Despite the lateness of the day, our server Lidia was still upbeat and kind, and seated us promptly. I was torn between the steak and the sea bass, and Lidia recommend the sea bass. It was amazing!! The bed of risotto, fantastic! Asparagus! Crisp, delicious, and not at all bitter! And the sea bass was so so so divine! Tender and flaky. Just absolute perfection. Deceptive money grabbing methods are the theme of this place. Came in twice during my stay. The first time we ordered the whipped ricotta. It was to come with carrots, but they were out. Asked for bread and we got 4 oversized croutons. That allowed us to consume about 1/4 of the plate. Asked for more bread and was told they were about out, but he would see what he could do. Came back with 4 more oversized croutons and charged us extra for them. Came in a second time for dinner. Asked for a big red wine. Was leading towards the cab, but the waiter suggested the Pino, so I tried it. Mistake. Though it was bigger than most Pinos, I wasn't happy with it and asked for the cab. Got charged for both. Okay, I drank both, so I'm not going to complain too much about the wine. However, I ordered the ribeye and was asked what 2 sides I wanted. Got the mushrooms and asparagus. The steak was good, but not great. The kitchen cooked it to perfection, just needed a better cut of meat. The sides were good. Got the check and was billed $20 for the two sides. I asked the waiter what was up with that and he told me he asked if I wanted sides, but never said two were included. I guess I made that up. The service was reasonably fast and both servers we had were very friendly. The problem I see is they are being driven by the mother ship to capture as much cash as they can as a short term money grab. Problem is it will destroy long term success. I don't plan on coming back to SantaFe anytime soon, but if I did, this is the last place I would choose for a meal. read more

There's outside seating available but if you have to get your own drinks and your drinks will come in a plastic cup (glass breaks, people are barefooted, kids are around). I decided to sit at the bar. There was only one bartender but he was good and quick. Service was good! Can't complain! I ordered the Blue Thunder but it was yummy and refreshing; I would recommend that if you're wanting something light. I got the Chef's Pasta of the Day-from the looks of it, it looks bland but the TASTE was very very good. I was surprised but I was expecting it to be bland and not flavorful. For dessert, I got the Bourbon Bread Pudding! I was pleased to know that it didn't have raisins! A WINNER!!! I wish it was a little more moist but overall a good taste and consistency. read more

Unbelievable / $77 for a bone in ribeye that was probably recently purchased at Albertsons. Should have known something was wrong when the waitress said they were out of steak selections accept Ribeye. In addition they were out of baked potatoes. The manager reached out and asked me how he could make it right with me. He offered me the next time I visit there he would host me I told him thank you but all I need is for my small meal to be reimbursed I know everybody has a bad day every once in a while. While staying at the Hilton, we have tried the Red Sage upon a few occasions, with average or disappointing results. Happy to say, things have improved immensely. Our service was excellent. Food- great. Very surprised at the huge improvements. Sea Bass was prepared perfectly. Chicken Alfredo was beyond great- no heavy creamy sauce (which is purely bad in every way and a sure sign of cheap preparation), it was obviously pure parmesan and tender choice pieces of chicken breast. Pasta was perfect. Witnessed manager walking and checking on things constantly. Great and highly recommend. read more

Let me say one thing I'm noticing lately around all eating establishments, including fast food. Not enough workers. This trickles down to waiting longer for a table, waiting longer for your food, limited menu options in finer eateries. I've talked to owners and the consensus is there is a labor shortage due to the stimulus money flowing and inflated unemployment pay outs. The government is paying people to stay home. This is not good for the American Dream. Lack of motivation and creating dependency on the government is basically communism. Doesn't work in any country and it most certainly won't work here in the US. Ok. Rant off. Here is my review: We were seated then our waiter went awol. Seriously nowhere to be found. In his defense he was the bartender, busboy, and probably helping in the kitchen. I saw two people in kitchen. The tables next to us both received their food before us. We had to ask where our food was? 45 minutes still no food. Whomp whomp. Food: pizza very good. Crust had a nice beer taste to it. Slightly burnt crust but overall yummy. Southwest chicken salad - was good once I got the missed salad dressing and blue cheese. That took a while since once again our waiter disappeared after food came out. Sea Scallops- I didn't try but those who did said very good. Shrimp cocktail and calamari- people who ate it thought it was good. Beef Sliders - very tasty. We were staying at the Hotel here and wanted something to eat. The Red Sage was the only place in the casino that was open. We had wifey, her daughter and granddaughter and myself. We were told it was going to be 15-20 minutes even though we could see lots of open tables so we opted to sit in the bar area. It took the bartender a bit to get to us and we ordered drinks and food. The drinks came pretty quick, I got a double whiskey that was by no means top shelf but the price sure was, they don't tell you how much a shot is before ordering it and the sticker shock when we got the bill was high. The food was mostly good except for my rib-eye. I ordered it med-rare. Most of the steak was good and cooked as ordered, however whoever cut this steak didn't slice it right and one side was half the thickness of the other which made it med-well and tough so I didn't eat all of it. I know casinos like this are usually over priced but this one seemed to be very over priced and since it was the only game in town you either drive to eat or suck it up. If we're ever in the area we'll find another place to stay. read more

As usual I wait until the last minute to make reservations for Christmas Dinner. We decided on Red Sage for something different. An hour long drive in a sunny day wasn't too bad either. We arrived and following some simple directions found ourselves at the entrance. Quickly directed to our seats with menus to look over. For the holiday the menu was simple -Prime Rib, Chilean Sea Bass & Pork Loin. We started with a salmon appetizer - smoky in phyllo dough. Our appetizers were butternut squash with apple juice. The apple added sweetness and muted any bitterness. Entrees were easy. Prime Rib for me & Chilean Sea Bass for the wife. The prime rib was meh, not tender - and I got a rare piece, it was lacking in the spice dept - there was no crusting in the outer edges - creamy horseradish saved it. The Chilean Sea Bass was tender and flaky with a strong, almost overpowering fishy taste. For desert I had the rum cake. It was more a piece of dry yellow cake in serious need of some rum glaze. The biscochito cheesecake was tasty and would have made a much better choice. So our meal barely made it to mediocre. But at a premium plus price. Hamburgers and fries from a fast food place may have been the better choice - disappointing. At least the service was excellent saving it from a single star. read more

We had a wonderful meal here with fantastic service. We were staying at the Homewood Suites and walked down to this property to explore. In search of a great meal, the bartender suggested Red Sage. It is a nice restaurant, with the whole nine; white table clothes and cloth napkins. We ordered a bottle of sparking wine, local winery Gruett is to thank for that as it was delicious. Our food was wonderful, I splurged with the lobster which were perfect. My friends enjoyed their meals as well (scallops, salmon) and the three of us went to town on their fries which were really good. Otherwise...No-Way-In-Hell would I keep coming back. We have eaten here before and it wasn't great. Our previous dining experience was for my birthday and the meal was hideously expensive and almost inedible. I had the lobster with risotto and the lobster was over cooked and the risotto tasted like sewer. My husband's steak was also cold and undercooked. Tonight, however, we stopped into the bar area to snag a dessert because that was the highlight of our previous dining experience. The bar does have a menu that is appealing and much more affordable. You can also order desserts from the main menu as well! We got my husband a pecan torte with ice cream from the main menu and he had it in the comfy yet fancy bar area. One star is being too nice. The wife and I stayed at the resort at Buffalo Thunder for the weekend. We wanted a "fancy night out" for dinner and resorted to the Red Sage. Ambiance is nice and low light, like what you would expect for a higher end steak house. Friendly staff! I ordered the ribeye steak. I'm a bit of a steak connoisseur myself as well as my wife. The steak was flavorless and drenched in what appeared to be a gravy(red flag number one). The cut was about an inch or so THIN(red flag number two). The crust appeared to be very black(final red flag). Cutting into my steak shook the whole table. You thought I would have needed a chainsaw or a sawzall. Absolutely the worst steak that $50 can buy. The crust of the steak was completely charred, leaving a nasty bitter taste. I sent my steak back respectfully. The chef came back with a much thicker cut of steak(about inch and a half), still with gravy and charred crust. All around, avoid this place at all costs, unless you enjoy boot leather steaks for a price hike. I absolutely do not recommend this place. Whoever is ordering steaks for this place, needs to be fired immediately, along with the "chef". read more

Extremely overpriced, $52 for a filet with mashed potatoes and broccolini, $49 for ribeye with mashed potatoes and mixed vegetables. The food was served room temperature, with warm steaks. Non of the food had seasoning, not a spec of salt, pepper, NOTHING. I ordered my filet medium, it came out butterflied and well done. I tried to eat it despite the wrong temperature but after using quite a bit of salt to add flavor, it was hopeless. Tasted like a frozen hamburger patty. I'm skeptical about ordering seafood away from the Pacific Northwest but this was prepared and paired with fresh veggies making for such a welcoming surprise. Went here last night (11-25) went to the bar first and partook in the happy hour. The bar staff was friendly and the drinks were tasty and strong, great prices on happy hour for house drinks. The queso fondito was amazing ! Now for the restaurant ..... Staff was super friendly JOSE our waiter was super attentive and his manners were on point. My husband and I bought the cowboy steaks (16oz ribeye) medium rare. Husband's came out perfectly cooked. Mine however was medium / well .. so sent it back and after 15 minutes got another steak that was Rare (super gooy in the middle ) so I sent it back again and finally got a medium rare steak. Quite rediculous to have to do for a $60 steak. Manager did make it better though she took 25% off our whole bill (was over $100) and added 2 free deserts. Also the deserts were mouth watering ( chocolate lava cake and lemon tart) . So food was good but just a terrible experience for the money read more

We ate Easter dinner there last night. The place was empty except for 4 tables including ours which was the first sign. My husband ordered the pasta but couldn't finish it. Swimming in too much oil & there was a ton of sundried tomatoes that overpowered the pasta. Not great at all. I had the Surf & Turf special. I asked for the filet to be medium rare. It was charred & well-done on one side and more medium on other side. It wasn't that big but seemed like it had been frozen & microwaved to thaw out & I couldn't finish it. I brought it home for my dog. The Maine Lobster tail they advertised was only half a tail. They cut in half, and it was super small to begin with. Didn't even get a "whole" lobster tail. There was literally 2 bites. Plus they didn't even cut the meat out of tail and you had to scrape out with your fork. Not good. Both of us were very disappointed and the meal was just not good. Suzanne, our server was very good so at least that part they got right. We go to Buffalo Thunder all the time, but we'll be skipping eating at Red Sage. Two of the four beers on the menu were available so I had a 50% chance of getting what I ordered. Wrong order the wheat beer got the IPA. Sparkling wine had been in the refrigerator so long it no longer sparkled. Chips and guacamole seems like a harmless way to start except when the guacamole is brown. We came through here with a national touring act to play at the casino. We got a reservation at this restaurant for 10 of us and had fantastic service all night. Dealing with that big of a party can be complicated, but our server Gabriel could not have been better and more professional and he was an absolute champ. The only downside to the entire evening was the manager decided to come and be incredibly rude to our table for no reason. He was trying to say that it was our fault that service was running slow, instead of addressing the fact he runs an understaffed restaurant. There was zero reason for him to come to our table and be a massive dick for no reason after we made sure to ask Gabriel in the beginning of the night if he was okay with split checks. To recap: Gabriel A+, Food B+, Manager needs to go or learn how to speak to customers. read more
