Parking at Fish Bone was easy thanks to a big lot out front, which is always a relief. Walking in, the inside of the restaurant wasn't much to talk about pretty simple and low-key, but it was clean and comfortable enough for a casual spot. The staff was nice not over friends but welcoming. The first time I went was yesterday, they were close to closing so they were out of catfish so I came back today! For my order, I went with the Catfish Dinner, which came with three pieces of catfish, crinkle-cut fries, potato salad, a roll, and sauces. I actually received four pieces of fish, which I appreciated since the pieces weren't very big. The fish itself was a bit of a letdown, though. From the photos I'd seen online, I expected golden-brown fillets with a light, crispy crust. Instead, what I got looked like it had been fried hard. The crust was very dark and the catfish inside was slightly overcooked, leaving it dry instead of tender and flaky. The seasoning was there and the flavor wasn't bad, but the golden look that first sold me on ordering, wasn't there. The fries were solid and did their job crispy enough on the outside with a soft inside. The potato salad, on the other hand, wasn't very good. It seemed like it was made with pre-cut potatoes, and it had a processed taste and texture that felt out of place next to the rest of the plate. The roll was soft, and the sauces (especially the hot sauce) helped add some extra kick, but none of it could cover up the fact that the fish was just cooked too hard. Overall, I can see why people love Fish Bone and especially their catfish, but I think I just got a bad batch this time. The staff was wonderful, the parking was easy, and the meal was filling, but I left a little disappointed because I wanted that golden, flaky fish I'd seen in the pictures. First impressions mean a lot when trying a new restaurant, and this one left me feeling disappointed. If this had happened on a second visit, I might have been more forgiving and chalked it up to an off day. But since this was my first time at Fish Bone, it's hard to want to go back when the main dish, the catfish, was a let down. The restaurant never opens on time and the time to cook the food takes very long. I know its fresh but it doesn't not take 30 minutes to fry seafood. This place is a gem! They have freshly filleted fish and quite a few types! We got the family meal with 8 pieces of sole and 10 shrimps. The breading was flavorful and best of all, it was not greasy!
