If you've ever had a real Tampa Cubano, you know the bread is what makes it. Crisp on the outside, soft inside, and sturdy enough to hold everything together without getting in the way. Talking with owner Clint Thompson made the experience even better. He grew up in Tampa and has his Cuban bread shipped from La Segunda Bakery in Ybor City--the same bakery that's been making Cuban bread since 1915. That isn't marketing; it's respect for the tradition. Clint greeted me like an old friend, and we spent time talking about Florida, food, and his plans to open a full Florida-inspired restaurant. After hearing his vision, I can honestly say it's one of the restaurants I'm most excited to see become a reality. If you've never had an authentic Tampa-style Cubano, this is the place to start. And if you're someone who misses Florida the way I do, don't be surprised if the first bite transports you back there.
