    ITO continues to impress as an elite omakase experience and keeps getting better every time. Service is impeccable and warm. Cuisine and presentation are off-the-charts spectacular. Ambience and view are tough to beat - even in Las Vegas. It's on the expensive side and worth every cent and more. We look forward to our 4th visit!

    Everything about this place I love! The view, the food, the service, the drinks. Definitely top quality place and worth every penny! The whole dining felt like an experience in itself. Also really nice bathrooms.

    The route to the restaurant was not very accommodating to my 18 year old since the waiting area was a a lounge and the staff wanted to card her when we were not even there to drink. They kinda forced us to wait in the lounge/bar even if you were not drinking and they were slightly upset that she was not 21 and was in that waiting area. Well they directed us there, we were not there to drink, we were there to eat. Besides that experience, the chef, the restaurant and the service were great. I just wish it was not located in the Poodle room and it was more accessible to the public. For a couple's date night though, it's the perfect place for a gourmet, one of a kind sushi experience with magnificent views!

    Wowwwwww. Where do I even begin?! Let's start with their Japanese whiskey bar, which you get to experience 30 minutes before your reservation. Bartender Brian--dressed in full Japanese garb--whipped up an incredible old fashioned for my husband while I enjoyed a perfect glass of wine. Walking into dinner, the view is the first thing that hits you, and it only gets better from there. From start to finish, everything was flawless. The service was truly 10/10. Even the music playlist caught me off guard in the best way--I actually asked a server who curates it because the vibe was that good. If you're not a fan of uni (like me!), they ask at the start so they can adjust your menu accordingly and replace your courses where it's usually served. Such a thoughtful touch. Overall, an exceptional dining experience. Highly, highly recommend.

    THE ultimate omakase experience!!! I was invited to ITO at the Fontainebleau by one of the most genuinely nice person on this planet, and it turned out to be one of the most extraordinary and transcendent dining experiences of my life. Everything about this place feels intentional and elevated, from the discreet, speakeasy-style entrance to the stunning views that make the entire evening feel intimate and cinematic. The omakase itself is a 20-course journey crafted with absolute precision. Every ingredient is premium, every bite measured, and every dish presented with an almost meditative attention to detail. The chefs here are true masters--focused, calm, and completely in command of their craft. The uni was the best I've ever had: sweet, creamy, ocean-bright, and perfectly balanced. And the seared toro? Out of this world--melting, rich, and unforgettable. Course after course, the experience just builds, each bite more astonishing than the last. Even the cocktails expertly mixed by Danny were amazing, original and provided yet another dimension to the journey. ITO isn't just a meal; it's a moment. A rare, almost spiritual celebration of Japanese cuisine executed at the highest level. This experience will stay with me for a very long time... Pro tip - the best view is actually from the bathroom... that will sound weird, but don't forget your phone :-) I wish i didn't...

    I was able to attain a reservation through a host and didn't know how hidden this place literally is. There's no visible sign and you seem to need a staff to assist; in order to access this place. This place screams exclusive and it is supposed to be. It is hidden inside puddle lounge which is an exclusive member only lounge. Service was amazing. The 19th course food all tasted amazing. They sourced their ingredients from all part of Japan and meibutsu 名物 from different prefectures. Wasabi from Shizuoka for example. Definitely worth the experience and price tag. I really enjoyed the dessert also. Water and champagne were filled very quickly. The attention to detail was also like the experiences I had in Japan. I've fine dine experiences in all parts of Japan and Ginza in particular. This definitely hits the spot.

    So this review has been long in the making. I have been Ito a few times over the course of the last 1.5 years. Before I even dive into it, this is definitely a splurge meal and while the food is the highlight this also knocks on the door of providing a premium experience from top to bottom for the price point. There are a handful of noteworthy "omakases" that exist in the valley and they all drive their own version of what this traditional experience is supposed to be. This is definitely catered for the masses and brings the old school style of omakase and meets modern expectations. The experience starts with the exclusive elevator which brings you up to the top floor of the Fontainebleau. When you reach the top floor, you are ushered into a separate staging lounge (open about 30- 45 minutes before your reservation slot so come prepared!) which is intimate and cozy. They have a bar filled with an excellent bartender and it creates this sense of exclusivity and makes you feel like you are dripping in swagger as you drink a few cocktails. When the reservation slot hits, they start to file you into the main dining room. This alone is a pretty great experience. It's modern wood tones that has just awesome views of the Vegas valley. Truly feels like you are dining at the top of the world. The Chefs all work their magic behind the bar and are all friendly to the patrons. The servers are all cheery and efficient. The joint provides a large selection of adult beverages but if you are splurging (which you might be) the premium adult beverage pairing really does hit the spot and is curated well to allow you to enjoy the symphony of dishes that are about to follow. The joint starts with a series's of starters and they jump quickly into the various nigiri's. The rice is quality and the cuts of fish are fresh (as you would expect for the price point). Good artistic variations for all the cuts. The on thing is the Chirashi really is amazing as everyone comments. Rich and full of umami. Was confused why it came in the earlier to mid stages of the coursing but still a fantastic dish. There is literally nothing flawed about what they are doing here at ITO. It is a premium experience that makes you feel like you are on top of the world (literally and metaphorically). Will continue to hit this place up for splurge meals. Great addition to the strip.

    Located atop the Fontainebleau in LV lies this Top notch sushi resto with an amazing ambiance and stellar service! This place totally deserves a Michelin star! Fish flown in from Japan regularly paired with an amazing sake selection makes this place a must experience omakase. One of the better places outside of Tokyo that I've experienced.

    I am ruined. I love sushi! Now ITO is what I compare other sushi restaurants to. I've been to many of the top rated Sushi restaurants in the US. Sadly, none compare to ITO. The service is stellar! Nancy and MJ are as great as they come! I left there amazed and here almost a week later, still can't stop thinking about how fresh and flavorful all 19 courses of our wonderful dining experience was! The chefs are highly skilled and their presentation was also flawless. I CANNOT WAIT TO GO BACK!!!! I must add that the Wasabi cocktail is a must try!

    I experienced sushi in one of the tallest buildings on the Las Vegas strip. The omakase at Ito located in the @fontainebleaulasvegas was an experience.     An incredible Omakase experience with 19 courses and the best service ever. Each piece of fish was so fresh and the wait staff was on top of the 12 patrons attending the dinner. You have the most beautiful view of Vegas from the table and the chefs were very interactive. I was so happy and full! Would highly recommend trying this place out!

    Ito Sushi at Fontainebleau Las Vegas is a jaw-dropping omakase experience, easily one of the best sushi spots in Vegas, if not the whole damn desert. The fish? Pristine. The rice? Perfectly seasoned. The technique? Immaculate. Every course is a little love letter from the chef to your taste buds. But full disclosure: it's stiff. Not your vibe if you're looking for playful banter and loud like myself... Chefs tend to ANNOY by my BIG personality... Well, I'm in Vegas... You expect me to behave???? This is why to go to Vegas in the first place! To celebrating my bestie's birthday and finished my 3L... I'll wash my mouth with soap and wear duct tape next time, HA! This is sushi with its pinky up, refined, formal, and flawless. Pro tip: Before diving into Ito, make a detour to the Tangier Whiskey Bar right downstairs. It's the prelude you didn't know you needed. Then upstairs to Bar Ito, Bartender Danny is a gem; exquisite pours, WARM hospitality, and the kind of conversation that makes you forget you're in a mega-resort. Oh, and if you're lucky enough to get a sneak peek into the Poodle Room? Do it. Velvet, glam, and all the mid-century cool. A little secret moment in Vegas that feels like you're in on something special.

Since I was recently in Japan, I noticed the ambiance is on point We ordered the Jumbo Scallop Katsu and Pumpkin Katsu appetizer and were off to a great start. Both were tasty and perfectly cooked. The scallops were so good, we ordered a 2nd round. We shared the Kuro-Buta Pork Loin Katsu Set and were blown away . Tender, juicy, tasty, and oh soooo crispy. A couple of items of note. They will get you more shredded cabbage on request, excellent with the dressing provided. You get to make your own katsu sauce which was fun and a great way to engage the customer while waiting for your food. WARNING: Seating is limited, they DO NOT take reservations. Plan accordingly and be prepared to wait for excellent food.

Also came with the shredded cabbage. And the sesame seeds that you grind. * hubby got the katsu pork with the beaten egg. Almost like donburi. Served in a covered casserole dish. Our food came quickly. We both enjoyed our food. As we left an hour later the restaurant was filling up.

Fortunately, the wait was only about 10 minutes, which was surprisingly quick. I ordered the soft-shell crab, baked green mussels, and BBQ ribs with steamed rice. My son ordered the yoshu ramen and fried rice. The food came out fairly quickly, but I noticed that the baked mussels never arrived. When I asked our waitress about it, she said the kitchen was backed up. However, after waiting more than 30 minutes and already finishing the rest of our meal, it felt like the order may have simply been forgotten. What disappointed me most was the lack of an apology. The waitress even asked if I still wanted the mussels at that point. I was ready to cancel the order, but Kyo stepped in and tried to make things right. Thanks to his efforts, the mussels arrived about 10 minutes later. Unfortunately, when the mussels finally arrived, I was disappointed again. They were prepared very differently from the baked green mussels I'm used to getting at restaurants in Los Angeles. They were quite spicy, which wasn't mentioned, and the flavor just wasn't what I expected. After waiting more than 40 minutes for them, they definitely weren't worth the wait. Overall, the food was decent, and the restaurant was busy and energetic, but the service mishap and the disappointing mussels left me with mixed feelings about the experience. I do appreciate Kyo's effort to make things right, as he was the one bright spot in an otherwise frustrating situation.
