I should have asked for shrimp paste since I found my broth to be one note. And that note was salty. Luckily I had like four different hot sauces at home I could add for spice. She even pulled a high chair out for the Little One without us asking, just to be declined by the Little one being adamant on not sitting in it. We ordered none other than my all time go-to favorite, and my main reason for coming here: #16. Pho Ga Dai Tuoi Long Kim Long a.k.a. the chicken pho with all the giblets. The pho was still excellent and hit the spot like it always has. However, I did notice the giblet selection seemed a bit random this time around. My wife ended up with several pieces of liver, while I had multiple hearts (which fortunately, I love!), but neither of us got any gizzards. She also didn't get any of the coagulated blood pieces, while I had 2-3. It's possible they were running low since we came toward the end of the day, about an hour before closing. Best part of all, the Little one loved it too! We shared our bowls and gave her a small portion of ours. For the first time in a long time, she finished her entire bowl! This might be saying something since she doesn't usually finish Ong Ngoai and Ba Ngoai's pho. Pho Kim Long seems to have undergone renovations cause the inside is modern, nicely lit, and honestly larger than I expected. *Cha Ca La Vong ($36): Crispy fish fillets on a bed of dill and onions, topped with peanuts. Arrives on a hot plate that stays hot for the majority of your meal. Dish is made to share for 2 people. Comes with vermicelli noodles, assorted veggies, rice paper, and fish sauce. The staff was nice and pretty attentive given the dinner crowd and tons of takeout orders. Our experience went smoothly. Big plus here: They take credit cards! I've began to dislike (and avoid) cash-only establishments. Parking: Shared parking lot with multiple shops. Finding a spot can be difficult during peak hours. #2 for 2024 The restaurant is huge in an L shape with an ATM in the center right but next to the cash register. Like many Vietnamese restaurants the food is served fast and quick so there's not much line to wait in. However there may be a line to wait to pay for your meal. Be prepared to take your bill up to the register in the middle of the room if you're tired of waiting. If you're visiting you may find the drive out of the way. It is not centrally located to down town San Jose where you have several good choices there all ready. There are many servers who will greet you as you come in and get you seated. They totally understand time is money. The faster they can get you seated and out the faster they can seat someone else. And of course the more covers they serve the more money. It is a processing line of efficiency rarely seen in an Asian restaurant. I absolutely love it. Rest assured they give a good amount of basil, and extra noodles if you like, with your pho. Something that seems to be a shortage of at more pho restaurants these days. That's a big plus for me. I like to start with the Bun Bo Hue. The main component to this soup is the congealed blood. I'm not a fan of but in this dish it is delicious. However, I'm not sure that was in here. Certainly there was something missing. The taste wasn't what I was familiar with. It was good but because it was lacking to my expectation it didn't satisfy me. The Hui Tien was also okay. The broth again seemed to be missing that richness we were so using to getting in this soup. The meats and vegetables were great. The spring rolls were good. A little pricey. I did like the thickness giving me a big mouthful when i took a bite. The spicy vinegar sauce went very well.
