite of a large sandwich. This bread was incredibly dense and dry. There was no collapse. When eating the sandwich it really wasn't enjoyable. The turkey and toppings seemed to be high quality but they were almost invisible due to the quantity of this dry, dense bread. I ate half the sandwich and threw the other half away. It was so disappointing I decided to try again this week with a different bread. I got the same turkey and Swiss but this time tried Dutch crunch bread. It was even worse. So dry. So dense. Didn't give at all when trying to smash it a bit so I could take a bite. It was very frustrating. I ended up eating the filling and throwing away the bread that left crumbs everywhere. Not sure I have it in me or my wallet for a third try. read more

The food is great but there is one lady with blondish hair a little on the older side wearing a maroon tank top hair pulled back in a pony no makeup and she's was sooooo rude!! She acted very put out. She was just rude and made you feel like you wanted to leave. We will never come back because she is so unpleasant. We stood there for 10 min before we got help. We decided to go there even though I wanted to go to Holiday because their sandwiches are pretty good. My husband told me that we will never have to come here again.
