Growing up among so many pho places in OC, I'm a hard sell, especially when I remember how affordable, delicious, and especially fresh the restaurants were. After moving to Vegas, I nearly choked on my hoagie when I went to a couple Vietnamese restaurants and saw the pricing (which like everywhere had spiked with inflation). Coupled with veggies that did not seem to take to the desert so well, I didn't venture back out for several months. Pho So 1 has been great because they Vegas up all the dishes I know and love. Portions are larger, justifying the price, and there is flair in the presentation! Even if the veggies aren't a Bolsa 10, they are definitely above a 9. The broth is delightfully aromatic and tasty especially in the bun bo hue (not overly salty or overwhelmed by MSG as in many places), and I personally recommend the bo luc lac (shaken beef) for its flavor/quality (make sure to ask for extra lime/salt/pepper for dipping! We were actually headed to another pho restaurant with over 1k reviews on this gloomy sprinkling Sunday but they were closed this afternoon for a private event. So glad this happened as we got to try Pho #1 and we really liked it. Ample parking as it's in a plaza with a supermarket plus lots of other restaurants and shops. The moment we opened the door, we were greeted and at right away. Pretty good size restaurant with lots of tables for patrons. Menu in hand, but all we wanted was beef pho. Ordered! And also asked for beef round filets on the side, cooked bean sprouts, pickled onions,a fork and extra napkins. Our order came out but the filets for the pho were not on the side. The waitress realized that and went back and got each of us slices of beef filets on the side. We didn't realized that our pho bowl already had the beef as well. So basically doubled it. And at the end, we were not charged for the extra. I know that they made the mistakes but some restaurants have added an additional charge since they had to bring more out to us. Our flight back to Toronto was at 2:45pm, as soon as we checked out from New York New York - we took an uber to here for brunch. Our uber driver said this place was really good and considering all the positive yelp reviews - of COURSE we had to come here. We had our luggage with us and I was worried that they would make a fuss about it but they didn't. We were greeted and seated quickly. We ordered the spring rolls and 3 small house pho. I loved the authentic traditional spread for the rolls. It takes the spring rolls to a whole another level. The spring rolls were good on their own but even better with the lettuce and mint leaves. OH HOW I crave it now as I am writing this review. Our house pho was delicious. My dad didn't add anything to it - that's how good it was. My mom and I tend to like our pho really red and spicy and it was so darn good we finished our entire bowl. They got lots of different things to choose from their menu. Super clean and friendly one of the managers or owners saw us in the parking lot. He got out the car and open the door for us and made sure he sat us before he left back out. I always get like a side of fried garlic to put on top because that garlic it elevates the flavor of the combo rice. Was seated very fast and food came out just as fast! We also got the egg rolls which were probably the best I've ever had in any viet restaurant! There is taro and pork inside the egg rolls, however the fish sauce tastes a big watered down. The pho tastes pretty standard but also not the biggest expert on pho.
