The Steamed Whole Fish is another standout: a whole branzino swimming in a vibrant, intensely aromatic broth of fresh chili, lime, mint, garlic, and culantro. Fish Cheeks was founded in 2016 by Thai immigrants--brothers Chef Ohm and Chat Suansilphong, along with Jenn Saesue and Pranwalai Kittirattanawiwat. The restaurant was born from their frustration with the homogenized "one-page" menus that dominated American Thai dining, which often centered on sweeter, standardized dishes such as Pad Thai and Massaman curry.
