We used to frequent this place everyday. We work in the neighborhood. Now we only come here if we want pastries and are willing to stomach the fact we will be treated rudely and feel unwelcome. I had pre-ordered a Passionfruit cake prior to the holidays for a Jan 7th pickup and was notified on the 6th that they were switching up their menu and discontinuing the Passionfruit cake after being charged. During a pandemic, all people are looking for is something to look forward to. Ordering a specialty cake that my wife loves, helped get her through wrangling a toddler during the holidays. Not to mention, this is now the SECOND time they have dropped a highly demanded item from their menu suddenly. The Coffee cake from a couple years back was a massive hit, only to be dropped. They obviously don't know how to retain customers. This is an inconsiderate business who at the LEAST owes customers some warning before dropping long running items. I am a huge fan of pastries so I thought I should give Proof Bakery a try. Located basically 3 blocks away from my house, Proof Bakery is a small little pastry shop in Atwater Village. Since it is relatively new, not a lot of people have heard about this place but they are slowly gaining a cult following because of their delicious goods that they sell on here. What makes them different from a lot of the pastries shops that I've been to would have to be their knack on artistic presentation. Their goods are so beautifully handcrafted and you can tell a lot of work and love has been put into every scrumptious pastry that they make! (: Also their coffee is pretty good and although I'm not a huge coffee drinker myself, I must say that I wouldn't mind coming back here just for the coffee itself! It's that good (: The prices can be a little pricey depending on how much you feel pastries should sell for, but because of their unique creativity and one of a kind pastries I definitely think that it's well worth the price. Pretentious. Rude, condescending service. This place has good coffee, but I've chosen not to support them any longer. The three-or-four times over the past year that I've come to Proof, I've consistently left in a worse mood than I arrived. Sure, I expect and tolerate the occasional entitlement from anyone powerful and established enough to hold the title of Barista, but these employees have a way of speaking down to you that just puts them in a league of their own. Is it really necessary to make me feel like a clueless ass simply for asking for a small iced coffee? Turns out they only have one size for iced coffee (as a coffee enthusiast, i TOTALLY understand this is, it's quite common) but does that warrant you talking down to the customer with such a condescending tone that i still remember it a year later? My very next visit my girlfriend was 'put in her place' for asking for a chai tea. Apparently they don't have chai, but just as above, the news was delivered with such an amount of offensive sass that we were both shocked! How dare we ask for something they don't serve (on a side note, why don't you have chai? that's pretty common stuff). The most recent (and final) visit of mine was last week, when we inquired about the price on a bag of unground coffee beans, only to be met with the most blunt and offensive "PRICE ON THE BOTTOM OF BAG". And that lost them a sale to be quite honest. The cashier responded with the verbal equivalent of an extreme eye-roll. Admittedly, i find it hard to describe these situations on a Yelp review. The service is more pretentious than any establishment I've visited in recent history, thats the best way i can put it. I was very apprehensive about writing this review, but after having multiple brushes with rude hipsters, I figured I needed to start venting about it. I'm a local resident; I go to multiple coffee shops in the area and once in a while my gf and I will go to Proof Bakery. But when I'm at Proof I feel like I'm an outsider in my own neighborhood because I don't look like the typical "hipster", but I digress... It's my turn to order, I ask for an americano and um wait, I see a bag of coffee from Handsome Coffee Roasters. I'm not an expert on Handsome coffee but I've heard of it, so I ask the girl behind the counter a simple question, "Is this a dark roast?" She scoffs at me, cocks her head a little sideways, looks at me like I'm some kind of neanderthal and says, "Handsome doesn't make a dark roast!" I came here for a little midday birthday treat with my mom. Without hesitation I ordered the chocolate caramel tart. My mom took her sweet time and ordered the blueberry rhubarb hand pie. They were both everything you would want in a little baked good. Flaky, moist, flavorful, gooey insides, orgasm-inducing. It's pretty small though so it must be crazy during breakfast... The quality of the baked goods at Proof is amazing, but the staff here are often rude to non-hipsters and minorities. Non-minorities can be seen being given the best of service, but others are given the cold shoulder :(. Because the pastries are so amazing, I tried giving this bakery a few chances. Once I ordered a $40 6 inch birthday cake for my dad and picked up a dry cake that had supposedly been baked to order. On another occasion I bought a cookie that I broke in half to share with someone but found that the cookie piece I was trying to share was hanging attached to the whole by a piece of pet hair. I tried brushing this off, threw away the cookie, and continued to eat one of their beet sandwiches. A couple bites in I saw that a dead fly was in the sandwich. If there's one thing I loved most about my BF, it's that he introduced me to this place. They have the flakiest croissants that have ever brushed my lips. Just from first sight and touch, I knew we were meant to be so I got them in both the savory ham & cheese and sweet chocolate. Well, my experience at PROOF was a NIGHTMARE, except for the PLAIN CROISSANT WHICH IS ABSOLUTELY OUTSTANDING!! They make their own. I made sure. BUT first, the place is JAMMED with HIPSTERS, and I, being 70, am not only not one, but can't stand small places which have dogs, babies and people who think they are so COOL. Also, I had a cup of coffee and once again, it's Handsome and it;s not HOT!! I WANT HOT COFFEE and I want to be able to hear and I want a bathroom, etcetcetc.!! So. let me maybe bring up a topic for the management to address. It's Saturday, 1145 am, 9/21/2013: Kudos to the elegant Asian customer woman who stood up to the woody allen style guy (circa. Manhattan) who used his "2 yr old daughter" as a golden passport to cut the 8 person line. In brief, he cuts the line, she calls him on it from the back, he justifies cutting it repeatedly by having a two year old. (You obviously don't have a kid. You must be rich. I have a two year old!!!) How did it resolve? It escalated slightly, the Asian lady left to avoid conflict, and the man walked off with his prized pastry and his daughter in tow. Really--the food is THAT good--it inspires conflict. But this is no cro-nut. The line only takes 5 minutes with 8 people. Little kids should be taught to be patient for things that matter--and that we live in a community based on respect. Yes, I feel sorry for parents, but all the more credit to the 99.9% of them that don't cut the line and exploit their kids to that end. In the last hour, 6 children/infants patiently waited in line with parents. Yes, single parents. What should have happened? Cashier lady with the green bra, pencilled eyebrows, and knit top: you may be very pretty, but stores hire hotties like you to keep we peons in line! This is Proof--there is a line, by definition. And this ain't the Kobayashi Maru. Owner: train your people how to deal with these conflicts in a win win way? Think about it: today you lost a customer who is intelligent and outspoken while protecting the asshole who lies and teaches their kids to manipulate. Proof Bakery is located along Glendale Blvd, an area which I am not very familiar with but I braved driving here because I have heard good things about this bakery. I arrived around 1030am and found a metered street parking spot about a block from where bakery is located so I walked to where it was. The bakery is located in a strip mall and sandwiched between other businesses. The bakery is about medium sized with outdoor and indoor dining options. Even after the breakfast rush, there were still plenty of people dining and almost every single table was occupied. I wasn't planning on dining in so I made a beeline towards the counter where they have displays of their baked goodies. Hmmm, a lot of good looking pastries and pies. It was unfortunate that they do not serve sandwiches until lunch time which was what I had my sights set on. So I quickly changed my focus and looked at the pastries. The server behind the counter looked a little ticked off that it was taking me a little bit of time to choose what I wanted. I normally smile a lot when I talk (granted that I am in a good mood...hehehe) and was smiling when I was placing the order. The girl behind the counter just looked at me blankly while she gets my order and didn't really look like she wants to be there. Hmmm...what happened to customer service? While I was in the process of ordering, a customer came to the counter and was asking about something to which the server answered. A few seconds later that customer left. When the serving was ringing my order, she made some snide comments to another server about the customer (looked like a regular at the bakery) who came to the counter. Okay, I do not care if you talk bad about your customers but do it in private and not where other customers can hear you. I get turned off by crappy service and below par customer service no matter how good the food that the restaurant serves. Food-wise, the croissants- regular, almond, chocolate, and ham & cheese varieties were good. The regular croissant was very flaky and crunchy but lacks the chewy and soft consistency in the middle. Don't get me wrong, it was still pretty good but far from being perfect. I do think that Chaumont in Beverly Hills sells a much better croissant than Proof Bakery. The chocolate croissant was tasty and had a lot of chocolate in it while the ham & cheese tasted good as well. Overall, the croissants were good but they need to work on their customer service. With deepest apologies to other Yelpers who love this place, I have to weigh in with a less than stellar review. I found myself starving in Glendale and saw Proof. It looked like a hidden gem, so I popped in to try it. I looked up on the menu board (which is written in chalk) and there were only two selections of sandwiches with no prices. (But they inexplicably had prices for their other items.) I hate it when there are no prices because, while I don't mind paying for quality, I do like to know what I am getting into. But I was starving and I was still hopeful for an amazing artisan sandwich and I figured YOLO... what the heck. So, with a huge selection of two sandwiches to pick from I flipped a mental coin and ended up with a ham and cheese although it was dressed up on the menu board with a long foodie name. The sandwich was nearly $8.00... a really fair price for amazing food. Sadly, this wasn't amazing food. In fact, I could have gone to Petco and bought a salt lick for a hamster for much less money and been equally satisfied. In fact, I might have been more satisfied, because the sandwich roll was a glorified bread stick. Very, very tiny... like appetizer portions with very little filling. To their credit, the ingredients were fresh and of excellent quality. The tomato appeared vine ripened, the roll was crusty (but very salty) and the ham and cheese were imported. Perhaps that is the most frustrating part... they took really awesome stuff and combined it into something that really sucked. If they had been more aware of their ingredients they could have rocked my world. I had totally planned to add a nice coffee drink and sweet treat but after the sandwich, I had no appetite. (Believe me... when I am walking away from sweets, carbs and caffeine, that is telling!) That was fine, because frankly, the pastry selection looked pretty limited, especially for a bakery. The atmosphere was ok... I've seen way better and admittedly I've dined at way worse. I found it kind of dingy, with all the grey walls but I can see the aesthetic they are aiming for. Best croissants ever! Delightfully crunchy on the outside with tasty buttery layers on the inside, I truly think a croissant (Plain, Almond, Ham/Cheese, etc.) from Proof is a must for LA visitors. Their other stuff is pretty good, but IMO, croissants require the most attention and Proof certainly pays attention. Don't expect to get their croissants in the afternoon, I would try to get them in the morning. They also serve some delicious coffee (from 4 Barrel up in the Bay Area I believe). read more

Sometimes the bread was too hard; sometimes too soft. She found the fillings to be uninspired and was occasionally underwhelmed by the quality. There were four different sandwiches to choose from that day and she would learn that their selections would change with every repeat visit she made to the bakery. At long last, she had indeed found a sandwich in LA that was JUST RIGHT. Your flaky croissants: chocolate or ham has the perfect pull-able inside, just the right amount of ingredients, and the crispiest flakiest outside makes my mouth water as I write your review. Your chocolate chip cookie: crispy on the outside, chewy on the inside with gooey chocolate is one of the best chocolate chip cookies I've ever bought. Your quiches: with its seasonal ingredients, fluffy eggs, and perfect crumb crust makes me shed a tear. If I could do this review by interpretive dance I would because there are no words in the English language to express how much I love this place. I wish I had never been introduced to this spot because I now stop by here at least three times a week and it's starting to become an expensive habit especially since they keep introducing more and more delicious baked good. I no longer go to Intelligentsia and I'm sure you will be a convert too as soon as this delicious brew hits your lips. The coffee is to die for and I have yet to meet a baked good I haven't liked. I always order the iced latte and they shake it in a cocktail shaker to provide a bit of froth as well as to mix the coffee and milk. I have only seen this technique done here and it absolutely makes the drink perfection. Every cookie phenomenal and the heirloom tomato and brie sandwich was a sandwich orgasm that can only be outdone by the caramelized onion and bacon sandwich. It is on the pricier side as far as coffeehouse bakeries go but you get what you pay for and $.75 more per cup over Starbucks for a far superior brew is a bargain in my humble opinion. My only complaint is that it doesn't open early enough for me to stop by on my way to work and they are not open on Monday. Not bad if my only criticism is I can't have enough of it. read more

The best part about Proof is that each little piece of heaven is prepared fresh, by hand, and in very small portions. The quality control is impeccable! While I was in line the girl behind the counter brought out a fresh batch of these amazing looking toast things. Every single person ahead of me asked what they were because they looked so delicious. They were thick pieces of toast with asparagus on top and covered in cheese. LORD! It was delicious. To go along with my coffee I got a tasty chocolate croissant also! The one and only downside was the line. Not the length, but the placement. I showed up at around 11 on a Saturday so I was expecting a long line anyway. However, waiting in line and having people continuously squeeze between you to get to the door can get a bit tiresome. The real downside is that after you get your coffee, it's your turn to squeeze through everyone to the lids and other condiments on the other side of the room (where the line begins). Take my advice, grab your lid while you're in line so you don't have to elbow through people later! Easy parking: NO! If you find a meter, go buy a lottery ticket. Proof Bakery was one of my oldest bookmarks on Yelp and I finally had the time to visit early on a Wednesday morning. Street parking wasn't difficult to find and a nice gentleman advised me to pull up in the space I parked in because the parking enforcement in the area will give tickets if you're overhanging into the next space. The bakery is small and even on an early Wednesday morning, every table was taken with people working on laptops or sitting with their children. A lovely woman behind the pastry case greeted me and showed me their array of pastries. The choice was an easy one: Almond Croissant, baby! I also ordered a plain almond milk latte (They use Califia Farms Almond milk too, which is my favorite) and my total came to just shy of $10. I asked if I could take a chair opposite of a woman reading a book with her coffee and prepared to be swept away by Proof...but it was just good. The Almond Croissant was executed well, but I've had better. In comparison, I thought the latte was a better value because the foam cap was excellent and the espresso blend they use is really buttery smooth. Every food excursion is worth the adventure, but there is nothing at Proof that would bring me back, especially being as expensive as they are. read more

I've waited a long time to review Proof as I began eating there the first week and only live two blocks away. I'm not wowed by the coffee so I only order the pastries. The pastries run the full spectrum for me, from "not to great" to "fabulous" In fact I had the single best piece of cake here that I've ever had in my life. I have my favorites [financiers, quiches with cheese and meat and sandwiches with meat]. I avoid some items like the scones or biscuits [too dry]. I really want to like this place but there are things that are just off putting: way too high prices for one. But the biggest turn off for me is that their business model is to let their stock run down to zero. Daily, if you come late in the morning, you may find that you have a choice of one item ... or no items. You may have to wait for noon until the $7.00 sandwiches come out. Then, after the sandwiches run out ... nothing. If you arrive after 3 PM, you may well have nothing too choose from, but coffee. In fact, it is the only business I frequent where I OFTEN go in, look around, and leave empty handed. That happens in about 1/3 of my visits as I don't drink the coffee which is always available. I almost feel like Proof should really be a wholesale operation, offering high end pastries to other establishments. A very cold place in terms of service. read more

I had high expectations coming to this bakery, planned for days to drive out here. On arrival, it was busy the line went out the door . Ok a good sign. I called the bakery inside to double check that they carry "Chocolate Expresso cake" the reason I drive 1 hour out here for. The store owner answered the phone said yes they have it in slices or whole. I patiently waited to my turn, for 15 min, when it's my turn, I asked for a slice of Chocolate expresso cake, she said they don't have it, "it's a seasonal item". The "female owner" came up said they have "chocolate cake" or "Chocolate raspberry cake" not expresso cake, it's seasonal item. They LIED FLAT OUT in my face and play stupid as if I am the one who is confused. Fine, I ordered something else and check out at the register. 3 pastries for $10 , not bad, BUT the cash register clerk just gave me the pastry in the bag, Uhm, where is my receipt???? I though you are suppose to offer customers receipt ???? I questioned the clerk it is "standard" they don't offer customer receipt , she said, "I print you one if you prefer." The negative reviews for Proof are hilarious and serve as a quick reminder as to how the people who need to broadcast their 'expert' opinion are ruining our society.... That being said, I'd like to point out something that I surprisingly don't see mentioned enough of in the reviews, as I am sure there are other daily Proofer's out there-- Yeah, everything tastes great, but more important, it's CONSISTENTLY great. Every day. No matter who helps you. Also, how can you be so oblivious to walk into any type of store that has Proof's aesthetic and then be "shocked" by the prices. I read their croissants are made with a little sourdough. Their croissants are also flakier. It was a good croissant. Their cheese spilled out creating a toasty cheese cracker. Perfect salty goodness. Their ham is superior quality. Overall the best ham and cheese croissant i've had. But I've mostly had them from doughnut shops so I don't know if that says too much. The canele was okay. Too eggy for me. The black sesame financier was very tasty. Loved the sesame flavor with the moist sweet bread. Plain croissant was also very tasty. The open face brioche thing was dry. I asked them to heat it up again and I think they over heated it. :( I'll probably be back if I'm in the neighborhood. read more

I don't think anyone can deny that the pastries here are top notch and baked to perfection. The croissants are buttery and flakey and just so GOOD. I wish they were bigger though. So, I prefer vanilla powder/syrup in my lattes.. And they only offer agave or honey! I know hipsters are all about these sweetener alternatives these days, but come on! The dude looked at me like I was a moron when I asked for a vanilla latte. Ughhhh. I settled for agave and I wasn't a fan. Thanks but no thanks. The good news is that I gave up coffee recently so this doesn't matter anyway. I'll come back just for the pastries. read more

We live in France, so the bar is set very high for bakeries, and frankly I stay away from most of them when I am in the States ...... except Proof, which is the best LA has to offer, and it is fantastic! Both the Savories and Sweets are absolutely delicious, but my addictions were the Savory Scone, Rustic Tart (also Savory), Salami Sandwich with Chive Butter, and Chocolate Chip Cookies ...... the coffee is delish too! All totally worth the $ .... with a sweet staff. There isn't anything here I wouldn't (or didn't) try, and everything is gorgeous to look at too. read more

My friends and I decided to venture out and try something new and came across proof bakery. They seemed to have good coffee and some yummy cakes. We tried to get a varied selection of items to make sure we could get a good taste of everything. Why not, everything looked so good. We ordered the Chocolate espresso cake, Vanilla passion fruit cake, Fromage blanc cheesecake, Latte and Mocha. The food was hit or miss Chocolate espresso cake: This cake was great, it had a good chocolate flavor with a hint of espresso, but was a bit richer than I expected. This is a good cake to mix with either a plain coffee or a non flavored latte. Any more sweet and it would be too much. This was a hit with with the entire group I was with. Vanilla passion fruit cake: This was good, but not great, I am not sure what it was, but it seemed a bit plain. This is one of those that I may order again if I really am in the mood, but it was not really memorable. Fromage blanc cheesecake: I really like cheesecake and am generally really picky when it comes to cheesecake. When i tried this, it was very disappointing, it had an odd aftertaste and was a bit sour. This style of cheesecake just is not my favorite. Latte: The latte was good, and exactly what I want in a latte. it was not bitter and the milk was not overheated. It generally had a good flavor and went well with the cake. Mocha: Generally I am not a fan of the drink because they are overly sweet, but this was a perfect level of sweetness. It tasted more like an actual chocolate latte than sugar. As far as Mochas go, this is probably one of the better ones you could try. Even though the food was hit or miss, their tastiest items make this a must try. Their staff is also super friendly and the overall experience is great. It is a fun place to just hang out with friends with cake and coffee. read more

For coffee, espresso and espresso drinks, I'd give it five stars. However, calling their sandwich a sandwich is an insult to actual sandwiches everywhere. This thing is basically a stuffed breadstick. It is less than an inch wide. Now, a sandwich is supposed be a decent meal on its own at best, and at worst at least the main component of a satisfactory meal. While it may be six inches long (or so, I generally don't bring my tape measure along to lunch to measure my food), it is pitifully thin. Probably 3/4" to 1" wide at its widest point. It is a soft breadstick. Not a roll. While it didn't add injury to insult (it did, at least, not taste offensive), calling this a sandwich is just ridiculous. For an actual sandwich at a remarkable price, head to the nearby Vince's market. You can get a ham and cheese for $2.50 that is about five times the overall mass that what you will get at proof. I'd actually like to like this place (local, independent small business), but calling this a sandwich is just a dealbreaker. When I got it I literally said "wait, you're joking, right? That's not a sandwich." I just can't support a business that has the audacity to call this minuscule offering a sandwich. read more

Had an almond croissant and coffee for breakfast at Proof the other morning, and maaaaayn... THIS, ladies and gentleman, is what an almond croissant should be! Felt as if I were momentarily transported to a Parisian boulangerie for the price of seven bucks (amount one needs to shell out out for the perfect croissant + coffee). My half-moon shaped pastry was crazy-fresh. Flakey on the outside, moist on the inside, perfectly sweetened, and topped off with crunch almond flakes. GAAAAAAAAAAAAAAAAAAH. So good. My tummy smiled. - - - - GAAAAAAWD! Returned to Proof a week later and had their chive & gruyere biscuit. HOLY CRAP AMAZING!!! I ordered it having watched the gentleman in front of me order 6. Their chocolate chip cookie with maldon salt was also amazeballs. My fav chocolate chip cookie in Los Angeles thus far... Love, love, love this place. read more
