This one popped up with a good rating and the photos of the decor lured me in. We ordered the rare steak and a noodle pho, not sure what the official names are, but when we tried the broth, I felt like something was missing. It was bland. It was tepid. The bowl was smaller than the usual sizes were used to. The rare meat didn't cook all the way through. Me and my husband are not pho experts, but we know good pho when we taste it. And this was not it. Look. It's great for photos. It is a very pretty restaurant; presentation is nice. But overall, the food was definitely lackluster. Also, service could be improved. I appreciate the level of detail and aesthetics this place strived to create. Even my water cup had the restaurant name on it, including my ca phe sua da cup (very strong, the way I like it). This was after waiting for 25 minutes outside with no one coming by to check the waitlist. When we got to our table, it was maybe 6 inches away from the other table. Also, small portions for $19.50 a bowl. There could have been more noodles for $19.50 a bowl.......I could have finished the bowl had it not been salty AF, but I did not finish it. I couldn't. I was hungry, too, but it was just so salty I couldn't do this to myself. The sugarcane w kumquat was the best thing here, as we never even got the pickled onions. Sugarcane drink was mid, but I should have known it was too good to be true. It was $8 so I'm not mad. Just not the best sugarcane. The inside is modern and clean, which is very different from your usual pho spots. But the tables are placed soooooo close together it's almost like you're at a community dining table..... If you're wider than the length of chopsticks, you will have a hard time moving between tables to get to your seat. I'm not a big person but damn I had a hard time getting to my seat! It's quite awkward trying to squeeze in and not rub your behind on anyone else's table. Also, that means when people get up, their booty is all up on YOUR table, too, where your food is, where you are eating.............. They made the place so cramped to fit more people, but really it needs to be spaced out more. You're in San Jose. There's SO MANY other pho spots in the city. I stopped by on a Monday afternoon and, even though I was dining solo, there were still a handful of tables available. I was seated right away, and since I already knew what I wanted, they took my order immediately. I ordered the pho tai gau, which included rare beef and fatty beef. Next time, I'll ask for the rare beef on the side--it was already cooked by the time it reached my table since my food came out incredibly fast (about 2-3 minutes after ordering). One standout was the orange housemade chili sauce. It's perfect mixed with sriracha and hoisin. They also had pickled raw garlic slices, which added a delicious tang to every bite. Water was served in a plastic cup, likely so you can take it to go instead of them wasting what's left but I felt this approach created unnecessary plastic waste. On the bright side, the Vietnamese iced coffee was excellent! It tasted more like Trung Nguyen coffee rather than the usual Cafe Du Monde, which was a nice surprise. The ambiance was clean and modern, which added to the overall experience. If you're a fan of beef pho, I'd highly recommend giving this place a try.
