Pros: creative taco options, good margarita, and a nice place. Cons: I would have liked a little more flavor from my taco, $45 for two tacos and a margarita is a bit aggressive. So, here's the deal. The menu is very creative. Short rib tacos? Yes, please. Unfortunately, the actual flavor doesn't quite measure up to the potential. Everything could have just been a little "more". In the positive, the Cadillac Margarita is awesome. Caution: it's stronger than you think, and the grande is larger than it appears. The restaurant is quite nice. Service was slow, but they let me eat in peace. Prices are aggressive I paid $45 for two tacos and a drink. Taco joint for a nice date night? I suppose. I'm a huge fan of this spot. I've only been twice and I just returned to see what it was like during the pandemic. The staff was very cautious and took many safety measures to make sure that everyone was properly social distancing. One of the waiters even told us they had 5 training days before SOL could open back up. Both times the food has been incredible. I had 2 vegetarian tacos and they didn't lack any flavor, which can sometimes be a concern when eating vegetarian. Warning- the tacos are huge and one goes a long way. This place is delicious. I've been here a few times and keep on coming back. Their watermelon margarita is to die for!! Keep those coming. I love that their chips are big tortillas. You can break them apart yourself. Their guacamole sol is so yummy. I could just keep on eating it. I love getting a side of their roasted sweet corn because then I can add it to my dish. Taco Tuesdays is one of the best times to go. Their tacos are at a really reasonable price. If you're not there for taco Tuesday I recommend the duck tacos, they are so scrumptious. We've been to Sol half a dozen times since they opened a year ago, and I'm sure we'll be back. The guacamole is delicious, as are the complimentary salsa and bean dip. They have your "standards," like a chicken quesadilla, plus a number of inventive "street tacos," including my favorite with chicken and ghost pepper salsa. Service can be pretty hit-or-miss, and the drinks are terribly overpriced (an $11 margarita seems to make sense until you realize how small it is), but Sol is a solid dinner option in Cherry Creek. read more

So good! I had the sweet potato and black taco, as well the BBQ seitan taco. The seitan was some of the best I've ever had, I had to ask to make sure it wasn't real meat! Me and The Hubs had dinner here last weekend. We went fairly early (before 7) since we didn't have a reservation so we could try to get a table in the 'walk-in' section. When we first got there, the only seats were at the bar. Since I wasn't really in the mood for that, we kept looking. There were three empty tables, but they all had a 'reserved' sign on them. As it turns out, the 'walk-in' section isn't just for walk-ins but also for overflow reservations. Luckily for us at the point when I was re-thinking the bar seating option (or leaving) someone was just leaving their table making it available for us. Yay! After sitting down, a very nice man came by with chips, salsa, and bean dip. Then we waited. And waited. We finally flagged someone down and asked if we could get some water, a server, and a menu. Wow! A server comes by and apologizes for the delay. OK, I get that places get busy, but this was the theme for the evening. Except for drinks (thankfully!) - those came out pretty fast and getting refills wasn't a problem. But we did wait a long time for food. Again, the very nice man brought out more chips, salsa, and bean dip. Anyway, this is what we ordered: 1. Cheviche - we ordered the regular one and it was 'meh'. It was nice and 'limey', but I'm not sure what kind of fish they make it with but it just didn't taste right. 2. Octopus and potato appetizer - don't remember what it was called or what else was in it, but it was pretty tasty. 3. Fish taco plate - The beans and rice were good, but the tacos didn't have much fish in them. There was also too much of some kind of sauce that made them soupy and drippy. 4. Drinks - margaritas made with Patron Silver, fresh lime juice, and Cointreau. This wasn't one of the margs on their menu (too many of those are made with orange juice). Drinks were excellent. Normally, based on the above, I'd give a restaurant a '3', but the service was so 'off' they get a 'meh' from me. I really expect better service from a higher end restaurant like this. read more

My boyfriend and I met a colleague for dinner one delightfully warm evening in Cherry Creek and settled on SOL due to it's large open-air dining room that felt more like a patio. It was still happy hour when we arrived, so we ordered the ceviche to start, as well as some margaritas. The happy hour prices were very good, although the margs were still listed at $8. After happy hour, I decided to try cucumber jalapeno margarita, which at $12 was incredibly satisfying and totally worth the cost. The chips and salsas are delicious, serving whole fried corn tortillas for a creative twist. For dinner we ordered a quesadilla, burrito, and short ribs barbacoa. I didn't try the quesadilla but it looked fantastic and our colleague really enjoyed it. My boyfriend loved his burrito and happily savored each bite. I had ordered the shortribs barbacoa and HOT DAMN I'm salivating thinking about it a week later. Served with three boneless short ribs in a bubbling bowl of sauce with a side of tortillas to scoop it up with. Probably one of the best things I've ever eaten at a mexican restaurant! I would give the food a 3 1/2 average rating . I had the carnitas tacos , daughter had a burrito ( way to many beans in the burrito ) . I feel the blackberry ginger margarita was expensive & small especially since they put a lot of ice. If I knew it came in a glass a bit bigger then the water glass, I would never ordered it. The reason I ordered that margarita the waiter said it was the 2nd most popular . I also do not like the back room we were put in , there were a lot of kids running around & felt secluded. This place has the most amazing food - and we love the atmosphere. The highlight of this place however, is bartender Matt Allen. First time we encountered his amazing margaritas, horchata and other fun drinks he mixed up for us just to try - we became hooked! He is very attentive, creative and remembers your orders like no other!! I've never had a better margarita or any drink for that matter than the ones Matt has mixed up for me! Because he is so good - I hired Matt for a private event as well and the entire group who attended loved him. We got non-stop positive feedback on how much fun everyone had because of how good he is. First, the atmosphere and design of Sol is very cool. That being said, this place is absolutely full of it. They claim " the authentic taste of Baja Mexico" and "interpretations of traditional coast Mexican cuisine with a focus on fresh, sustainable cuisine". Various Menu items just read "fish", but if you ask the server, you'll learn that it's mainly farm raised Cat Fish (although I think one item is an Australian fish I've never heard of). Cat Fish??!! Com'on man. Shocking there aren't more reviews exposing this place for what it is; a successful endeavor to package low cost ingredients at high-end prices. read more

I would not recommend coming here later on a weekday, as the service staff likes to remind you that they're closing at 10pm and that you might feel "uncomfortable" bc they'll start stacking chairs around 930. Ummm... what? Really? Maybe just chill for a minute so that we can eat. The food itself and margaritas were great. Definitely not cheap, but it's Cherry Creek, so to be expected. Had the velveeta taco, which was great. The shrimp dorado taco wasn't too bad either. I'd give them another shot based on the food and some other things I'd like to try... but I'm also in a battle with Open Table bc the staff at Sol marked us as a no-show, despite me telling them our name when we checked in. Wow! What a find during our Colorado girls trip. This place is a gem! First let's talk about the prices... I am in love with price points so please keep them there. Then the atmosphere is just bomb. The food is just in another level. Please try the corn right away and be amazed at how a simple corn on the cob can just snap your mind to a wow just wow! Is sweet and salty and tangy and just the best version of Mexican corn I have ever and I mean will ever have. I dont think anyone else can top that! Then for my meal I ordered the short rib taco. Why is it that this simple dish just brought me to a place where I see a grandma cooking and braising 1 single rib for ours with so much love. The flavors were complex but soft like silk and mild but not in a bad blend way. I just dont know what is going on but it was darn good. Chips/tostadas salsa and bean dip at the table were just delicious and a great departure from what everyone else is doing. Just love this place. Soooooo overpriced. Ordered an $8 taco. When ordering I noticed that there was no cheese or fun ingredients on it so I asked that they add some. For a couple sprinkles of melted shredded cheese they charge me two dollars. For two avocado slices another $2.50. Are our waitress never refilled my diet Pepsi and took her water before we were done talking. Six dollars for a "happy hour margarita" that they didn't want to bring to us in the restaurant because we weren't at the bar. Worst service. Waited 10 min to get approached by waiter for drinks-- had to go to bar to get them. Then Dino was hardly existent (cute and sweet but non-existent) throughout our stay. Literally we would have ordered $50 more in food and drink but he never checked back in with us so we asked for the check and left. I went here for the first time about a week ago. I had lunch with my partner, and it was solid. I had a carnitas taco and a steak taco served with a side of quinoa salad that was very good, and different! I will be back for lunch, as for dinner, it's probably not my style. I really prefer a good taco stand over a large sit down Mexican style restaurant. I feel the product is fresher at a taco stand, as well as a better lunch or late night scene. This restaurant is a new place in Cherry Creek area. It's perfectly located by Cherry Creek mall . Since we love Mexican food we decided to go to check it out and we were extremely satisfied. The Restaurant is extremely clean, service is outstanding and the food was extremely delicious. They start you off with chips beans dip and spicy salsa .
