The food was really good authentic Vietnamese and most of the patrons looked Vietnamese which is a good sign! Our Vietnamese Uber driver recommended it. I'm taking off one star because I think they have a problem with their staff. We were only one of a few tables and literally every other table was piled with dishes and no one bussed any of them the whole time we were there. The staff kept walking past dirty tables doing seemingly nothing, coming and going from the kitchen empty handed. I've worked in many restaurants and know this game. It looked like they were all holding out for someone else to do it. I got the impression at least two of them were the owner's kids and the dad who was the chef, owner, manager, etc. wearing all hats was hurriedly shuffling around loudly dragging his floppy shoes and pacing back and forth in a sweat. I thought maybe we just came right after a huge rush and they were all still frazzled. Fair enough. Our waitress was actually quite nice up until I asked if she could help me pack up the pho to go. I just needed help because I didn't want to spill it all over us and she refused saying it's easier if the customer does it because she didn't want to spill it. Well gf, neither do I (!!) that's why I asked, so take it in the back and do it there please, but nope. Flat out refused even when I said I had a problem with that. We left our leftovers on the table like everyone else. Overall I would say go try Nudo because I think the authentic Vietnamese food was worth the drive. But hopefully the restaurant reads this review and considers this... it is a service point to take care of your customers and box up their food, especially if they specifically ask for that. Don't argue and refuse when pressed. It just really got to me after watching all the lazy staff taking breaks, and disappearing, while the stressed out dad was rushing around doing all the work himself and no one was helping out. I personally think there is a laziness issue with the employees from just observing their behavior throughout the whole meal. Again our waitress was very nice up until that last hiccup at the end and the food was good but the place seemed disorganized and dirty with all the empty tables piled up with the carcasses of meals long past. I was in the mood for soup and seafood so I ordered a seafood ramen bowl. The broth tasted amazing! The herbs were fresh as always. Unfortunately, the seafood was cooked/boiled too hard. I ordered Pad Thai and while I've eaten Pad Thai hundreds of times and can appreciate when it's different than expected, this wasn't it. It was overly sweet and the sauce was too much. There was so much garnish on the plate that it made me laugh as I removed it to sit on another plate. It didn't have the flavor of Pad Thai whatsoever and the overly sweet flavor kind of ruined it. Stopped in at this small sit down Vietnamese restaurant located in a strip mall full of restaurants on San Jose Blvd. Upon entering we were greeted by the hostess who pointed us toward a couple of four top tables we could choose from (no booths maybe 20 tables - mostly 4 tops). We picked our table and met one of our many servers (it is definitely a team effort here). He provided us with menus and water and another server took our initial order of starters (shrimp spring rolls with peanut sauce). We spent some time more time perusing the menu and added an order of the sugar cane shrimp starter (it comes with pickled veggies and satay sauce - don't dismiss either as they both had great flavor). When another server arrived, we requested larger water glasses bc they bring smaller glasses and you have to keep refilling it from the carafe they provide. For our mains, my wife ordered the lemon grass shrimp vermicelli bowl and I ordered seared beef pho. It took a little time for both to come out but when they did they looked great. My wife noted that her bowl had some more pickled veggies which she liked but some grilled peppers that she did not. My beef pho came out with beef, onion, scallion and noodles. I ended up getting the duck soup which had a very large duck rest in the soup with some delicious mushrooms and noodles. The appetizer was the shrimp. Appetizer was tasty. Very hot. I went with a friend for a birthday dinner and noticed they seem to do a lot of takeout. The location is convenient in a strip-mall, and was a little busy but there was still plenty of parking. The staff were very attentive, and we never had to wait long for anything from them. Both of us got the crispy shrimp appetizer and Pho for dinner. The shrimp was fried to a light golden brown and was cooked nicely. Not much to it. The Pho was also well done, however, I got chicken broth in mine and had to wait about an extra 10 minutes since they had to make it from scratch. That was OK in my book, but it would've been less awkward if they had brought both of our dishes out at the same time. Overall, this place was good and I would go back. The amount of food and freshness was on point, as well as the prices, but like I said, my tastebuds didn't explode. I have been to this location a few times before. I decided to stop here for lunch, being that I was in the area. I had to wait a couple of minutes to find a parking spot, being that it's a shared parking lot. Today the service was good. I decided for lunch to order their beef ramen. I have been wanting to try this location based on all of the hype that I have heard about it. Everyone has said it is an amazing location with fantastic food. I hate to say I was underwhelmed. Food - 6/10. I went in wanting to try something different from my normal Vietnamese order. So I didn't jump straight into Pho. I feel like if you're advertising yourself as a Vietnamese cuisine restaurant instead of a Pho restaurant, then everything on the menu should be hitting the mark not just one dish. With that in mind I decided to try the crispy egg noodles with vegetables and chicken. The chicken and veg were cooked well, but the sauce lacked flavor and struck me as overly salty and watery. It was also not enough sauce to start softening up the noodles. Atmosphere - 10/10. While the meal may not have been perfect on the palate (and hey these things are always subjective or the kitchen could have had an off day,) the environment was quite lovely. The appealing contrasts of light and dark spaces and wood and greenery elements made a comfortable and welcoming environment to dine in. Service - 10/10. Even though it was an early Sunday afternoon and the after church crowds were keeping the restaurant full and quite busy, the staff was courteous and helpful. They were certainly rushing out food orders but didn't rush you through your meal. My best friend wanted pho and we decided to come here to get some good ole Vietnamese food. I've been missing my mom's cooking too. Upon walking in, the servers were super happy and friendly. The veggies (cilantro, bean sprouts, jalapeños, and lime) were vibrant, fresh, and crisp. Banh mi (grilled lemongrass beef): 9/10 - one of the better banh mis here in Jax! I love a mean sub sandwich and this hits all the notes! The beef was tender and juicy, the pickled veggies (daikon radish and carrots) were tart and crisp, fresh veggies (cilantro, jalapeño, cucumber) were refreshing, and the liver pate and a aioli tied it all together. I appreciate that the lemongrass flavor wasn't heavy nor too strong because if you use too much of lemongrass, it can overpower other flavors. The sandwich was a pretty big size too and I saved the other half for my lunch the next day. It made me super happy because this reminded me of my mom's banh mi sandwiches. We had a craving for Vietnamese food and stopped at Nudo Vietnamese on San Jose Blvd; we're so glad we did. We had to try the Hong Kong noodle dish with beef - it was great-tasting, seasoned well, and had some great-tasting noodles. The second dish we tried was a stir-fry chicken with vegetables, which was also great-tasting. Of course, we always have to try the house fried rice, which was seasoned well with lots of shrimp and pork. Overall, we had a great-tasting dinner. As we were looking at the menu, the pho looked so good that we came back for lunch to try it. We had the brisket pho and the hot and sour fish soup, and as an appetizer, we ordered the fresh spring rolls. I went on a Wednesday around 12 pm wasn't busy at all, we were able to sit ourselves. Water was brought out to us before we ordered. I got the special rice plate and a Thai iced tea. My food was hot and delicious, egg was cooked perfectly and my Thai tea was also very good but I thought it could be a little sweeter (I like my Thai teas veryy sweet).
