My wife and I recently made our second visit to Rio Brazos Grill, and the entire experience was excellent. We don't think of it as often as we should because it is a bit of a drive outside Granbury, but this dinner reminded us that it is well worth the trip. We started by sharing the bacon and poblano jumbo lump crab cake. It was beautifully prepared, flavorful and an excellent beginning to the meal. I ordered the 6-ounce beef tenderloin prepared medium, with asparagus and half of a twice-loaded baked potato. The tenderloin was wonderful--extremely tender, remarkably flavorful and cooked exactly as requested. Wife ordered the Red Snapper A La Plancha. It was seared and served over wild rice and sautéed asparagus, then topped with roasted-corn salad and lemon beurre blanc. I don't typically consider myself a fan of red snapper, but after trying a bite of hers, I had to admit it was delicious. We finished with a bite or two each from the chocolate ganache plate, which was the perfect ending without being too much. What made the evening especially memorable was our server, Cynthia. To our surprise, we recognized her from La Crêperie in Granbury, where she previously cooked and presented special dinners. Cynthia is French, extremely knowledgeable about food and genuinely enjoyable to visit with. Her warmth, personality and attentive service elevated an already excellent meal. If you visit Rio Brazos, I strongly encourage you to ask for Cynthia. Great service can transform a good dinner into a memorable evening, and that is exactly what she did for us. Rio Brazos offers upscale food in a comfortable, welcoming atmosphere, with thoughtful presentation, quality ingredients and outstanding service. The rumors are true Rio Brazos Grill is fantastic. Not "good for a small town," not "surprisingly decent" just flat-out good. The kind of place where it's immediately obvious someone in the kitchen actually knows what they're doing, which already puts it ahead of most restaurants pretending to. The meal starts strong with flash-fried calamari Fresno chilies, sweet chili sauce, balanced heat, and a clean execution. It comes as strips, which feels a little safe. Rings or whole baby squid would've shown more technical confidence, but fine the flavor still delivers, and at the end of the day, that's what people actually remember. The Calabria chili shrimp follows with the same sense of control: spicy, but not trying to prove a point. Paired with grilled baguette, it does exactly what it's supposed to do support the dish instead of getting in the way. And then there's the Chicken Fried Ribeye, which sounds like a bad decision until you eat it. Crispy on the outside, rich and tender underneath, covered in black pepper gravy with buttermilk mashed potatoes, a potato nest, and because apparently restraint is optional--two fried quail eggs. It's excessive, but not stupid. That's a very fine line, and they walk it well. Chef Clint Connaway clearly has classical training--nobody just stumbles into a proper beurre blanc. The menu pulls from Southwestern, Native American, Mexican and French influences, which should feel chaotic but somehow doesn't. It works because the execution is consistent, even when the ideas get a little ambitious. That said, the place isn't perfect. The quail eggs show up so often they start to feel less like a signature and more like a habit. And for all the technical skill, there's a noticeable lack of local identity. With Bosque Ranch right down the road, it's hard not to wonder why more local beef isn't front and center. A stronger focus on seasonal or locally sourced ingredients would push this from great to something more grounded--something that actually tastes like where you are. And then there's the obvious question: why no brunch? A kitchen like this could absolutely dominate a brunch service. Instead, it's just... not happening, which feels like wasted potential. Still, none of that changes the core truth. The food is thoughtful, the technique is real, and most importantly you leave feeling satisfied instead of questioning your life choices. We went to this restaurant on the referral from friends. We had been warned that it was a little pricey & best for special occasions. While we were celebrating our 53rd anniversary we decided to give it a try. You definitely need reservations, especially on weekend evenings. The restaurant can best be described as upscale country western. We were served by waitress Bella, who was very pleasant, patient & amusing, at times. She explained each dish with detailed knowledge & confidence. The crab cake appetizers were delicious! And our filets were out of this world, cooked perfectly & served hot & attractively plated with a half of a twice-baked potato & broccolini. Although the potato was delicious I would have preferred a whole baked potato that I could add my desired condiments to. The only criticism I have is that no bread was offered. We were looking forward to dessert but we had absolutely no appetite for it after such a large meal. But after looking at the menu we came to the conclusion that we could order an appetizer as our entree, follow it with dessert & be very satisfied. It puzzled us how such an upscale restaurant could be located out in a remote area of Weatherford & be so busy. I suppose its reputation is spread by word-of-mouth. What an incredible experience last night!! We've been patrons since they opened and have always had amazing service but Bella was the best server we've ever had there!! She's so much fun and a delight!! Lola and Blayne also came by our table and were fantastic as well!! It's extremely rare to have staff of this caliber. Great experience. This was our first time dining at Rio Brazos Grill. There were 4 of us on a Saturday and we arrived around 4:30 with a 5:00 pm reservation. The host was quite pleasant and was able to seat us right away. Our server, Tess, came by right away to greet us. She told us about the daily specials and we ordered pre-dinner cocktails. Zach was by with water and kept us topped off all evening. Our cocktails were great. My wife had a Cosmo and my friend and I each had the Grandpa's Old Fashions. They were excellent. We ordered the Mashed Potatoes and Green Onions Croquette appetizer topped with Smoked Salmon and shared that with our friends. It was very good. We placed our dinner orders and visited with our friends. Meanwhile, Zack was by many times to make sure water was refilled and just to check to see if we needed anything, as did Tess. A basket of warm rolls (like Parkerhouse rolls) came out. They were great. Our salads, soups and flatbread came out next. My wife and I share the Fall Salad. It was amazing. Our friends each shared a cup of the Tomato Soup and the Flatbread. We tried both and enjoyed them as well. Next, our entrees came out. My wife and I shared a meal. We had the Pork Chop dinner and we added mashed potatoes plus a side of the black pepper gravy. The Pork Chop was cooked medium rare as requested and was tasty. The Mashed Potatoes were tasty too. The gravy was good but I felt it could have been thicker. All in all, an amazing meal and service. Our friends had the Snapper and Strip Steak entrees. I tasted the Snapper and it was good. May have been a tad overcooked, yet still good. My friend told me his Strip Steak was tasty but the meat texture was a bit stringy. For a Strip Steak, this is what I would expect. We took desserts home and will have them later tonight. John, the GM delivered some of our food and we got to connect with him a bit. He was very pleasant and very appreciative of our patronage. We can't say enough about Tess. She was so pleasant, so helpful and so attentive. We were blessed to have her, Zack and the rest of the service team tonight. The service was outstanding with a very attentive and personable server, which made the experience wonderful. We were pleased with the attention and service provided by the wait staff. As for the food: - The Panko Shrimp w/ sauces were delicious. - The Caesar Salad was very good - The dining experience took a dive when the Chef recommended selections arrived to the table. - The T-Bone lamb plate tasted of a chargrilled flavor. Couscous was not seasoned, the Brussel sprouts tasted chargrilled. Lamb was tough, very chewy, mostly bone and fat. - Slow Roasted Veal dish was bland without flavor or seasoning. Our entire experience was amazing. Chef Connaway crafted a one of a kind culinary journey for us, but even more importantly, he spent personal time sharing his stories and learning ours. It felt less like a night at a restaurant and more like an intimate dinner with a new friend. We went to this restaurant after hearing it was recommended by Billy Bob Thornton as we are huge fans of the show, Landman. We were thoroughly pleased! The restaurant is beautiful and the food was outstanding. Staff are very attentive and we especially liked that it is not noisy, unlike most restaurants these days in which you cannot even have a conversation when dining. Nice digs just a couple miles south of I-20 at Weatherford. Lots of parking, was not full at 6:00 but filled all reservations by 6:30 on Saturday. A few bar seats with full meal service available. At least 2 private areas for 8-10 people were set, along with a long table in the main dining room for about 12 that took some of the 2 and 4 tops for that group. Make reservations if not there about opening, as we heard folks from dallas, FW, and Granbury being turned away since reserved full till closing. Atmosphere, good ranch style with rock walls and some western art. Service: great people, at the reception, bar, and service. They maintain friendly and help each other to excel. Addie at the bar was wonderful. Food: very good, flavorful and spicy where described, without overpowering. Notable *Calabrian shrimp, 4 large in a tasty sauce, the Calabrian peppers featured are a bit less heat than red jalapeños, but mix with the shrimp and French toast points to absorb the rest of the sauce. Specials of the day: Lamb chops were great! Sauced with a berry sauce that wasn't compote strength but well flavored to go with the mid rare 3 double chops. Unusually the greens with a bit of bean as the lawn beneath the lamb was wonderful, and plenty of house small dice farmer potatoes were filling. You can see all the meats and prices across the spectrum, all of which make it necessary for another couple visits to get better acquainted with their menu. Get thee to the Rio Brazos Grill. Texas Strip Steak was the best steak I've had in Granbury-Weatherford area. Worth every penny. French green beans were very good although not plentiful. Roasted potatoes were nothing special. Based on the reviews I had such high expectations for RB. When we arrived we were greeted with a waitress who was dripping with sweat, overall the restaurant was a tad bit hot. We chose to celebrate Mothers Day here a little early. We waited well over an hour for our main course, we finally, after awkwardly sitting there had to flag down our server and inquire about our food. She assured us that it would be arriving soon. We waited probably another 20 minutes for our warm courses to arrive. We never had a manager or server check in on us during the entire dining experience. I was looking so forward to enjoying a relaxing dining experience. The one positive note, the drinks were good. ....and we had plenty of time to enjoy them. Had brunch with the fam at Rio Brazos today. Was our first visit there. I had viewed the dinner menu but was not aware of the Sunday brunch menu. We were all pleasantly surprised though--great menu items and the pricing was quite fair for the quality and quantity. Around the table we had a Brisket Benedict (said was great), a spinach/tomato Fritata with a salad (the special of the day) (was yummy), a salad with fried chicken tenders (said to be "really good chicken"), a "fork and knife" breakfast burrito (delicious!), and a chicken fried ribeye with eggs (was excellent, Dad said). Portions were plentiful. Service was top notch. The words "grill and plants" on the outside of the building threw me off at first when I drove by, thinking maybe it was a patio shop and nursery as opposed to a restaurant, but a quick Yelp search revealed the answer and then we decided we needed to try the place.
