This place is a must! Bakery style bagels; must buy a minimum of 3. Comes with a container of schmear. Don't toast them; they come warm. Simply rip and dip. The scallion schmear was delicious! This was my first visit and the staff were really nice to explain everything to me. It's a small store front with a few seats indoors & out. Arrive early because I think this place can get packed and potentially sell out.
Hands-down, one of the best bagel shops in town- known for their thin, crispy crust and a soft, almost airy interior, which differs from traditional dense bagels. These bagels are designed to be torn by hand and dipped into unique schmears! It's all part of their trademark experience- "Grip, Rip, and Dip" method. And don't even get me started on their schmears! They have unique, varied toppings- spicy scallion, sabatino truffle butter, spinach artichoke, and plain (among other greats). Scallion cream cheese is by far my fav 10/10! Bagels are served fresh and warm, never pre-sliced! Bagels have a crackly crust with a dense, chewy, yet tender interior! Overall, service and the quality of their bagels is second to none! Prices are high compared to other bagel shops around town. But well worth it!
Fast paced spot with good bagels!! As a New Yorker, I take my bagels very seriously and these definitely were good. The menu is simple, and there's a reason they're well known. It was my first visit, and I'll admit the staff came off a tiny bit rude, especially since I didn't realize there was a minimum order (apparently 3 bagels or more). I didn't do my research ahead of time, so hopefully this helps the next person! That said, it's a cute little grab-and-go place. I tried the everything and salt bagels both were yummy, and hit the spot. I'd go back, just better prepared next time!
How ironic is it that I came to SD most excited for the Mexican food, but this was one of my favorite bites of the trip? Got the sesame, salt, and everything with scallion shmear. Salt was somehow my favorite. Fresh out of the oven it was so so good. I'm sad I forgot the leftovers in my fridge when leaving town. The "service" is a little chaotic, prepare to feel like cattle, but it was fast and they did give me an extra bagel.
My husband had to drop me off up front because parking was impossible. There was a line when I got there, Service was ok. I could barely hear what the girl was saying & she wasn't that warm or friendly. I ordered one each of the salted, and the poppy seed bagels. The bagels...wow. So bomb! Best I've ever had. It was warm, soft, and chewy at the same time. The best texture I've ever had. My favorite was the salted. It was so good with the chives cream cheese. Next time I will order a bigger batch.

Was hoping the gloomy weather and late afternoon visit would produce no line this Sunday and I was lucky ! Parking sucked but whatever . The same manager works so hard but always has the most welcoming smile! He remembers faces too (or overly excited customers like us). The bagels - NO JOKE - are ridiculously amazing EVEN AN HOUR BEFORE CLOSING. Name one other bagel shop in SD that has this other than PUB. I'm doing an extra two workouts a week so I can come here for weekend bagels :) They do sub extra bagel(s) if you don't want any spreads so that's a great option (not available for online orders so best to do it in person). Thank you staff today !

Customer service was super friendly, and the scallion cream cheese was the perfect add-on! Definitely stopping here again next time I'm in CA. Perfect grab-and-go before heading to the beach to watch the seals!
SO excited to see this bagel place Pop Up in La Jolla. Highly recommend. The bagels are hot and fresh. You can pick 3 flavors plus a tub of cream cheese for $15. Federico was so nice and helpful. He guided us newbies perfectly. Loved the everything bagel and the plain bagel with the chive cream cheese. Cannot wait to return! *Note that they don't toast bagels but come fresh and hot and ready to dip!

The bagels are super warm and fresh, and I love the texture contrast between the crisp exterior and fluffy interior. When you rip the bagels apart, a puff of steam comes out, then when you dip it with the cold cream cheese it provides the perfect temperature contrast. Definitely one of the best, if not the best, bagel I've ever had. We came around 9:25 on a Sunday morning and there was no line. Service was super quick but when we left around 10 there was a line out the door. So glad i don't have to take a flight across the country anymore to have these bagels lol

I have been looking forward to my SD trip to have pop up bagels and it was worth the wait! Last time I had it was January and Boston and I've been dreaming of that delicious scallion cream cheese and warm everything and salted bagel for MONTHS! It was just as good on the west coast. This location has indoor and outdoor seating which is awesome! We walked to the end of the street and got ourselves some fun lattes to have with the bagels. Yum! read more

My husband had to drop me off up front because parking was impossible. There was a line when I got there, Service was ok. Not sure how they managed to make bagels extremely appetizing but they did it. Seating is incredibly limited at this location but service was fast!! I feel this place might be more of a touristy location so I may need to adjust my review when I check the one in Oceanside out! read more

Stoked to skip the line/trip to La Jolla and try PopUp delivery. The 3 bagel + specialty shmear combo was the perfect amount for two. This week's shmear flavor was chocolate Guinness, in honor of St Patrick's Day. I liked the originality and taste, but it would have paired better with a cinnamon raisin or cranberry bagel vs the savory options that PopUp offers. On the strength of this decadent cream cheese flavor alone (pro tip - tastes like boozy choco mousse when eaten by itself...not that I would ever do such a thing hehe), this spot gets high marks. But, it's Popup Bagels not Popup Shmears so... We chose salt, sesame and everything bagels. All arrived warmed, and we ripped em per instructions. They were thick, a bit on the small side and not too flavorful, especially the salt bagel. Fun trying this popular new (to SD) concept in an inexpensive (not paying for a full meal or full dozen) and convenient (delivery) manner. read more
Omg, best bagels ever!! My daughter and her BF raved about this bagel shop. They were in town from LA. They have been to a Popup in LA and were excited to share the bagel bliss! They first found it in New York. We tried all the flavors (plain, salted, sesame, salted and Everything bagel) and we picked 2 cream cheeses; chive and salted butter. Both paired beautifully! So much seeds that the staff make a sweep of all the everything but the bagel toppings that are so generous, the seeds fall to the floor. The bagels are the perfect bite on the outside and so soft on the inside All the staff are friendly and the space has indoor/outdoor seating. The manager came over and said hi, too! read more

Was super happy to hear that they had a location now in Southern California and since I was in the area, could not wait to try the San Diego Location. I had tried PopUp Bagels in NYC so had a baseline to compare it to. I love their bagels where you're expected to rip off a piece and dip in the smears! I had a busy day ahead of me so I tried to order ahead of time on the same day, but not sure if it's because it was a weekend and it was busy but I had some issues. Instead we just went in person and there was, as expected, a line to order. It did go by pretty fast! Once we went up to the line, the workers were kind and approachable to help you understand how their bagels work if it's daunting. I ended up getting the dozen bagels and 2 smears. It met all my expectations and tasted just like the NYC location! I love how their everything bagel has so much flavor but is not so overbearing like others. Their salted bagel is definity my favorite. I tried the specialty smear at that time, which was the Shirley Smear, as well as the Scallion and Salted Butter! I love the scallion and salted butter. I've waited for the long line to die down before going here and finally, when we went on a weekday morning, there wasn't a wait. The service is quick and fast because they basically have all the bagels ready to go. It is as authentic as it can be from their original NYC location. The bagels are soft, hot, and bouncy. They're still pretty good even after reheated the next day. I went for their signature scallion cream cheese but I wish they have more flavor options. The bagels and cc were reasonably priced but the smoked salmon was $14 which is steep for what it is. Note that this is a rip and dip bagel place so you have to DIY everything. I highly recommend the everything and sesame bagels! read more
Finally got to try this place and super happy I waited till the hype died down a bit so I didn't need to wait in line. Went on a run around La Jolla first then stopped by at 10AM. There was a little line forming but by the time I got my bagels a line wrapped around the building! So the earlier the better on the weekends. I ordered the salt, poppy, and everything bagel with the scallion cream cheese. They came out fresh and crispy. It tasted the best fresh! The salted bagel was my fave, it was sooo good with the cream cheese. The poppy was my next favorite and the everything bagel was pretty good too. The scallion cream cheese is amazing! I think 3 bagels and 1 tub of cream cheese is honestly a pretty good deal considering the quality of the bagels. There aren't many seats around so best to pick up and take it to the beach to eat. Chewy delicious bagels with a unique variety of spreads! We got the combo pack of three bagels and a shmear, and the tub of schmear was more than enough for the bagels (I wish we bought more!). We also got an extra tub of the rosemary garlic butter, and it came with so much that I was able to take it home and cook other things with it! My favorite bagel was the salt bagel, it really allowed me to appreciate the quality of the dough. I also tried the everything and poppy bagels, and I thought they were tasty (but be prepared to make a mess). The line goes out the door, but the process is super efficient and we only waited around 15 minutes on a Sunday morning. Street parking can be a little rough, which is pretty typical for the La Jolla area. However there are a lot of cute shops within walking distance, and there's also a farmers market nearby on Sundays! read more
The line was crazy saturday morning so I decided to place a pick up order. A dozen of mixed bagels with scallion schmear, lemon pepper, and original. Unfortunately they forgot the extra one that I paid for. I only got 2/3 of the schmears. Bagels tasted great and reheat very well! The lemon pepper was good but it is strong. Was heading back to visit my college roommate and preordered a dozen bagels to bring back home. I know they have a location in WLA but we hardly head out there these days. Arrived early only to be told that my bagels weren't ready. A bit disappointed as I really don't think I needed to preorder as I saw countless patrons/uber eats/door dashers coming and going with bagels. Was expecting them to call my name once they bagged my bagels but instead it was placed on the shelf waiting for me to flag someone down to ask about my order. The everything bagel was awesome especially since it was hot. Love how they have a nice bite to them and seem a bit lighter than what I remember how Ess-a-bagels were. Ordered a few containers of the scallion cream cheese which was also tasty. I would definitely head back but definitely would just suggest walking in to order as they seem to keep baking them. read more

Was excited to hear they opened a location in SD! I've heard about them before but didn't get to try on my trip to NY. I like how the bagels are super fresh and come out hot, crispy outside yet soft and chewy on the inside. My favorite was the everything bagel. The salt bagel was a bit salty, while the sesame was more plain. The scallion cream cheese was flavorful and I enjoy the scallion flavor. The rip and dip is a fun concept too! Came on a weekday early morning so it was easy to find parking out front, and quickly ordered and received our order. A half dozen and schmear was $24 which is a bit pricier, but it was good to try! When we got there at 10 AM, the line was already quite long! The menu is inside, so we took a picture of it, and then decided what to order as we stood in line. We decided on the 6 pack of bagels and a shmear ($24). We got 3 salt, 1 sesame, 1 everything, and 1 plain bagel. We chose the caramelized onion cream cheese shmear, which was one of the limited editions. I like how they have a dairy free vegan shmear option, but it's $11 on its own. My favorite was the salt bagel! They say to grip, rip, and dip, and it was the perfect way to eat it with our shmear. You really should eat the bagels fresh right at the store because they're absolutely amazing right when they come out. When we ate the two leftover bagels the next day, it was still good, but definitely could not live up to the hype of the day of. It's true. BEST bagels in San Diego, and they put many of the bagels I've had anywhere else -- including New York City -- to shame. But there's a catch. So, I've had bagels all over San Diego, and in many places across the country. As we all know, the bagels in San Diego just don't measure up compared to the best that New York has to offer. Nothing special about them at all. So, with all the hype around PopUp Bagels, I just couldn't figure out how they would measure up. But they exceeded my expectations big time. My wife and I wandered by at around 11AM on a Thursday morning. A couple people in front of us in line, plus a bunch of people waiting for their orders. I noticed right away that there were hardly any bagels in the big, metal holding baskets -- our bagels were in the process of being baked right then and there. We ordered six bagels -- three everything and three sesame seed -- and two packs of the Monty's vegan cream cheese. I appreciated that the first pack was included in the price of the bagels. We waited maybe 7 minutes for our bagels after we placed our order and they were literally HOT out of the oven. So hot, in fact, that when I started tearing mine apart, I burned my thumb in the process. But that's the secret to the BEST bagels in San Diego -- that catch I mentioned up top. They are AMAZING when they are fresh out of the oven. I've never had bagels that were so fresh anywhere else in the country. You go anywhere else and who knows how long they've been sitting around -- hours in most cases. And bagels just don't get better with age. They're at their very best right out of the oven. Long story short, believe the hype: PopUp Bagels IS the best -- by a long shot! read more
Went with some friends!! Got the salted bagel and an everything bagel to try them both. Very fresh!! Smaller than I expected. Just got back from NY where they are know for their bagel.. sooo. went at 12pm and they seemed sold out of a lot. Which could be good as your getting it very fresh and when they are gone, they are gone. Over all a good bagel, and as you can see from the picture they don't hold back one the seasoning!! My dream!! I wasn't aware of the whole butter concept. I LOVE cream cheese so this was very different for me. But did try it as I didn't see where they sold regular cream cheese. Personally wasn't a fan. But hey, everything's not for everyone Give me all the cream cheese. Definitely worth a try though. read more
Who doesn't love a fresh, hot bagel. I personally love ripping into a bagel and dipping the pieces into schmear so, Pop Up Bagels is really perfect for me. I came in on a Friday around lunch time. I grabbed 2 3-packs with cream cheese. 3 plain for my son and 3 salt bagels for myself. They very kindly threw in an extra bagel in each bag, so I received 4 of each. I ordered the plain schmear and the weekly special of the chipotle honey cream cheese. The plain was great as expected. The chipotle was good, but not really my thing. From the time I ordered to leaving, was about 5 minutes. The line moved quickly and the bagels were packed up very quick. I was able to find parking one block up on the street with no issues, which was really one of my biggest concerns. If you love fresh, hot bagels, definitely make sure to give these bagels a try. read more
The bagels here are very fresh--they're usually warm by the time I get to eat one. That's PopUp Bagels's greatest strength, for me. I don't know a lot about bagel shops, but I think most shops make the day's bagels before they open and sell until they run out. At PopUp Bagels you can see the employees pulling them out hot during their shift. The other thing I really like about this place is that they rotate seasonal schmear and butter flavors nearly weekly, so you can go almost once a week and try something different. As far as the portioning...I don't really get it. I will dare to say that most families in La Jolla are likely either two- or four-person, not three- or six-person. I don't know if they crunched the numbers and determined that selling three bagels at a time is optimal for selling everything they make in a day...but it's annoying to have to always split the third bagel with my fiancé. Who wants a bagel and a half in one sitting? The other thing is that the tub of schmear is enough for four bagels, and I use a lot on my bagels. So not sure what's going on here. And pricing...yeesh. Basically $20 for three bagels and a tub of schmear, or $50 for a dozen and two tubs. While their bagels are delicious and I have tried each of them, I will say I'm a little disappointed they don't offer more variety. They say do a few things well...but a bagel is a bagel. The toppings don't have to be limited. It's close to us and I like the employees here, so I'll keep returning to try their seasonal items. I just won't ever be caught standing at the one table in their small dining area making a mess all over the place. read more
Popup Bagels on Pearl St. draws a crowd with a line of people patiently waiting for their hot bagel and tub of cream cheese. Located next to the Taco Stand which always has line of people too. While waiting for our bagels, the space inside the shop had a wall photo menagerie of other Popup bagel locations with happy people and their bagels. Otherwise is space is small and feels even smaller when JRA packed full of waiting people. This small shop limited seating inside and some seating outside which it shares with the other businesses: taco, pizza and burger. Only Street parking which can be a challenge. The menu only offers bagels and eventually coffee. These New York style bagels, claimed to have originated from New York. I only wanted one bagel but the minimum you can order are 3 bagel with a tub of cream cheese, I chose my favorite the scallion cc. There was a bit of a wait, but when I saw the freshly baked bagels cone out and my order was amount to be served I was excited. Snagged a seat outside and after taking a few pics, I had to sample it and take a bite...it was really good, better than I expected worth the wait. Noteworthy, is the bagels are not pre sliced. The wooden knives they have at the shop tend to break upon cutting the bagel, which is why their neon art of 'Rip and Dip' might be appropriate here. So Go Already and Get your Popup Bagels!! I've been wanting to try PopUp Bagels and luckily walked by in between a rush of people. There was no line when I walked in but by the time I walked out there were probably 10-15 people behind me. Service was very friendly and quick. I ordered 2 salt bagels and 1 everything bagel with the butter schmear. It took maybe a min for my name to be called and the bagels were piping hot! They were too hot for us to try right away so we walked a bit before tasting a salt bagel. It was very tasty and reminded me of a really good soft pretzel. Upon arriving at home, the bagels were still warm and the butter was just what we wanted. They recommend freezing the bagels if you won't be enjoying right away and also provide reheat instructions online. A little pricey for bagels, but worth trying especially if there isn't a line. It's hard not to know about Pop Up Bagels based on their virality and marketing over in New York. We were very excited to finally try it and stopped by on a Sunday during lunch time. The line did go out the door and at first can seem a bit daunting, however it moves really fast. They take your order while in line and write it on a bag. Once you are at the cashier, you simply give them the bag with the order and then you wait for them to call your name. We waited longer for the bagels to be ready than waiting in line. It can get a bit crowded inside and there's only a few chairs to sit at which we were lucky to grab, however you're most likely going to need to take it to go. I was very impressed with the logistics and operations since they work super quick. The menu is straightforward and for 3 bagels and a shmear (~$15) I think it's fairly reasonable. When I tell you these bagels were super fresh and piping hot, I mean it. All are our bagels were steaming and we even had to wait a bit since they were so hot. We got a salt, everything, and a sesame alongside their scallion cream cheese. The chew was perfect and the flavor was definitely there. I do think the cream cheese could have been more whipped/softer but overall it was tasty. The worker said that the each cream cheese has 6 bagel servings, but if you're really generous with each scoop, you probably at most would only get 4. Overall I was very impressed with our experience and would definitely come back! read more

Quick, easy, efficient service! Very small bagel shop with limited parking, best to go on a Sunday morning before the rush! We got the 3 pack bagel with everything, poppy, and sesame and their limited time berry vanilla schmear. The bagel was fresh and warm and the schmear was smooth, creamy, refreshing from the berry and sweet from the vanilla. Love the vibes here, very walkable area and so much popular foods along the Pearl street. read more

The videos I saw online made the wait seem like it would be crazy but surprisingly I only waited around 5 minutes on a Saturday at around 10:30 AM. Me and my fiance ended getting the salt, sesame and everything bagel with the scallion schmear. The bagels had a great texture with a slight chew in each bite (better than any other bagel I've had in SD and around the same as ones I've tried in the east coast). The scallion cream cheese they gave is quite a lot and probably too much for just three bagels. Luckily for us the cashier felt bad for spelling my name so poorly that she ended up giving us an extra bagel so I'll forgive her for the misspelling and give them props on customer service. If you're a huge bagel fan then I'd definitely come back here. For me personally I wouldn't go out of my way to come here but if I was in the area then I'd definitely return! read more
WORTH THE WAIT! Pop up bagels is absolutely delicious. Like, what is better than warm bagels dipped in delicious schmear & butter? They have really fun flavors (which rotate)...I had the scallion cream cheese (I think this one is always in the rotation) and the cacio e Pepe butter. Be aware the line is usually very long, so be prepared to wait. They also offer online orders which can take a solid hour and there's a minimum of bagels, but a nice option, and they freeze well! read more
