Well. I came back and honestly don't understand those 5 stars reviews... Customer Service - Worse They updated their business hours to open at 8 AM. I arrived at 8:08 AM, saw a small group of customers at the front. Door locked even though staff was inside and light on. One of the people called in and one of the staff picked up, said they're already open but the one who keeps the front door key is not here yet... (What!?!). I was going to leave after finishing this review right here for 1 start and it just happened that a middle-aged lady came (8:15 AM) in her pajamas and opened the door. Ok, giving it a chance. We got seated in a bit. They had some hiccups with their app to take order and I didn't get to place my order after about 10 mins. My pho was served fast though, but they forgot my iced water and I had to ask again. Good thing is they no longer use that gross bamboo cup. Overall, customer services were much worse than my previous visit. It turned out I was late for work, but it's ok that day. Lol. Food - Better I remembered to take photos this time! I purposely ordered the same thing I got last time. They upgraded the size of Special combination #1 with same price $15.99 +tax. It is still on the expensive side but it was nice that they offered 20% off for grand opening. Broth was not fatty like last time, clearer and tasted better but still kinda bland to my liking. Very important: they CHANGED THE BEEF CUT for the rare meat - it was MUCH better, soft and tender; but the meat was very very rare (see photo). It's way better than the overcooked meat last time anyway. Beef tendons were stewed just right this time, but the fatty shank was too fatty and chewy. Well, I would just give 2 stars like last time, since their food was improved but customer services was much worse. But, one additional star for their efforts in trying to improve things. Unique and fragrant pho. So first off, it's much nicer on the inside than the outside. The plaza it's in isn't the newest and you can't get a really good idea of the ambiance until you are actually inside. From what I understand, it's actually a chain from Hanoi, and that is reflected in the little details throughout the restaurant (cool natural stick looking chopsticks, metal spoons, etc). Also, the star of the show appears to be the condiments, specifically the little jars of pickled sliced garlic on the tables. The pickled garlic (if you add it) and the generous vegetables inside of the pho make it unusually fragrant. Even the ...not sure if they are green onions... Are cut uniquely, and provide a different mouth feel to ordinary pho. The broth is good, and mixed with the crumbly type of beef and vegetables it makes for a light and very different kind of pho experience than I am used to. Despite being a lighter type of pho, I still finished it down to the last vegetable, which I never do. Overall, a pretty good experience, and probably a good introductory restaurant if you have friends who have never tried pho before. read more

A really different and unique bowl of pho, but I still really enjoyed it. Fresh noodles were so soft, but didn't crumble apart. I got the gau and bo Vien. The gau was thin cut, fatty with a bit of a firm bite to it. Bo vien had tendons. So yummy! My husband had the stir fried pho and he said it was unique and tasty. We both loved the pickled garlic and jalapeño that we didn't know we needed in a pho bowl. Broth was on the salty side and could have been a bit hotter, but that's just preference. Pho Thin specialized in Beef Pho. Beef Shank was used in their Rare Servings - Phở Tái, when the restaurant first opened in January 2023, which didn't sit right with me and many others. Beef Shank cut is too chewy to serve rare. The restaurant owner must have listened to negative feedbacks because months later they start using a different cut of beef, which is much tender. * Beef Phở is good here if you can tolerate MSG. But I felt so surprised with the attitude of cashier and server when we told them there were mosquito and fruit flies in out bowl of pho and tea. I asked them to come to see then next time the restaurant can improve their service in term of hygiene. I told to them 2 times. We tried Pho Thin recently. There has been a lot hype with Ha Noi pho here and in the Bay Area. The restaurant is located in a dimly lit empty plaza at night. We came on a Saturday around 8pm. Luckily there was no wait. The place was filled but no line outside. We waited for 5 minutes before anyone acknowledged us. Either they were short staffed or lacking training, but it didn't make for a good impression. Although I understood from reviews and others that Ha Noi pho would be different than what I'm used to. It didn't prepare me for what came. We ordered Pho Dac Biet ($15.99). There is only one size. What arrived was a very small bowl, with lots green onions. The tai meat was cut very small, which was very frustrating to eat. Lol. The soup base was bland and lacking much flavor. I also did not like the wooden chopsticks and drinking cups because I think they are more difficult to clean. I also noticed napkins and other debris left on the floor. Operations did not seem well organized. Restaurant is a tough business, especially pho restaurant in oc. Will not return. read more

I ordered the pho thin dac biet #1 and pho with stir fry rare beef #2. It was really tasty! The broth and meat didn't disappoint and i added garlic (available as a side on the table) into my soup for extra flavor. They also had pickled onions which was delicious. First time trying Pho Thin. If you are looking for something different than your typical pho, then this is the place to try. The broth is more complex, sweet garlic flavor with marinated meat. The broth has a separate taste, the beef had a separate taste, and the noodles were fresh. Combined together they all married amazingly. I also didn't smell like beef after. First several sips of the broth alone was VERY bland but broth got better only at the end where it seemed more concentrated. Got their Pho stir fry rare beef "by traditional way". Clearly lacking some salt and seasoning. BUT I want to say that I believe the pho served here is more of the PURIST style pho as in they cook/simmer the bones for a long time and only use a tiny bit of seasoning/herbs as complimentary to the dish thus if you're used to western/american foods most of your meals, you are NOT going to like the pho here as it will be too bland for you. That being said, I'm all for pure style of pho as they don't use or very minimally add any MSG since I'm extremely sensitive to it and can tell you every time if it's there or not. Many other pho places overuse MSG and I can never drink their broth but I was safe eating pho here. However, I think that the pho here still lack seasoning and a bit more savory really wouldn't hurt. They give a lot of meat and green onions compared to most places, and I recommend getting the beef nam (brisket), i think it was better than their rare beef (which was not really rare, a little on the tough side). Service: every staff member is busy but has a quick response except one young female staff member for our table is so reluctant to answer our question or request.
